Rock Oysters 4/5

Our dinner began with a trio of exquisite snacks. With their briny essence, the Rock Oysters were paired with a smokey chipotle chutney, yuzu juice, and moilee espuma, creating a sea-inspired overture. The Burrata Tokri Chaat, nestled in a delicate tart shell, featured layers of soft cheese, sun-dried tomatoes, chimichurri, and caviar, a harmonious medley of flavours. Completing the trio, the Prawn Balchao Monaka, a Goan-inspired delight, balanced the sweetness of prawns with a spicy and sour paste.

Japanese Hamachi, Pickled Daikon "Pani Puri" 4.2/5

Next, we savoured the Japanese Hamachi with Pickled Daikon for the small plates, offering a Pani Puri-inspired twist. The Hamachi, known for its fresh and clean taste, was a canvas for the diverse array of flavours that followed. Each bite revealed a nuanced symphony – the buttery richness of the fish, the tangy notes from the pickled daikon, and the zesty finish that lingered, inviting another bite.

RevolverPrivateDining9
Delhi Paneer, Winter Spinach, Shishito Pepper 4.2/5

The Delhi Paner tandoor-baked to perfection, masterfully marries the robust flavours of tandoori cooking with the lush creaminess of paneer, all harmonised by a Winter Spinach mash and the gentle heat of Shishito Pepper. The inclusion of Shishito Pepper is a stroke of genius, adding a mild heat that builds gradually, enhancing the overall experience without overpowering the other elements. It's a subtle heat that complements rather than competes, allowing the tandoori essence to shine.

RevolverPrivateDining14
Japanese King Crab, Gunpowder 4.2/5

The Grilled Japanese King Crab is the epitome of seafood opulence. The crab's natural sweetness was accentuated by the aromatic embrace of gunpowder spices, creating a symphony of flavours. Perfectly grilled to preserve tenderness, each bite was a revelation, marrying smokiness with the delicate richness of the crab.

RevolverPrivateDining20
Whole French Turbot, Spiced Dust 3.8/5

Anticipation hung in the air as the Whole French Turbot made its grand entrance, shrouded in the alluring aroma of spiced dust. The olfactory prelude promised a sensory extravaganza, yet the tasting experience fell short of the aromatic build-up. Although the fish exhibited exemplary texture — firm and moist — the expected infusion of spiced nuances remained elusive. Regrettably, the flavours of the fish appeared somewhat muted, lacking the aromatic depth anticipated from the tantalising spiced dust.

RevolverPrivateDining36
Mayura Station Tomahawk, ABC Sauces 4.5/5

RevolverPrivateDining39

The pièce de résistance of the evening was undeniably the Mayura Station Tomahawk, grilled to a perfect medium rare. With its intricate marbling, this pinnacle of wagyu excellence bestowed upon each bite a heavenly tenderness and a lavish, buttery flavour that lingered on the palate, marking it as the undisputed star of the night.

RevolverPrivateDining41
Comte Kulchette, Black Perigord Truffles 5/5

Stealing the limelight, the star was undeniably the Comte Kulchette, adorned with the richness of Black Perigord Truffles. The flatbread, baked to perfection in the tandoor, cradled a harmonious medley of flavours. Stuffed with comte cheese, truffle puree, stracciatella, mushroom confit, and a generous shaving of Black Perigord truffles, it delivered an exquisite interplay of textures and flavours that was nothing short of extraordinary — a symphony for the taste buds, creating an indulgence that transcended the ordinary.

RevolverPrivateDining45
Japanese Mush Melon Chaat 4.5/5

RevolverPrivateDining47
Grilled Orange 4/5

In a grand finale of sweet delights, the dinner reached its zenith with the entrance of the dessert maestro — the sweet Japanese Musk Melon adorned with the tantalising essence of Chaat masala and a surprising twist of Grilled Orange. Delving into the orange, its meticulously grilled skin presented a novel gustatory experience, revealing an extraordinary way to relish citrus.

RevolverPrivateDining55
Saffron Cheesecake 4.8/5

The dinner at Revolver culminated in an extraordinary encore — the Saffron Cheesecake. The cheesecake redefined indulgence, boasting a molten, lusciously cheesy body that was nothing short of divine. The enchanting infusion of saffron added a regal touch, elevating the dessert to unprecedented heights. The cheesecake's crowning glory, a delightful biscuity base, provided the perfect foundation for the best cheesecake ever eaten.

RevolverPrivateDining58
Sea Buckthorn Marshmallow 3/5

The soft and pillowy Sea Buckthorn Marshmallow, a canvas of sweetness, was transformed into a sublime dessert by adding sea buckthorn. It imparted a delightful tartness, orchestrating a harmonious dance with the inherent sweetness of the marshmallow.

