Wan Hao Chinese Restaurant presents an exciting new seasonal menu that spotlights rock lobsters from Western Australia and prized Sri Lankan crabs.

Available now through 31 December 2025, the menu features eleven exquisite lobster and crab creations, all infused with refined Cantonese flair. Diners can look forward to both Dim Sum and À La Carte selections, with the Dim Sum items available exclusively during lunch.

We started with the Soup of the Day, a warm, soothing bowl of Pumpkin Pork Ribs Soup. The broth was flavourful and naturally sweet from the pumpkin and red dates.

The first Dim Sum dish, Minced Lobster Dumpling with Gold Leaf ($18/2 pcs), featured plump lobster meat wrapped in a thin, slightly chewy skin.

Next came the Lobster Siew Mai with Crab Roe and Minced Pork ($18/2 pcs), an indulgent mouthful of tender lobster and savoury minced pork.

Crispy Crab Meat Puff with Glass Noodles and Chinese Parsley 4.2/5

Our favourite among the three Dim Sum we had was the Crispy Crab Meat Puff with Glass Noodles and Chinese Parsley ($16/2 pcs). The golden, flaky pastry was wonderfully crisp, encasing moist crab meat and springy noodles for a satisfying textural contrast. Other Dim Sum highlights include the Deep-Fried Lobster with Century Egg Sesame Roll ($16/2 pcs) and the Crispy Vermicelli Lobster Roll wrapped with Beetroot Rice Noodle and Superior Light Soy Sauce ($28/2 pcs).

Sautéed Minced Lobster Meat with Shrimp Roe, Egg White and Diced Asparagus Lettuce 4.5/5

Moving to mains, I thoroughly enjoyed the Sautéed Minced Lobster Meat with Shrimp Roe, Egg White and Diced Asparagus Lettuce ($48/portion). Lightly seasoned to highlight the lobster’s natural sweetness, it was elevated by the briny aroma of shrimp roe and the crunch of asparagus lettuce.

The Baked Crab in Foie Gras and White Pepper Sauce ($18.80/100g) offered a bold yet balanced pairing. The lightly spiced, peppery sauce complemented the fresh crab’s sweetness, while the foie gras added richness and depth.

Wok-Fried Lobster with Onion in Green Peppercorn Sauce 4.5/5

Our top pick was the Wok-Fried Lobster with Onion in Green Peppercorn Sauce ($18.80/100g). Each lobster piece was fresh and succulent, wok-fried to perfection, and coated in a fragrant green peppercorn sauce that lent mild heat and herbaceous notes. Other dishes from the À La Carte menu include the Poached Sliced Pacific Top Shell with Asparagus Lettuce in Hairy Crab Meat and Roe Sauce ($48/portion), Stewed Lobster with Dried Hong Kong Cuttlefish, Thai Basil and Shallot in Claypot ($25/100g), and Wok-Fried Lobster with Japanese Glutinous Rice infused with Dried Squid and Dried Shrimp ($25/100g).

We ended with the Double-Boiled Bird’s Nest with Red Date, Lotus Seed and White Fungus, a nourishing sweet dessert that rounded off the indulgent seafood feast.

Fi Woodfire Thai @ Shaw Centre - Modern Thai Restaurant Focusing On Woodfire-driven Dishes

Fi Woodfire Thai (ไฟ) is a modern Thai restaurant that focuses on using woodfire oven to create dishes that bring both familiarity and excitement. Newly relocated to the Shaw Centre earlier this month, Fi continues its signature woodfire cooking with an expanded menu.

Son-in-Law Eggs 4.5/5

We began our meal with a few new appetisers. A standout appetiser was the Son-in-Law Eggs ($10 for 3). Perfectly executed with crispy edges and oozy, lava-like yolks. The eggs were drizzled with a housemade strawberry tamarind glaze. I would have loved a bit more of that glaze to deepen the flavours.

