MAM MAM @ NUHS - A Hidden Gem At National University Hospital

One of my most ordered delivery during these three years of Covid is MAM MAM. However, I only recently visited the casual eatery hidden in National University Health System (NUHS) Tower Block at National University Hospital. MAM MAM is the brainchild between Chef Sebastian Ng of VENUE by Sebastian, and Edmund Ang, the third-generation owner of Punggol Nasi Lemak. The casual eatery serves affordable Asian Rice Bowl and hearty local food.

100-hour Duck Confit Rice Bowl

One of my favourite dishes at MAM MAM is its 100-hour Duck Confit Rice Bowl ($11.50). The confit duck leg is marinated with Asian spices for two days and slow-cooked for 24 hours. The result is extremely tender with flavoursome crispy skin. The rice bowl is served with delectable sides - seasonal vegetables, salted veggies and egg roll. Not forgetting the piquant green sambal that accentuated the enjoyment of the duck confit.

Spice-crusted Chicken Leg

The signature at MAM MAM is its Spice-crusted Chicken Leg ($8.50). The huge chicken leg is marinated in a special concoction comprising 16 different types of herbs and spices for an aromatic finish. The chicken leg is deep-fried to a delightful crunch on the skin but tender and juicy inside. It is served with a side of pickled cucumber and egg roll.

Besides the two Asian rice bowls, the menu offers four other ones, all below $10. They are Golden Fried Chicken in Signature Spicy Tomato Sauce ($7.50), Slow-roasted Norwegian Salmon Specialty ($9.50), Signature Minced Chicken with Basil and Egg Tofu ($5.90) and Wok-fried Sliced Beef with Ginger and Scallion ($5.80).

MAM MAM also offers congee on its menu. The congee has a consistent creaminess. It is a hearty and comforting bowl of congee. However, it is not the style I like. Being a Teochew, I prefer it to be more grainy.

Another item I usually order at MAM MAM is the Green Bean and Sago. It is a local dessert I like, and at MAM MAM, I can have a satisfying meal from mains to dessert.

Diamond Kitchen (钻石小厨) @ Science Park I - Exclusive Dishes To Celebrate Both Mother's Day And Father's Day

For this coming Mother's Day and Father's Day, a table of home-style dishes that are rich with comforting Malaysian-Chinese flavours may be just what we are seeking for. Diamond Kitchen at both Marine Parade and their Science Park outlets have specially crafted five new menus and four exclusive dishes for these two occasions.

Crispy Fried Potato Slices with Salted Egg Yolk 4.2/5

Riding on the salted egg yolk trend is the Crispy Fried Potato Slices with Salted Egg Yolk ($12). Tossed in the restaurant's signature homemade salted egg sauce, each deep-fried potato slice was evenly coated with flavours that set your tongue tingling. A dish for both young and the old, this will definitely whet your appetite for what's about to come.

Homemade Yam Balls with Otah 3.8/5

These Homemade Yam Balls with Otah ($16) is an interesting take on familiar flavours. It's like your traditional yam ring but broken up and fried in individual portion and at the core of each yam ball is a slab of house-made otah, made with a combination of mackerel, spice blend and the restaurant's proprietary 'Gan Xiang' blend. If you are a fan of yam ring, this is even more moreish with all sides crisp golden brown. I would have liked it, even more, should the otah be less mellow, as the heat from the spices tends to overwhelm the delicate yam flavour.

5-Step Diamond Kitchen 'Duck Rice' 4.2/5

A must-order is definitely the 5-Step Diamond Kitchen 'Duck Rice' ($24/$48). What's on your plate is a result of a 3-day preparation work which involves roasting, air-drying, steaming, deep frying and then pan-frying. What you get eventually is slices of 'pancake' - a crisp layer of glutinous rice base topped with a layer of juicy roast duck shreds. What's brilliant I thought it is the addition of the sweet chilli sauce underneath that softens the crisp glutinous rice. Hence, when you bite into it, the crunchy rice pancake is actually slightly chewy with crisp edges, and the tenderness of the duck meat stands out even more.

Sauna Prawn 4.5/5

Aside from the exclusive dishes above, you may not want to miss some of the restaurant's signatures, such as the Sauna Prawn ($24/$36/$48). Live tiger prawns are laid on hot stones in a bamboo basket before a herbal stock is poured over the prawn and steam for several minutes with the lid closed. It was really fragrant the moment the dish was served to our table, and each prawn not only had that subtle herbal taste, but it also carried a hint of smokiness which further elevated its flavours.

