One of Singapore's most elusive private dining experiences, Pun Im by Vincent, has opened a new restaurant, Im Jal by Pun Im, located at Icon Village. Known for his bold, soulful Thai cooking, Vincent brings the best of his home dining menus to a broader audience, making his celebrated dishes finally accessible to those who couldn't snag a spot at his home table. Appetisers Platter 3.5/5

The Appetisers Platter ($10.80) offers a variety of bites perfect for sharing between one to two diners. The platter includes a juicy Moo Ping, two Tom Yum Crab Balls, three pieces of Crispy Pork Belly, and three fiery Popcorn Chicken Saap. While each element adds a unique dimension of flavour, the standout for us was the Popcorn Chicken Saap, which is crispy, addictive, and packs a spicy punch that lingers.

Salted Plum Soup with Chilli Paste Rice 4.5/5

This is not your average Thai soup. The Salted Plum Soup with Chilli Paste Rice ($18.80) is a bold, rustic dish seasoned solely with salted plums, allowing the natural flavours of the ingredients to shine. Inside the broth are tender pork ribs and soft bone cuts, which provide texture and richness. It's paired with a beautifully aromatic chilli paste rice, whose depth and fragrance elevate the entire experience. It's a dish that's both comforting and punchy and a true highlight on the menu.

A signature dish that delivers layers of flavour, the Spicy and Sour Pork Ribs Soup with Thai Mirepoix Fried Rice ($18.80) is a knockout. The Issan-style soup is robust, sour, spicy, and deeply savoury, featuring pork ribs, soft bones, and tendon for an indulgent meaty bite. The pairing with fragrant, peppery Thai mirepoix fried rice balances the dish perfectly, making it both hearty and satisfying.

Served piping hot in a claypot, the Claypot Vermicelli with Black Tiger Prawns ($18.80) is full of wok hei and umami goodness. The glass noodles soak up a rich, peppery sauce and are topped with three large black tiger prawns and crunchy pork lard for extra indulgence. A dish that is both aromatic and comforting, this is Thai comfort food at its finest.

To wrap up the meal, the Red Ruby with Smoked Coconut Sorbet ($7.80) brings a refreshing end. A textural dessert layered with crunchy red rubies, Thai sweet glass noodles, jackfruit, attap seed, and a jasmine-infused syrup, the star here is the smoked coconut sorbet, which adds an unexpected but delightful smoky note to the sweet and floral profile. It is a modern twist on a Thai classic that cleanses the palate and leaves a lasting impression.

Im Jal by Pun Im bridges the exclusivity of private dining with the accessibility of a casual restaurant. With dishes that are both rustic and refined, Vincent’s cooking remains unapologetically bold and full of character. For Thai food lovers seeking authentic yet inventive flavours, this is a dining spot worth checking out.

Shu Da Xia (蜀大侠) @ Tampines 1 - China's Top 10 Hotpot Restaurants Opens in Singapore

Singapore's hotpot scene just got a fiery upgrade with the arrival of Shu Da Xia (蜀大侠), a renowned Sichuan hotpot chain ranked among China's Top 10 Hotpot Restaurants. With over 600 outlets and more than a billion visits worldwide, this powerhouse of flavour has landed at Tampines 1, bringing its signature bold and authentic tastes to our shores.

Condiments

Shu Da Xia's condiments station is well-stocked with everything you need to complement your hotpot experience, including a side dish, a rotating fruit selection, and a refreshing Ice Jelly Dessert.

We opted for the Triple Pot ($18), choosing from a selection of six soup bases: Mala Beef Tallow, Angelica Pork Bone, and Matsutake Chicken Soup. A standout detail is their dedication to maintaining the integrity of each soup - when refilling, they don't just dilute with a base broth but ensure that every soup continues to simmer with its own distinct ingredients. Other available soup bases include Pickled Cabbage, Tomato, and Mushroom. If you prefer a smaller selection, the hotpot is also available in Single Pot at $22 and Yuan Yang (Dual Pot) at $20.

For those who love the numbing heat of Sichuan cuisine, the Marinated Pork Ribs ($8/half), Mala Beef ($8/half), and Mala Chicken Gizzards ($5.50/half) are a must-try. These meats soak up the flavours of the Mala Beef Tallow soup beautifully, but be prepared for the potent cumin notes - it can be intense if you're not a fan. Over time, the soup also becomes richly infused with cumin and chilli, which adds a powerful kick but may be overwhelming for some.

