Chui Huay Lim Teochew Cuisine (醉花林品潮轩) - Launches Teochew Muay Lunch with Exciting New Dishes

ChuyHuayLimDec24-21

After three months of renovation, Chui Huay Lim Teochew Cuisine (醉花林品潮轩) has reopened its first floor, unveiling a modern and elegant 188-seat dining space with a show kitchen. To mark this milestone, Consultant Chef Chan Ka Cheong, a veteran of Teochew cuisine, has introduced a Teochew 'Muay' Menu, offering both classic favourites and exciting new dishes — exclusively available for lunch daily from 11:30 AM to 2:30 PM.

ChuyHuayLimDec24-1
Teochew Braised Platter 4.5/5

We began our meal with the Teochew Braised Platter ($42), a delightful selection of large pig intestines, pig trotters, goose web, and squid. Each ingredient is braised individually in a rich, aromatic broth made from over 20 carefully selected ingredients. The standout for me was the braised squid — a rare find in braised platters, adding a tender chewiness to the mix.

ChuyHuayLimDec24-5
Poached Threadfin served with Fermented Bean Paste 4.2/5

A nod to the fishermen of Shantou, the Poached Threadfin served with Fermented Bean Paste ($8.80 per 100g) poaches fresh threadfin in a light broth of salt water, ginger, and spring onion, preserving its delicate sweetness and buttery texture. The real magic happens when you pair the tender fish with the Puning fermented bean paste sauce, which adds a deep umami richness to the dish.

ChuyHuayLimDec24-6
Teochew Puning Fermented Bean Chicken 5/5

A crowd favourite, the Teochew Puning Fermented Bean Chicken ($13/$26/$48) features kampung chicken slow-cooked in a braising sauce made from Puning soybeans, ginger, spring onion, and pandan leaf. The highlight is undoubtedly the braising sauce — a rich, aromatic concoction that perfectly complements the tender chicken. This dish is a must-order.

ChuyHuayLimDec24-9
Preserved Radish Omelette 4.5/5

The inch-thick Preserved Radish Omelette ($7) is made using premium Chaoshan radish, which is stir-fried with fragrant garlic and pork lard before being whisked into the egg mixture. The result is a thick, fluffy omelette with a satisfying bite in every mouthful.

ChuyHuayLimDec24-14
Puning Beancurd 3.5/5

This speciality Puning Beancurd ($7) from Chaoshan is handcrafted by a Chinese artisan, ensuring a silky smooth texture inside and a crispy golden crust outside. It's served with a flavourful seasoning dip of Chinese chives, salt, sesame oil, and white pepper, elevating its delicate, nutty taste.

ChuyHuayLimDec24-15
Hand Minced Pork Patty Steamed with Aged Preserved Radish 4.2/5

The Hand Minced Pork Patty Steamed with Aged Preserved Radish ($11) features an Iberico pork patty chopped by hand and mixed with prawn, 20-year-aged preserved radish, and water chestnut. The combination offers a juicy, umami-packed bite with a delightful crunch from the water chestnuts.

ChuyHuayLimDec24-17
Chaoshan Aged Preserved Radish, Conpoy and Pork Porridge 4.8/5

To complete the Teochew porridge experience, we had the Chaoshan Aged Preserved Radish, Conpoy, and Pork Porridge ($7.50). Made with Wuchang rice, known for its exceptional quality and firm texture, the porridge is flavoured with Japanese dried scallops, aged radish, and Iberico pork. This dish takes a humble comfort food and turns it into an indulgent delight.

Chui Huay Lim Teochew Cuisine successfully marries tradition with modernity, offering a revitalised dining space while staying true to its Teochew culinary roots. Whether you're a Teochew porridge lover or new to the cuisine, the Teochew 'Muay' Menu is an authentic and comforting experience that is worth revisiting.

Note: This is an invited tasting.

Known for its refined Cantonese cuisine, Li Bai’s offerings this year are both traditional and creative, featuring premium ingredients presented with flair.

LiBaiCNY25-5

LiBaiCNY25-9
Crispy Eel, Australian Lobster and Hamachi Yusheng 4/5

Li Bai kicks off the celebration with a visually stunning Crispy Eel, Australian Lobster, and Hamachi Yu Sheng. Designed like a vibrant garden with an intricate snake motif in the centre, this dish pays homage to the Year of the Snake. The medley of crispy eel, succulent lobster, and fresh hamachi adds both texture and flavour, while the festive toss promises a year of abundance and prosperity.

LiBaiCNY25-13
Sauteed Bird's Nest with Crab Roe 4.2/5

The Sauteed Bird's Nest with Crab Roe is a winner for a nourishing and comforting start. The crab roe infuses the dish with a burst of umami, enriching the already delicate flavours of the bird's nest. This soup strikes a fine balance between indulgence and subtlety, making it a highlight for those who love refined Cantonese soups.

