ShangPalaceJul23-13

Shang Palace at Shangri-La Singapore is joining the global campaign "Find Your Shangri-La" with their special 6-course menu, "The Epicure Shangri-La at Shang Palace". Priced at $188++ per person, this exclusive menu is available until 13 August 2023, promising a memorable dining experience.

ShangPalaceJul23-1
Suckling Pig, Chilled Abalone, Sauteed Sliced Sea Conch, Baked Kagoshima Wagyu Beef Pastry

We were presented with a quartet of appetizers to kick off the meal. The beautifully plated dishes showcased a variety of cooking methods, including the succulent Suckling Pig topped with Black Caviar, the refreshing Chilled Abalone, the flavourful Sauteed Sliced Sea Conch, and the indulgent Baked Kagoshima Wagyu Beef Pastry. Each appetizer was a delightful combination of textures and flavours, offering a glimpse into the culinary craftsmanship of Shang Palace.

ShangPalaceJul23-8
Double-boiled Chicken Soup with Fish Maw, Wolfberry and Chinese Yam

The Double-boiled Chicken Soup with Fish Maw, Wolfberry, and Chinese Yam followed. It is a comforting bowl of broth that has been simmered for hours. Packed with depth and richness, the soup was a testament to the skilful art of double-boiling, resulting in a clear yet flavorful concoction that warmed both the heart and soul.

ShangPalaceJul23-10
Poached Spotted Garoupa Fillet with Crispy Bean Crumb and Black Truffle Slices

Next, we were presented with the Poached Spotted Garoupa Fillet with Crispy Bean Crumb and Black Truffle Slices. The fish was perfectly steamed, resulting in a tender and flaky texture. Topped with crispy bean crumbs, shaved black truffle, and spring onion, each bite offered a harmonious blend of flavours and textures that left us wanting more.

ShangPalaceJul23-15
Braised Spanish Kurobuta Pork Belly with Plum Sauce accompanied with Japanese Plum Wine

The Braised Spanish Kurobuta Pork Belly with Plum Sauce, accompanied by a glass of Japanese Plum Wine, was a true highlight. The Kurobuta pork belly, known for its tenderness and juiciness, was perfectly braised in a savoury plum sauce. The rich flavours of the pork were beautifully complemented by the tangy sweetness of the plum wine, creating a memorable combination that delighted the taste buds.

ShangPalaceJul23-18
Stewed Red Leg Prawn with Lemongrass and Garlic served in Claypot

The Stewed Red Leg Prawn with Lemongrass and Garlic served in a Claypot was a true delight for seafood lovers. The prawns were expertly cooked, with a firm and succulent texture. The fragrant lemongrass and garlic sauce added a burst of flavour, while the claypot presentation ensured that the dish stayed piping hot throughout the meal.

ShangPalaceJul23-26
Chilled Mango Cream Pudding, Baked Peanut Pastry, Chilled Osmanthus Wolfberry Jelly

To conclude the exquisite 6-course experience, we savoured a trio of desserts. The Chilled Mango Cream Pudding with Pomelo, Baked Peanut Pastry, and Chilled Osmanthus Wolfberry Jelly offered a sweet and refreshing finale. The highlight was undoubtedly the baked peanut pastry, which left a lasting impression and had us eagerly anticipating its potential appearance during the upcoming Chinese New Year festivities.

Overall, "The Epicure Shangri-La at Shang Palace" 6-course menu at Shang Palace was a testament to the culinary expertise and attention to detail that has made this establishment a true gem in the Singapore dining scene. From the impeccable flavours to the elegant presentation, each dish showcased the artistry and dedication of the talented team at Shang Palace. Si Chuan Dou Hua @ PARKROYAL on Kitchener Road - Celebrate Chef Leung Wing Cheung’s 12 Years At The Helm With 12 Of His Signature Dishes

IMG_1103

Si Chuan Dou Hua first found itself in our local F&B scene in 1996, with its founding outlet on Beach Road. Fast forwarding to today, the restaurant has two other spaces in the iconic UOB Plaza and PARKROYAL on Kitchener Road.

