The Orchard Cafe @ Orchard Hotel Singapore - OZ “Meats” Buffet, A Vibrant Celebration of Premium Australian Produce, Culinary Craftsmanship, and Bold Flavours.

The Orchard Cafe at Orchard Hotel Singapore has recently launched the OZ "Meats" Buffet, showcasing the best of premium Australian produce through a lineup of curated dishes and live stations. Complementing the hearty offerings is an array of decadent desserts, ranging from classics to those inspired by Australian favourites.

Nachos Station

The Nachos Station gets things off to a lively start, featuring AUS grain-fed beef or pork con carne. Paired with condiments such as tender beans, creamy guacamole, spicy salsa, sweet corn and sour cream, it makes for a fun and flavourful starter to the buffet.

Slow-roasted AUS Grain-fed Striploin.

At the Carving Station, diners can enjoy Slow-roasted AUS Grain-fed Striploin and Aussie-Style BBQ Pork Shoulder. I personally favoured the pork shoulder, which was noticeably juicier and more tender, with flavours beautifully complemented by the accompanying BBQ sauce.

Halibut

For seafood lovers, the Australian Catch of the Day was Halibut served with Béarnaise sauce. It was a lighter, more delicate option that balances the heavier meat offerings.

The AUS Wagyu Beef Sliders are also not to be missed, with fluffy buns sandwiching flavoursome patties and melted cheese. These relatively humble-looking bites turned out to be one of my personal favourites.

Another highlight is the Charcoal Grill Station, where AUS Beef Tri-tip, Short Plate and Veal Tenderloin are flame-grilled over charcoal, imparting enticing smoky notes to the succulent meats.

The dessert selection was an absolute joy, rounding off the buffet on a sweet note. Among the seasonal selections, the Tim Tam Tart with Berries was indulgently rich with chocolate, delivering a delightful nutty crunch with every bite. Lamingtons offered a simple pleasure with soft butter cake coated with desiccated coconut, executed well with just the right level of sweetness.

Passion Fruit Pavlova with Fresh Fruit

The Passion Fruit Pavlova with Fresh Fruit was another standout, crisp around the edges with a slightly chewy centre, carrying bright tropical notes of mango and passion fruit.

The Hot Dessert Station was particularly irresistible, featuring indulgent treats such as Salty Peanut Brownie Pudding, Bourbon, Rum & Raisin Bread Pudding, and a comforting Baked Rice Pudding with Raspberry.

A standout dish, the Australian Tenderloin Carpaccio showcases the quality of Cape Grim tenderloin, sliced paper-thin and seasoned simply with salt and pepper. Yellow onion shavings add a subtle bite, while a drizzle of truffle oil and truffle shoyu lends depth and aroma. Finished with chopped chives, this dish is elegant, restrained, and utterly satisfying.

The Red Pepper Australian Beef Tartare is bold and flavour-forward. Finely minced Cape Grim tenderloin is mixed with gochujang, soy sauce, and sesame oil, then crowned with a rich confit egg yolk. Served alongside thinly sliced Nashi pear and croutons, and finished with chives, sesame seeds, and crispy minced garlic, this dish delivers a harmonious balance of spice, sweetness, and umami, while allowing the beef’s natural flavour to shine.

Slow Braised Australian Intercoastal 4/5

Comforting and hearty, the Slow Braised Australian Intercostal features Sanchoku wagyu cut into cubes, seared, and braised for 2 to 3 hours in a mirepoix, tomato paste, beef stock, and red wine. The result is tender, flavourful meat coated in a rich sauce. Served with burrata cheese and grilled sourdough, and finished with balsamic glaze and chives, it is indulgent without being overwhelming.

House Cured Beef Bacon Salad 4.2/5

A creative take on a salad course, the House Cured Beef Bacon Salad uses US beef shortplate, cured in-house for a week with pink salt and pepper, then cold-smoked over applewood. Paired with grilled baby gem, fresh tomatoes, shaved parmesan, and microgreens, the dish is finished with a zesty lemon vinaigrette and a final drizzle of extra virgin olive oil. The result is smoky, savoury, and refreshingly balanced.

