Marking the arrival of Spring, Wan Hao Chinese Restaurant unveils its "Spring in Bloom Delicacies", a limited-time menu inspired by seasonal ingredients traditionally enjoyed during this vibrant time of year. Available from 4 March to 30 April 2026, the menu showcases the restaurant's dedication to premium, sustainably sourced produce, thoughtfully crafted into refined Cantonese creations. Diners can look forward to an extensive à la carte selection of handcrafted dim sum, alongside a beautifully curated 5-course set menu.

Trio of Appetisers 4/5

We began our dinner with the Trio of Appetisers, a delightful introduction to the season's flavours presented in elegant bite-sized portions. The Deep-Fried Prawn with Mandarin Orange Sauce stood out with its light, crisp exterior coated in a citrusy glaze that added a refreshing zing. The Roast Kurobuta Pork Char Siew with Osmanthus Honey offered a luscious balance of smoky sweetness, elevated by the floral notes of osmanthus. Completing the trio was the Pan-Fried Japanese Scallop with Spring Bamboo Shoot and Yuzu, where the scallop's natural sweetness was complemented by the gentle crunch of bamboo shoot and a subtle yuzu brightness.

Steamed Marble Goby Fillet 3.8/5

Next, we had the Steamed Marble Goby Fillet with Pea Sprout in Lemongrass Chicken Superior Stock. The marble goby fillet was delicate and tender, boasting a clean, naturally sweet flavour and a silky texture that absorbed the broth's essence well. The superior stock, enriched with chicken and lifted by aromatic lemongrass, lent the dish a creamy depth. While comforting and well-executed, the flavour profile leaned towards being slightly one-dimensional, and a more pronounced piquant contrast could have added greater complexity.

Stewed Iberico Pork 4/5

The Stewed Iberico Pork with Fermented Red Bean Curd Paste and Spring Bamboo Shoot, served in a stone pot, delivered a hearty and satisfying note. The Iberico pork was fork-tender, richly infused with the fermented red bean curd paste, giving it a deep umami richness. This was beautifully balanced by the natural sweetness and crisp texture of the spring bamboo shoots, adding both contrast and dimension to the dish.

Golden Vermicelli with Crab Meat, Spring Bamboo Shoot and Ginger 3.8/5

Following that, the Golden Vermicelli with Crab Meat, Spring Bamboo Shoot and Ginger offered an interplay of textures. The vermicelli, deep-fried to a golden crisp, provided a light crunch that paired well with the plump, sweet crab meat and crunchy bamboo shoots. While enjoyable, the accompanying sauce could have been brighter and more vibrant to better tie the elements together and elevate the overall dish.

Chilled White Chrysanthemum Jelly with Honey Sorbet 3/5

To conclude, the Chilled White Chrysanthemum Jelly with Honey Sorbet provided a refreshing and soothing finish. The chrysanthemum jelly was light and subtly floral, complemented by the gentle sweetness of the honey sorbet — a clean and palate-cleansing end to the meal.

Overall, the Spring in Bloom Delicacies menu at Wan Hao Chinese Restaurant captures the essence of the season through refined Cantonese craftsmanship, highlighting quality ingredients with elegant restraint. While some dishes could benefit from bolder contrasts, the menu remains a thoughtful and polished celebration of springtime flavours.

The Orchard Cafe @ The Orchard Hotel Singapore - Lavish Buffet Featuring Finest Cut of Meats and BBQ Seafood

The Orchard Cafe at The Orchard Hotel Singapore has a brand new lineup with Flaming Feast: Prime "Meats" Seafood BBQ Buffet. Running from 1 March to 4 May 2025, the feast also showcases American flavours, offering a range of BBQ meats with hearty US flavours, comforting Western fare, and indulgent desserts.

Over at the Prime Meats & Signature Carving station, you will find beastly-looking roasts and BBQ meats — Slow-Roasted US Grain-Fed Prime Rib, BBQ-smoked hickory US Beef Brisket, and Slow-Roasted US Kurobuta Pork Shoulder. While the meats were truly the stars of the offerings, given their succulency and bold flavours, the sides were delectable as well. The Yorkshire puddings were excellent with the US prime rib, and the buttery mashed potatoes for the pork shoulder were sinfully delicious.

Alongside the BBQ meats, the Charcoal Grill Selections features tantalising items such as Flank Steak. Short Plate, Lamp Chops and Beef Sirloin. The New Orleans BBQ Prawn offered a fresh take on their usual grilled prawns.

Another station offered the comfort of Fried Basket. There were Fish & Chips, succulent Buttermilk Chicken, and my favorites were the Pumpkin Croquette and Maryland Crab Cakes.

Seafood on Ice

The Seafood on Ice station was also delightful, with Snow Crab Legs among other usual favourites such as Red Prawns and Black Mussels. Boosting the seafood offering, there is also a Sashimi and Sushi counter offering Norwegian Salmon sashimi, Yellow Fin Tuna and Hokkaido Tako.

Another highlight was the dessert lineup. Not only are there regular crowd-pleasing and comforting sweets such as Bread & Butter Pudding, Blueberry Cheesecake, and Key Lime Pie, but also unique creations such as the Snicker Chocolate Bar, which offers a whole new experience in enjoying the familiar flavours of a Snickers. The live station whipped up delicious Banana Foster with Caramel Ice Cream made of caramelised bananas served with a scoop of velvety vanilla ice cream and caramel sauce.