This year marks the 12th anniversary of Guangdong-born Executive Cantonese Chef Leung Wing Cheung's 12th year helming the restaurant at PARKROYAL on Kitchener Road. Chef Leung has an impressive 40 over years of experience cooking Cantonese cuisine.

IMG_1075

To mark this joyous occasion, Chef Leung invites diners to travel back in time, specifically from the 1970s to 1980s, to enjoy delicacies inspired by his hometown of Guangdong, China. Aptly named Chef Leung''s 12th Anniversary: A Classic Feast 梁师傅十二周年: 梁家经典怀旧五味篇, this time-limited menu features 12 specially crafted dishes, all of which are rare Cantonese and Sichuan dishes, seen on the restaurant's menu for the very first time.

From now till 31 May 2023, diners can enjoy a Buy-3-Free-1 or Buy-6-Free-2 promotion with any orders from this anniversary menu. Each dish is priced at $33.

IMG_1076
Wok-Fried Squid Stuffed with Prawn Paste, Bi Feng Tang Style 4.2/5

We first had the Wok-Fried Squid Stuffed with Prawn Paste (避风塘百花酿吊片), featuring Chef Leung's take on "har gao" in the shape of a squid. The Hong Kong sun-dried squid pieces are stuffed with prawn paste, fried, and paired with an addictive base of crunchy rice crackers, shrimp and garlic.

IMG_1077
Stewed Seafood with Assorted Vegetables and Crystal Vermicelli Served in Casserole 4/5

Introducing the Stewed Seafood with Assorted Vegetables (海味粉丝什菜煲) on the menu was meant to recreate regal one-pot-stews often made during festive seasons. Flavours here are more delicate while carrying a depth of sweetness from slow-cooking dried shrimps and squid. What we appreciated was the clean stock that contains no artificial flavourings. Main toppings include fish beancurd, broccoli and crystal vermicelli.

IMG_1078
Poached Giant Garoupa Fillet with Luffa Melon in Fish Stock 4.5/5

One of our favourites for the night was the Poached Giant Garoupa Fillet with Luffa Melon in Fish Stock (鱼汤胜瓜浸龙趸球). The cloudy broth was brimming with natural sweetness and creaminess from hours of simmering fish bones and meat. I particularly enjoyed the addition of black fungus and, my favourite luffa, for the refreshing crisp. My only gripe was that I preferred a cleaner texture on the giant garoupa fillets instead of the slightly floury mouthfeel.

IMG_1079
Slow-Cooked Roast Duck with Sea Cucumber and Shrimp Roe 4.2/5

The Slow-Cooked Roast Duck with Sea Cucumber and Shrimp Roe (虾子海参焖火鸭煲) was served sizzling hot in a claypot. The mix of tender slow-cooked duck, sea cucumber, shrimp roe and tofu skin rolls were covered in a sweet seafood-based gravy.

IMG_1100
Boiled Sliced Venison with Spicy Chilli Sauce 4.5/5

Most of my dining companions and I have not had many venison dishes before, but we thoroughly enjoyed the Boiled Sliced Venison with Spicy Chilli Sauce (沸腾爽滑鲜鹿肉). Using the same Si Chuan recipe from Chef Leung's childhood, it features tender and lean venison slices that were first boiled before adding to the numbing spicy chilli sauce. Digging into it past the peppercorns, minced garlic and dried chillies, you will also see strips of celtuce, leek and beansprouts which provide a complementary crunch.

IMG_1082
Steamed Kampong Chicken with Fragrant Scallion Oil 4/5

Using a fragrant house-made scallion oil, the Steamed Kampong Chicken (葱油走地鸡) has tender meat and silky skin.

