We kicked off with a delightful array of deep-fried starters. The Deep Fried Cuttlefish with Salt & Pepper ($20.80) stood out, capturing my taste buds with its robust seasoning. The crispy batter, expertly coated on tender cuttlefish, carried the perfect blend of salt and pepper, creating a flavour explosion.

On the other hand, the Crispy Golden Silver Fish ($8.80) presented a different experience. Although the dish promised a treat of silver fish, I found it challenging to detect the fish amidst the crispy batter. It felt more like indulging in a delightful crunch of batter rather than savouring the distinct flavour of the fish. In this delightful showdown, the deep-fried cuttlefish emerged as the preferred choice for its more pronounced and satisfying taste.

The Sizzling Kai Lan with Dried Prawns in Claypot ($23.80) boasts a delightful crunch in every bite, elevating the humble kai lan to new heights. What set this dish apart was the use of high-quality dried shrimp carefully imported from Hong Kong. These shrimp, known for their meatier texture and more fragrant profile, added a layer of complexity to the dish, enhancing the overall dining experience.

The Pan-Fried Beef Tenderloin Cubes with Potatoes ($36.80) is a classic Hong Kong dish that captivated our taste buds. Succulent Angus beef tenderloin cubes were expertly pan-fried to golden perfection, creating a delightful contrast in textures. Presented on a hot plate, the sizzling presentation added to the anticipation. As the fragrance wafted through the air, we couldn't help salving to dig into the dish. The magic happened as the potatoes soaked up the flavourful sauce, creating a harmonious marriage of taste and texture. With its piquant, fragrant, and shiok qualities, the pepper sauce provided the perfect accompaniment, making each bite a symphony of flavours.

Diners are granted the delightful opportunity to curate their experience by directly selecting their preferred live seafood from tanks. The chosen seafood is then entrusted to the skilled hands of the chefs, who expertly cook the ensemble in a large claypot, marrying the distinct flavours of the sea with fragrant jasmine pearl rice. The porridge exhibits a consistently creamy texture that blankets the palate with each spoonful.

The star of the show is a whole live crab, expertly cooked to perfection in a unique blend of spices and aromatic ingredients, with garlic taking a prominent role in this flavourful symphony. The tantalising blend of aromatics filled the air, creating an anticipation that is nothing short of mouthwatering.

藝 Yì by Jereme Leung @ Raffles Hotel Singapore - Usher in the Year of the Dragon with an Array of Lunar New Year Delicacies and Dine-in Set Menus

藝 Yì by Jereme Leung in Raffles Hotel Singapore invites guests to celebrate a season of reunions and new beginnings with an exquisite selection of festive delicacies and auspicious gifts. Chef Jereme Leung has curated an array of Lunar New Year delicacies and Lunar New Year Dine-in Set Menus, available from 22 January to 24 February 2024. During our visit, we tried the Abundance Set Menu ($228/pax).

Longevity Yu Sheng

There are 4 selections of Yu Sheng, including a Vegetarian Option featuring crispy lotus roots and organic vegetables. The Abundance menu offers Longevity Yu Sheng ($216/$152) with Octopus Sashimi & Sakura Shrimp. I enjoyed the sweetness and texture of the Sakura Shrimps, and it was a pity that they seemed to get lost easily among other ingredients due to their delicate texture.

Next, we had an appetiser platter comprising Deep-fried Crab Meat Roll with Wasabi Mayonnaise & Yuzu Salsa, Baked Eggplant with Scallop served with roasted pepper sauce, and Barbecued Iberico Pork Char Siew with Lime Caviar. The char siew was succulent but could be elevated with more caramelisation. The other two items weren't as delectable. The yuzu salsa was a tad too sweet, and the Kueh Pie Tee cup left an unexpected taste.

The soup course features Doubled-boiled Fish Maw, Sarcadion Aspratus Dried Mushroom & Sea Conch Soup. Its light consistency and good depth of flavour from the mushroom were thoroughly enjoyable, offering a delicate balance to relatively affluent fish maw.

Next, we had a premium Braised 10-head South African Abalone. The sauce and accompanying ingredients harmoniously complemented the abalone, making it a wholesome dish.

Following is Pan-seared Cod Fish with Green Pepper Sauce & crispy Pork Lard. It stood out with its buttery flesh encased in an aptly crisped exterior. The savoury sauce and fragrant lard bits accentuated the sweetness of the fish.

Sweet & Sour Crispy Prawn 4/5

Another seafood dish on the menu was Sweet & Sour Crispy Prawn with soybean cake, offering a nostalgic Sweet and Sour Pork flavour. I appreciate the addition of tempeh in this dish, which paired well with the texture of the prawn.

Steamed Jasmine Rice & Millet with Tribute Vegetables & Preserved Meats 5/5

The highlight for me was this Steamed Jasmine Rice & Millet with Tribute Vegetables & Preserved Meats, excellently executed in every aspect. The perfectly steamed rice absorbed all the flavours imparted from the warmed preserved meats, complemented by a drizzle of sweet sauce that bound all the ingredients together. The preserved meats, rich with intense umami, were scrumptious and moreish.

Dessert served was a bowl of Chilled Highland Lotus Seeds, Snow Fungus, Apricot Kernel, and Nostoc Pearl Sweet Soup, alongside Homemade "Yuan Bao" Water Chestnut Cake and Salted Egg Yolk Custard Glutinous Rice Balls. The sweet soup had the right amount of sweetness to balance the indulgent meal.

Gathering with the foodie gang, we explored Happiness Kitchen, a relatively new home private dining that unveils the rich tapestry of Taiwanese cuisine.

Our meal commenced with the Pickled Tomatoes, a delightful mix of sweet and tangy flavors that sparked our appetites. Its refreshing taste acted as intermittent palate cleanses, making it a constant companion throughout the dinner.

