The Estate introduces a refreshed weekend ritual with its “Sunday Social Champagne Brunch”, a vibrant dining experience that brings together good food, free-flow champagne and a lively social atmosphere. Anchored by the theme “Brunch, but make it Estate”, the experience combines the restaurant’s well-loved buffet spread with curated plated signatures, music, a live DJ spinning throughout the brunch, and family-friendly touches, with the introduction of a dedicated Junior Corner. Free-flow premier French champagne from Moët & Chandon adds a touch of French chic to the afternoon, elevating the indulgence even further.

Seafood

The brunch begins with Estate’s renowned seafood bar taking centre stage, showcasing premium selections such as fresh French Oysters, Boston Lobsters and Alaskan King Crabs, alongside Tiger Prawns, Scallops, Clams and Mussels. This impressive spread sets the tone for a luxurious experience, offering diners a taste of the ocean’s finest with every visit to the station.

Carving Meats

At the carving station, diners can look forward to hearty centrepieces such as the tea-smoked whole lamb leg and the lemongrass & coconut-roasted wagyu sirloin. Both offerings deliver bold flavours and succulent textures, making them particularly enjoyable for those who appreciate richly prepared meats.

Mini Wagyu Slider

The Mini Wagyu Sliders are also worth a mention, featuring juicy patties layered with aged cheddar and caramelised onions, and nestled within fluffy brioche buns. Despite their modest size, these bites are surprisingly satisfying and well-executed.

Foie Gras/Corned Beef Hash

A key highlight of the brunch is the reimagined lineup of individually plated chef’s signatures, elevating the dining experience beyond the traditional buffet. Favourites include the pan-seared Foie Gras, rich and buttery with a beautifully caramelised exterior, as well as the indulgent corned beef hash with soft scrambled eggs, finished with black truffle essence and caviar.

Chawanmushi

The Lobster and Yuzu Chawanmushi is another refined creation, delicately steamed in kombu dashi and topped with ikura, delivering a silky texture, umami-rich flavours, and a gentle citrus lift.

Seared Scallop

Equally noteworthy are the seared Scallop à la Provençale, served with a smooth cauliflower velouté, brown butter and crisp capers. The dish offers a harmonious balance of richness and subtle sweetness, complemented by layers of texture.

Smoked Salmon and Trout Roulade

The Smoked Salmon and Trout Roulade presents a lighter yet flavourful option, paired with dill crème fraîche, pickled shallots and rye crisps. The combination brings together freshness, tanginess and a pleasant crunch.

Singapore Chilli Mud Crab/Roasted Meats

Beyond the plated selections, the buffet continues to impress with Estate’s signature spread of international and local favourites, offering diners a wide variety of options to explore throughout the afternoon. Among the highlights are the Singapore Chilli Mud Crab served with mantou, as well as roast meats such as Five-spiced Roasted Duck, Garlic-crusted Roasted Chicken, and Roasted Pork, all of which deliver familiar, comforting flavours.

Lobster Laksa

Another highlight is the noodle bar, where freshly prepared bowls take centre stage. The Lobster Nyonya Laksa stands out with its rich, aromatic broth. At the same time, other options such as the King Crab Laksa and Yunnan Cong You Ban Mian provide equally satisfying alternatives for those craving something warm and hearty.

Desserts round off the brunch on a delightful note with an extensive, thoughtfully curated selection. Highlights include Singapore Heritage Nyonya Kueh, caramelised Pecan Tart, Hilton’s iconic Cheesecake, Lavender Rose Tart, and caramelised Pistachio Chocolate Cake. Guests can also enjoy a selection of Gelatos alongside the Estate’s signature handcrafted dessert jars, such as Lemongrass Hazelnut Cookie Crumble, Matcha Azuki Truffle, Japanese Sweet Potato Pudding, Cacao Velvet, and Pumpkin-spiced Panna Cotta.

Shabestan @ Robertson Quay - Authentic Persian Flavours by the Scenic Riverside

Shabestan is a multi-award-winning Persian restaurant located in Singapore's Robertson Quay, celebrated for its authentic cuisine, warm hospitality, and scenic riverside setting. Since its establishment in 2013, the restaurant has aimed to bring the rich, traditional flavours of Persia to a modern audience, becoming a popular destination for both locals and international visitors seeking a refined Middle Eastern dining experience.

The Hummus ($16) is made from freshly cooked chickpeas blended with lemon juice, garlic, tahini, and olive oil. It was somewhat puzzling for me as the Hummus was served chilled, whereas I am accustomed to it being served at room temperature. Despite the temperature, the texture remained smooth and the flavours well-balanced.

Persian Bread 4/5

To accompany the dip, we had the Persian Bread, which is freshly baked and noticeably thinner than traditional naan. Though thin, it has a wonderful, chewy, and fluffy texture with a delightful bite. It serves as the perfect vessel for scooping up the creamy Hummus.

Shirazi Salad 4.2/5

For a refreshing start, the Shirazi Salad ($16) is an excellent choice. It features finely chopped cucumber, tomato, and onion tossed in Shabestan's signature Shirazi dressing. The salad is light and fresh, with the crisp cucumber providing a refreshing crunch in every mouthful.