We tried the Marble Patterned Beef Slice ($18/half) and Gui Fei Beef ($7.50/half) for a milder option. Thinly sliced and tender, these cuts were perfect in the non-spicy broths, offering a delicate balance to the robust flavours of the meal.

One of our favourite dishes was the Tai Chi Double Paste ($15/full), a handcrafted seafood delight made with black tiger prawn and squid, topped with fish roe for a fun and crunchy texture.

For a fresh contrast, we enjoyed the Vegetable Platter ($9.50/half), which includes lettuce, romaine lettuce, napa cabbage, corn, and tomato. A highlight was the Kung Fu Celtuce ($3.50/half), delicately sliced for the perfect bite. Be sure not to overcook it to retain its signature crunch.

We wrapped up our meal with the Ice Jelly Dessert, available at the condiments station. You can customize it with Osmanthus Brown Sugar, Hawthorn Flakes, and Raisins. While the dessert was refreshing, it would be even better served colder and with more topping options.

Shu Da Xia delivers not just on taste but also on atmosphere. The bright yet cosy space is inviting, with ample seating, making it an excellent spot for families and groups. Whether you're a spice enthusiast or just a lover of rich, flavourful broths, this hotpot experience is one to savour. If you're looking for an authentic Sichuan hotpot adventure, Shu Da Xia is definitely worth a visit.

Min Jiang at Dempsey @ Dempsey Hill - Celebrates 6th Anniversary with a Six-Hands Collaboration

In celebration of its sixth anniversary, Min Jiang at Dempsey presents the 'Six-Hands Anniversary Showcase' from 7 to 12 April 2025. This exclusive collaboration brings together the exceptional artistry of three renowned chefs — Master Chef Goh Chee Kong, Chef Pung Lu Tin, and Chef Daniel Koh. Three specially curated set menus will be featured, culminating in a one-night-only 7-course dinner on 12 April.

Foie Gras Terrine Monaka 4/5

The 7-course dinner begins with an Amuse Bouche: Foie Gras Terrine Monaka by Chef Daniel. Drawing from his classical Western training, preparing this terrine involves a meticulous two-day process, including steaming, baking, and an ice bath. Encased between crisp monaka (Japanese-style wafer) and a delicate slice of orange, it offered a unique and delightful way to enjoy terrine — its luscious, buttery texture reminiscent of an ice cream filling or the indulgent richness of a cold butter slab. A subtle hint of brandy aroma also came through and intertwined beautifully with the bright citrus notes from the orange.

Min Jiang Appetiser Platter 3.8/5

Next was the Min Jiang Appetiser Platter, featuring Pan-Seared Hokkaido Scallop with Pineapple Lime Sauce by Chef Pung and Typhoon Shelter Crab Claws by Master Chef Goh. The premium Hokkaido scallop was perfectly seared, boasting a succulent interior and a beautifully caramelized exterior. Its flavours were elevated by the tangy, refreshing sauce and an unexpected depth of umami from a final touch of fermented shrimp paste. The crab claw was equally delightful — a harmonious blend of crispy garlic, dried chilli, curry leaves, and aromatic spices, with a subtle sweetness from honey used in the frying process.

Double-Boiled Morels, Agaricus Mushrooms, Abalone, and Dried Scallops 4.5/5

The soup course was wholesome and nourishing — Double-Boiled Morels, Agaricus Mushrooms, Abalone, and Dried Scallops in a Whole Mini Pumpkin by Chef Pung. The broth had a light yet slightly gelatinous consistency, offering a beautiful depth of savouriness and sweetness with comforting herbaceous notes coming through.

Yin Yang Fish Rolls 4/5

Next was Chef Daniel's Yin Yang Fish Rolls with Salmon, Sea Perch, and Tianjin Cabbage. Resembling delicate maki, the salmon and sea perch were wrapped in tender Tianjin cabbage, which offered a refreshing contrast to the richness of the oily fish. The savoury soy sauce blend elevated the dish beautifully, adding a perfect touch of umami. While the slice of truffle nestled between the fish layers was subtle and not particularly pronounced, the overall dish was well-executed and thoroughly enjoyable.

Baked Pork Rib with Hawthorn Sauce 5/5

Chef Pung's Baked Pork Rib with Hawthorn Sauce details the laborious preparation process involving overnight marination, deep frying, and steaming. The pork was tender with a slight chew. The hawthorn sauce glazing the meat, alongside diced seasonal fruits, provided a gentle acidity to cut through the richness of the meat.

