The Spaghetti Chitarra stood out with its sweet and tangy tomato-based sauce, perfectly paired with fresh seafood. Meanwhile, the Cacio e Pepe, a creamy and cheese-laden delight, catered to those who enjoy rich, indulgent flavours. However, it felt slightly plain without additional ingredients to enhance the dish.

Amò's revamped menu showcases a strong dedication to authentic Italian flavours with a modern touch. From the flavorful antipasti to the indulgent desserts, each dish reflects the warmth and passion of Italian dining. Whether you're a fan of rich cheeses, premium meats, or fresh seafood, there's something on the menu to satisfy every craving.

This combination was nothing short of brilliant—the rich, umami-packed tartare contrasted beautifully with the crisp, starchy pancake. It’s a unique dish that I have never seen elsewhere, making it a must-order.

Perfect for sharing, the Surf & Turf Platter ($328) was a showstopper. It featured a variety of premium cuts from both land and sea, accompanied by grilled vegetables and side dishes. The beef and pork were grilled to perfection, exuding deep, smoky flavours that showcased their high-quality marbling. The seafood selection, including lobster and abalone, further elevated the indulgence of this luxurious platter.

For those who want something more filling, the Al Bibimbap ($34) is a delightful twist on the classic Korean mixed rice dish. This white-based bibimbap comes with chunks of lobster, seaweed flakes, and roe, adding an extra layer of umami richness. A good mix of all the ingredients ensures a harmonious balance of textures and flavours in every bite.

Even after a hearty meal, saving space for dessert is a must. The Hotteok ($18) was a standout, featuring a pan-fried Korean pancake with a chewy, almost mochi-like texture. It was exceptional when paired with the burnt honey ice cream, which added a sweet, caramelised depth to the dish.

Another noteworthy dessert was the Injeolmi Tiramisu ($16), an innovative take on the classic Italian dessert. Served inside a tart shell, the Nespresso-infused tiramisu was enhanced with toasted rice cake powder, creating a unique fusion of flavours. This Korean-inspired twist on tiramisu was a fantastic way to end the meal.

GU:UM is a game-changer in Korean barbecue, seamlessly blending premium steakhouse elements with Korean culinary traditions. The Yukhwae Jeon, Surf & Turf Platter, and Hotteok were clear highlights, showcasing Chef Louis Han’s creativity and finesse. Whether you're looking for a refined dining experience or a luxurious take on Korean grilling, GU:UM is a must-visit destination for steak and barbecue lovers alike.

Guerilla Coffee @ Kallang Riverside - Flagship Outlet With An All-Day Menu and An On-site Roastery

Guerilla Coffee, the homegrown speciality coffee concept, has unveiled its flagship outlet at Kallang Riverside, introducing an all-day dining menu. The space highlights the art of coffee, featuring globally sourced beans roasted in small batches onsite and a 'slow' coffee bar where curated filter brews are served. Beyond coffee, the outlet doubles as a hub for community engagement, hosting regular programs and events to enrich the coffee experience.

Guerilla Butterboard 4/5

Guerilla Seasonal Butterboard ($18) was an indulgent offering that showcased house-churned butter generously spread across a wooden board. It was accompanied by seasonal fruits, sourdough, and house-made coffee salt. So decadent was the butter that some diners couldn't resist scraping every bit off the board! However, for the amount of butter on the board, definitely more sides are needed.

The Summer Chicken Salad ($18) was a refreshing and zesty dish. It combined a hearty amount of tender shredded chicken with crisp greens, juicy pomelo, and orange slices in a citrusy dressing.

A cafe-essential dish but uniquely Guerilla's: Buttermilk Chicken Waffles and Espresso Maple ($20). The buttermilk-marinated chicken is coated in a cereal-style batter, resulting in a perfectly crispy exterior while remaining juicy inside. The accompanying house-made espresso maple syrup lent the dish a dark, complex note while tying it back to Guerilla's coffee expertise.

The Tamarind Sea Bass ($28) offers a locally sourced fillet. Both sides were well-seared and delighted with a tender and flaky texture. The accompanying tamarind broth was light yet flavourful, with herbaceous and tangy undertones from ginger flower and lime.

Grilled Pork Jowl 4.5/5

The Grilled Pork Jowl is a true crowd-pleaser. With an ideal fat-to-meat ratio, the pork was tender and flavourful with an enjoyable bite, elevated by a tangy Nam Jim Jaew sauce. The sauce cut through the richness of the meat, enhancing its flavours and making it even more appetising. For a more complete experience, house-made brioche is a highly recommended side. Its buttery sweetness provides a delightful contrast, complementing the pork's savoury notes and the sauce's acidity.

