A definite showstopper of the season is the spectacular 88cm Celestial Auspicious Yu Sheng ($1,288++, serves up to 10), dramatically crowned with a 1.2m mythical horse in mid-leap, symbolising strength, vitality and boundless possibilities for the year ahead. Beyond its visual impact, the Yu Sheng impresses with its lavish selection of premium ingredients – abalone, rock lobster, ikura, crispy shredded dried Hokkaido scallop, salmon sashimi, crispy fish skin and auspicious condiments – tossed in a fragrant golden peach–passion fruit sauce and shallot oil. The combination delivers both textural contrast and a well-balanced sweet-tangy finish, making it a festive centrepiece worthy of the occasion.

The abalone is equally impressive, cooked to tender perfection with a molten centre, a clear testament to the chef's mastery of this prized ingredient. The Traditional-boiled Chicken Fish Maw Soup was nourishing and comforting, with a clean, homely broth that warmed the palate. However, for a Chinese New Year menu, the soup could have been more luxurious, with deeper flavours or more premium ingredients to better reflect the festive occasion.

A luxurious seafood medley, the Pan-fried Scallop with Minced Shrimp, Crab Meat and Crab Roe delivered on visual appeal and indulgence. The scallop was plump and juicy, nicely complemented by the rich crab meat and crab roe sauce. While the dish was celebratory in spirit, I only wished the umami of the crab roe could come through more prominently to elevate the overall depth of flavour.

Making its takeaway debut this season, the Abalone Eight Treasure Duck ($208) is a true showstopper and luxurious centrepiece. The tender duck is slow-braised with an impressive array of ingredients – abalone, sea cucumber, conpoy, pork, chestnut, mushroom and lotus seed. Rich in both flavour and symbolism, the dish embodies unity, prosperity and heartfelt blessings, making it perfect for meaningful reunion meals and festive gifting.

Not to be missed is the Housemade Soya Beancurd, a standout dessert to end the meal on a gentle note. Wobbling smooth and silky, it carried a distinct soya fragrance that was both comforting and elegant – a quiet reminder that sometimes simplicity leaves the most profound impression.

Wan Hao Chinese Restaurant (萬豪軒) @ Marriott Tang Plaza Singapore - A Reunion of Bountiful Prosperity

Set within Singapore Marriott Tang Plaza Hotel, Wan Hao Chinese Restaurant once again ushers in a luxurious Lunar New Year celebration. Renowned for its refined Cantonese cuisine and timeless sophistication, the restaurant marks the season with an opulent showcase of premium ingredients, meticulous craftsmanship, and exquisite flavours. This Year of the Horse, Wan Hao presents a series of curated multi-course menus and festive specialities that blend tradition with contemporary finesse.

We had the pleasure of experiencing the Celebrations of Abundance 6-Course Set Menu ($268.80++ per person, for 5-10 persons), served with their Tea-Smoked Grain-Fed Duck in place of the BBQ Suckling Pig with soft crepe. Though it comes at a premium, every course demonstrates careful curation, precise techniques and top-tier ingredients. From start to finish, each dish left a lasting impression.

Wan Hao Prosperity Yu Sheng 4.2/5

We began our dinner with the Wan Hao Prosperity Yu Sheng. Trust me when I say that this Yu Sheng is really loaded with lots of premium seafood, including Rock Lobster, Hokkaido Scallop, Japanese Yellowtail, Sturgeon Caviar, Salmon and Salmon Roe. Impressively presented in the shape of a horse for the media tasting, the enthusiastic Lo Hei was a festive start to the evening.

Next came the Tea-Smoked Grain-Fed Duck, a meaningful dish as duck symbolises good luck and good health during the Lunar New Year. Wan Hao’s rendition is elegantly conceptualised and perfectly executed. The duck is slowly marinated, then air-dried for 24 hours to achieve that crispy, golden skin and tender meat. It is finally finished with an aromatic smoke of osmanthus, Long Jing tea leaves, and sugarcane, giving it a subtly sweet, floral fragrance that is fantastic. This duck is also available for takeaway ($78 nett for half, $138 nett for whole).

The Wan Hao Bird’s Nest Eight Treasures Pot is nothing short of impressive. What stood out immediately was the vibrant, collagen-packed broth. The pot was brimming with premium ingredients, featuring 5-Head South African Abalone, Sea Cucumber, Black Moss Dace Fish Bean Curd Skin Bag, Pork Tendon, Free-range Chicken, Japanese Shiitake Mushroom, Fish Maw, Prawns and more. Very indulgent and nourishing, I simply had to finish every drop of that delicious broth.

The Stewed Lobster with Trio Onion in Spicy Superior Light Soy Sauce was another beautifully presented dish. The lobster was succulent with plenty of meat, absorbing the savoury depth of the superior light soy sauce while still retaining its natural sweetness. It highlights both the lobster's freshness and the Chef’s skill in harmonising flavours.

