Carnaby @ The Quayside - Modern British Diner Paying Homage to Britsh Classics With a Contemporary Twist

Carnaby at The Quayside is a modern British diner helmed by Chef Adam Penney, formerly of Three Buns. It's no surprise that the restaurant has already earned a solid reputation, especially for its exceptional burgers. The menu pays homage to British classics with a contemporary twist, featuring a hearty Weekend and Sunday Roast menu that's perfect for leisurely indulgence.

We began our meal with a limited-time special Woodfired Fish Head ($22), served with a Watermelon Chilli Butter Sauce. While it initially appeared heavily coated in sauce, the flavours were impressively balanced. The sauce delivered a fruity sweetness, gentle heat, and buttery richness that complemented the fish beautifully. Expertly grilled, the fishhead was polished clean down to the last crevice.

Welsh Rarebit 4.5/5

Next came the Welsh Rarebit ($18), it is a dish with roots tracing back to the 1700s. Traditionally featuring a savoury cheese sauce over toast, Carnaby's take was a decadent spread of Westcombe Cheddar atop softened leeks on beef fat-toasted sourdough. The leeks were buttery and tender, soaking in the fats and flavours of the melted cheese. The addition of beef fat added depth of flavour to the crusty toast, bringing all the elements together in one indulgent, satisfying bite.

Woodfired Argentinian Grass-Fed Angus Todos Ribeye Steak 4.5/5

Having previously tasted Carnaby's impressive Irish Angus Beef Short Ribs during their "A Taste of Ireland" showcase, I opted for the Woodfired Argentinian Grass-Fed Angus Todos Ribeye Steak, 300g ($59). It did not disappoint. The steak was well-trimmed, evenly cooked to a juicy medium-rare, and full of flavour. A sharp horseradish accompaniment added a bright, acidic tang that perfectly complemented the richness of the beef. Unfortunately, the accompanying chips were a letdown. It was slightly dry and overly salty.

Beer Battered Fish & Chips 4/5

The Beer Battered Fish & Chips ($37), another signature, was a standout. The fish was meaty and flavourful, encased in a light, crisp batter. A particularly complex tartare sauce elevated the dish, and the rustic Mushy Peas was a personal highlight, earthy and textural rather than overly buttery. Again, the chips fell short.

Sticky Toffee Date Pudding 5/5

Dessert was phenomenal. The Sticky Toffee Date Pudding ($16), served with butterscotch sauce and a scoop of house-made vanilla ice cream, was nothing short of divine. Soft, spongy, and soaked in caramel richness, the pudding was elevated further by a finishing touch of buttery crumbles.

To complement our meal, we had two refreshing cocktails. The Toreador ($21) featuring Arette Blanco Tequila and London Calling ($21) made with Jin Jiji Darjeeling Gin. Both were well-crafted and paired nicely with the dishes.

The iconic Taiwanese restaurant Din Tai Fung (鼎泰豐), beloved for its artfully handmade Xiao Long Bao, has opened a brand-new outlet at Punggol Coast Mall. To mark this occasion, Din Tai Fung has unveiled three brand-new dishes, now available at all outlets across Singapore. Available for dine-in, takeaway and delivery via Deliveroo, Foodpanda and GrabFood.

Adding an extra touch of excitement, the Punggol Coast branch is the first in Singapore to carry Din Tai Fung's exclusive retail merchandise, specially imported from Taiwan. Fans can now bring home charming collectables like the Din Tai Fung Chopsticks 平安筷, Mascot Plush Toys 包仔娃娃, Enamel Pins 微章 and more, perfect for gifting or as a souvenir for loyal diners.

The new Noodle with Crispy Wanton in Spicy Sauce ($15.30) is tossed in a bold, spicy sauce and topped with crispy wantons. The noodles are springy and cooked to the ideal bite. However, we found the sauce to be a bit milder than expected, lacking the robust, aromatic heat that we had hoped for. The wantons add a textural crunch, but their petite size leaves more to be desired. It's a decent dish, but it could be more impactful in terms of flavour.

