DOMO Modern Japanese @ Fairmont Hotel - Refined Japanese Cuisine with a Contemporary Twist

DOMO Modern Japanese may be just over a year old, but it’s already making its mark on Singapore’s dining scene with its contemporary take on Japanese cuisine. Named after the Japanese expression “Domo Arigatou” (“thank you”), the restaurant combines Japanese techniques with subtle European influences in a refined yet approachable setting.

Leading the kitchen is Chef Rose Ang, whose 29 years of culinary experience include working with Nobu Hospitality across Europe. Her global experience is reflected throughout the menu, where Japanese flavours are thoughtfully complemented by European touches, resulting in dishes that are balanced, elegant and never overcomplicated.

We started with the Salmon Tataki ($22), lightly seared and served with Dijon miso sauce and a balsamic glaze. The gentle smokiness from the aburi edges complements the rich salmon beautifully. At the same time, the Dijon miso adds a savoury depth before the balsamic cuts through with just enough acidity to keep every bite balanced. It’s a great introduction to Chef Rose’s signature approach of marrying Japanese techniques with European influences.

The Chawanmushi ($18) arrives generously filled with prawn, crab meat and ikura. Seafood lovers will appreciate its natural sweetness, though diners more sensitive to stronger seafood flavours may find it slightly fish-forward. The silky steamed egg provides a comforting base that lets the fresh seafood shine.

Instead of the usual sashimi platter, we opted for the Sashimi Salad with Nashi Pear Dressing ($24), and it turned out to be one of our favourite dishes. The combination of fresh sashimi, crisp greens and crunchy nashi pear created a refreshing contrast of textures, while the dressing was light and well-balanced without being overly sweet.

The Sashimi Taco ($18 for 2 pieces) comes in different variations, and we tried both the salmon and tuna versions. The Salmon Taco, paired with tomato shiso salsa, was pleasant and approachable, though the flavours leaned toward the milder side. We thought a spicy variation would give it a little more excitement.

The Tuna version, on the other hand, was outstanding. The combination of tuna, avocado and feta created a richer and more balanced flavour profile, making this our preferred choice between the two.

For mains, we had the Snow Crab & Tobiko Baked Rice ($48), which was generously topped with sweet snow crab, while the rice carried a subtle ginger fragrance that complemented the seafood without overpowering it. Comforting, satisfying and perfect for sharing, this is a dish we’d happily order again.

The drinks menu offers a surprisingly good selection at reasonable prices. We tried the Domo Sour ($16), a whisky-based cocktail with bitters and yuzu. Smooth, citrusy and refreshing, it paired well with the seafood dishes throughout the meal.

Chef Rose recommended her signature Sticky Ginger Date Pudding ($16), served with soy toffee sauce and vanilla ice cream. Replacing salt with soy sauce was an interesting touch, adding subtle savouriness to the dessert. The pudding itself reminded us of a Chinese red date and ginger steamed cake, while the vanilla ice cream made it richer and more indulgent.

For something lighter, we also tried the Chilled Mango Gazpacho with Yuzu Shiso Pomelo ($22). Think of it as a refined take on the classic Hong Kong mango pomelo dessert, elevated with fragrant shiso and yuzu. Refreshing and not overly sweet, it was a lovely way to end the meal.

Beyond the food, we were pleasantly surprised by the restaurant’s spacious layout. DOMO features four private dining rooms with minimum spend starting at just $80 per person, making it a great option for celebrations, corporate gatherings, or intimate dinners. Combined with its elegant ambience and thoughtfully curated menu, DOMO delivers a dining experience that feels polished yet welcoming.

Beyond the signature dishes we tried, DOMO offers an extensive à la carte menu featuring sashimi, sushi, robata-grilled seafood and meats, noodles and rice, giving diners plenty of reasons to return and explore more of the menu. For those seeking a more curated experience, Chef Rose also offers a Signature Tasting Menu from $88++, with bespoke omakase experiences starting at $300++.