Note: This is an invited tasting.

IMG_0197

Red House Seafood Nanyang at Clarke Quay has reopened with a fresh new look, all set to usher in the Year of Dragon by introducing prosperous Chinese New Year menus for the 2024 Chinese New Year celebrations. The celebratory set menus showcase the best of Singapore Nanyang-style seafood, conceptualised by Executive Chef Chen Khay Boon (Chef Man) and his team. They will be available from 8 January to 25 February 2024 for lunch and dinner.

IMG_0158
Prosperity Lobster, Salmon & Coral Seaweed Yu Sheng 5/5

Prosperity Salmon & Coral Seaweed Yu Sheng is a fruit-and-vegetable-forward version with ingredients such as strips of turnip, yam, carrots and Buddha's hand citron, and creatively enhanced with a crunchy purple-coloured coral seaweed. It is creatively enhanced with crunchy purple-coloured coral seaweed, resembling dragon feelers - symbolic of the zodiac year and adding a unique texture to the yu sheng. A relatively light dragonfruit-passionfruit sauce is used, allowing the yu sheng to retain the right amount of crunch and freshness after a toss. Aromatic kaffir lime leaves and ginger flowers accentuated the flavours. The luscious slices of salmon elevated the dish as well.

Double-Boiled Fish Broth 4.5/5

Red House Seafood Nanyang also offers an outlet-exclusive section of its menu devoted entirely to Giant Grouper. The fish is meant to be enjoyed from head to tail, with different cooking methods recommended for various parts – namely back, head, liver, tail, belly and body, highlighting each part's varied flavour and texture profiles. We tried Double-Boiled Fish Broth with Sliced and Fried Giant Grouper Fish Fillet ($18.80). The milky soup base is achieved by slow-cooking pork and grouper bones for eight hours. The soup had a good depth of flavours with a gelatinous mouthfeel, and the chunky sliced fillets made this soup extra wholesome.

IMG_0190
Giant Grouper Stewed with Beancurd Skin and Garlic 4/5

Giant Grouper Stewed with Beancurd Skin and Garlic (Seasonal price) is a Cantonese-style claypot dish featuring the head, belly and body with a nostalgic flavour. The fish is deep-fried and then stewed in a house-made 'chu hou' paste made with ingredients such as soybean and oyster sauces. Mandarin peel and fried garlic are included as well for aromatic accents. This dish excelled in textures and flavours, and the accompanying ingredients - beancurd skin and shiitake mushrooms, were rich with the robust sauce.

Alaskan King Crab served Two Ways 2.8/5

Alaskan King Crab served Two Ways (Sautéed Crab Meat in Truffle Oil and Egg White & Baked Crab Legs with Miso), featuring freshly peeled crab meat sauteed with egg white and truffle oil. At the same time, the legs are sliced and topped with a miso-mayonnaise sauce, baked, garnished with tobiko, and then finished with a drizzle of truffle oil for a fragrant finishing touch. While the sauteed crab meat with egg white was expertly executed, achieving a fluffy mixture of crab meat and egg white, I found the truffle oil overpowering the entire dish. The salty miso-mayonnaise sauce equally dulled the baked crab legs.

IMG_0200
Crispy Roasted Chicken with Flaxseed & Sesame 4.8/5

Crispy Roasted Chicken with Flaxseed & Sesame (From the Harmony Menu for 8-10 persons, $1088) is a labour-intensive dish that achieves exterior crispiness with flaxseed and sesame and tender meat within. In between steps, the chicken is air-dried twice on two different occasions before being roasted for 30 minutes. The skin was morish with the crisp flaxseed and sesame, imparting nutty flavours to the tender chicken.

IMG_0198
Braised 8 Head Abalone, Sea Cucumber with Winter Melon Ring & Purple Cauliflower 4.5/5

Braised 8 Head Abalone, Sea Cucumber with Winter Melon Ring & Purple Cauliflower (From the Harmony Menu for 8-10 persons, $1088) is both aesthetically pleasing to the eyes as it is to the palate, with contrasting colors lent from pumpkin sauce, and purple cauliflower florets from Holland. It is a highly nutritious and luxurious dish with auspicious ingredients of abalone and sea cucumber. Like the crispy roasted chicken, this dish requires skills and much preparation work, requiring at least two days of preparation, such as soaking and braising the abalone and sea cucumber in a superior broth. The firmness of the melon is just right as well.