21-Day Aged Lamb Rack 4.2/5

The 21-Day Aged Lamb Rack is dry-aged, sous vide at 55°C for three hours, and finished over applewood and charcoal. The lamb is tender and robust, served with roasted root vegetables — carrot, parsnip, celeriac, and beetroot — glazed in red wine sauce. A housemade rosemary mint sauce beneath the lamb complements the meat beautifully, enhancing its natural richness.

Mangalica Pork Tomahawk 4.2/5

Rich and indulgent, the Mangalica Pork Tomahawk is deboned, sous vide at 55°C, then grilled over an applewood fire. Thinly sliced Gruyère cheese is laid atop and torched for added decadence. Housemade pickled pumpkin and whisky mustard provide much-needed acidity and sharpness, cutting through the pork’s natural fattiness.

Woodfire Grilled Argentinian Angus Ribeye 4.5/5

One of the brand-new additions to the series, the Woodfire Grilled Argentinian Angus Ribeye features 100-day grain-fed beef from the Pampas region. Simply seasoned and grilled over applewood fire, the ribeye shines with robust beefy flavours. The vibrant housemade chimichurri adds a herbaceous, spicy lift, making this a classic yet satisfying pairing.

Making its debut at Bedrock Bar & Grill, the Jeju Premium Hanwoo Ribeye Cap is a luxurious highlight. Known for its exceptional marbling and tenderness, the beef is grilled over applewood fire and served with a grilled jalapeño and béarnaise sauce. The accompaniments beautifully complement the richness of Hanwoo, allowing diners to fully appreciate this prized Korean beef.

The Black Angus Striploin is a classic cut done right, allowing the natural qualities of the beef to take centre stage. Known for its fine marbling and robust beefy flavour, the striploin is simply seasoned with salt and pepper before being expertly grilled over high heat to achieve a beautifully caramelised crust.

Japanese Satsuma Wagyu A5 Striploin 4.5/5

The pinnacle of the tasting menu, the Japanese Satsuma Wagyu A5 Striploin, represents the highest grade of Japanese beef. Masterfully grilled, it is served with kizami wasabi (wasabi root stems) to enhance its sweetness, alongside shoestring fries dusted with shichimi togarashi. Rich, buttery, and luxurious, it is a fitting climax to the World Meat Series.

Chocolate Marquise 4.2/5

The meal concludes with a Chocolate Marquise, made with digestive biscuit and roasted hazelnuts. Served with raspberries and blueberries, and drizzled with 66% Valrhona dark chocolate sauce, it offers a satisfyingly rich yet balanced finish.

Since its inception in 2016, Bedrock Bar & Grill’s World Meat Series has drawn discerning diners with its exploration of premium and lesser-known meats from around the world. This expanded 10th anniversary edition is the most comprehensive iteration yet—a thoughtfully curated retrospective that blends nostalgia for longtime fans with a “best-of” introduction for newcomers. For meat lovers seeking a global, indulgent, and expertly executed dining experience, the World Meat Series 2026 is not to be missed.

Viva Lavender @ Lavender Street – Modern European Plates, Charcoal-Grilled Meats & A Cozy Hideaway

Situated along a quieter stretch of Lavender, Viva Lavender brings together modern European flavours, house-aged meats and a breezy, welcoming space that transitions nicely from bright daytime dining to a warm, intimate evening ambience. With a strong focus on charcoal grilling and a surprisingly robust tapas/appetisers selection, the restaurant also offers one of the more attractive weekday happy hour deals in the area.

Truffle Mushroom Croquette 3.5/5

Perfect as a starter to warm up the palate, Truffle Mushroom Croquette ($8 for 2 pcs) comes crispy on the outside and creamy within. The truffle is intentionally subtle, allowing the mushroom filling to stand out without being overpowering. A comforting, easy-to-like bite.

Gambas Al Ajillo 2
Gambas Al Ajillo 3/5

A classic Spanish dish - Gambas Al Ajillo ($22) featuring four shrimps and toast. The house-made chilli oil adds personality, but we wished for a more potent garlic punch and more of that sizzling olive oil base to mop up with bread. Still enjoyable but could be bolder in flavour.

Padron Peppers ($16) came in a generous portion, ideal for sharing. Mildly spiced, light cream sauce on the side and topped with shaved cheese. Works well as a snack between heavier dishes or with drinks. Simple but satisfying.

