We began with the Hanwoo Beef Set for sharing (from $268 Member Price), featuring prized cuts such as Rib Finger and Ribeye. The Hanwoo Rib Finger stands out for its robust, deeply meaty character. Cut from between the rib bones, it offers a more pronounced chew compared to more tender cuts, delivering a satisfying bite that beef lovers will appreciate. As it grills, the fat renders beautifully, creating a smoky, caramelised crust that amplifies its natural savouriness. Despite its structure, the meat remains juicy, striking a delicate balance between tenderness and resistance.

In contrast, the Hanwoo Ribeye leans towards indulgence. Richly marbled, it delivers a luxurious, buttery umami that coats the palate without feeling cloying. The texture is exceptionally tender, almost melting in the mouth with minimal effort. What impresses most is its clean finish. Despite the high fat content, it avoids the greasy aftertaste sometimes associated with heavily marbled beef, leaving behind a refined, lingering richness that keeps you reaching for more.

The Duroc Black Pork Belly ($29.90) is a highlight, widely regarded as the gold standard for pork due to its superior fat-to-meat ratio. Each slice grills up with crisp edges and a succulent interior, releasing a natural sweetness that is slightly nutty and far more pronounced than that of conventional pork. The marbling ensures the meat self-bastes as it cooks, resulting in a juicy, flavourful bite with a clean, non-gamey finish.

The Duroc Marinated Pork Neck ($33.90) offers a different but equally satisfying experience. The marinade enhances the pork’s inherent sweetness, caramelising over the grill to form a lightly charred, flavour-packed exterior. Unlike the belly, the neck cut provides a firmer, springy texture, delivering a hearty bite that feels substantial without being overly rich. It is well-balanced, making it easy to enjoy throughout the meal.

Another standout is the Jeju Black Pork Neck ($33.90), often dubbed the “Wagyu of pork” in Korea. Raised in Jeju’s unique environment, the meat boasts a deeper, more concentrated flavour profile. The higher protein content gives it a pronounced meatiness, while the fat carries a clean, subtly sweet nuttiness. When grilled, the interplay of smoke and rendered fat creates an aromatic complexity that is both bold and refined, elevating it beyond typical pork offerings.

Beyond the grill, the supporting dishes further round out the experience. The Black Pork Kimchi Soup ($18.90++) is a comforting staple, combining Duroc pork, kimchi, tofu, and spring onions in a hearty broth. The balance of spice, acidity, and richness makes it especially satisfying, and the refillable portions ensure it remains a warm, constant companion throughout the meal.

It is not overly doughy, allowing the flavours of the seafood to shine through without being masked by excess batter. Each bite delivers a satisfying crunch followed by the natural sweetness of the seafood.

For something lighter, the Cold Kimchi Noodle (Non-Member: $16.90++; Member: $14.90++) provides a refreshing contrast. The chilled fermented kimchi broth is tangy and invigorating, pairing well with the soft noodles, cucumber, seaweed, and boiled egg. It’s a welcoming, refreshing dish amid the richness of the grilled meats.

Featuring wagyu beef tartare, shredded egg, seaweed, and water spinach, it is brought together with a pasteurised egg yolk and ssamjang. The result is a rich, savoury bowl with layers of texture and flavour, in which the beef’s umami is complemented by the sauce’s nutty, slightly sweet notes.

HighHouse @ One Raffles Place - Limited Time Collaboration with Two Michelin Starred Meta

For its latest edition of The High Table, HighHouse has partnered with Chef Sun Kim of two-Michelin-starred Meta for a limited-time collaboration that brings his distinctive brand of contemporary Korean cuisine to HighHouse. Available until 27 June, the exclusive Korean-themed menu highlights Chef Sun’s ability to draw upon his heritage and traditional cuisine, while incorporating modern techniques and global influences.

Perched above the city with sweeping views of Singapore’s skyline, HighHouse offers a dynamic backdrop where guests can dine, socialise and enjoy the vibrant atmosphere. As the day turns into night and the music picks up, the ambience becomes very lively.

For The High Table, Chef Sun Kim adapts to HighHouse’s convivial dining concept, presenting a collection of dishes that are sophisticated yet approachable and designed to be enjoyed in a more relaxed, social setting with plenty of drinks.