Chopsuey Cafe @ Dempsey - Usher in Prosperity with an Exclusive Festive Menu

Chopsuey Cafe at Dempsey will present an exclusive Lunar New Year menu from 20 January to 12 February. The menu offers a fusion of contemporary flavours across an array of à la carte and vegetarian dishes alongside a thoughtfully curated set menu.

Lucky Lunar ‘Lo Hei’

Chopsuey Cafe’s signature Lucky Lunar ‘Lo Hei’ ($68/$88/$128), a vibrant mix of baby romaine, white radish, beetroot, carrot julienne, blueberries, pomegranate, pomelo, chunky cured salmon, toasted peanut crust, white sesame, and crispy wonton skin. The coarser toasted peanut crust added a delightful crunch, while extra virgin olive oil introduced a subtle herbaceous note that elevated this refreshing and textured dish.

Among the starters, the Prawn Toasties ($19) stood out with their juicy king prawn paste. They offered chunky bites encased in an airy, perfectly crisp fried bun. Paired with a chili-dipping gravy, it was a harmonious and satisfying bite.

The vegetarian menu offers a Hot & Sour Soup ($14) loaded with tofu, mushrooms, vegetables, vinegar, and a dash of chilli oil for a spicy kick. It was vinegary enough but left an aftertaste that didn't quite work for me.

The menu offers a wide selection of mains. The Crispy Orange Kurobuta Pork ($32), an elevated take on sweet and sour pork, delivered succulent pork morsels, but the overly thick and sweet sauce was overwhelming. The Taiwanese-Style Three Cup Beef Tenderloin offered a slightly more balanced flavour, though it leaned towards sweetness as well.

Classic dishes like the Wok Breath Fried Hor Fun with Fish ($26) impressed me with a decent amount of wok hei, though the fish slices were rather bland. The Lobster Fried Rice ($42) featured chunks of lobster and boasted distinct grains and flavorful notes from cai po and garlic, but the unexpected sweetness overshadowed its savoury profile.

Our meal concluded with the delightful Baked Alaska, presented under a grand dome. This dessert featured a medley of pistachio gelato and raspberry sorbet, resting on a chocolate sponge base, all topped with Italian meringue. This light and refreshing dessert was the perfect finale, offering a delightful contrast to the richness of the preceding beef dishes.

The expanded menu at The Astor Grill, curated by Chef de Cuisine Angelo Sergio, offers an impressive array of beef cuts, including bone-in, shell loin, dry-aged varieties, and non-steak main alternatives. These cuts are perfectly prepared on a custom-built parrilla grill using charcoal and vulcan stones. This results in a symphony of new flavour profiles and robust nuances created during caramelisation, complete with a slightly charred crust.

Tajimaya Yakiniku @ Vivocity - Unveils A Fresh New Concept With A Revamped Menu

Tajimaya Yakiniku has recently unveiled its newly revamped outlet at Vivocity, housing three different concepts within an elegantly designed space - Tajimaya Yakiniku, Suki-Ya KIN and MASH Whisky Bar. Tajimaya establishes itself as the purveyor of authentic Japanese Yakiniku meats. With the new a la carte and set menu, more premium and exclusive Yakiniku meats are now available. The restaurant is also completed with a Japanese high-performance "smokeless" grill exhaust system, allowing you to savour what's sizzling in front of you in great comfort.

The menu offers prime Waygu beef from Kagoshima and Miyazaki and Japanese Kurobuta pork in both set and a la carte options. We tried the Tajimaya A5 Kagoshima Karubi Set ($238.80 for 2pax). The Set Menu comes with House Salad, San Chu, Sashimi (Daily Selection)/Tempura, Chawanmushi, Miso Soup, and Garlic Fried Rice.

The platter includes A5 Kagoshima Nami Karubi Boneless Short Ribs, A5 Kagoshima Sankaku Bara Chuck Short Ribs, A5 Kagoshima Sasabara Flank, A5 Kagoshima Kainomi Flap, and A5 Kagoshima Nakaochi Karubi Ribs Finger.

All the cuts were tantalising, with beautiful marbled meats. My favourite cut is the Nami Karubi Boneless Short Ribs being the most well-balanced cut of fats and meat. They were scrumptious on their own, with or without the dipping sauces. The accompanying three sauces have different taste profiles to complement the meats - savory shoyu, garlicky miso and tare.

Cut into cubes, Nakaochi Karubi Ribs Finger gave an enjoyable bite, and I love it with the morish aromatic garlic fried rice that comes with an equally delectable chewy texture.

Another favourite is the Kainomi Flap, a small but extremely flavoursome part of the rib area.

If you wish to try a mix of Beef and Pork, there's the Yakiniku Platter Set for ($228.80 for 2 pax). The assortment of meats is served in traditional Japanese ware, featuring A5 Miyazaki Striploin, A5 Kagoshima Sasabara Flank, A5 Miyazaki Rib Rosu Shin Ribeye, A5 Miyazaki Nami Karubi Boneless Short Ribs, A5 Kagoshima Nakaochi Karubi Ribs Finger, A5 Kagoshima Misuji Top Blade, A5 Kagoshima Chuck Flap Zabuton, Japanese Kurobuta Pork Belly and Japanese Kurobuta Pork Collar.
