Amuse Bouche 5/5

The meal began on a high note with the Amuse Bouche, which featured a quartet of beautifully crafted bites that demonstrated a keen sense of balance and creativity. I started with the Foie Gras Terrine, which came piped into a crispy rice waffle. Infused with brandy, it was rich and luscious, doing a great job of whetting the appetite. The Octopus Carpaccio with White Shrimp followed, an exceptional pairing and meticulously plating of tender octopus carpaccio and creamy shrimp. The King Salmon Sashimi Spring Roll was light and refreshing, while the Japanese Sweet Corn Flan with Uni and Caviar delivered a bold, savoury-sweet finish that stood out for its intensity and creaminess.

Sous Vide Spiny Lobster 3/5

Next came the main appetiser, Sous Vide Spiny Lobster, with a White Miso Américaine Bavarois, Ikura, and Ume Jelly. It was aesthetically pleasing, but the texture of the lobster was slightly mushy at the ends. The Bavarois, despite being miso-based, turned out sweeter than expected, which slightly disrupted the overall balance.

Hokkaido Scallop 4/5

From the teppan counter came a perfectly seared Hokkaido Scallop topped with Wasabi Salsa and Caviar. The scallop was sweet and meaty, and the Wasabi Salsa gave it a bright lift that brought everything together.

Roasted A4 Iwate Wagyu 4.5/5

The main course featured Roasted A4 Iwate Wagyu, served with wasabi mashed potato and a Japanese egg yolk sukiyaki sauce. The beef was beautifully done, with enough fat rendered to bring out all its rich, deep flavours. The sukiyaki sauce, enriched with egg yolk, added a luscious umami boost, and I liked that the mashed potato had a rustic texture, which helped keep the dish grounded and not overly rich.

Nigiri 3.5/5

Following that was a sushi course with three types of Chef's selection Nigiri — Amberjack, Kinmedai, and Suzuki. The fish was fresh, and each piece offered a nice variation in texture and flavour, though I did find the rice just a little grainy in some bites.

The dessert was a wonderful finish. A bittersweet Matcha Mizu Chocolate paired with delicate homemade Wagashi and seasonal fruits. The chocolate was smooth and paired nicely with the strawberry, but the wagashi was the real highlight, one of the best I've had, soft with the right amount of sweetness, carrying the classic flavours of a Japanese sweet.

From now until 29 June 2025, Edge at Pan Pacific Singapore invites diners to savour the authentic flavours of Penang with its limited-time “Penang Hawker Fare” buffet.

This special edition is a collaboration with three renowned Penang hawkers: Chef Toon Chin Hye (Ah Soon Fried Oyster), Chef Chew Soon Hock (Swatow Lane Ice Kacang), and Chef Tan Pow Lai (Tan Kee Poh Piah), each bringing years of expertise to the table.

Penang Hawker Fare Buffet 4.5/5

Until 15 June 2025, guests can also meet these Penang chefs in person as they work alongside Edge’s culinary team to serve up authentic Penang favourites, all in addition to the restaurant’s extensive buffet lineup.

The buffet is priced at $118++ per adult and $59++ per child (ages 6 to 12), inclusive of free-flow soft drinks. It runs daily from 6pm to 10pm.

White Restaurant @ Suntec City - Teams Up with Malaysia's Souper Tang For A Special Parents' Day Set

White Restaurant, the homegrown brand renowned for its 'Original Sembawang White Beehoon', partners with Malaysia's Souper Tang for a heartwarming Parents' Day collaboration. Known for their award-winning nourishing soups, Souper Tang has curated 11 of their specialities for this exclusive menu, available à la carte and as part of a set across all White Restaurant outlets in Singapore from 29 April to 30 June 2025.