Our meal began with a selection of appetisers, accompanied by mocktails from HighHouse’s extensive drinks programme, which offers a wide range of cocktails, wines, spirits and non-alcoholic options to suit different preferences.

I enjoyed the Eggplant with Salsa ($28), which featured crisp, fried eggplant topped with puffed quinoa, confit garlic, and a citrus-soy dressing. Moreish, crispy and easy to share, it works especially well as a bar snack.

The Beef Carpaccio ($32) features hay-smoked beef tenderloin complemented by charred leeks and mustard dressing. It looked promising; however, as neither my dining companion nor I could consume raw beef, we were unfortunately unable to sample this dish.

Served as part of the lunch set menu, the Grilled Spanish Octopus was well executed, with a lightly crisp exterior and a tender, succulent interior. It was served on a bed of cream-cooked potatoes and accompanied by a herb dressing, olives, and sweet Chitose tomatoes for bright, Mediterranean-inspired flavours that we enjoyed.

The Kingfish Sashimi ($30) showcased pomelo, shiso, wasabi and gochujang. The citrus of the pomelo complemented the clean flavour of the kingfish. A touch of wasabi and gochujang provided gentle heat to the dish.

Lobster Cevan Jjim 4.2/5

The Lobster Cevan Jjim ($72) is inspired by the Korean steamed seafood dish haemultang jjim. Succulent lobster and a savoury seafood broth are served over a silky steamed egg custard, and finished with chilli oil. My dining companion found this dish to be on the salty side, but I enjoyed it very much. That said, considering the price point, I felt the BBQ Short Rib offered better value for money and would be my pick between the two.

The BBQ Short Rib ($88) is a magnificent platter of melt-in-your-mouth tender beef slices, served with gochujang-tossed mushrooms, shishito peppers, onion purée and a pickled cucumber salad. This allowed the beef flavours to take centre stage while the acidity from the pickled cucumber and gochujang helped cut through the richness of the beef. Incredibly flavourful and delicious, this was the standout dish of the meal for me.

Rounding out the collaboration is the Steak Bibimbap ($58), Chef Sun’s take on one of Korea’s most iconic dishes. Featuring flank steak, Korean zucchini, Korean bean sprouts, black fungus and sesame oil, the dish is fragrant, hearty and comforting. While the flank steak was tender enough, I personally preferred the more buttery BBQ Short Rib to the leaner flank steak.

In fact, I found myself pairing some of the short rib with the bibimbap rice, which proved a satisfying combination, as the fat from the short rib mixed into the rice. All the more reason to order a few dishes and share among friends.

For dessert, we were served a combination of Yoghurt Ice Cream with pomelo, mandarin and basil. The tangy yoghurt ice cream, together with pomelo and mandarin, provided a light and refreshing finish after a heavy meal. However, I found the addition of basil somewhat unappealing, and it did not work for me. Presentation-wise, the dessert also lacked visual appeal.

The High Table by Chef Sun Kim is available for lunch and dinner at HighHouse until 27 June, offering diners a rare opportunity to experience a more casual yet equally thoughtful expression of the celebrated chef’s modern Korean cuisine.

Gwangjang GAON @ Jewel Changi Airport - Bringing The Authentic Taste of Traditional Korean Recipes to The Lion City

Gwangjang GAON, by renowned Korean culinary Professor Hyo Soon Park, brings a slice of traditional Korean heritage to Singapore with its first overseas outpost at Jewel Changi Airport. With two well-established outlets in South Korea, the restaurant is highly regarded for its time-honoured Korean recipes, so much so that it has been frequented by Korean celebrities like Han So-hee, Lee Jung-jae of Squid Game fame, and actress Choi Myung-gil, who became such a fan that she opened a franchise herself.

Helmed by a fourth-generation culinary philosophy, Gwangjang GAON presents dishes rooted in Korean royal and household traditions, now refined and served in a modern dining environment.

A classic starter that sets the tone is the Modm-Jeon ($29.90), an assorted platter of Korean-style pancakes or fritters made from shrimp, pollack, zucchini, ground pork, and crab surimi. Handmade fresh daily using Professor Park's family recipe, the jeon are pan-fried to a golden crisp and served with a soy-vinegar dip that enhances their light, eggy fragrance. It's a dish steeped in heritage, dating back to the Joseon Dynasty and a rarity in restaurants today due to its labour-intensive preparation.