Grilled Green Mango Salad 2.8/5

The Grilled Green Mango Salad ($12) offered a different take on a Thai classic, using mango chunks instead, and charred them over the woodfire. However, the intended smokiness didn't quite come through, and the grilling unfortunately softened the mango to a texture reminiscent of a non-crunchy apple. The dish overall was also too salty.

Watermelon with Fish Floss 3/5

The Watermelon with Fish Floss ($14), on the other hand, was far more refreshing. Topped with housemade tom yum–seasoned fish floss, the sweet-savoury contrast made it incredibly moreish. However, it felt like it was missing an element to make it more substantial as a dish.

Signature Moo Ping Pork Rib 5/5

The true highlights at Fi come from its woodfire oven, where meats and vegetables are grilled over lychee wood. A must-try is the Signature Moo Ping Pork Rib ($48 for 500g bone-in). Fall-off-the-bone tender, the ribs were richly charred with caramelised edges from rendered fat, giving both texture and flavour a boost. The accompanying nam jim jaew offered a tangy contrast that cut through the richness. I also enjoyed the side of char-grilled sticky rice cake glazed with coconut sugar, which paired well with the hearty meat.

French Poulet 5/5

As much as the ribs impressed, the French Poulet ($32 for half) may be even more crowd-pleasing. Incredibly succulent, it boasted clean, natural flavours. Fi uses organic GGTM French Poulet, freshly delivered daily from Toh Thye San Farm. The chicken is served with a bold chicken liver jaew, though alternatives are available if you prefer to skip the touch of gaminess.

Basil Minced Pork on Charred Eggplant 2.8/5

We also tried the Basil Minced Pork on Charred Eggplant ($18), which leaned a little too sweet and saucy, overpowering the eggplant. I also couldn't quite detect the basil in this rendition.

Pineapple Rice Stack 4/5

From the wok section, we had two hearty dishes, Pineapple Rice Stack ($24) and Drunken Noodles ($14). The fried rice was wholesome with shrimp, spicy chicken floss, crispy egg, and pineapple, which made it satisfying on its own. Hence, I found the topping of ikura and tobiko unnecessary and excessive.

Drunken Noodles 3.8/5

The Drunken Noodles, so named as they pair well with beer, delivered on their promise of rich flavours, packed with garlic, soy sauce, and chilli padi. While it was slightly too sweet for me, overall, I liked how generous it was, loaded with a hearty mix of shrimp, squid, straw mushrooms, baby corn, and long beans.

Fresh Mango with Butterfly Pea Sticky Rice 4.5/5

Desserts were refined and beautifully presented. The Fresh Mango with Butterfly Pea Sticky Rice ($12) paired two varieties of mango - Australian (in compote form) and Thai (fresh) - offering a contrast in both sweetness and texture, which worked perfectly with the butterfly pea-stained sticky rice.

Red Ruby 4/5

The Red Ruby ($12) was a great one to refresh the palate with its light and refreshing profile, delighting a mixture of handmade rubies, sago, strawberries, jackfruit, chia seeds, and coconut flesh, topped with a scoop of coconut gelato. However, the plating felt a bit too shallow for such a dessert.

Steamed Tapioca 4/5

The Steamed Tapioca ($12) may appear more straightforward, but it had a wonderfully sticky, starchy texture that was deeply satisfying.

All in all, while some dishes need more balance and refinement, the well-executed woodfire-driven dishes and some of the more intense flavours offered on the plates carve out a strong identity for Fi Woodfire Thai, which in turn allows the brand to establish a strong foothold at its new location.

Choon Hoy Parlor @ Arcade The Capitol Kempinski - Bringing A Delicious New Chapter to Singapore Soul Food

After a successful debut at Beach Road in May 2024, Choon Hoy Parlor has now found its new home at Arcade @ The Capitol Kempinski, sitting right next to Chef Dylan Ong’s other venture, The Masses. This latest iteration of the restaurant continues its heartfelt tribute to Chef Dylan’s beloved mother, with a concept rooted in nostalgic home-style cooking but given refined, modern interpretations.