Diamond Gan Xiang Crab 4.5/5

You might have heard of their legendary Gan Xiang sauce, in which you can experience it in various forms such as fried rice or bee hoon, but to fully appreciate it, perhaps it would be the Diamond Gan Xiang Crab (market price). A concoction of hae bee hiam, curry powder, lemongrass, dried chilli, taucheo along with a few other ingredients, it sounded assertive, akin to what a black pepper sauce would do to my taste buds. But surprisingly, it was a lot more well rounded than I imagined, so much so that I could polish the sauce off the crab claw before diving into it. Usually, I simply would just scrap the sauce off the flesh.

Superior Stock Clam Bee Hoon 3/5

We had their Superior Stock Clam Bee Hoon ($12/$18/$24) as well. I would prefer a stock that is more sweet-savoury, with a lighter consistency to highlight the flavours of the clams.

Rounding up of evening is a Mother's Day dessert, Heart of Gold Warm Pumpkin Dessert. I love how warm and comforting it smells, with the coconut cream laced on top of the pureed pumpkin. Each bite is satiated with yam bits, sweet corn and sago. It was so yummy!

Thrive Kitchen @ NeWest Condominium - Asian Inspired Rice Bowls

Thrive Kitchen is a new bistro that has recently opened at NeWest Condominium, a new property in West Coast. The place is still rather deserted with almost ninety percent of the shops still vacant. Nevertheless, it is a worthy place to check if you are looking for healthy and wholesome food

Nonya-Inspired Assam Fish Brown Rice Bowl 4.2/5

Thrive Kitchen has a big menu ranging from soup, salad, mains and your usual brunch items. What interests me is their Asian inspired rice bowls. We tried the Nonya-Inspired Assam Fish Brown Rice Bowl ($17.90). Diners have a choice of either brown rice or quinoa (extra $1.50). The plate comes with a poached egg, kale and haddock in a housemade assam broth. I am actually quite impressed with the tangy and spicy assam which complements the fish excellent.

Curry Whole Leg Brown Rice Bowl 4.2/5

The other rice bowl we tried is the Curry Whole Leg Brown Rice Bowl ($18.90). It comes with a huge chicken leg and potatoes in housemade curry sauce. The chicken leg was tender and the curry sauce tasted very comforting and homely. I not a big fan of brown rice because it quite tough and its tiring to chew on. However the brown rice here is pretty moist. Even your grandparents will not have problem eating it.

Initial when we look at the pricing, we felt that it was rather expensive for a rice bowl. However the portion is actually quite big, as you can see in the pictures. I am actually surprised that the western designed or looking bistro, actually served some pretty good Asian fares.

Waa Cow @ NUS UTown - Delicious Rice Bowls At NUS Campus

Chirashi and beef don was the food trend in 2016 and it has also made its way into the campus of National University of Singapore (NUS) with the opening of Waa Cow at NUS UTown, Stephen Riady Centre. Even though it is near my place, I did not visit the place until recently.

Aburi Bara Chirashi 4.2/5

I had the Aburi Bara Chirashi ($16.90) which comes with a medley of sashimi tossed in aged soy sauce and topped with both ikura and tobiko, placed on a bed of sushi rice made with house-blend vinegar.. It is then garnished with spring onions and diced cucumber. Besides the fresh sashimi, I like the addition of the diced cucumber giving it a refreshing and crunchy touch.

Mentaiko Wagyu Beef 4.2/5

The other rice bowl I tried is the Mentaiko Wagyu Beef ($18.90). Using Yamagata Haenuki rice from Japan, the bowl is topped with sliced wagyu beef torched with special beef sauce which has a peppery kick to it with the richness of the mentaiko mayonnaise, lending a nice balance to the bowl. The rice bowl is further accompanied by a 62 degree Celsius egg.

To make it a set meal, one can add $3 for a drink and a chawanmushi. I would not recommend going for the set meal because the chawanmushi was too watery and lacked a good stock base for flavour, even thought it was topped with sesame and bonito.

While the rice bowls were good and the price point was comparable to outside. It does make me wonder how the students can afford to have this regularly especially when there are many cheaper options in the campus.

Fishball Story @ NUS UTown

I first get to know Fishball Story when I worked with Douglas for the Ultimate Hawker Fest 2014. Located previously at Golden Mile Food Centre, Fishball Story has now moved into NUS UTown at Stephen Riady Center, Level 2 Foodclique. It is actually quite easy to spot the stall, just go to where the longest queue is.