A refreshing cold appetiser, Chogye-Nangche ($18.90) features chilled chicken salad tossed in a tangy vinegar and mustard dressing. It's light yet punchy, a perfect palate awakener in Singapore's tropical heat.

For noodle lovers, the Deulgireum Makguksu ($21.90) is a standout. This cold buckwheat noodle dish is coated with nutty perilla oil and sprinkled with crunchy perilla seeds, while subtle heat from cheongyang red pepper adds an unexpected yet welcome depth. The fresh perilla leaves elevate the dish with their herbal brightness.

No Korean meal is complete without Bibimbap ($22.90), and GAON’s version delivers with over 13 ingredients, including egg, meat, and vibrant vegetables served atop warm rice. Diners can choose between gochujang (red pepper paste), doenjang (soybean paste), or a blended sauce for added complexity. Mix it all together for a hearty, textural medley of flavours.

The Bossam ($43.90) is a must-order. Slices of tender pork belly are gently simmered in a prized 15-year-old mother stock flown in from Korea. The meat is rich and aromatic, pairing beautifully with fresh cabbage, homemade kimchi, saeujeot (fermented shrimp sauce), and ssamjang. It's a dish that exemplifies depth, balance, and tradition, all presented on a Hojokban, a traditional Korean tray.

Another signature, the GAON Galbi ($69.90), features premium beef short ribs sous-vide for over 24 hours in a blend of 20 herbs and spices. Finished with a light torch for smoky depth, the ribs retain a satisfying bite while being exceptionally tender. Served ceremoniously on a Hojokban tray, this dish pays homage to Korea’s royal culinary heritage while embracing modern technique.

Gwangjang GAON offers a rare opportunity to experience the finesse of traditional Korean cuisine crafted with generational wisdom and elevated techniques. With a deep respect for ingredients and authenticity, this Jewel Changi gem is more than just a restaurant. It is a cultural showcase on a plate.

This combination was nothing short of brilliant—the rich, umami-packed tartare contrasted beautifully with the crisp, starchy pancake. It’s a unique dish that I have never seen elsewhere, making it a must-order.

The Mulhwae ($28) followed — a refreshing cold salad soup with raw fish. It’s somewhat reminiscent of ceviche, but with more intricate layers of flavor. The sharp, tangy notes of the broth were incredibly appetising and invigorating, making it a perfect dish to whet the appetite.

Perfect for sharing, the Surf & Turf Platter ($328) was a showstopper. It featured a variety of premium cuts from both land and sea, accompanied by grilled vegetables and side dishes. The beef and pork were grilled to perfection, exuding deep, smoky flavours that showcased their high-quality marbling. The seafood selection, including lobster and abalone, further elevated the indulgence of this luxurious platter.

For those who want something more filling, the Al Bibimbap ($34) is a delightful twist on the classic Korean mixed rice dish. This white-based bibimbap comes with chunks of lobster, seaweed flakes, and roe, adding an extra layer of umami richness. A good mix of all the ingredients ensures a harmonious balance of textures and flavours in every bite.

Even after a hearty meal, saving space for dessert is a must. The Hotteok ($18) was a standout, featuring a pan-fried Korean pancake with a chewy, almost mochi-like texture. It was exceptional when paired with the burnt honey ice cream, which added a sweet, caramelised depth to the dish.

Another noteworthy dessert was the Injeolmi Tiramisu ($16), an innovative take on the classic Italian dessert. Served inside a tart shell, the Nespresso-infused tiramisu was enhanced with toasted rice cake powder, creating a unique fusion of flavours. This Korean-inspired twist on tiramisu was a fantastic way to end the meal.

GU:UM is a game-changer in Korean barbecue, seamlessly blending premium steakhouse elements with Korean culinary traditions. The Yukhwae Jeon, Surf & Turf Platter, and Hotteok were clear highlights, showcasing Chef Louis Han’s creativity and finesse. Whether you're looking for a refined dining experience or a luxurious take on Korean grilling, GU:UM is a must-visit destination for steak and barbecue lovers alike.