We were especially eager to try this dessert twist on Din Tai Fung's famous Xiao Long Bao. The Black Sesame Mochi Xiao Long Bao ($25.60 for 6 pc) is filled with fragrant, nutty black sesame and mochi. While the filling is aromatic and indulgent, the thick skin makes it rather challenging to chew. We recommend eating it immediately while piping hot, which helps slightly with texture, but be cautious as the filling can be scalding. It's a fun concept, but the execution didn't quite meet our expectations.

This East-meets-West dessert combines a classic Chinese Steamed Layered Cake ($5.80/2pcs) with a side of Chocolate Dipping Sauce ($3, currently $2 from 1 May to 30 June). The cake itself has a unique texture, falling somewhere between a Chinese sponge cake and fluffy bread, with a subtle sweetness. When paired with the not-too-sweet chocolate sauce, it creates a comforting and unexpected fusion of flavours. It's a fun dessert to share, especially for those curious to try something different.

Two staples we can't skip at Din Tai Fung are the Oriental Salad ($6) and Pork Xiao Long Bao ($12.80 for 10 pieces). The Oriental Salad is refreshing and crunchy, lightly tossed in a tangy sesame dressing that awakens the palate, always the perfect starter. As for the Pork Xiao Long Bao, it's what Din Tai Fung is famous for, with each dumpling meticulously pleated, filled with a juicy pork filling and a burst of flavourful broth. While the skin was slightly thicker than usual on our visit, it remains a comforting classic that satisfies every time.

If you haven't tried the Prawn Pancake ($11.80), you're missing out. This crispy, golden delight is packed with chunky prawn paste and pan-fried to perfection. It's crunchy on the outside, succulent inside and incredibly addictive.

Din Tai Fung's fried rice consistently meets your expectations, whether it's the Shrimp Fried Rice ($15) or the Pork Chop Fried Rice ($14.30); it never disappoints. Both versions feature fluffy, fragrant egg fried rice. The Shrimp Fried Rice is generously topped with fresh, bouncy shrimp, while the Pork Chop Fried Rice comes with a well-seasoned pork chop that's juicy and tender. Either option delivers on flavour and comfort, making them our top picks for a hearty main.

Big Wine Freaks @ Bukit Pasoh Road - Champagne and Wine Restaurant with Ingredient-forward Cuisine

Big Wine Freaks at Bukit Pasoh is a Champagne and wine restaurant with an outstanding wine selection that showcases labels from a new generation of star producers, natural wines from renowned French regions, and rare picks from unique micro-farms. Channelling the same electric energy as their Moscow origins, the space is brought to life by Sabrina Bignami and Alessandro Capellaro of B-Arch Architectural Bureau in Florence. It's an expressive blend of light, colour, and texture, a setting that speaks about the experience that they want to offer. Their ingredient-forward menu features a raw seafood bar, bite-sized starters, vegetables, and mains cooked over an open-fire grill.

Daily from 5.30pm to 7pm is the time for Aperitivo ($58), which I believe is the best way to soak in the atmosphere of Big Wine Freaks. We were served a Cichetti Assortment comprising Oysters, Trout Gravlax, Parma Ham, Arancini, and Padron Peppers.

There was plenty to love about this assortment. It offered a satisfying balance of cold and hot starters and, more importantly, the rich mouthfeel and savouriness that pair beautifully with their wines and Champagne. Both the Parma Ham and Trout Gravlax stood out for their indulgent textures, especially the latter, with its tangy and mustardy toast and delicate ribbons of gravlax that paired perfectly with the glass of Gounel-Lassalle Esprit Voyager we had.

The Arancini were well executed too. Encased in a crisp golden crust was a molten mixture of rice, mozzarella, and Jamon, made even more indulgent with the accompanying aioli. Rounding off the plate, the blistered Padron Peppers were juicy and vibrant, adding a fresh green bite that nicely balanced the lineup.