Meadesmoore @ Boon Tat Street - World’s Best Wagyu Striploin Now Served Exclusively Here

Modern steakhouse Meadesmoore has recently reopened its doors at Boon Tat Street, unveiling a refreshed space alongside an even more exciting menu. Having established itself as one of Singapore’s leading steakhouses since its debut in 2021, the new menu underscores Meadesmoore’s commitment to sourcing-driven dining, with a greater emphasis on variety, provenance and the versatility of beef.

Full-Blood Wagyu Striploin from Takeda 10

Among the highlights are two cuts exclusive to Meadesmoore. The first is the Full-Blood Wagyu Striploin from Takeda 10 ($220/400g), named in honour of Wagyu breeding pioneer Shogo Takeda. Produced by Australia’s renowned Pardoo Wagyu, this exceptional cut was crowned World’s Best Grain-Fed Sirloin at the World Steak Challenge 2025. Raised in the pristine coastal environment of Western Australia’s Pilbara region, the cattle benefit from stringent breeding and feeding programmes that produce remarkable marbling and depth of flavour.

Full-Blood Wagyu Striploin 4.8/5

Simply grilled over charcoal and basted with beef tallow, the Full-Blood Wagyu Striploin developed an outstanding caramelised crust with pronounced char, contrasting the buttery richness of the meat.

Dairy Wagyu Tri-tip 4.5/5

The second exclusive is the Dairy Wagyu Tri-tip ($75/150g) from Hokkaido, Japan. Cut from the hindquarter of Hokkaido dairy cattle, this richly marbled steak offered a firmer, more muscular bite and a deeper, more developed beef flavour than conventional Japanese Wagyu. While I appreciated its robust character, I preferred the Full-Blood Wagyu Striploin, whose deep caramelised exterior harmoniously complemented the meat’s unctuous richness.

Chef’s Cut 4.2/5

Working with lesser-known cuts is also central to Meadesmoore’s philosophy. We also tried the Chef’s Cut, featuring the intercostal meat from a Wagyu Tomahawk. Presented as skewers, this cut delivered the most pronounced beefy notes among the three, almost like indulging in an exceptionally luxurious beef satay.

The accompanying sauces were great. The French Butter was fragrant and herbaceous, adding richness and a silky mouthfeel without overwhelming the beef’s natural flavour. Meanwhile, the velvety Bourguignon sauce further amplified the steak’s savoury depth with its robust, wine-infused character.

Roasted French Scallop 5/5

The evolved menu also creates room to showcase beef in more diverse and creative ways, such as the Roasted French Scallop ($18) topped with house-made dry-aged beef XO sauce. The scallops were delicious, charred on the edges, coaxing out their natural sweetness, which was further complemented by skordalia and charred leeks. Made with extra-dry-aged Wagyu chuck and rendered beef fat, the deeply savoury beef XO sauce delivered an intense hit of umami, adding depth to the dish’s creamy, sweet profile.

Peruvian White Asparagus with Vichyssoise Emulsion 4.5/5

The side dishes proved to be stars in their own right. The Peruvian White Asparagus with Vichyssoise Emulsion ($18) offered a clever reinterpretation of the classic cold potato and leek soup. The delicate sweetness of the asparagus paired effortlessly with the chilled emulsion.

Mac & Cheese 5/5

The Mac & Cheese ($22) was a standout. Using oversized giant fusilloni, the pasta offered a satisfyingly chewy texture that allowed the wheaty flavour to linger with every bite. A blend of Comté, Fourme d’Ambert, Gruyère and Grana Padano created a luscious sauce that coated the pasta without becoming heavy, enticing my palate with a subtle hint of blue cheese funk.

Vodka Baba 3/5

For dessert, we had the Vodka Baba ($18). Beneath the flambéed meringue lay refreshing yuzu sorbet and a ginger-apricot compote. The combination reminded me of a Lemon Tart. While the flavours were enjoyable, I found the baba itself rather dry and crumbly. Personally, I would still choose a classic Rum Baba served simply with lightly whipped cream, where the spirit-soaked cake remains the true star.

