Quan Hotpot @ Hotel Michael - A Refined Five Elements Hotpot Experience
Located at Resorts World Sentosa, Quan Hotpot is a contemporary dining concept that offers a refined take on the traditional hotpot experience. Situated within Hotel Michael (Level 1), the restaurant emphasises balanced flavours and sustainable, locally sourced ingredients, guided by the Chinese philosophy of the Five Elements — sour, sweet, bitter, spicy, and salty.
Departing from the communal pot format, Quan Hotpot serves its broths individually, allowing diners to tailor their experience from the outset. The selection is diverse, ranging from the rich Signature Singapore Laksa Broth to the comforting Traditional Congee Broth and Collagen Herbal Chicken Broth. Those who prefer bolder flavours can opt for the Classic Sichuan Mala Broth, while the Heritage Suan Cai Broth offers a tangy, fermented profile.
I went with the Heritage Suan Cai Broth, which delivered a well-balanced tanginess that was both appetising and comforting. The acidity of the preserved mustard greens was gentle yet distinct, lifting the flavours of the accompanying ingredients without overpowering them. It proved to be a versatile base that grew more flavourful as the meal progressed.
Once the broth is selected, the experience becomes interactive with a selection of condiments presented tableside. Diners can mix their own dipping sauces to suit their preferences, adding another layer of personalisation to the meal.
The Signature 4 Element Hotpot Set Menu ($68 per person) offers a comprehensive spread, covering premium meats, seafood, vegetables, housemade items, noodles, and dessert. It is a well-curated selection that balances variety and quality.
The Premium Meat Selection includes Organic Australian Pork Belly, US “CAB” Beef Short Plates, Kampong Chicken Thigh, and Sliced Salt Grass-Fed Australian Lamb Shoulder. Each was thinly sliced for quick cooking, with the beef short plate standing out for its tenderness and marbling, while the pork belly offered a satisfying balance of fat and lean.
The Premium Fresh Seafood Selection features Live Tiger Prawns, Hokkaido Scallops, Fish Slices, and Live Korean Abalone. The prawns were firm and naturally sweet, while the scallops were plump and delicate. The abalone added a touch of indulgence, with a tender bite and subtle briny sweetness.
The Vegetable Selection was equally satisfying, comprising Bok Choy, Napa Cabbage, Spinach, King Oyster and Shiitake Mushrooms, along with Beancurd Roll, Silken Tofu, Potato, and Sweet Corn. Fresh and vibrant, the assortment provided a good balance to the meal’s richer components.
A highlight in both presentation and texture is the 5 Elements Fish Noodles, served in striking hues of orange, purple, yellow, black, and green. Beyond their visual appeal, the noodles offered a delightful chew and springy bite, making them a fun addition to the hotpot.
The dessert was less impressive. The Flamed Meringue Ice Cream arrived with a theatrical flourish but leaned overly sweet, overshadowing the ice cream beneath. The Fresh Fruit platter provided a lighter finish, though the fruits lacked the sweetness expected to round off the meal on a stronger note.
Overall, Quan Hotpot delivers a polished and thoughtfully executed hotpot experience. Its focus on individual broths, quality ingredients, and a balanced flavour philosophy sets it apart, making it a compelling option for those seeking a more refined take on this comforting dining tradition.

The Orchard Cafe @ Orchard Hotel Singapore - OZ “Meats” Buffet, A Vibrant Celebration of Premium Australian Produce, Culinary Craftsmanship, and Bold Flavours.
The Orchard Cafe at Orchard Hotel Singapore has recently launched the OZ "Meats" Buffet, showcasing the best of premium Australian produce through a lineup of curated dishes and live stations. Complementing the hearty offerings is an array of decadent desserts, ranging from classics to those inspired by Australian favourites.
Nachos Station
The Nachos Station gets things off to a lively start, featuring AUS grain-fed beef or pork con carne. Paired with condiments such as tender beans, creamy guacamole, spicy salsa, sweet corn and sour cream, it makes for a fun and flavourful starter to the buffet.
Aussie-Style BBQ Pork Shoulder
Slow-roasted AUS Grain-fed Striploin.
At the Carving Station, diners can enjoy Slow-roasted AUS Grain-fed Striploin and Aussie-Style BBQ Pork Shoulder. I personally favoured the pork shoulder, which was noticeably juicier and more tender, with flavours beautifully complemented by the accompanying BBQ sauce.
Halibut
For seafood lovers, the Australian Catch of the Day was Halibut served with Béarnaise sauce. It was a lighter, more delicate option that balances the heavier meat offerings.
AUS Wagyu Beef Sliders
The AUS Wagyu Beef Sliders are also not to be missed, with fluffy buns sandwiching flavoursome patties and melted cheese. These relatively humble-looking bites turned out to be one of my personal favourites.