LiBaiCNY25-16
Steamed Alaskan King Crab with Egg White 4.5/5

A standout dish, the Steamed Alaskan King Crab with Egg White, combines the meaty Alaskan King Crab's sweetness with the steamed egg white's silkiness. Enhanced with a drizzle of superior soya sauce, this dish is luxurious yet comforting, showcasing Li Bai's ability to highlight the natural flavours of premium ingredients.

LiBaiCNY25-18
Braised 27-head South African Dried Abalone with Dried Oyster 4.5/5

The Braised 27-Head South African Dried Abalone with Dried Oyster is a true delicacy. The abalone is perfectly braised to tender perfection, paired with a flavourful sauce and complemented by the richness of dried oysters. The addition of greens adds a touch of freshness to balance the dish's richness. It is an excellent choice for those seeking a taste of indulgence this festive season.

LiBaiCNY25-24
Grilled Eel Claypot Rice with Chinese Sausage and Dried Shrimp 4.2/5

Paying tribute to the Year of the Snake, Li Bai presents Grilled Eel Claypot Rice. The eel's snake-like appearance makes it a symbolic addition to the menu. The eel is grilled to perfection over fluffy, fragrant rice and enhanced with savoury Chinese sausage and dried shrimp flavours. The crispy edges of the claypot rice add a delightful textural contrast, making this dish a comforting favourite.

LiBaiCNY25-30
Double-boiled Snow Fungus, Dried Apricot and Basil Seed 4.2/5

Refreshing and light, the Double-Boiled Snow Fungus with Dried Apricot and Basil Seed is an ideal dessert to cleanse the palate after a rich meal. The dried apricot's fruity sweetness complements the delicate snow fungus, while the basil seeds add a unique texture.

LiBaiCNY25-32
Nian Gao, Water Chestnut Cake 4/5

Rounding off the meal, the Nian Gao and Water Chestnut Cake are delightful treats. The Nian Gao is chewy and subtly sweet, symbolising progress and growth, while the Water Chestnut Cake is light and refreshing, providing a satisfying conclusion to the festive feast.

Li Bai Cantonese Restaurant delivers a stellar Lunar New Year dining experience with its thoughtfully curated menu of traditional and innovative dishes. Highlights like the Steamed Alaskan King Crab, Braised 27-Head South African Dried Abalone, and Grilled Eel Claypot Rice showcase the restaurant's finesse in elevating classic Cantonese flavours. Whether dining in or celebrating with takeaway, Li Bai is an excellent choice for ushering in a prosperous Year of the Snake.

Freshly-Harvested Seafood

One of the most popular buffet stations was definitely the spread of Freshly-Harvested Seafood, which featured Maine Lobsters, King Crab Leg, Snow Crab, Oysters, Black Mussels, Gong Gong and more. All the seafood we tried was fresh and sweet, particularly the creamy Oysters, plump King Crab Legs and crunchy Prawns.

IMG_7612
Sushi Rolls

Next to the Freshly-Harvested Seafood, you will also be able to find a number of Sushi Rolls alongside Japanese sides of seaweed, tamago and more.

IMG_7621
Cheese Board

If you are a cheese lover, your eyes will definitey light up at the Cheese Board corner. The myriad of cheeses, condiments and crackers will surely satisfy.

IMG_7671
Cold Cuts and Salads

The beautifully plated Cold Cuts and Salads boards offered dishes such as Smoked Salmon, Prosciutto, Beef Salami, Truffle Somen and Salmon Avocado.

IMG_7637
Hot Selections

Moving down the buffet line, diners will find a range of Hot Selections as well.

IMG_7623
Cheesy Lobsters

On top of the fresh seafood, this corner also featured many seafood dishes, such as the Cheesy Lobsters.

IMG_7645
Herbal Prawns

The Herbal Prawns had a comforting broth base that we enjoyed.

IMG_7648
Soft Shell Crab

I would highly recommend trying the Soft Shell Crab. The meaty crabs were fried perfectly crunchy without being oily.

IMG_7649
Wellness Rice

While we typically avoid having too much carbs at buffets, I absolutely loved the Wellness Rice. As unassuming as it looked, it was generously studded with mushrooms, corn, goji berries and pine nuts. I thoroughly enjoyed how clean yet flavourful it tasted.

IMG_7651
Roasted Pork Belly

Before trying out the Festive Roasts, we also tasted the classic Chinese roasts, including Roasted Pork Belly and Roasted Duck.

IMG_7676
Pan-Seared Foie Gras

A key buffet highlight is dishes prepared à la minute, such as the Pan-Seared Foie Gras and Pasta Alla Ruota. The Pan-Seared Foie Gras was a crowd favourite, served on a wedge of croffle with sweet fig.

IMG_7681

The Festive Roasts station was another noteworthy one, featuring freshly sliced Slow Roasted Bulgogi Glazed Prime Rib, Traditional Roast Turkey and more.

IMG_7699
Christmas Desserts

Fans of sweets would be impressed by the room full of Christmas Desserts! It had everything you can think of, from various flavours of log cakes, tarts, cup desserts, etc.