A highlight from the barbecue selection was the Caramelised Barbecued Pork ($38). Executed with finesse, the cut struck a desirable balance between lean meat and a hint of fat, resulting in a tender yet structured bite. Served theatrically on a hot stone, the sauce was poured tableside, caramelising upon contact to form a lightly charred, glossy coating. Importantly, the glaze leaned towards a restrained sweetness, allowing the natural flavours of the pork to shine.

Chef Dicky’s expertise truly came through in the Baked Western Australian Lobster. The lobster was impeccably cooked, retaining a succulent, bouncy texture. Cloaked in a creamy mild cheddar cheese sauce, the dish leaned into a rich, indulgent profile, further layered with the earthy notes of morel mushrooms and the sweet-savoury nuances of Chinese sausage. This East-meets-West composition was luxurious yet thoughtfully balanced, delivering complexity in every mouthful.

Equally memorable was the 48 Hours Slow-cooked Pork Belly in Aged’ Hua Diao’ ($20/pax). The aged Hua Diao lent a deep, aromatic richness to the sauce, enhancing the overall depth of flavour. Accompanied by soft, fluffy mantou, it invited diners to savour every last drop of the luscious gravy.

The rose cookie added a subtle floral finish, rounding off the meal on a gentle and uplifting note.

Tong Le Private Dining’s latest seasonal offerings demonstrate a confident interplay between tradition and innovation, in which classic Chinese flavours are reinterpreted with finesse and creativity. From refined soups to indulgent mains and thoughtful desserts, the experience reflects Chef Dicky’s commitment to delivering a cohesive and elevated dining journey.

Casa Vostra @ Tampines Mall - Opens 3rd Outlet in The East with Exclusive New Dishes

Cult favourite Italian casual dining concept Casa Vostra continues its expansion across Singapore with the opening of its third outlet at Tampines Mall on 15 May 2026. Marking its first foray into the East, the 58-seater space brings the brand’s warm, approachable take on Italian dining closer to heartland diners. Even more enticing, the Tampines outlet debuts a selection of new dishes, giving East-side diners early access before they roll out to other locations.

Frittatina alla Scamorza

We started our meal with the Frittatina alla Scamorza ($11), a comforting antipasti that delivered both texture and flavour. Crisp and golden on the outside, the deep-fried parcel reveals a molten centre of scamorza cheese, a southern Italian cow’s milk cheese known for its gentle smokiness and stretchy consistency. The addition of honey and a touch of lemon brightens the richness, while thyme lends a subtle herbaceous lift. It’s a simple yet satisfying starter that sets the tone for the meal.

Agnolotti al Branzino e Gamberi

Moving on to pasta, the Agnolotti al Branzino e Gamberi ($27) offers a lighter, seafood-forward option. The delicate pillows of agnolotti are filled with a mixture of sea bass and paired with Argentinian prawns, bringing a natural sweetness to the dish. Tossed with capers and San Marzano Tomato DOP, the sauce is gently tangy without overpowering the seafood. Finished with fresh parsley and a drizzle of extra virgin olive oil, the dish is clean, elegant and well-executed.

Luicano’s Spaghetti Alla Carbonara

For something more indulgent, we tried Luciano’s Spaghetti alla Carbonara ($21). The pasta is cooked to a satisfying al dente bite and coated in a rich, creamy emulsion of egg yolk, Pecorino and Parmigiano Reggiano. The guanciale adds a savoury depth with its rendered fat and crisp edges, enhancing the overall flavour profile. While undeniably comforting, the richness can feel a little heavy after a few mouthfuls, making it a dish best shared.

Pizza (Half-And-Half)

One of Casa Vostra’s highlights is its Half-and-Half Pizza option, perfect for indecisive diners. We opted for a combination of the Margherita Affumicata ($19++) and Prosciutto e Nduja ($24++). The Margherita Affumicata builds on the classic with layers of smoked provola and a housemade smoked mayonnaise, adding a subtle smokiness that elevates the familiar combination of San Marzano tomatoes, fiordilatte and fresh basil. On the other hand, the Prosciutto e Nduja delivers a bolder profile, pairing prosciutto cotto with spicy Calabrian nduja, pickled onions and fried sage. The interplay of creamy, smoky, tangy and spicy elements makes this half particularly more complex and flavour-packed. Together, the half-and-half format offers both comfort and excitement in a single pie.