Fishball Noodle 4.2/5

Many would ask what make the fishball noodle at Fishball Story so special? Douglas, 26 years old this year makes his fish balls and fish cakes from scratch using yellow tail fish only. His usual day starts from 4am to make the fish balls and fish cakes, even the sambal chilli and pork lard. I mean who at this age or his generation is willing to do this nowadays.

The Fishball Noodle is priced at $3 for NUS student and $3.50 for Public. While the firm and bouncy fish balls and fish cakes are outstanding, I was hoping that the sambal chilli would have more kick to it.

Borrowing a paragraph from my previous post on Fishball Story. I continued to admire Douglas's hard work and dedication to provide the best quality in his fishball noodle. It is hard to find or even name such stalls nowadays with factory made fish balls readily availability and even at a lower cost. The fishball noodle at Fishball Story is definitely worthy for a visit and we have to give these young hawkers the due encouragement or we will slowly lose the hawker heritage in Singapore.

Diamond Kitchen (钻石小厨) @ Science Park 1

The shining gem, Diamond Kitchen has made the journey to the West and opened their second outlet at Science Park. Diamond Kitchen has been one of the most memorable meal I had in 2014. In fact, so memorable that I have gone back four times to dine at the restaurant. I am glad and those staying in the West should rejoice with the opening of Diamond Kitchen at Science Park 1.

Diners can taste the same menu from the Marine Parade flagship restaurant. On top of the new opening, it has introduced a promotional Diamond Seafood Signatures set menu ($88++ per pax) at the science park outlet valid until 31 July 2015, minimum 4 persons to dine.

Shredded Chicken Salad with Abalone 3.5/5

The 7 course Diamond Seafood Signatures set menu started with the Shredded Chicken Salad with Abalone. The salad comes with celery, carrot, black fungus, red chilli, poached chicken and Australian abalone lightly dressed in a sesame oil. It is quite a refreshing and crunchy salad to start with but it somehow felt out of place for a Chinese dinner.

Garlic Steamed Bamboo Clam 4/5

Next is the Garlic Steamed Bamboo Clam. The Scottish bamboo clam steamed in a Hong Kong sauce was springy but not rubbery. The used of fried garlic further accentuated the flavours. The glass noodles, enoki mushrooms and water chestnuts provides the additional bites and textures to the dish.

Hong Kong Steamed Giant Grouper 4.5/5

A dish not easily found in many restaurants is the giant grouper weighting a stunning 20kg that is prized for its think, gelatinous and collagen rich skin. For the set menu, the diner can choose from the two different cooking methods, Hong Kong Steamed Giant Grouper or Superior Claypot Giant Grouper. The steamed giant grouper uses the belly of the fish while the claypot giant grouper uses the fin of the fish.

Superior Claypot Giant Grouper 4/5

There were mixed preference from the group but I personally preferred the steamed giant grouper belly with Hong Kong steamed sauce brewed with top grade soya sauce. I felt that the cooking technique brought out the flavour and texture of the giant grouper more. With the firmness and buttery sweetness, I would probably think that I was having the flesh of a crab claw in a blind test.

Stir Fried Sweet Potato Leaf with Salted Fish 4.2/5

This may look like just another ordinary Stir Fried Sweet Potato Leaf dish but once you tasted it, you will know that there is more than meets the eyes. The sweet potato leaves are cooked with garlic, pork lard, chilli padi and salted fish. The combination has turned a simple dish into an excellent dish.

Lobster Porridge 3.8/5

A dish that is not in the a la menu is the Lobster Porridge. The Pao Fan is cooked in a chicken stock with chinese wine, ginger and steamed local lobsters. On its own it is a very tasty bowl of porridge with a flavourful chicken stock. However I felt the porridge is missing the lobster essence. Which is a slight let down.

Gan Xiang Crab 4.5/5

Gan Xiang Crab is one of the signature dishes from the the flagship restaurant. The Sri Lankan crab is wok fried with the chef's secret spices retaining the juiciness of the crab. This mouthwatering crab dish probably can be tasted at Diamond Kitchen only. A must try if you like spicy food and wants a change from the usual chilli or black pepper crab.

Lemongrass Jelly  3/5

Wrapping up the 7 course Diamond Seafood Signatures set menu is the Lemongrass Jelly. The shaved lime and honey ice, lemongrass jelly and lemongrass water dessert is cooling and refreshing. Perfect after a hot and spicy crab feast.

The new Diamond Kitchen science park outlet can sit up to 300 people with 2 private dining rooms. The place is also more spacious compared to their Marine Parade branch. The Marine Parade branch is usually packed with diners and advance reservation is greatly encouraged. To avoid disappointment, the chances of getting a table at science park outlet is much higher. I personally recommend going for the a la carte menu to try out more of their signature dishes even thought the Diamond Seafood Signatures set menu is value for money.