Collagen Ginseng Chicken Soup 4/5

The Special Parents' Day Set ($98) begins with one of Souper Tang's signature broths, Collagen Ginseng Chicken Soup. Fortified with collagen powder and ingredients like whole ginseng strips, fish maw, cordyceps flowers, dried scallops, goji berries, braised shiitake mushrooms, and a large chicken drumstick, the soup boasted a deep, comforting flavour. I particularly enjoyed how the chicken was thoroughly infused with the essence of ginseng. That said, considering it's meant to be a collagen soup, its light consistency didn't quite deliver the expected richness I typically associated with collagen broths.

Abalone Sauce Pork Tendon with Multi-Grains 4/5

Next came the Abalone Sauce Pork Tendon with Multi-Grains, a dish brimming with protein and nutrients. Served piping hot, the pork tendons were simmered in a rich, umami-packed abalone sauce and accompanied by fried tofu. The tendons were soft and tender, delightfully chewy without any gaminess. Pork slices were also added to provide extra flavour and bite.

Imperial Seafood Pot 2.5/5

Continuing the collagen-rich theme, the set includes Souper Tang's Imperial Seafood Pot with White Fungus, featuring scallops, sea cucumber, fish maw, tilapia fillet, mini shiitake mushrooms, and sweet peas. While the dish was packed with a plethora of ingredients and generally flavourful, the overall experience was slightly underwhelming, particularly the sea cucumber, which was unpleasantly rubbery and bland.

Fragrant Pu Er & Goji French Beans 4.5/5

My favourite dish of the set turned out to be the Fragrant Pu Er & Goji French Beans. Stir-fried with minced meat, olive vegetables, and a splash of Shaoxing wine, the French beans were crisp, umami-laden, and utterly moreish. The addition of smoky black Pu Er tea and black goji berries not only elevated the dish's nutritional profile but also added depth and aroma.

Supreme Seafood White Beehoon 4.5/5

The Special Parents' Day Set comes with free-flow white rice, but you can top up $20 to upgrade to White Restaurant's Supreme Seafood White Beehoon, their beloved signature dish enhanced with premium seafood such as asari clams, prawns, and fish slices. All dishes from the Parents' Day Set Menu are also available à la carte.

Maison Boulud @ Marina Bay Sands - New Executive Set Lunch Featuring Classic and Rustic French Dishes

Maison Boulud at Marina Bay Sands has recently refreshed its menu to pay greater homage to Chef Daniel Boulud's culinary philosophy. Diners can now experience more classic and rustic French dishes, prepared with seasonal ingredients. Alongside this, a new Executive Set Lunch Menu changes every few weeks.

Beets & Burrata 4.5/5

We started with two excellent appetisers — Beets & Burrata and Pâté en Croûte. The Beets & Burrata combined a milky, pillowy burrata with earthy, tart beets, sprinkled with toasted hazelnuts that added a delightful textural crunch and nutty flavour. The pairing with haricots verts was particularly interesting, echoing the freshness of the dish with crisp, snappy textures.

Pâté en Croûte 4.5/5

The Pâté en Croûte was delectable, featuring a blend of Iberico pork, foie gras Armagnac, apricot, and pistachio. I especially enjoyed the defined chunk of foie gras Armagnac embedded within the pâté — it boosted the mouthfeel with a creamy richness and released alluring notes of Armagnac in every bite, complemented by occasional crunches of pistachio and sweet apricot bites.

Sea Trout 4.2/5

For mains, the Sea Trout was simple but delightful just as much. Served with finely shredded Brussels sprouts, the fish was fatty, tender, and had a beautifully seared, crispy skin. A savoury lemon chicken jus further elevated its naturally robust flavour.

Coq Au Vin 4.2/5

The Coq Au Vin featured red wine-braised free-range chicken, served with chunky bacon, mushrooms, and gnocchi. The chicken had been braised overnight in a rich port and red wine concoction, resulting in a bold, intensely flavoured, beautiful reduction. A slight caramelisation on the chicken added another layer of complexity, while the mushrooms had thoroughly absorbed the richness of the sauce. The chunky bacon contributed smoky and savoury notes that rounded out the dish.