Tiramisu

To round off the meal, the Tiramisu ($13) provides a classic finish. Layered with mascarpone cream and coffee-soaked savoiardi, the dessert strikes a balanced note between sweetness and bitterness. The use of decaffeinated coffee ensures a milder flavour, making it accessible for all diners while still delivering that familiar tiramisu character.

Ballini and Aperol Spritz

Complementing the meal, the Bellini ($16) made with Botter Prosecco N.V. and fruit purée is light and refreshing. At the same time, the Aperol Spritz ($17) delivers its signature bittersweet citrus notes, perfect for pairing with the richer dishes.

Casa Vostra’s Tampines debut successfully brings its signature casual Italian charm into the neighbourhood, with the added draw of exclusive new dishes. The menu strikes a balance between comforting classics and inventive touches, making it a reliable spot for both casual meals and group gatherings. With its approachable pricing, welcoming ambience and thoughtful offerings, it’s easy to see why Casa Vostra continues to resonate with diners across the island.

Racines @ Sofitel Singapore City Centre - Flavours From The Heart

Racines at Sofitel Singapore City Centre unveils a brand-new menu, “Home: Flavours from the Heart”, introducing Straits heritage cuisine inspired by memory, migration, and home kitchens. Racines’ Asian repertoire has long been established, and this latest chapter builds on that foundation with more than 20 Asian and Straits-inspired dishes.

We started with two appetisers. Tahu Telur ($18) is a classic Indonesian-style tofu omelette featuring fried tofu and egg, skilfully formed into a cylindrical shape, crisp on the outside with a soft, tender core. Topped with shredded cucumber and turnips for a refreshing contrast, the rich, robust peanut sauce complemented the dish without overwhelming it.

Penang Fruit Rojak 4.5/5

The Penang Fruit Rojak ($20) combines crunchy jicama, cucumber and pineapple with crispy dough fritters, crispy cuttlefish and peanuts. The dough fritters were satisfyingly chunky, with a good amount of crunch, and everything was evenly coated in a well-balanced Penang-style shrimp dressing. I would have loved a little more ginger flower to further elevate the dish’s distinctive floral fragrance.

Nyonya Assam Curry Snapper 4.8/5

For mains, the Nyonya Assam Curry Snapper ($38) stood out as one of the signature dishes. Featuring fried snapper served in a tangy tamarind-based assam curry, it comes accompanied by okra, eggplant and beancurd puffs. The restaurant prepares its assam paste from scratch, resulting in a robust and moreish curry that left a strong impression. Crispy rice-paper “scales” added texture to the fish, though even without them, the snapper was expertly fried with a crisped exterior while retaining its tender, moist flesh.

The Sweet & Sour Pork ($38) was a crowd-pleaser. The pork morsels were tender, with a good balance of fat and lean, while the batter coating remained light and not overly thick. The sauce was delectable without being excessively sweet.

Singapore Style Hokkien Mee 5/5

Singapore Style Hokkien Mee ($28) remains a mainstay on the menu and is truly delicious. Yellow noodles and rice vermicelli bathed in a full-bodied prawn and pork broth delivered impressive depth of flavour. Brimming with roasted pork, tiger prawns and squid, every bite was mouth-filling and satisfying, with a gentle hint of wok hei. A squeeze of calamansi and a dollop of sambal belacan further amplified the flavours.

On the other hand, I found the gravy in the Wok-Fried Beef Hor Fun ($28) slightly too heavily seasoned and rich for my preference. That said, the wok hei was impressive, and the beef slices were pleasingly tender.

For dessert, we had the Cempedak Creme Brulee and Pandan Coconut Jelly. While the creme brulee offered a delightful fusion of French technique and local flavours, I preferred the pandan coconut jelly for its lightness and refreshing finish, making it a more fitting conclusion to the meal.