IMG_1101
Poached Tianjin Cabbage Topped with Dried Shrimp and Conpoy in Superior Stock 3.5/5

Next was the Poached Tianjin Cabbage (虾亁瑶柱扒津白), which had dried shrimp and conpoy toppings. While we enjoyed the depth of the clear superior stock, we wished for more, especially the portion, considering its price tag.

IMG_1083
Pan-Fried Tofu Stuffed with Minced Fish Paste in XO Sauce 4/5

Another classic dish is the Pan-Fried Tofu Stuffed with Minced Fish Paste in XO Sauce (极品酱鱼腐煎豆包). The rich and slightly spicy XO sauce with dried scallop bits scattered on top would go great with a bowl of white rice. Each piece of pillowy soft tofu is stuffed with minced fish paste.

IMG_1105
Sauteed Egg with Kurobuta Honey Pork 3.8/5

The Sauteed Egg with Kurobuta Honey Pork (黑豚叉烧炒滑蛋) was much smaller than we expected but was creamy and buttery. The slices of Kurobuta pork were tender and lent a sweetness.

IMG_1102
Sauteed Minced Fish with Celery, Honey Peas, Celtuce and Bell Pepper 4/5

We learnt that this dish of Sauteed Minced Fish (生煎鱼崧炒荷芹) is one typically eaten during New Year in the past but is less commonly found around now due to its laborious cooking process. First, the minced fish paste is fried and thinly sliced before being sauteed with sweet celery, honey peas, celtuce and bell pepper.

IMG_1085
Pan-Fried Minced Pork with Salted Fish 3.8/5

Finally, the Pan-Fried Minced Pork with Salted Fish (马友咸鱼生煎肉饼) features lean pork laced with bits of salted fish. While we enjoyed the texture of the patties, we found these too salty for our liking.

My dining companions and I don’t take beef, but the last of the 12 dishes is the Wok-Fried Rice Noodles with Sliced Wagyu Beef and Bitter Gourd 和牛凉瓜炒河粉.

Alongside the Buy-3-Free-1 / Buy-6-Free-2 promotion, diners can enjoy 30% off one of Si Chuan Dou Hua's signature dishes. The selection includes Signature Roast Duck with Truffle Sauce (Half $68, Whole $128), Double-boiled Soup of the Day ($30), Signature Bean Curd Medley ($28) and Signature Claypot Rice with Waxed Meat ($36).

Reservations are recommended and can be made via https://www.tablecheck.com/en/parkroyal-kitchener-road-si-chuan-dou-hua/reserve/landing.

SichuanDouHuaCNY23-1
Abundance Treasures Yu Sheng 4/5

Si Chuan Dou Hua at PARKROYAL on Beach Road premieres its first-ever Abundance Treasures Yu Sheng featuring a combination of its Signature La Zi Ji (diced chicken with dried chilli), Abalone and Smoked Salmon. Surprisingly the combination works.

SichuanDouHuaCNY23-9
Double-boiled Chicken Broth 4/5

The hearty bowl of Double-boiled Chicken Broth with Sea Cucumber, Matsutake Mushroom and Dried Scallop is boiled over 4 hours, extracting the essence of the ingredients for a sweet and earthy finish.

SichuanDouHuaCNY23-10
King Garoupa with Fresh Sichuan Peppercorn 5/5

The crowd's favourite goes to the King Garoupa with Fresh Sichuan Peppercorn and Julienne-cut Chinese Lettuce on a Sea of Spring Onions. The fish fillet comes with a punchy heat and distinctive numbing spice fragranced by the Sichuan peppercorn. It was so good that I was silently screaming for more. It is an exclusive outlet dish at Si Chuan Dou Hua, PARKROYAL on Beach Road.

SichuanDouHuaCNY23-12
Braised Bird's Nest with Fresh Fish Maw in Crab Meat Sauce 4.2/5

Another beautiful dish on the menu is the Braised Bird's Nest with Fresh Fish Maw in Crab Meat Sauce. It is thick, rich and creamy with immense umami flavours.