Cantonese Style Claypot Rice 4.5/5

Many at my table eagerly anticipated this Cantonese-style Claypot Rice, and it certainly delivered. Fragrant and aromatic, the rice is first mixed with foie gras and Superior Light Soy Sauce, creating a rich, tasty base. It is then served with cured duck, Chinese sausage, and Hong Kong Chye Sim, resulting in a delicious rice dish that delivers comforting, familiar flavours.

Concluding on a strong note, the Trio of Desserts offers three sweet treats, each with its own delightful texture. The Red Bean Glutinous Rice Ball coated in shredded coconut was soft and satisfyingly chewy. At the same time, the Deep-Fried Sesame Ball with custard delivered the perfect contrast: crisp on the outside, warm and gooey within. Rounding off the trio, the Chilled Bird’s Nest with Snow Pear and Rock Sugar provided a light, refreshing, and icy finish.

Whether for family reunions or intimate celebrations, the menu delivers abundance and auspiciousness befitting the season.

Three of Chen's Kitchen's signatures anchor this set. The Mapo Tofu Original did not disappoint, delivering umami-packed flavours with silky tofu that carried the sauce beautifully.

The Sweet and Sour Barramundi was delectable overall, though the fried exterior on the leaner parts of the fish leaned slightly thicker than preferred, resulting in more crust than meat. The sauce also skewed a little too sweet for my palate.

On the other hand, the Mala Mayo Prawns were succulent, elevated by a coating of mala mayonnaise on the exterior that delivered an indulgent, creamy mouthfeel.

The Flavours of Fortune Combo ($298, serves 4–5 pax) is a wholesome yet luxurious spread of festive delicacies ideal for home celebrations. The set includes a Prosperity Lo Hei with Smoked Nordic Salmon and Sliced Abalone (large), as well as a thoughtful selection of mains and a dessert to round off the feast.

One standout from the set is a vegetarian rendition of Buddha Jumps Over the Wall ($98 à la carte). This meatless version was no less flavourful than its traditional counterpart. The slow-simmered medley of morel mushrooms, cordyceps flowers, shark fin melon, chestnut, shiitake and oyster mushrooms, carrot, radish, Shanghai greens, yam, and red dates resulted in a deeply nourishing dish for all.

The Braised Duck with Sea Cucumber in Orange Plum Sauce ($98 à la carte) is a returning favourite, elevated with a tangy orange plum sauce that adds a pleasant citrusy lift. That said, the portion I had was slightly dry despite the rich, flavoursome sauce, and the sea cucumber could have been more tender.

My favourite dish of the combo, and of the evening as well, was the Steamed Multigrain Rice ($58 à la carte). Every bite was deeply umami, enriched with Chinese sausage and an enjoyable mix of textures from chestnut, lotus seed, black-eyed peas, and savoury sakura shrimp.

Golden Treasure Seafood Pot 4.2/5

Among the popular takeaway items is the Golden Treasure Seafood Pot, brimming with premium seafood such as rock lobster, crab claw, scallops, and prawns. The shellfish broth was vibrant and robust. While most ingredients were well-cooked, the rock lobster was slightly overdone.

For something comforting and homely, the Fortune Herbal Chicken with Red Dates and Goji Berries ($68) delivered precisely that. The chicken was succulent, soaking up the gentle, nourishing flavours of the herbal broth.

A meatier option is the Honey-glazed Pork Ribs in Hawthorn Berry Sauce, served with deep-fried mini mantou ($68). The sauce was tantalisingly tangy and sweet, though the ribs didn’t take on the glaze evenly, leaving some parts a little bland and dry.

The Stir-Fried Tomato Garlic Prawn ($68 nett, serves 4–5 persons) injected the meal with joyous, nostalgic flavours. Succulent prawns were coated in a thick, tomatoey sauce fragrant with garlic, evoking a comforting taste of home.

Dessert was the Traditional Yam Paste with Pumpkin and Ginkgo Nuts, which was easily one of the best versions I’ve had in a long time—smooth, well-balanced, and a satisfying end to the meal.

All takeaway dishes require a three (3) working-day advance order. Customers can self-collect at White Rose Café from 2 February to 3 March 2026, from 11 am to 8 pm. Designed for diners seeking something more contemporary, the yu sheng is artfully shaped like an elegant fan, symbolising prosperity and good fortune. What truly stands out is the generous medley of evenly diced fresh fruits – strawberry, kiwi, blueberry, melon, dragon fruit and apple – lending natural sweetness, tang and vibrancy to every bite. The sauce, crafted from apple juice, ginger flower and sour plum, is well-balanced and uplifting, tying the ingredients together without overpowering them. Textural contrast comes from crunchy fried yams and carrot strips, pine nuts and crisp romaine lettuce. Completing this luxurious creation is a premium trio of abalone, raw salmon and lobster, making this a celebratory and indulgent way to kick-start the Lunar New Year feast.
