Following the official completion of the redevelopment of Grand Hyatt Singapore, 10|SCOTTS welcomes you back with the relaunch of its Grand Afternoon Tea. This thoughtfully curated semi-buffet celebrates provenance and sustainability, and rounds off the experience with a tableside tier of desserts.

Artisanal Cheeses & Charcuterie

The savoury spread showcases artisanal Cheeses, Charcuterie, seasonal produce, and the chef’s signatures. The cheeses are specially selected from Les Frères Marchand, one of France’s oldest and largest cheese-maturing houses with a heritage spanning 7 generations. These prized cheeses are paired with freshly shaved charcuterie and the quintessential accompaniments of nuts, dried fruits, chutney, and olives.

ASC-certified Smoked Salmon

Sustainability takes centre stage with highlights such as the ASC-certified Smoked Salmon, responsibly sourced in line with Aquaculture Stewardship Council standards, paired simply with horseradish cream and capers.

Chef’s Signature presents ASC Seafood Vol-au-vent, a delicious buttery pastry generously filled with prawns, crab, and seafood bisque, delivering rich, crustacean-driven flavours.

Tomato Toast with White Anchovies

Spanish Gazpacho

On the day of our visit, a standout was the Tomato Toast with White Anchovies, where the natural sweetness of the tomato harmonised with the savoury anchovies. This was complemented by a Spanish Gazpacho, which brought out the bright, refreshing flavours of fresh tomatoes.

Salad Counter

Roasted Pumpkin with Yoghurt

At the Salad Counter, crisp organic vegetables were offered alongside antipasti, condiments, and house dressings. A plated salad of Roasted Pumpkin with Yoghurt added warmth, while fresh figs made a delightful seasonal appearance.

Scones

Scones were served warm to the table, accompanied by clotted cream, jam, and kaya. The kaya, with its mousse-like texture, was lighter than the traditional version, making it a perfect complement to the buttery scones. The jam leaned slightly tart, adding balance.

Red Wine Poached Pear

The dessert tier is also served at your table. A supposed Vanilla Mille-Feuille with Red Wine Poached Pear turned out closer to a French butter cookie, crunchy and buttery, though it veered a touch cloyingly sweet.

Opera Cake, Raspberry Fruit Tart, Chocolate Mousse

The Opera Cake stood out for its deep coffee intensity, while the Citrus Pavlova was dainty and airy. A Seasonal Fruit Tart rounded out the set, marrying tart raspberries with a sweet, custard-like base. While the savouries stood out, the sweets as a whole felt a little too sweet, which overshadowed some of their finer details.

Overall, while the sweet offerings leaned a little too sweet for my palate, the savoury selections were well-executed and memorable. With wooden bookshelves reminiscent of a library, plush couches, and inviting seating arrangements, 10|SCOTTS feels less like a restaurant and more like a grand living room, offering a warm, comfortable escape from the bustle of Orchard Road.

The refreshed spread showcases a wider variety of dishes and new live stations, all under the direction of newly appointed Chef de Cuisine Giuseppe Di Gaetano, whose Italian flair breathes fresh life into LUCE's offerings.

No buffet is complete without a lavish Seafood on Ice section, and LUCE certainly delivers. Diners can feast on a bounty of ocean treasures, including Japanese oysters, Australian yabbies, cold water prawns, white clams, half-shell scallops, and sea whelk – fresh, briny, and indulgent.

Equally impressive is the Charcuterie section, featuring Smoked Virginia Ham, Chambost Saucisson, and Artisanal Pork Terrine. Paired with a glass of wine, these cold cuts set the tone for a luxurious dining experience. The rotating antipasti selection also makes for a delightful prelude to the heavier mains – light, vibrant, and flavourful.

One of the standout sections of the buffet is undoubtedly the Asian Delights, which even includes items prepared by the Man Fu Yuan culinary team. Favourites like Netted Seafood Spring Roll, Deep-fried Tiger Prawns with Almond Flakes, Crispy Cereal Chicken, and a bold Singapore Chilli Prawn shine with authentic local flair. A rich and hearty Lu Rou Fan also stands out among the spread.

Reflecting Singapore’s cultural diversity, LUCE also includes a strong showing of Peranakan and Malay dishes. On rotation are homey classics like Nonya Chap Chye, Assam Seabass Curry, and the savoury-sweet Ayam Masak Hitam, each prepared with care and respect for tradition.

Chef Giuseppe's Italian heritage is proudly showcased in his hearty, soulful creations. The Ragout alla Napoletana, with slow-braised pork ribs and Italian sausage, is a comforting embrace of deep tomato flavours. The Agnello alla Birra Scura, featuring Guinness-braised lamb, is tender and richly layered, while the Impepata di Cozze delights with its briny black mussels in white wine, garlic, and lemon. The Sicilian-style Branzino offers a lighter, elegant counterpoint – a beautifully baked sustainable barramundi with cherry tomatoes and capers. Not to be missed are the showstoppers: the Rigatoni alla Grecia, tossed in LUCE's signature parmesan cheese wheel, and the indulgent Nero di Seppia Pinsa, topped with squid ink tomato sauce, prawns, clams, and mussels.