Lebanese Style Lamp Chop
Another highlight is the Charcoal Grill Station, where AUS Beef Tri-tip, Short Plate and Veal Tenderloin are flame-grilled over charcoal, imparting enticing smoky notes to the succulent meats.
Tim Tam Tart with Berries

The dessert selection was an absolute joy, rounding off the buffet on a sweet note. Among the seasonal selections, the Tim Tam Tart with Berries was indulgently rich with chocolate, delivering a delightful nutty crunch with every bite. Lamingtons offered a simple pleasure with soft butter cake coated with desiccated coconut, executed well with just the right level of sweetness.
Passion Fruit Pavlova with Fresh Fruit
The Passion Fruit Pavlova with Fresh Fruit was another standout, crisp around the edges with a slightly chewy centre, carrying bright tropical notes of mango and passion fruit.
Bourbon, Rum & Raisin Bread Pudding
The Hot Dessert Station was particularly irresistible, featuring indulgent treats such as Salty Peanut Brownie Pudding, Bourbon, Rum & Raisin Bread Pudding, and a comforting Baked Rice Pudding with Raspberry.

Ajoomma Korean Charcoal BBQ Restaurant @ Gemmill Lane - Celebrates June Holidays with Moo-ve & Tail Campaign, and A Revamped Menu Featuring Seafood Barbecue and Traditional Korean Dishes
Ajoomma Korean Charcoal BBQ Restaurant at Gemmill Lane is celebrating the June holidays with a new "Moo-ve & Tail" campaign. The campaign offers diners a chance to win various prizes, such as a free steamed egg, complimentary side dishes, free plates of pork/beef, and more. The grand prize is 30% off the total dining bill. Along with this exciting campaign, the restaurant has revamped its menu, featuring seafood barbecue delights and traditional Korean dishes.
Black Trumpette Angus Beef Tataki 4/5
We began our meal with the Black Trumpette Angus Beef Tataki ($32) and Truffle Steamed Egg ($16) to whet our appetites before diving into the barbecue. The Angus Beef Tataki was a standout, with its beefy richness beautifully complemented by the accompanying components.
Truffle Steamed Egg 4/5
The Truffle Steamed Egg, resembling a soufflé, was extremely fluffy and pillowy. The truffle's earthy note elevated its flavour profile.

Moving on to the highlight of the night, the Korean Charcoal BBQ, I appreciated the use of charcoal fire, which imparted a wonderful smokiness to the grilled ingredients. For our BBQ selection, we had:
- Marinated Chicken Thigh (150gm)
- US Prime 2MM Beef Short Plate (150gm, $31)
- 2MM Pork Belly (150gm, $28)
Marinated US Scallops with Dill
South Africa Live Abalone
Besides the meats, the restaurant also offers a variety of seafood for grilling. We tried the Marinated US Scallops with Dill ($36 for 5pcs) and the South Africa Live Abalone ($18/pc). Watching the live abalone being grilled over the charcoal fire was a unique experience, as this is not commonly seen in most Korean BBQ restaurants.
Spicy Kimchi Tuna Soup 3/5
Apart from the BBQ, the restaurant offers several mains. We started with the Spicy Kimchi Tuna Soup ($20), a hearty and flavorful stew that showcased the bold and tangy flavours of the kimchi, making it a comforting choice.
Korean Beef Tartare Bibimap 4/5
The Korean Beef Tartare Bibimbap ($25) is an innovative two-in-one dish where traditional Korean bibimbap is topped with beef tartare. The beef tartare added a textural contrast and an extra layer of flavour, enhancing the overall enjoyment of the dish.
Japchae 4/5
The Japchae ($23) featured glass noodles stir-fried with a variety of vegetables in a sweet-savoury soy-based sauce. The delightful mix of flavours and textures, along with the fragrance of sesame oil, made this dish a joy to eat.
Coconut Jelly with Coconut Ice Cream 4.2/5
We ended our meal with the Coconut Jelly with Coconut Ice Cream ($12.50). The coconut jelly, made with coconut water, was very refreshing, and the coconut ice cream added an extra touch of sweetness, rounding off the dinner perfectly.