Stewed Lobster in Superior Stock with Deep-Fried Glutinous Rice 5/5

The final main course was Chef Goh's highly anticipated Stewed Lobster in Superior Stock with Deep-Fried Glutinous Rice. The lobster was expertly stewed in a rich, flavorful broth, resulting in tender, succulent meat. Complementing it was a crisp, golden deep-fried glutinous rice ball, offering a delightful contrast with its crunchy exterior and satisfyingly chewy center. The luxurious broth tied both elements together beautifully, enhancing each bite with its depth of flavour.

Deep-Fried Yam Pastry with Custard and Pistachio Gelato 4/5

Dessert featured a warm and cold pairing of Deep-Fried Yam Pastry with Custard and Pistachio Gelato by Chef Goh. Cutting through the delicate, flaky yam puff revealed a luscious, savoury custard centre that oozed with each bite. The pistachio gelato was velvety and nutty, providing a lovely contrast in both temperature and texture. While the flavours were enjoyable, the overall sweetness of the dessert could have been toned down slightly for better balance.

Ang Leong Huat Collaborates with Zi Yean Restaurant in Celebration of its 100th Anniversary

2025 marks the 100th year of legacy for Ang Leong Huat, a family-owned, Singapore-born Chinese wine importer and distributor specializing in high-quality Chinese liquors. Now into its fourth generation, Ang Leong Huat celebrates this remarkable milestone with exciting dining events, including a collaboration with heritage Zi Yean Restaurant from 27 February to 16 March 2025 and a masterclass-cum-wine pairing dinner on 13 March 2025, hosted at Yan's Dining Fine Shanghai Cuisine.

At Zi Yean Restaurant, a heritage restaurant located at Lengkok Bahru, a time-limited à la carte menu highlights the unique role of one of Ang Leong Huat's key products — Plum Blossom Hua Tiao Chiew. Curated by Chef Fok Wong Tin, the chef-owner of Zi Yean, this menu expertly incorporates the wine's distinctive flavours across a range of dishes.

Sautéed Prawns with Asparagus 4/5

We began with Sautéed Prawns with Asparagus ($12 per person). The plump prawns had a satisfying bite and were paired with crunchy asparagus. A dash of Plum Blossom Hua Tiao Chiew added at the end of the cooking process provided a subtle lift of aroma and flavour. Lightly seasoned and sautéed, the dish allowed the natural freshness of the ingredients to shine.

Hot Stone Fish Maw Superior Broth 4.5/5

Next came the Hot Stone Fish Maw Superior Broth ($25 per person), served in a heated stone bowl. The broth was intensely flavourful, enriched with generous fish maw slices and dried scallops. The slight waft of Hua Tiao Chiew elevated the dish, adding a fragrant depth.

Oven-Baked Grouper Fillet 2/5

The Oven-Baked Grouper Fillet ($15 per person) followed, featuring tender fish baked with mushrooms and greens. A splash of Plum Blossom Hua Tiao Chiew at the end enhanced the natural sweetness. Unfortunately, the underside of the fish was slightly burned, resulting in a mild bitterness.

The Lettuce-Wrapped Braised Dried Oyster ($8 per piece) delivered umami-packed goodness, with the Hua Tiao Chiew boosting the perfectly braised oyster's savoury notes.

Crispy Fried Rice with Diced Abalone 4/5

Giving tradition a twist, the Crispy Fried Rice with Diced Abalone ($15 per person) offered a delightful contrast of textures. The rice, first fried to a crisp and then simmered with Plum Blossom Hua Tiao Chiew and tender diced abalone, resulted in a dish that was both chewy and moreish with each bite.

The Hua Tiao Pork Ribs ($7 per person) was a crowd-pleaser. They were comfortingly sweet and savoury, and the addition of Hua Tiao Chiew rounded off the flavours, providing an aromatic finish.

Traditional Style Glutinous Rice Ball 3.8/5

Rounding off the meal was a classic Chinese dessert - Traditional Style Glutinous Rice Ball ($8 per pax). Each glutinous rice ball enveloped a cube of pian tang 片糖 and was served in a warm ginger soup made with Wentong Ginger. Guests may choose to add the Plum Blossom Hua Tiao Chiew to their desired amount. I love the kick of heat from the ginger, as well as the rustic flavours of the rice ball. Adding the wine made the dessert even more delectable and comforting.