With the addition of more live stations to the buffet, guests can now enjoy interactive dining with a touch of drama. The Oven-Roasted Angus Beef Striploin is carved to order and paired with shallot red wine jus and gourmet mustards, while the Baked Norwegian Salmon in Puff Pastry, filled with Cajun-spiced salmon and savoy cabbage, impresses with its balance of texture and flavour. At the Italian station, the Tagliatelle al Ragout di Pesce – tossed in a lobster seafood sauce and finished tableside in the parmesan wheel – is rich, luxurious, and beautifully executed. Another highlight is the Signature InterContinental Laksa, a refined version of the local favourite, made à la minute with tiger prawns, quail eggs, and a housemade laksa broth infused with laksa leaf powder for an aromatic finish.

Choon Hoy Parlor @ Arcade The Capitol Kempinski - Bringing A Delicious New Chapter to Singapore Soul Food

After a successful debut at Beach Road in May 2024, Choon Hoy Parlor has now found its new home at Arcade @ The Capitol Kempinski, sitting right next to Chef Dylan Ong’s other venture, The Masses. This latest iteration of the restaurant continues its heartfelt tribute to Chef Dylan’s beloved mother, with a concept rooted in nostalgic home-style cooking but given refined, modern interpretations.

The humble kaya toast gets a modern lift with the Roti Bakar ($8.90). Crisp toast is layered with coffee butter and salted egg kaya, then crowned with smoked lumpfish caviar. While this twist on the traditional Hainanese breakfast is inventive, the fusion of flavours may not be for everyone, but it certainly makes for a conversation starter.

One of the more surprising highlights is the Oriental Charcuterie Board ($25.90). This dish cleverly reimagines the Western classic with an Asian twist — think house-cured XO lap cheong, duck liver sausage, waxed duck, and kampot pepper sausage, all paired with crispy you tiao and tempeh. A trio of punchy sides, including pickled mango with belachan, achar, and fu ru (fermented beancurd) labneh, adds bright acidity and complexity.

Inspired by hawker-style yusheng, the Marinated Kingfish ($19.90) features sashimi-style kingfish tossed in a tangy, spicy dressing of chilli oil, calamansi, and She De Baijiu. Topped with endives and fresh herbs, this is a refreshing, elegant dish that still pays homage to its street food roots.

A bold twist on the classic typhoon shelter-style crab, the Buah Keluak Typhoon Soft Shell Crab ($25.90) features lightly battered and deep-fried soft shell crab topped with a heady mix of stir-fried aromatics — garlic, shallots, dried shrimp, fresh chilli, and the unmistakably earthy buah keluak. It’s a punchy, umami-laden flavour bomb with layers of texture that make each bite immensely satisfying.

The Same Same But Different Pork Satay ($16.90/$31.90) is a clever reimagining of satay as a DIY experience. Grilled pork is served with popiah skin wraps, pineapple jam, peanut sauce, and fresh herbs — think of it as satay meets Korean BBQ. It's fun, flavourful, and highly customisable.

One of the standout dishes of the evening was the Chye Ber aka Vegetable Ends ($16.90). It reminded me of a similar rendition from Liu Fu Si Fang Cai, but this version takes it up a notch. The assorted vegetable ends are stewed until meltingly tender in a tangy, garlicky gravy made with tamarind, tomato, and dried chilli, enriched further with the richness of pig trotter. The result is a deeply comforting dish with an elevated, robust flavour profile.

Taking cues from the classic coffee pork ribs, Mocha Prime Pork Ribs ($25.90) ups the ante with 15-hour sous vide ribs, a sticky coffee glaze, and a velvety Vietnamese egg coffee espuma. Finished with pistachios and cocoa nibs, this dish brings creativity and decadence in equal measure.

A new menu addition, the Assam Stingray ($39.90), impressed with its bright, tangy Malay-style gravy packed with tamarind, lemongrass, and lime juice. The stingray was tender, and the medley of vegetables — brinjal, tomato, okra, and pineapple — lent a balanced sweet-sour complexity. It is one of the most complete and compelling dishes on the menu.

We wrapped up the meal with the Trio of Orh Nee ($12.90), a modern reinterpretation of one of Chef Dylan’s cherished childhood desserts. This playful version features a medley of yam, sweet potato, and purple potato, enriched with brown butter and maple syrup for added depth. Served with coconut ice cream, chewy taro balls, ginkgo nuts, and a delicate pork lard tuile, it’s a whimsical yet heartfelt tribute to a classic heirloom recipe.

Finishing on a tropical note, the Baijiu & Lychee ($13.90) is a layered dessert of pineapple chutney, lychee salsa, foams and sorbets, brightened with perilla and cooled with coconut ice cream. It’s refreshing, well-executed, and slightly boozy in a good way.