Charred Cabbage 2

One of the more memorable vegetable dishes is the Charred Cabbage ($16), where the wedges of cabbage are juicy inside, served with herb yoghurt and house chilli oil, and topped with crispy kale for texture. While delicious, smaller wedges might allow the charred flavour to develop even more deeply. Still a solid, well-balanced plate.

Known for dry ageing and grilling their meats, we were recommended the Spanish Vintage Chilled Striploin ($42/300g). It was well-seasoned and delicious with the grilled garlic, but the cut leaned a little ‘veinier’ than ideal for us. That said, it showed enough promise that we’d gladly return for their Tomahawk next time.

Fork-tender and deeply comforting, this Braised Lamb Shoulder ($36) comes with silky pomme purée and yoghurt. The flavours reminded my dining partner of a refined rendang, which is rich and aromatic. Best shared, as the dish becomes quite heavy after several bites.

A standout for me is the Miso Black Cod ($45) - buttery, silky, and melts instantly - complemented by a luscious tobiko beurre blanc that adds brininess and depth. A dish we would order again without hesitation.

Another favourite of the night is the Saffron Risotto with Hokkaido Scallop ($38), which was exceptionally fresh, and the ponzu pearl rice carries beautiful umami with each spoonful. A luxurious, well-executed entrée.

Viva Lavender runs a Monday–Thursday Happy Hour (4:30-6:30pm):

• Housepour wines at $10/glass
• Beer Bucket at $35 for 5 bottles

We tried four cocktails, including their Hot Yuzu Margarita, Negroni, Espresso Martini and Mimosa, and all were surprisingly well-balanced. Definitely worth stopping by early for drinks.

Viva Lavender strikes a balance between cosy neighbourhood charm and polished modern European dining. While a few dishes could deliver a punchier flavour profile, the seafood plates and lighter tapas truly shine, making it a spot worth returning to, especially with their generous weekday Happy Hour.

The restaurant also caters well to private events and group bookings, offering two private sections: a contemporary front bar area ideal for smaller, social gatherings and a warm, semi-private rear dining space suited for seated meals or intimate celebrations. Both areas are available with a minimum spend requirement, providing flexibility depending on the group size and occasion.

We enjoyed the selection of cold dishes under the Christmas Salad spread, especially the Roasted Squash & Pomegranate Quinoa Salad and the Maple Baked Ham Salad. Other options include the Heirloom Tomato Caprese Salad, Duck Leg Confit with Smoked Lemon Hummus and more.

Beside it sits the Sashimi and Sushi station, where sashimi lovers can look forward to Norwegian Salmon Trout, Yellow Fin Tuna and Hokkaido Tako.

The popular Seafood on Ice section showcases Red Prawns, Cherry Clams, Sea Whelks, Black Mussels and Half Shell Scallops. These were of decent quality. Depending on the buffet session, diners can also look forward to Snow Crabs and Boston Lobsters.

The highlight of the spread is undoubtedly the Festive Carvings. Diners can choose from a range of hearty meats, including Spanish Style Honey and Brandy Glazed Royal Ham, French Style Butter & Black Truffle Infused Roasted Whole Turkey, Moroccan Style Slow Roasted Australian Grain Fed Black Angus Striploin and Greece Style Papillote Sustainable Barramundi.

We also appreciated the thoughtful pairings, with each carving accompanied by its own condiments and sides, such as Cinnamon Apple Chutney and Rum & Raisin Sauce for the Royal Ham, or Baby Potatoes and Yorkshire Pudding to go with the Striploin.

The Grill & Stove station featured items such as Homemade Chicken Satay, Slow-Cooked Wagyu Beef Cheek, Turkish-Style Chicken, Tiger Prawns A La Plancha, Lebanese-Style Lamb Chop, and a Festive Sourdough Pizza of the Day. There were a few misses for us here, but the Tiger Prawns were grilled just right.

Local Favourites continue to be a key element for the restaurant, with the Local & Chinese and Indian stations serving dishes such as Stir Fry Mala Pork, Steamed Fish with Crispy Taucheo, Stir Fry Chow Mein, Naan Bread, Paneer Butter Masala and Andhra Pepper Chicken. Do note that the items at these stations rotate regularly.

For diners craving quintessential comfort bowls, the chefs at the Live Station can prepare Prawn Noodles and Laksa on the spot. Alternatively, the Roast Station offers Chicken Rice with a selection of roasted meats and all the classic accompaniments.
