LUCE @ Frasers House - Unveils a Richer, More Immersive Dining Experience

Curated under the direction of Chef de Cuisine Giuseppe Di Caetano, Luce at Fraser House introduces a more indulgent and dynamic dining experience, marked by an expanded lineup of live stations and a deeper repertoire of dishes.

Seafood on Ice

The experience began the moment I stepped in, greeted by an impressive seafood-on-ice display showcasing premium selections such as Japanese oysters, wild-caught Australian spanner crab, and an array of seasonal shellfish.

Cold Cuts and Charcuterie

The Cold Cuts and Charcuterie Room is an ideal way to start, a dedicated space housing an extensive selection of artisanal cheeses from Italy and France, including a noteworthy 36-month-aged cheddar, alongside premium cured meats like the 18-month dry-cured Prosciutto di Parma.

The spread includes a variety of chilled antipasti and salads, with burrata as a highlight. A sushi and sashimi selection is also available alongside.

At the heart of Luce lies its Italian culinary tradition. One of the standout live stations features the Housemade Squid Ink Tagliolini, prepared tableside on a gueridon. Tossed with fresh river prawn and a fragrant kaffir crustacean bisque, the dish is finished in a signature Parmesan wheel for added depth and richness. The pasta station also offers choices such as Trofie, Cheese Ravioli, and Rigatoni, complemented by sauces like Guanciale Carbonara and slow-cooked Beef Bolognese.

From the live stations, the Brandy and Mustard Marinated Angus Beef Striploin is a notable highlight, served alongside indulgent open flame bone marrow, green asparagus, vine tomatoes, and a brandy rosemary sauce.

Rotational roasts add variety, including Louisiana Style Barbecue Pork Ribs with Grilled Pineapple and Pollo Limone, featuring free-range chicken marinated with Cajun spices and finished with a lemon-and-mushroom cream sauce.

Oven Baked Sustainable Barramundi

Amongst the Italian specialities, channelling the essence of coastal Italian cuisine, the Sicilian-style Whole Branzino, presented as an oven-baked sustainable barramundi, was moist and tender, scrumptious with capers, tomatoes, olives, and perfectly cooked potatoes that brought everything together beautifully.

Comforting classics such as Il Caciucco di Mare, a robust mixed seafood stew, and Frecanto di Verdure, a full-bodied vegetable medley brimming with the vibrant flavours of black olives, oregano, capers, tomato, garlic, onion, and white wine.

Homemade Meatballs

For homely fare, the Homemade Meatballs in fresh basil and tomato marinara deliver familiar comfort. At the same time, the Ragout alla Genovese, featuring slow-braised Wagyu with durum wheat pasta, was a pleasing staple.

Signature Pork Lup Cheong e Gorgonzola Dolce Pizza

The Pinsa station dishes out freshly made pizzas that take centre stage, including a cross-cultural creation: the Chef’s Signature Pork Lup Cheong e Gorgonzola Dolce Pizza, where the savoury, smoky lup cheong is balanced by a cream-softened Gorgonzola.

Local favourites remain a strong draw, with Fraser House Signature Laksa and Grilled Chicken and Beef Satay continuing to impress, the latter particularly notable for its spice-forward marinade and aromatic depth.

Braised Pork Belly

The Asian selection features staples such as Mee Goreng, Dim Sum, and curries. However, the standout was undoubtedly the Braised Iberico Pork Belly with dried chilli and five spice, meltingly tender and richly flavoured.

Dessert Station

To conclude, the dessert station is nothing short of abundant. Expect a Valrhona Chocolate Fountain, an assortment of Nyonya kueh, and an elegant spread of cakes. The signature LUCE-misu is given its own dedicated live station, offering a decadent finale.

Edge @ Pan Pacific Singapore - Celebrates The Festive Season with Well-Loved Local and International Spread Alongside Festive Seasonal Creations

Celebrate the festive season at Edge at Pan Pacific Singapore with one of its most abundant spreads of the year. The line-up features festive seasonal creations alongside the restaurant's well-loved local and international offerings.