Guerilla G2 Tiramisu Deck 4/5

We tried 2 desserts: the Guerilla G2 Tiramisu Deck ($16) and the Walnut Dark Choc Banana Bread with Chantilly Cream ($12). The tiramisu was better executed, with bittersweet Savoiardi biscuits soaked in Guerilla No.2 espresso and Kahlua, achieving a perfectly balanced of sweetness. On the other hand, the banana bread fell short of expectations. Its cloying sweetness overpowered the chocolate and banana flavours, making it more reminiscent of a standard counter-style banana bread rather than an elevated dessert.

Guerilla Coffee also avocates the 'slow coffee' movement, a philosophy that promotes mindfulness and a deliberate pace in both brewing and enjoying coffee. There is an on-site roastery to enable the team to source and roast small batches of premium coffee beans globally. In addition, you can even choose from a selection of beans to be roasted on the spot in just 15 minutes, allowing for a highly personalised experience. A 1-hour Auction Coffee Discovery Session ($148) is available for booking if you wish to take your experience up a notch.

Eclipse by BDC @ Yue Hwa Building - A Casual, Creative Twist on Fine Dining with Chef Samuel Quan’s New Menu

Eclipse by BDC has come a long way since its 2021 debut as a fine dining destination atop the Yue Hwa Building in Chinatown, where the restaurant's unique vantage point offered stunning views of Singapore's skyline. My recent visit revealed a transformation in concept — Eclipse now provides a more casual, approachable menu crafted by Chef Samuel Quan. This new direction brings inventive twists to familiar flavours while still showcasing Chef Quan's creativity.

We began with two delightful snacks: Crab Laksa Croquette ($16 for 3pc) and Smoked Eel Pumpkin Beignet ($16 for 3pc). The Crab Laksa Croquette was a crispy parcel packed with Singapore's iconic laksa essence, accompanied by a curry aioli and laksa leaf that amplified its flavours. The Smoked Eel Pumpkin Beignet was a surprising take on the traditional custard lava bun, featuring molten Comté cheese nestled within a golden pumpkin beignet. The beignet was topped with crispy 'You Mai Chye' floss and complemented by a roasted onion jam. This bite combined sweet, smoky, and savoury notes in an unexpectedly harmonious way.

The Pan Seared Scallop ($24) was plump, juicy, and beautifully paired with a sage butter emulsion and furikake seaweed for umami depth. Topped with ikura and pickled ginger flower, the dish had a refreshing acidity that elevated the flavours, making it a well-balanced and thoughtfully composed appetiser.

One of the more unique items on the menu was the Jurong Farm XL Frog Leg ($20), deep-fried to perfection with a crispy Japanese puffed rice coating that provided a delightful textural contrast to the tender frog leg meat. Paired with a Szechuan hibiscus jus, the dish offered an interesting twist, though the jus fell slightly short of delivering the expected punchy, piquant finish.

12 Days Dry Aged Half Duck 4/5

The star of the evening was the 12 Days Dry Aged Half Duck ($68 whole). The duck was accompanied by egg crepes, leeks, pickled cucumber, pickled chilli, and a hibiscus glaze, echoing the classic flavours of Peking duck with a unique twist. Diners can wrap the tender duck meat with the egg crepe and condiments or enjoy it on its own to fully appreciate the expertly dry-aged, succulent flavours of the duck.

For dessert, we had the Refreshing Eton Mess ($18), a tropical reimagining of the British classic. Tonka bean meringue, Meyer lemon gel, Dole pineapple, and yuzu sorbet brought together layers of sweetness and tartness, offering the meal a light and refreshing finale.

Our final dessert, the Smoked Hay Tiramisu ($22), was a daring take on the beloved Italian dessert. The smoky hay notes infused the layers of mascarpone and cream cheese with a distinct depth, while the addition of Kahlua espuma added an aromatic complexity. However, the real surprise was the inclusion of ikura, which introduced a briny element that added a bit of intrigue, much like the contrast of salt in dark chocolate.

Eclipse by BDC has successfully transitioned from fine dining to a more casual yet adventurous menu that's brimming with inventive flavour combinations and textural surprises. Chef Samuel Quan's bold, reimagined dishes offer diners a fresh perspective on familiar ingredients while maintaining an approachable charm. The setting, coupled with the thoughtful, contemporary dishes, makes Eclipse an excellent choice for those seeking an elevated dining experience with a creative, casual twist.