Duo of Artisanal Cheeses

Citron Pistache 4.5/5

For dessert, we selected the Duo of Artisanal Cheeses and Citron Pistache. I appreciated the inclusion of a cheese course — the cheeses were served with pickles, a raisin spread, and raisin toasts. Citron Pistache was perhaps the more exciting choice: a dome spiked with nutty Sicilian pistachio Chantilly and crunchy meringue, encasing a tangy lemon gel and ricotta gelato.

Madeleines

As a thoughtful gesture from the team, we were also treated to a serving of truly delicious petite Madeleines at the end of the meal — possibly the best I've had thus far. Warm and fluffy, each bite felt like a smile to the belly, ending the dining experience on a wonderfully comforting note

Nestled within the lush beauty of Gardens by the Bay's Flower Dome, Hortus offers diners a taste of the Mediterranean, surrounded by vibrant blooms and cool serenity. With its focus on fresh, vibrant sharing plates and rustic wood-grilled mains, Hortus presents an experience that goes beyond the food—especially with its newly launched Mediterranean Sharing Set Menu ($68++ per pax), which even includes complimentary Flower Dome admission and a buggy ride to and from the Main Entrance. The meal kicks off with an array of five sharing starters. The Hummus with Olive Oil and Paprika was an instant hit — creamy, nutty, and elevated by the earthiness of paprika and a generous drizzle of olive oil. It is paired beautifully with the warm, fluffy housemade pita. Equally delightful was the Muhammara, a roasted bell pepper and walnut dip that was slightly smoky, nutty, and tangy — a deliciously vibrant alternative to the classic hummus.

Fried School Prawns, Calamari, Whitebait with Lemon Aioli 4.5/5

Next up was the Fried Seafood Basket, featuring school prawns, calamari, and whitebait, all perfectly crispy and light, paired with a zesty lemon aioli. It was dangerously addictive, with each piece a burst of flavour and crunch.

Yellowtail Kingfish Crudo 4.8/5

The Yellowtail Kingfish Crudo was a standout among the starters. Dressed with bergamot and green olives and scattered with pomegranate seeds, it was refreshingly bright, delicately sweet, and brimming with Mediterranean sunshine.

Kingfish Collar with Cabbage and Fennel Salad and Nduja 4.2/5

Moving on to the mains, we tried the Kingfish Collar with Cabbage and Fennel Salad and Nduja. Grilled to crispy perfection on the outside while keeping the flesh moist and tender, the kingfish was livened up beautifully by a squeeze of lemon and the spicy kick from the nduja. The accompanying salad of cabbage and fennel provided a refreshing counterpoint.

Beef and Lamb Adana Kebab with Sumac Onions 4.2/5

We also sampled the Beef and Lamb Adana Kebab with Sumac Onions. Typically, kebabs can veer on the dry side, but Hortus' version was juicy, aromatic, and full of flavour. The sweet and tangy sumac onions on top brought a much-appreciated brightness to the hearty meat skewer.

Rice Pilaf with Pistachio and Lemon 4.5/5

To complement the mains, we had the Cracked Wheat Salad and the Rice Pilaf with Pistachio and Lemon. Both were excellent — the cracked wheat salad was herby and fresh with pops of pomegranate, while the rice pilaf was light, fragrant, and enhanced by the nuttiness of pistachios and citrusy lemon.

House churned Vanilla Gelato, Halva, Tahini 4.5/5

Desserts were a true surprise and delight. The House Churned Vanilla Gelato, paired with halva, tahini, pomegranate syrup, and mint, was a symphony of textures and flavours — sweet, nutty, creamy, and refreshing all at once.

The final treat, Rose and Cardamom Basbousa, sealed the meal on a high note. The moist semolina cake, topped with house churned pistachio gelato and cardamom cream, offered a beautiful blend of floral and nutty flavours that was both comforting and exotic.