I was also privileged to taste two distinct 'Huang Jiu' varieties. The Li Chun Hua Tiao Chiew is a mellower version, an eight-year vintage Shaoxing wine brewed in the renowned Shaoxing region of Zhejiang. After its fermentation, key ingredients such as wolfberries and longan pulps are added to the wine and infused for a period of time. Served chilled, it was pleasing with a subtle herbal sweetness, perfect as a dessert wine. The Calabash Hua Tiao Chiew is made with high-quality ingredients such as Jianhu water, glutinous rice and wheat. Aged for eight years, it had a deeper herbal note, which I also enjoyed very much. Best served at room temperature or warmed with sour plum, lemon or rock sugar.

In celebration of this centennial milestone, Ang Leong Huat also introduces a limited-edition bottle neck tag for its house brand, Plum Blossom Hua Tiao Chiew. Two ice cream flavours were also made in collaboration with High Bar Society — "Lady in Red," a hazelnut-based ice cream infused with the Nu Er Hong, and "Coco's Flush," a coconut and gula melaka-based ice cream infused with the Calabash Hua Tiao Chiew.

After nearly a decade since my first visit to Yu Cun Curry Fish Head's (渔村砂煲咖喱鱼头) inaugural outlet at Upper Paya Lebar in 2015, I decided to explore its second outlet at Sultan Gate. With Chinese New Year just around the corner, Yu Cun has rolled out an enticing festive menu alongside its signature dishes that continue to attract fans. Here's a detailed look at my dining experience.

Yu Cun Prosperity Yu Sheng 3/5

No Chinese New Year celebration is complete without tossing Yu Sheng for abundance and prosperity. Yu Cun's Prosperity Yu Sheng ($55++) is a vibrant dish, but compared to other Yu Sheng offerings in the market, it lacked a wow factor in terms of taste and textural interplay. While the flavours are enjoyable, I found them more ordinary than memorable.

The Braised Chicken Soup with Creamy Red Lotus ($78++) is a comforting, hearty dish packed with rich flavours, perfect for rainy, chilly weather. The broth, brimming with chicken, red lotus, and white fungus, showcases depth and warmth, making it a standout in their menu.

The Prosperity Eight Treasure Duck ($98++) is a delightful surprise and an absolute highlight of the meal. This dish exudes festive indulgence and is a must-try for anyone looking for something special on the menu.

The Pen Cai ($298++) is a decadent celebration pot filled with premium ingredients such as 10-head abalone, prawns, fish maw, dried scallops, sea cucumber, roasted meats, and vegetables like cabbage and broccoli. The generous portions and luxurious ingredients make it a festive centrepiece. As an added bonus, you can enjoy a 15% discount on the Pen Cai with any purchase of Yu Cun's CNY package.

Steamed Red Grouper in Golden Broth 3.8/5

Fish is an auspicious symbol of abundance during Chinese New Year, and Yu Cun's Steamed Red Grouper in Golden Broth ($118++) is well-executed. The delicate grouper fillets, sandwiched with ham and carrot, are tender and flavorful. While the ham adds richness, the overall dish is satisfying but not groundbreaking.

The Bonito Flake Pork Ribs ($78++) are fork-tender and marinated in a luscious, sweet sauce. While the addition of bonito flakes adds visual appeal, they don't significantly elevate the flavour profile. That said, the ribs themselves are delicious and worth trying.

The Lobster Combinations ($218++) offers lobster cooked in two styles. The first is deep-fried lobster meat in a sweet orange sauce, while the second is paired with a tangy, spicy Thai-style salad. While the contrasting flavours are enjoyable, the dish felt slightly predictable and lacked the wow factor compared to other seafood options on the menu.

The star of the show is undoubtedly Yu Cun's Claypot Curry Fish Head. Revisiting this signature dish after almost a decade, I was pleasantly surprised by the improvement in flavour. The curry is now richer, creamier, and more lemak than I remembered. The dish is loaded with fresh vegetables like long beans, lady's fingers, and tau kee, making it a hearty and satisfying offering. It's clear that Yu Cun has refined its recipe over the years, and this dish alone is worth the visit.

While some dishes on the CNY menu could use a touch more creativity, signature items like the Claypot Curry Fish Head and Prosperity Eight Treasure Duck shine brightly. Whether planning a celebratory feast with family or revisiting old favourites, Yu Cun's offerings will surely make your meal memorable.