IMG_7749
Chestnut Roulade & Apricot Compote

Similarly, there was also a live dessert station for the Chestnut Roulade & Apricot Compote.

IMG_7709
Christmas Desserts

The Dining Room is also suitable for bigger group meals, and their Festive Buffet would be an excellent option for the upcoming year-end gatherings.

Resplendent Reunions at Sheraton Towers Singapore

LiBai35

Sheraton Towers Singapore celebrates the Lunar New Year with a line-up of reunion feasts from 2 January to 8 February 2020. From traditional Cantonese cuisine with a selection of Chinese set menus to the casual but lavish buffet spread, you can also opt for festive takeaway treats to enjoy your reunion in the comfort of home.

Served in set menus and available for takeaway as well, Li Bai Cantonese Restaurant has created a new “Yu Sheng Loh Hei” Platter. To enhance the textural enjoyment of the yu sheng, Coral clams and sea whelk are added.

LiBai47

LiBai49
Coral Clams Yu Sheng 3.8/5

Coral Clam Yu Sheng Platter ($98/$188) features coral clam atop an array of ingredients such as yam, sweet potato, white radish, carrot, pickled ginger and pomelo.

LiBai53
Salmon Roe and Seawhelk Yu Sheng 3.8/5

A more lavish version will be Salmon Roe and Sea Whelk Yu Sheng Platter ($118/$208) that comes with an additional serving of salmon roe and succulent sea whelk.

LiBai9
Double-boiled Bird’s Nest Soup 3.8/5

Highlights of the set menu include this nourishing Double-boiled Bird’s Nest Soup with Fish Maw, Chicken and Morchella Mushrooms.

LiBai36
Braised Abalone, Stuffed beancurd Skin, Dried Oyster 4/5

Shaped like a yuanbao, I like how the flavour and texture of each individual ingredient - Abalone, Beancurd Skin and Dried Oyster, are being bound together by the braising sauce. Black Moss is added for the auspicious purpose.

LiBai13
Sauteed Lobster Claw, Prawns with Broccoli 3.5/5

Another dish as part of the menu to denote happiness is the Sauteed Lobster Claw, Prawns with Broccoli. The addition of the plump lobster claws to the succulent prawns seems to be a display of abundance and prosperity.

LiBai24
Crispy Roasted Chicken with Black Truffle 3.8/5

For a touch of modernity, Crispy Roasted Chicken is served with Black Truffle gravy. With the skin so beautifully crisped and meat that moist and tender, it might be better to appreciate the meat at it is.

Price starts from $888++ for a table of 10 persons. For bookings and enquiries, please call (65) 68395845/32 or email catering@sheratonsingapore.com.

For festive takeaways, other than the new Yu Sheng options, Li Bai Cantonese Restaurant has also curated a couple more new auspicious delights alongside traditional favourites.

LiBai4
Lotus Seed Cake with Preserved Meat, Lily Bulb, Chinese Yam & Dried Shrimp 4.8/5

Available for dine-in and takeaway, one of my favourite festive treats is this Lotus Seed Cake with Preserved Meat, Lily Bulb, Chinese Yam & Dried Shrimp ($52). With lotus seed and lily bulb mixed with alongside the Chinese yam to pump up the texture and flavours, each bite is full of surprises and definitely a lot more moreish than the traditional version.

LiBai18
Water Chestnut Cake with Osmanthus 4/5

To balance all the richness of the highly-flavoured savoury dishes, Water Chestnut Cake with Osmanthus ($50/order) is perfect to go along with a cup of Chinese tea.

The Dining Room will also be holding a special Chinese New Year Eve Dinner Buffet on 24 January 2020.

LiBai42
DIY salad with Chicken Bak Kwa and Pok Chui

To complete the experience, you can create your own salad yu sheng at the DIY station with toppings like chicken bak kwa and pok chui (crispy crackers).

LiBai7
Ngoh Hiang Salad with Pineapple and Cucumber

Other small bites include Ngoh Hiang Salad with Pineapple and Cucumber.

LiBai6
Black Pepper Crab Meat Timbale with Avocado and Chives

Indulge in petite but premium Black Pepper Crab Meat Timbale with Avocado and Chives.

LiBai28
Black Sesame Fried Rice with Chinese Sausage, Asparagus and Tobiko 4.5/5

Look out for the belly-warming Black Sesame Fried Rice with Chinese Sausage, Asparagus and Tobiko. Brimming with flavour and texture from the savoury and chewy Chinese sausage, saltish Tobiko, nutty black sesame, crunchy asparagus and of course, the fried rice itself, this dish is such a pleasure to tuck into.

LiBai32

You can also look forward to dishes such as Prosperity Clay Pot featuring an ensemble of premium ingredients including baby abalone, baby lobster, dried scallop, XO Chinese sausage and roasted pork belly, Four Treasure Soup prepared with fish maw, sea cucumber, shredded abalone and crabmeat, Spicy Szechuan Chicken, and Glutinous Rice with Chicken, Shiitake Mushroom and Chinese Sausage.