IMG_0212
Chilli Crab 4/5

Red House Chilli Crab, one of Red House Seafood's signatures, delights with the crab and the fried mantou. Steamed before deep frying, the mantou had a fluffy interior with a crispy exterior without any greasy feel.

IMG_0216
Purple Glutinous Rice Cake 4.8/5

Purple Glutinous Rice Cake (Available on all CNY set menus) is one of my favourite nian gao creations to date. Pulut Hitam and Nyonya Kueh – this layered dessert is made with traditional nian gao and purple glutinous rice. I love the addition of the purple glutinous rice, which gives the nian gao an additional texture and aroma. A little less sweet would be perfect.

IMG_0148

The celebratory set menus are priced at $598 and $798 for 4 to 6 persons, and $1088, $1388 and $1888 for 8 to 10 persons. Dining reservations can be made via redhouseseafood.com/reservations/ while takeaways can be ordered via the outlets through phone or email.

IMG_8726

For this festive season, Marriott Tang Plaza Singapore has launched an exciting line-up starring 11 new items for this year's festive takeaway, such as traditional roast turkey, whole king crab, dry-aged Irish beef, log cakes and more. Pre-orders start on 6 November 2023, with collection and delivery available from 24 November to 25 December 2023.

IMG_8729
Whole Roasted Turkey

Whole Roasted Turkey with Singapore Sling Marinade, Cherry and Pineapple Stuffing with Singapore Sling Sauce, and port Wine Sauce ($240/ 4.5 kg to 5 kg, serves 6 to 8 persons) draws inspiration from Singapore's famed cocktail, Singapore Sling. The exceptional crispy and caramelised turkey skin results from submerging into a brine solution for 72 hours before roasting, consisting of ingredients like orange, juniper berries, cinnamon, brown sugar, white wine and cherry liquor. This step gives it a good season while drawing out the skin's moisture. The meat was kept pretty tender. Cherry and Pineapple Stuffing is served on the side, with a tart sweetness to pair with the turkey.

IMG_8721
Roast Pork Saddle

Roast Pork Saddle with Pancetta and Porcini Mushroom Stuffing with Spiced Orange Rum Sauce – $225 nett (2 kg, serves 6 to 8 persons). This famed Roast Pork Saddle is well-loved for its crispy, crackling skin. The meat was tender with a good ratio of fats, stuffed with pancetta, porcini mushroom and aromatic herbs that impart flavours to the meat during the roasting process. The accompanying spiced orange rum sauce helps to cut through the strong flavours for a savoury-sweet balance.

IMG_8714
Smoky BBQ Dry Aged Irish Beef Mid Ribs

Smoky BBQ Dry Aged Irish Beef Mid Ribs (Bone-in) – $270 nett (1.8 kg to 2 kg, serves 6 to 8 persons) is sous vide for 36 hours to attain a melt-in-your-mouth tenderness. Specially sourced, John Stone's dry-aged Irish beef famed for its sustainable practices that focuses on the farm, environment and ageing process. This premium 39-day dry-aged Irish Beef Mid Ribs is known for its luxurious richness.

IMG_8741
Baked Whole King Crab with Sea Urchin Gratin & Pasta

For seafood option, you can consider the stunning Baked Whole King Crab with Sea Urchin Gratin & Pasta – $325 nett (1.5 kg to 1.8 kg, serves 6 persons). The fresh crab roe and crab meat chunks are first separated and folded in with sea urchin, grated cheese and white wine before baking to achieve a glistening gratin crust. It is served on a bed of orecchiette pasta lightly sautéed with garlic and olive oil. While the flavours were there, I found it a tad too saltish for my liking.

IMG_8776

For the sweets, Blue Pea White Peach Log Cake (1 kg, $90 nett) is designed specially for the ladies. Glazed in lovely hues of blue and white from all-natural butterfly pea, it is layered with peachy-goodness of fresh white peach puree, mousse and blue pea sponge cake sandwiched in between.

My favourite would be the berries-chocolate combination found in the Mulled Wine Mixed Berries Log Cake (1 kg, $90 nett), cute with a Santa suit. Layered with raspberry cream, red wine jelly, forest berry, chocolate mousse and crunchy chocolate biscuit, the hint of alcohol helps to cut through the sweetness.

A classic would be Signature Chocolate Fudge Log Cake (1 kg $85 nett / 500g, $45 nett), well known for its fluffy chiffon cake made of Belgian chocolate. It wasn't as rich a chocolate cake as I anticipated.

IMG_8783
Caramel Popcorn with Apple Christmas Train

Caramel Popcorn with Apple Christmas Train (1 kg, $90 nett) allures with layers made of buttery popcorn biscuit base, caramel sponge and apple jelly.

IMG_8762