SichuanDouHuaCNY23-18
Braised 8-headed Abalone with Hangzhou-style Pork Belly 4.5/5

Not to be missed is the Braised 8-headed Abalone with Hangzhou-style Pork Belly accompanied with Seasonal Vegetables. The pork belly is so soft and tender, falling apart with ease while the abalone provides the contrasting springy texture.

SichuanDouHuaCNY23-23
Braised Lobster with Fish Paste Noodles in Superior Stock 4/5

Another outlet-exclusive dish is the Braised Lobster with Fish Paste Noodles in Superior Stock. The highlight is the springy fish paste noodles paired with juicy lobster.

SichuanDouHuaCNY23-27
Pan-fried Auspicious Nian Gao and Bunny-shaped Milk Pudding 3/5

Lastly, we had the Pan-fried Auspicious Nian Gao and Bunny-shaped Milk Pudding, ending the meal on a sweet note. Unfortunately, the dessert is not as good as the savoury items.

Note: This is an invited tasting.

Shangri La Chinese New Year 2023 at Shang Palace

ShangriLaCNY23-15

Shangri-La Singapore ushers in the Year of The Rabbit with an abundance of divine reunion feasts and thoughtfully curated festive goodies. The Year of the Rabbit beckons a prosperous new beginning at the Michelin-starred Shang Palace, with a refined repertoire of Cantonese culinary treasures befitting a new year's feast from 9 January to 5 February 2023. Specially curated by Executive Chinese Chef Daniel Cheung, guests can choose to indulge in the eight-course menus or select from the quintessential à la carte new year dishes that will delight your palate and satisfy your senses.

ShangriLaCNY23-6

ShangriLaCNY23-11

Like every Chinese New Year dinner, we start with the Lo Hei, tossing to a year of prosperity and abundance. Be impressed by the limited-edition Auspicious Rabbit Yu Sheng (SGD388++ for 6 pax), arranged into an endearing image of a cute rabbit and is available for dine-in orders from 9 January to 5 February 2023. The Auspicious Rabbit Yu Sheng is served with South African Abalone, Hokkaido Scallop, Local Lobster and Scottish Smoked Salmon, with a minimum of 2 days advance order.

ShangriLaCNY23-19
Double-boiled Chicken Soup with Sea Conch & Dried Sarcodon Aspratus 4.5/5

Kickstarting our meal is a bowl of comforting and delicious Double-boiled Chicken Soup with Sea Conch & Dried Sarcodon Aspratus. The dried sarcodon aspratus has health benefits such as lowering cholesterol levels, muscle relaxation and blood circulation.

ShangriLaCNY23-15
Abundance Pen Cai 4.5/5

Brimming with 18 different ingredients is the Abundance Pen Cai. A whole dace fish lying on the top of the treasure pot caught my attention. It is a delicious change from the usual pen cai we get in Singapore. I am delighted the pen cai comes with well-braised goose web too. A delicacy few enjoy and hence rarely found in most pen cai served in Singapore.

ShangriLaCNY23-25
Steamed Garoupa Fillet with Crispy Bean Crumb Sauce 4.2/5

The Steamed Garoupa Fillet with Crispy Bean Crumb Sauce is a clean and flavoursome dish given an elevated texture enjoyment from the crispy bean crumb.

ShangriLaCNY23-27
Spring Onion Chicken 4.5/5

The Spring Onion Chicken is a delightful dish whereby the tender steamed chicken is piled with spring onions and deep-fired shallots for an aromatic finish.

ShangriLaCNY23-31
Stir-fried Glutinous Rice with Air-dried Preserved Meat 4/5

The Stir-fried Glutinous Rice with Air-dried Preserved Meat wraps up on the savoury. The preserved meat's aroma accentuates the sticky rice served at the end of Chinese dinner.