Traditional Roasted Whole Turkey, Maple-glazed Gammon Ham

At the Festive Carving Station, highlights include the Traditional Roasted Whole Turkey, classically paired with cranberry sauce, and a succulent, sweet-savoury Maple-glazed Gammon Ham served with zesty spiced pineapple marmalade.

Charcoal-grilled Grass-fed Lamb Leg

The Charcoal-grilled Grass-fed Lamb Leg rubbed with Ras El Hanout spice stood out for its heady, aromatic flavours. Alongside it was a Slow-roasted Tomahawk, finished with a final torching of the exterior to add an extra layer of char and smokiness.

We also tried an interesting take on Duck Confit, served with Savoy cabbage, that offered a comforting, well-balanced combination.

Roasted Duck, Maltose Honey-glazed Char Siew

For Asian roasts, both the Roasted Duck and Maltose Honey-glazed Char Siew impressed with their succulency and depth of flavour.

"Jiang Zheng" Red Snapper

"Bi Feng Tang" Roasted Chicken

Under Asian Delights, the "Jiang Zheng" Red Snapper was moist and tender, robustly flavoured with fermented bean paste chilli and crispy pork lard. A clear crowd-pleaser was the "Bi Feng Tang" Roasted Chicken, made moreish with crispy garlic and dried chilli.

Wok-fried Singapore Hokkien Noodles

My personal favourite was the Wok-fried Singapore Hokkien Noodles wrapped in Opah Leaf, fragrant and satisfying.

Sambal Berlado Turkey

The Taste of Malaysia section included a festive twist with Sambal Berlado Turkey, alongside comforting staples such as satays.

Over at the Indian Cuisine station, popular dishes like Butter Chicken and Lamb Biryani were well represented.

The Cheese and Charcuterie Station offered a wholesome assortment of cheeses, condiments, and handcrafted cold cuts, including Pan Pacific home-cured beef salami, Virginia ham, pastrami, mortadella, paprika lyoner, and Black Forest ham.

The highlight of the festive spread was undoubtedly the Dessert Stations, featuring a chocolate fountain, ice cream, and log cakes.

Upside-Down Pineapple Cake

The festive sweet creations were impressive, with standouts including Homemade Stollen, Minced Fruit Pies, and Raspberry Choux Puffs. The buttery Upside-Down Pineapple Cake was particularly memorable and a fitting end to the meal.

For this festive season, Sheraton Towers Singapore presents an extravagant buffet spread and a selection of festive takeaways featuring beloved holiday classics at The Dining Room.

Staying true to tradition, the symbolic Oven-roasted Christmas Turkey is a classic done right - golden-brown skin with succulent, tender meat.

You can also enjoy the BBQ Glazed Wagyu Rump, rich and flavourful, and the Citrus Tamarind-Glazed Semi Bone-in Gammon Ham, served with a bright pineapple sauce that lifts the overall profile.

Spicy Turmeric Coconut Turkey

For festive takeaways, The Dining Room introduces a bolder reinterpretation of the classic turkey: the Spicy Turmeric Coconut Turkey ($208). Inspired by traditional Singapore Malay flavours, it is served with tomato basmati rice, green bean kerabu, and mung bean crackers. Infused with turmeric, bird’s eye chilli, and rich coconut milk, it offers warm, familiar notes that will add depth and colour to your festive table.

Baked Brie En Croûte

One of my favourites was definitely the Baked Brie En Croûte. Prepared à la minute, the warm, oozy brie has a lightly caramelised, flaky exterior and is served atop crusty toast. Paired generously with honey and nuts, it was wonderfully decadent.

White Forest

Desserts were incredible. Classics such as Panettone, Almond Stollen, and Christmas Fruit Cake were beautifully executed, alongside more creative additions like the Spiced Pumpkin Meringue Tart and White Forest, a new creation featuring vanilla sponge and griottines cherries. Of course, no festive spread would be complete without a classic logcake, and their Crunchy Chocolate Praline Logcake proved to be a definite crowd-pleaser.