The mains feature selections from the Josper Basque Grill. The Octopus ($58) was incredibly well cooked, with a texture and flavour that stood out as one of the better renditions I've had. Unfortunately, the dish was slightly let down by an oversprinkle of finishing salt.

For the Beef Short Rib ($46), while the meat wasn't as tender as hoped, it made up for it with flavour. The caramelised, charred exterior imparted a depth and smokiness that was deeply satisfying.

Dessert was a pure joy. The fluffy Donuts, filled with berry jam and custard, were a delightful way to end the meal. While I would have preferred the custard to be a touch lighter, the overall experience was still indulgent and comforting.

There's also a noticeable attention to detail when it comes to presentation. Each dish is served on dinnerware by Ginori 1735, the renowned Florentine porcelain house now under the creative direction of Alessandro Michele. The wine-by-the-glass list is equally thoughtful, featuring over 40 rotating options that highlight fresh finds from their cellar. Every glass is served in exceptional stemware, featuring brands such as Zalto from Austria, Sydonios from France, and Kimura from Japan, which further elevates the overall experience.

Tsui Wah 翠華 @ The Cathay - Opens 5th Outlet at Singapore's Iconic Landmark with New Exclusive Dishes and Drinks

Fans of authentic Hong Kong cha chaan teng fare have reason to celebrate. Tsui Wah has officially opened its fifth outlet in Singapore at the revamped The Cathay. As part of this exciting launch, diners can look forward to a refreshed and exclusive menu, stylish interiors that blend nostalgic charm with modern flair, and even a new bottled drinks collection for on-the-go indulgence.

We began our meal with two new additions to the beverage menu: Handmade Bitter Gourd Lemon Tea ($5.30) and Bottled Signature Yuen Yang ($4.80). The former is an intriguing drink believed to have detoxifying properties. It is surprisingly palatable with only a light bitter aftertaste unless you bite into the gourd bits. The bottled Yuen Yang offers a smooth tea-coffee blend and is part of Tsui Wah's new takeaway drink series, available exclusively at The Cathay. Other bottled flavours include Coffee and Citrus Honey.

This new main won us over. The Scallion Oil Chicken Steak ($14.80) is topped with fragrant scallion oil and three perfectly runny eggs on a bed of fluffy steamed rice. It is generous, satisfying, and very value for money. This dish is also available with pork chop instead of chicken. It is part of the exclusive offerings at The Cathay outlet.

The Hong Kong-style BBQ Pork ($13.80) is one of Tsui Wah's Signature dishes. It features tender meat but is a bit sweet for our palate. Nonetheless, it is a staple dish and great for those who enjoy a sweeter char siew profile.

No visit to Tsui Wah feels complete without this classic. At $4.20, the Crispy Bun with Condensed Milk is simple comfort food done right! It's crispy, buttery, and lightly sweet. Just be sure to eat it while it's hot, or the bun gets a bit tough when cold.

A cha chaan teng essential, this Hong Kong-style Egg Tart ($2.20) arrived piping hot. The egg custard was fragrant, but the crust was denser than we preferred. It is a warm and satisfying bite.

My personal favourite from this tasting was definitely the Salted Egg Lava French Toast ($8.80). The sweet-savoury filling was rich and buttery, oozing out as you cut into the toast. It has crisp edges and a soft centre, and the salted egg wasn't overpowering. There's also a Curry Chicken French Toast variant we'll return to try next!

Whether you're a regular or visiting for the first time, the new Tsui Wah at The Cathay offers a refreshed and inviting space, plus exclusive dishes that make it well worth a trip down. We left full and satisfied, and are already planning our return visit.