ShangriLaCNY23-35
Red Date Nian Gao with Bird's Nest accompanied with Rabbit Custard Bun 4/5

Lastly, we have the Red Date Nian Gao with Bird's Nest and Rabbit Custard Bun to end the dinner on a sweet note. My favourite is the rabbit custard bun, which is too cute to be eaten.

Chinese New Year goodies are available for purchase from now to 3 February 2023. In addition, a 15% Early Bird Discount is applicable for selected items and is valid till 8 January 2023. Shang Palace @ Shangri-La Hotel Singapore - New Chef At The Helm With A Revitalised Menu Comprising His Signature Creations

ShangPalaceSep22-58

Shang Palace, the one Michelin-starred restaurant at Shangri-La Hotel Singapore, welcomes new Executive Chinese Chef Daniel Cheung from Hong Kong. With 37 years in top-level Cantonese cooking, Chef Daniel Cheng combines traditional Cantonese cuisine with contemporary creativity. His latest stint was at Shang Palace Kowloon, another Michelin-starred restaurant within the group, with bags of experience working at Spring Moon and The Jockey Club..

ShangPalace2

We are given a glimpse of the new menu, starting with a quad of small bites. We had Chilled Fresh Abalone marinated with Japanese Sake, Chilled Tomato with Plum, Barbecued Pork Pastry and Scallop Siew Mai on the plate.

ShangPalace6
Applewood Smoked Beancurd Rolls 4.5/5

With Chef Daniel on the helm, he also brought some of his signature dishes from Hong Kong and introduced them to the new menu. One of them is the Apple Smoked Beancurd Rolls ($18) stuffed with Shitake Mushroom, Carrot and Green Mustard. Meticulously wrapped together, the vegetarian dish is packed with delightful textural enjoyment infused with applewood aroma.

ShangPalaceSep22-49

ShangPalaceSep22-55
Fried Rice with Kagoshima Wagyu Beef served in Whole Tomato 4.8/5

A favourite of his signature dishes is the Fried Rice with Kagoshima Wagyu served in Whole Tomato ($28). A whole tomato is used as a bowl for the fragrant fried rice. The chef advised us to have the fried rice together with the tomato. The highlight and what holds the dish together for a lovely finish is the sweet and vinegary sauce.

ShangPalaceSep22-16
Steamed Spotted Garoupa fillet in Egg White Sauce 4/5

Another of Chef Daniel's signature dishes is the Steamed Spotted Garoupa fillet in Egg White Sauce ($48) topped with crispy parma ham. It is a light and hearty dish with a drinkable egg white sauce that comprises broccoli and carrot in superior broth.

ShangPalaceSep22-31
Cantonese Style Crispy Chicken served with Spicy Salt 4.2/5

The Cantonese Style Crispy Chicken served with Spicy Salt is another dish on the signature menu. The air-dried chicken is slow cooked in lukewarm oil for 25-40 minutes, drip-dry and then bathed in very hot oil to achieve the crispy skin.

ShangPalaceSep22-48
Baked Live Prawns with Garlic and Sarawak White Pepper 4.5/5

Another highlight of Chef Daniel's signature dishes is the Baked Live Prawns with Garlic and Sarawak White Pepper ($58). Chef Daniel used to make this in Hong Kong and brought it to Singapore with a little tweak to localise it by using local prawns and Sarawak peppercorn.

ShangPalaceSep22-02

ShangPalaceSep22-08
Boneless Quail filled with Bird's Nest in Superior Broth 4.5/5

A time-honoured dish on Shang Palace's menu is the Boneless Quail filled with Bird's Nest in Superior Broth ($98). Traditionally it used to be stuffed with shark's fin but now is replaced with bird's nest. I enjoyed this version, as the bird's nest give it an extra crunch.