The humble kaya toast gets a modern lift with the Roti Bakar ($8.90). Crisp toast is layered with coffee butter and salted egg kaya, then crowned with smoked lumpfish caviar. While this twist on the traditional Hainanese breakfast is inventive, the fusion of flavours may not be for everyone, but it certainly makes for a conversation starter.

One of the more surprising highlights is the Oriental Charcuterie Board ($25.90). This dish cleverly reimagines the Western classic with an Asian twist — think house-cured XO lap cheong, duck liver sausage, waxed duck, and kampot pepper sausage, all paired with crispy you tiao and tempeh. A trio of punchy sides, including pickled mango with belachan, achar, and fu ru (fermented beancurd) labneh, adds bright acidity and complexity.

Inspired by hawker-style yusheng, the Marinated Kingfish ($19.90) features sashimi-style kingfish tossed in a tangy, spicy dressing of chilli oil, calamansi, and She De Baijiu. Topped with endives and fresh herbs, this is a refreshing, elegant dish that still pays homage to its street food roots.

A bold twist on the classic typhoon shelter-style crab, the Buah Keluak Typhoon Soft Shell Crab ($25.90) features lightly battered and deep-fried soft shell crab topped with a heady mix of stir-fried aromatics — garlic, shallots, dried shrimp, fresh chilli, and the unmistakably earthy buah keluak. It’s a punchy, umami-laden flavour bomb with layers of texture that make each bite immensely satisfying.

The Same Same But Different Pork Satay ($16.90/$31.90) is a clever reimagining of satay as a DIY experience. Grilled pork is served with popiah skin wraps, pineapple jam, peanut sauce, and fresh herbs — think of it as satay meets Korean BBQ. It's fun, flavourful, and highly customisable.

One of the standout dishes of the evening was the Chye Ber aka Vegetable Ends ($16.90). It reminded me of a similar rendition from Liu Fu Si Fang Cai, but this version takes it up a notch. The assorted vegetable ends are stewed until meltingly tender in a tangy, garlicky gravy made with tamarind, tomato, and dried chilli, enriched further with the richness of pig trotter. The result is a deeply comforting dish with an elevated, robust flavour profile.

Taking cues from the classic coffee pork ribs, Mocha Prime Pork Ribs ($25.90) ups the ante with 15-hour sous vide ribs, a sticky coffee glaze, and a velvety Vietnamese egg coffee espuma. Finished with pistachios and cocoa nibs, this dish brings creativity and decadence in equal measure.

A new menu addition, the Assam Stingray ($39.90), impressed with its bright, tangy Malay-style gravy packed with tamarind, lemongrass, and lime juice. The stingray was tender, and the medley of vegetables — brinjal, tomato, okra, and pineapple — lent a balanced sweet-sour complexity. It is one of the most complete and compelling dishes on the menu.

We wrapped up the meal with the Trio of Orh Nee ($12.90), a modern reinterpretation of one of Chef Dylan’s cherished childhood desserts. Served with coconut ice cream, chewy taro balls, ginkgo nuts, and a delicate pork lard tuile, it’s a whimsical yet heartfelt tribute to a classic heirloom recipe.

Finishing on a tropical note, the Baijiu & Lychee ($13.90) is a layered dessert of pineapple chutney, lychee salsa, foams and sorbets, brightened with perilla and cooled with coconut ice cream. It’s refreshing, well-executed, and slightly boozy in a good way.

The Appetisers Platter ($10.80) offers a variety of bites perfect for sharing between one to two diners. The platter includes a juicy Moo Ping, two Tom Yum Crab Balls, three pieces of Crispy Pork Belly, and three fiery Popcorn Chicken Saap. While each element adds a unique dimension of flavour, the standout for us was the Popcorn Chicken Saap, which is crispy, addictive, and packs a spicy punch that lingers.

This is not your average Thai soup. The Salted Plum Soup with Chilli Paste Rice ($18.80) is a bold, rustic dish seasoned solely with salted plums, allowing the natural flavours of the ingredients to shine. With dishes that are both rustic and refined, Vincent’s cooking remains unapologetically bold and full of character.