Shang Palace @ Shangri-La Hotel Singapore - Celebrates 54th Anniversary With A Celebratory Menu

In celebration of its 54th anniversary, Shang Palace at Shangri-La Singapore unveils a special commemorative menu that pays tribute to its rich legacy and the golden era of Cantonese cuisine. Curated by Executive Chinese Chef Daniel Cheung, the menu channels the spirit and splendour of the 1970s, bringing back iconic dishes with a modern finesse. From now till 31 May 2025, diners can savour the Celebration Set Menu ($388++ for 4 pax) or select from 12 nostalgic à la carte dishes that honour the restaurant’s heritage.

The meal began with a classic that many Cantonese food lovers would remember fondly: Crispy-fried Milk Custard (黄金炸鲜奶). Encased in a light, golden batter, the custard within is creamy, smooth, and fragrant, melting gently on the palate. This dish, made popular by Chinese chefs during the 1980s and 90s, is a textural delight that effortlessly balances richness and delicacy.

Reminiscent of Hakka Yong Tau Foo, the Pan-fried Long Bean Rings Stuffed with Dace Fish Paste (煎鲮鱼滑酿豆角) features long beans shaped into rings, each stuffed generously with dace fish paste and pan-fried until crisp. Served with a savoury dipping sauce, the dish is both nostalgic and satisfying, earthy, hearty, and wonderfully seasoned.

Braised Fresh Fish Meat with Luffa Melon, Straw Mushrooms and Chrysanthemum 4.5/5

A bowl of warm comfort, the Braised Fresh Fish Meat with Luffa Melon, Straw Mushrooms and Chrysanthemum (顺德菊花生拆生鱼羹) combines fresh fish meat, tender luffa melon, straw mushrooms, and chrysanthemum petals, resulting in a light yet flavourful broth. Add a dash of vinegar and pepper to enhance its nuanced flavours. It's a humble, soul-warming dish that showcases the finesse of Shunde-style cooking.

Deep-fried King Prawns with Tomato Sauce 5/5

One of the standout dishes for me was the Deep-fried King Prawns (茄汁干煎虾碌) slathered in a lip-smacking tomato sauce. The prawns were massive, cooked to bouncy perfection with a delightful firm bite. But the real star was the sauce, which is a tangy, sweet, and savoury tomato glaze that beautifully coated the crustaceans. It's a timeless classic done right.

Poached Mustard Green with Dried Shrimp, Dried Scallop and Minced Pork in Superior Broth 4/5

As a Teochew, I was particularly excited about the Poached Mustard Green with Dried Shrimp, Dried Scallop and Minced Pork in Superior Broth (虾干上汤瑶柱肉松浸大芥菜). Mustard green can be divisive due to its bitter notes, but it was perfectly poached here, retaining a gentle crunch while mellowing its bitterness. The superior broth, enriched with dried shrimp, dried scallops, and minced pork, added a deep umami flavour. I was especially impressed by the enormous dried shrimp imported from Hong Kong. It is a rare treat that elevated the dish even more.

Traditional Yuan Yang Fried Rice 4/5

The Traditional Yuan Yang Fried Rice (太极鸳鸯饭) brought back a wave of nostalgia. A staple at Hong Kong wedding banquets in the 1970s, Yuan Yang Fried Rice reflects the East-meets-West influences of the era. The egg fried rice is topped with two sauces: one red, tangy, tomato-based sauce with shredded chicken and onions, and the other a creamy white sauce with prawns and peas, arranged in a symbolic yin-yang pattern. It's visually striking, comforting, and full of flavour, a perfect representation of cultural harmony.

Light, crispy, and slightly chewy inside, the Deep-fried Water Chestnut Cake (酥炸马蹄条) was a delightful way to end the meal. It offered a gentle sweetness and a lovely contrast of textures, making it an excellent traditional dessert. To wrap things up, we were served a warm bowl of Boiled Sweetened Beancurd Skin with Gingko Nuts and Quail Egg (腐竹白果鸡蛋糖水). Smooth, nourishing, and subtly sweet, it was the perfect closing note to a beautifully curated meal.