ShangPalaceSep22-26
Stewed Shrimp Pomelo Peel 3.5/5

The Stewed Shrimp Pomelo Peel ($28) is an uncommon nostalgic dish. I never knew we could eat pomelo peel. It is cooked to a soft spongy texture. It tasted bland on its own, lifted by the shrimp roe sauce, which is very delicious.

ShangPalaceSep22-60
Double-boiled Snow Pear with Peach Resin, Mandarin Peel and Chuanbei 4.2/5

Wrapping up our dinner is the Double-boiled Snow Pear with Peach Resin, Mandarin Peel and Chuanbei. A light and refreshing dessert after all the richly flavoured dishes.

Jiang-Nan Chun @ Four Seasons Hotel Singapore - Launched Signatures by Executive Chinese Chef Albert Au

JiangNanChun7

Michelin-starred Jiang-Nan Chun at Four Seasons Hotel Singapore has recently launched Signatures by Executive Chinese Chef Albert Au. Available at both lunch (Six-course $178/pax) and dinner (Seven-Course at $198/ pax), menus showcase fresh, seasonal produce in dishes executed by weaving fresh, seasonal produce and a passion for bringing a dynamic perspective to classic techniques.

JiangNanChun6
Jiang-Nan Chun Trilogy 4.8/5

Dinner is a seven-course experience that begins with a Jiang-Nan Chun Trilogy. It was a plate of 3 very luxurious bites - starting from a succulent and meaty Blue Prawn Toast, followed by a brilliantly executed slice of Crispy Suckling Pig layered with red wine jelly and a generous dollop of osetra caviar, and rounding off the first course is the signature Honey Glazed Pork Collar.

JiangNanChun9
Double-boiled Fish Maw Soup 4.5/5

Next up, we have the classic Double-boiled Fish Maw Soup. It is doubled boiled for 6 hours with Sea Whelk and Dried Scallops, resulting in a gelatinous texture.

JiangNanChun12
Braised Star Garoupa Fillet 4.8/5

The next course was my favourite, which features a wild-caught Braised Star Garoupa Fillet with Daikon in Superior Sauce. Chef Albert specially chose the Japanese daikon for its flavours, and it went all tender and sweet in the rich superior sauce. The fish on its own was outstanding, but the addition of the perfectly stewed daikon brought the dish up a notch.

JiangNanChun13
Boston Lobster 4/5

The next dish highlights a style of cooking 避风塘 that is said to originate from Hongkong Causeway Bay. Such a cooking method was traditionally used with seafood. Here we had an elevated version using Boston Lobster with fragrant Garlic and Dried Chilli. Known for its aroma and robust flavours, the garlic and dried chilli brought out the lobster's sweetness, especially when the meat remained tender and juicy.

JiangNanChun20
Braised Pork Belly with Pineapple 4.2/5

The next course is another Chef's signature - Braised Pork Belly with Pineapple. When the dish was served, there was an immediate pleasing waft of citrusy orange peel coming through. To counter the meat's richness, the pork belly was braised together with pineapple and other dried fruits for their tartness and acidity.

JiangNanChun21
Handmade Noodles with Baby Abalone and Vegetables 4.8/5

The last savoury dish was a highlight for me as well - an extraordinarily homely and comforting Handmade Noodles with Baby Abalone and Vegetables. Both the broth and the texture of the noodles were superb, reflecting Chef Albert's culinary expertise and knowledge.

JiangNanChun30
Oolong Tea infused Jivara Chocolate Sphere with Kumquat 3.5/5

Dessert is Oolong Tea infused Jivara Chocolate Sphere with Kumquat. It was pretty interesting to see a kumquat replacing the usual orange. I feel the extra acidity from the citrusy kumquat filling worked even better with the chocolate.

You can also opt for a pairing of Taittinger Prestige Rosé and fine wines, curated to perfectly complement the full seven-course menu, available at $298 per person. For dining reservations, please speak with Jiang-Nan Chun at 6831 7220 or email jnc.sin@fourseasons.com.