Joyden Seafood Restaurant (欣艺海鲜) @ West Coast Recreation Centre

Formerly known as West Coast Seafood, the restaurant is celebrating its tenth anniversary with a new name, interior facelift and comprehensive revamped menu. The family run restaurant is now named as Joyden Seafood Restaurant (欣艺海鲜). The newly refurbishment and name change aims to attract more corporate clients and younger, well travelled customers on top of their regulars and loyal customers.

Signature Crispy Cereal Prawns 4.2/5

If you a fan of cereal prawns, then you need to try Joyden's version of the Signature Crispy Cereal Prawns ($22/$24/$46). Fried until crunchy on the shells while retaining the moist flesh, this can be eaten as a whole. The highlight is the cereal which has imbued with shards of kaffir leaves, chilli padi and a smattering of curry powder. This slight deviation has brought this classic dish to a new level.

Steamed Lobster with Glutinous Treasure Rice 4.5/5

Impress your diners with the Steamed Lobster with Glutinous Treasure Rice (market price). The rice is first quick fried with dried shrimps, shallots, Chinese sausage and scallions before the glutinous rice is being steamed with the lobster in a bamboo basket. By doing so, the juices of the crustacean is allowed to flow down further infusing the glutinous rice with a richer flavour.

Signature Imperial Oyster Sauce Chicken 4.5/5

While majority of the menu at Joyden is seafood, there is also meat and poultry section. The Signature Imperial Oyster Sauce Chicken ($28) was very memorable for me. The whole chicken was first roasted with stuffed chives and garlic gloves infusing the flavours and giving the bird a crisp skin. It is then braised in superior oyster sauce for a good 3 hours to further embraced with the beautiful flavours giving the chicken a very tender meat that fell of the bone with ease.

Lemongrass Pork Ribs in Crispy Yam Ring 4/5

The original version of the yam basket was a vegetarian dish but as time gone by, it has evolved into a non vegetarian dish. The norm nowadays comes with a yam ring filled with seafood and vegetable in it. Joyden's version comes with a crispy yam ring crowned with pieces of pork ribs that has been sauteed with fragrant lemongrass, ginger flower, chilli, Chinese wine and molasses. The Lemongrass Pork Ribs in Crispy Yam Ring ($25/$38) is a delight to have with the pillowy yam and succulent pork ribs.

Soon Hock Fish in Superior Soy Sauce with Scallions 4/5

One of Joyden's popular dishes is the Soon Hock Fish in Superior Soy Sauce with Scallions (market price). The superior soy sauce is lightly coated over the crispy fish giving it a nice subtle sweetness complementing the clean flavours of the fish while retaining that exterior crispiness.

Joyden's Signature Creamy Crab 4.5/5

Singaporean loves eating crab and one of the must try at Joyden is their Signature Creamy Crab (market price). The fresh crab is cooked in a creamy pumpkin curry sauce that was so good that we have diners in the group wiping it clean with the remaining fried buns.

Crab and Vermicelli Braised with Ginger and Spring Onion 3.8/5

Another crab dish available in the menu is the Crab and Vermicelli braised with Ginger and Spring Onion (market price). While the crab is fresh and sweet, I felt that the vermicelli is a tad on the dry side.

Egg Tart 4.5/5

Although Joyden is mainly known as a seafood restaurant, it also serves dim sum on the menu daily during lunch hour. The dim sum chef is from Guangzhou and the dim sum spread is prepared from scratch daily. We did not have dim sum for dinner but we manage to get a glimpse of the spread in the Egg Tart that the chef came back to specially prepared for us. I must say this is one of the best egg tart I have eaten for a long time. The flaky skin was outstanding, crisp but not too thick with a nice proportion to the custard.

Sago and Pomelo in Mango Puree 3.5/5

Wrapping up the sumptuous dinner is the Sago and Pomelo in Mango Puree ($5). While the mango puree was a sweet finishing to the wonderful dinner, I thought the bowl of puree was missing the sago, pomelo and pieces of mango chucks. It could be due to the portion that was served thought, with the other ingredients being lost or drowned by the mango puree.

Having stayed in the East all these years, I knew little about the good food in the West. I have to say Joyden is definitely a well kept secret of the West. I am glad that I had the opportunity to try the food and add to my list of Chinese restaurants that I will go back. In fact, I am already planning to go back to try out their dim sum soon.