Shandiz 4/5

The Shandiz Kebab ($57) features tender chunks of spring lamb on the bone, charcoal-grilled to perfection. The lamb chops were well-marinated and succulent, boasting a beautiful char on the edges while remaining tender inside. Like all kebab dishes here, it is served with rice and a side salad. We opted for a mix of fragrant Basmati and Saffron rice, which offered a good textural bite.

Prawn Kebab 4/5

Another standout was the Prawn Kebab ($43), consisting of huge, de-shelled tiger prawns marinated in saffron and charcoal-grilled until crunchy and juicy. These were drizzled with a homemade seafood sauce that enhanced their natural sweetness. For this dish, we were served Dill rice, which imparted a lovely herby aroma. A pro-tip shared by the staff: dice up the grilled tomato and mix it into the rice for an extra layer of depth and flavour.

Overall, Shabestan delivers a solid Persian dining experience with high-quality ingredients and traditional grilling techniques that truly shine in their kebab selection.

Following the success of its Cecil Street debut, the global omakase brand MinSuiZen·Raku (明水然・樂) elevates the experience at its new Sentosa location. Tucked away from the city’s rush and framed by Sentosa’s easygoing charm, MinSuiZen·Raku’s newest outpost feels less like a restaurant opening and more like an invitation to escape. Here, teppanyaki is reimagined as a creative playground, one where Japanese technique meets international influences, one exquisitely crafted course at a time.

The ambience is both elegant and intimate. Guests enter through a tranquil pebbled garden before arriving at a cosy dining room where the meal unfolds at an unhurried pace. For lunch, the Elegant Course is priced at $148++ and features 12 dishes. Dinner offers two tiers: the Premium Course at $198++ with 12 dishes, and the more indulgent Royal Course at $258++ with 14 dishes, showcasing the restaurant’s creative take on teppanyaki.

On this occasion, we sampled both the Elegant Course and the Premium Course, each beginning on a gentle, comforting note. A teapot of warm Dashi served with a side of lime was served to start, easing us into the meal.

Appetisers 4/5

The meal began with a selection of appetisers. For the Elegant Course, this took the form of a burdock root dish. Those on the Premium Course were treated to a beautifully presented trio featuring the same Burdock Root, Mozuku Seaweed, and a Tamagoyaki with fish paste, giving it a denser, more savoury bite than the usual egg roll.

Red Sea Bream 4.2/5

This was followed by a fish course: Flounder for the Elegant Course and Red Sea Bream for the Premium Course. It was served with a flavourful sauce and accented with kombu, bonito flakes and delicate edible flowers for a refined finish.

Hokkaido Scallop 4.2/5

Next came one of my favourite dishes of the evening: a plump Hokkaido Scallop crowned with ikura and crispy shiso leaves, resting on a bed of specially handcrafted edamame mousse. The dish was served with a sauce infused with bonito dashi and a bright wasabi-yuzu dressing. A unique presentation of scallops, and very delicious!

This was followed by piping hot Chawanmushi with seaweed, a dish that epitomised simplicity and comfort. Silky and delicate, the steamed egg custard was smooth on the palate.

More premium seafood followed, with Lobster for the Premium Course and a generously sized Tiger Prawn for the Elegant Course. Both were plump and juicy, the meat highlighted by an intriguing sauce made from the roe, which added richness and depth to the dish.

Mango Sorbet 4.5/5

A palate cleanser then arrived in the form of a glass of icy Mango Sorbet. Light, refreshing and gently sweet, it cut through the richness of the preceding courses and refreshed the palate for the main courses to come.

Mini Beef Burger 3.8/5

With a touch of theatrics and flair, the meats were grilled for the next two courses. One of MinSuiZen·Raku’s signature creations is the Mini Burger: Chicken for the Elegant Course and Beef for the Premium Course, each paired with a crisp cheese tuile. The chicken burger was nice, while the beef version could have benefited from a little more sauce for a juicier bite.

The main courses followed, each highlighting premium ingredients and meticulous preparation. For the Elegant Course, we enjoyed a succulent Pork dish that was tender and well-seasoned. The Premium Course featured Kagoshima A5 Wagyu, an indulgent cut renowned for its rich marbling and melt-in-the-mouth texture. It was served with a velvety sweet potato sauce and accompanied by roasted sweet potato, tender zucchini, and crispy garlic chips. Finishing touches of sea salt flakes and kombu-infused sea salt enhanced the natural richness of the wagyu.

The main course was rounded off with a medley of Stir-fried Vegetables, tossed with crunchy sesame seeds and savoury bacon pieces, all finished with a fragrant drizzle of truffle sauce.

To conclude, we enjoyed the Crabmeat Fried Rice, presented with a touch of showmanship as the chef shaped it into a heart before serving. Hearty and flavourful, although I was really full by this point.

Overall, MinSuiZen·Raku is a fun Japanese Teppanyaki Omakase experience, and the Sentosa stands out for its refinement and influence. The courses are thoughtfully prepared, with creative touches and a nice balance of flavours, and the cosy, relaxed setting makes it easy to unwind. A nice choice for a special occasion!