An unexpected gem was the Bamboo Shoot with Goma Sauce, crowned with sakura ebi. The goma sauce complemented the chunky and sweet bamboo shoot, while the sakura ebi added a contrasting texture and fragrance.

Our dining experience took an indulgent turn with the addition of Roe Crab Glutinous Rice. A dish usually reserved for grand occasions, this Taiwanese delicacy promised a symphony of flavours.

Le Matin Patisserie @ ION Orchard - Expanded Menu of French Fare with Crab Waffles, Brown Butter Artichoke Wedges, Soufflé Au Chocolat and More

Le Matin Patisserie first unveiled its new permanent space in ION Orchard earlier in February this year and has now launched an expanded menu of French fare that is available every Wednesday to Sunday, for brunch from 11am to 2.30pm and dinner from 6pm to 9pm.

The exciting new selections continue to tap on Chef-Owner Mohamed Al-Matin's vast expertise in fine pastries and French techniques, putting together options from entrées, mains, sides to desserts.

Salade 4/5

For a light start, consider the Salade ($12). This dish features a combination of fresh baby spinach and arugula, along with roasted and fresh beets, mixed citrus, and pine nuts.

Brown Butter Artichoke Wedges 4.2/5

Despite its unassuming appearance, the Brown Butter Artichoke Wedges ($16) proved to be addictive. Crafted with nutty confit Jerusalem artichoke, it comes with a refreshing dip of lemon thyme aioli.

I absolutely adored the Bread & Butter ($9) dish, especially the earthy and rich fermented porcini butter served alongside two soft cubes of whole-wheat milk buns.

Seafood enthusiasts should not miss the Crab Waffles ($20.90). The heart-shaped crunchy waffles are made with seafood butter and dusted with nori for an added layer of fragrance. Spread on the chilled crab tartare and smoked taramasalata dip for a luxurious bite that is rich in umami, creaminess, and herbaceous notes all at once.

Fish & Chips 4.5/5

The Fish & Chips ($35.90) also left a lasting impression. Enjoy the entire battered Haddock fillet, which was not only fresh and substantial but also accompanied by an edamame mash, yuzu tartare, and thinly crusted fried potatoes. The edamame mash was a novel twist done well.

Lemon Thyme Madeleines 4.2/5

These delightful Lemon Thyme Madeleines ($12.90) are baked to order, offering a fresh and petite-sized treat that pairs perfectly with your tea or coffee. Infused with the bright flavours of lemon and thyme, they make for a delightful sharing side, especially when dipped in the herby fir syrup cream.

The texture may become denser as it cools. Hence, I recommend enjoying it warm for the best experience!

The 20-minute bake time for the Soufflé Au Chocolat ($18.90) was well worth the wait. Featuring a fluffy, soft dark chocolate soufflé, hazelnut praline, and reduced milk ice cream, it promises an indulgent treat.

Mangosteen & Lychee Granita 4.5/5

For a more refreshing option, the delicately crafted Mangosteen & Lychee Granita ($14.90) is the one to go for. It features a unique and harmonious combination of mangosteen sorbet, lychee granita and lemongrass bubbles.

Seafood Paradise @ VivoCity - Exciting Fusion Collaboration with Ms. Maria & Mr. Singh, Featuring Seafood-Centric Creations Like Crab Curry with Creamy Butter Mud Crab

Available only till 17 December at both Seafood Paradise VivoCity and Clarke Quay outlets, this collaboration introduces six new seafood-centric creations that blend Singapore-style dishes with a brilliant touch of Indian-Mexican flavours.

These plump Fresh Jumbo Canadian Oysters ($12.90/pc, min. order of 2 pcs) were elevated with tangy pickled shallots, tobiko and a moderately spicy salsa taquera. I could have multiples of this!

Grilled Squid with Salsa Taquera 4.2/5

Following the oysters was the Grilled Squid with Salsa Taquera ($28.90). I really enjoyed the tenderness of the squid, accompanied by a hint of smokiness. While some of my dining companions wished for a stronger char, the dish was well-received overall. Like the oysters, it was served with a side of Mexican salsa taquera, adding a zesty touch.

Gaggan's Crab Curry with Seafood Paradise Creamy Butter Mud Crab 4.8/5

Everyone’s favourite dish of the night was Gaggan's Crab Curry with Seafood Paradise Creamy Butter Mud Crab topped with Coconut Crumbs ($128). It beautifully showcased the strengths of both restaurants, featuring Seafood Paradise’s succulent crab in its renowned creamy butter sauce, elevated by Gaggan Anand’s aromatic and spices-spiked crab curry.

The luscious and flavourful combination prompted us to order a second serving of fried mantous to mop up the sauce!

Stir-fried Live Tiger Prawn with Gaggan's Crab Curry Base 4.5/5

The Stir-fried Live Tiger Prawn with Gaggan's Crab Curry Base incorporates the same crab curry base minus the cream. The absence of cream allows the vibrant herbs and spices to shine more distinctly, especially after stir-frying with the meaty prawns.

Baked Jade Perch with Tamale Masala Sauce wrapped in Banana Leaf 4.2/5

A whole Jade Perch is marinated in a mildly spicy tamale masala sauce before being wrapped and baked in a banana leaf. This method of preparation ensures that the fish meat retains its juiciness.

Seafood Paradise Mee Goreng with Ms. Maria & Mr. Singh's Masala 4.2/5

The last creation of this collaboration is the Seafood Paradise Mee Goreng with Ms. Maria & Mr. Singh's Masala served with Papadum. This twist to our local mee goreng sees a robust infusion of malasa spices with flavours leaning more sweet.
