The evening began on a high note with the Ran-Ta-Ta Tan ($26), a cocktail that makes quite the entrance, dramatically served in a lantern that releases a gentle smoky aroma upon arrival. The drink itself is a complex yet balanced blend of discarded grape skin vodka, TWG Sakura tea, passion fruit, and a hint of chartreuse yellow, finished with a cinnamon crack salt rim.

Equally memorable was the Pornstar Martiki ($27), a cheeky, playful cocktail that doesn't take itself too seriously, complete with a rather suggestive jelly garnish that adds a touch of humour to the experience. Made with Nikka Coffey grain whisky, Veritas rum, clarified passion fruit, Galliano vanilla, falernum, and topped with Bauget-Jouette Brut, the drink delivers a well-rounded balance of sweetness, tropical brightness, and gentle effervescence.

The Spicy Tuna Roll ($25 for 6pcs) is a familiar staple on the menu, and while it may not be the most groundbreaking dish of the night, it delivers reliably on flavour. The tuna is fresh and clean tasting, paired with a creamy, mildly spicy mayo that adds richness without overpowering the fish. It works well as an easy bite, especially when paired with cocktails.

A clear standout of the evening, the A5 Wagyu Kushiyaki ($24 for 2pcs) was nothing short of indulgent perfection. Using premium Miyazaki ribeye, the beef is expertly grilled to achieve a delicate char on the outside while remaining incredibly tender and buttery within.

The Corn Kushiyaki ($12 for 2pcs) may seem understated, but it surprises with its depth of flavour. Grilled to bring out its natural sweetness, the corn is generously coated with miso butter and finished with a dusting of nori powder. The combination creates a savoury-sweet balance with a subtle umami punch.

One of the more unexpectedly addictive dishes of the night, the Caramelised Brussels Sprouts ($15) delivers bold flavours with every bite. Lightly charred for a smoky edge, the sprouts develop a caramelised exterior that enhances their natural sweetness. While slightly on the saltier side, the intensity works in its favour.

The Baked King Crab Leg ($50) arrives looking undeniably impressive, with its generous portion and creamy, spicy topping that adds a punch of flavour. The sauce carries a pleasant heat; however, the experience is slightly let down by the flesh sticking to the shell, making it less enjoyable to eat.

A playful and creative take on a comfort classic, the Carbonara Cup Noodle ($18) is presented in a Neon Pigeon-branded cup, cheekily mimicking the familiar instant noodle format. The dish delivers on flavour, with a creamy, indulgent carbonara sauce coating thick udon noodles, but the udon's texture leans slightly too soft for our preference.

Unfortunately, the Chocolate Trifle ($14) did not quite meet expectations. While the combination of almond brittle and dulce de leche offers a promising flavour pairing, the overall dessert leans too sweet and slightly dry. The whipped cream feels a little heavy and cloying, which affects the dish's overall balance.

Neon Pigeon delivers a vibrant and engaging izakaya experience that leans heavily into creativity, both in its cocktails and its menu offerings. The highlights lie in its stronger executions, particularly the A5 Wagyu Kushiyaki and Caramelised Brussels Sprouts, alongside its visually striking and well-balanced cocktails.

While some dishes could benefit from refinement in texture and balance, the overall concept remains compelling, making it an ideal spot for a lively night out with friends.

Best known for clinching the title of World Champion of Contemporary Pizza in 2022, Chef Vincenzo’s philosophy lies in tradition, craftsmanship, and a dough that defies gravity.

At the heart of his pizza is a long-leavened, highly hydrated dough made with “Nuvola Super” flour, specially developed in collaboration with a flour mill. The result? A feather-light, airy crust that almost melts in your mouth. In a nod to Neapolitan dining culture, diners are encouraged to use the pair of golden scissors at each table to slice through the pillowy pizza crust themselves, an interactive touch that highlights the dough’s soft structure and signature puffed edge.

We kicked off the meal with the Insalata Al Salmone ($26), a hearty salad that’s pleasingly more protein-forward than leafy. Smoked salmon mingles with rucola, cherry tomatoes, cucumber, and capers, all dressed in a roasted truffle sesame vinaigrette. It's tangy and refreshing, though more of a light prelude than a standout.

Next, the Burrata Classica ($26) shined with its creamy centre and fresh pairing of rucola, cherry tomatoes, basil pesto, and balsamic. Enhanced with olive oil caviar for a modern touch, this was simple yet elegantly executed, a reliable classic done right.

Don't skip the pasta here. The Guanciale Di Manzo ($30) features housemade fusilli bathed in a deeply savoury, 12-hour slow-cooked wagyu beef cheek ragù. Cooked al dente, the pasta clung perfectly to the robust sauce, giving each bite a rich, meaty depth.

A standout dish of the night, the Carbonara ($28) is a purist's dream, comprising housemade fettuccine tossed with 12-hour slow-cooked Iberico pork jowl, egg yolk, and Parmigiano. No cream, no shortcuts, just authenticity and balance. Easily one of the best carbonaras in town.

As the pizza that won the 19th Pizza World Championship, the Provola E Pepe ($28) did not disappoint. Smoky provola cheese sits atop hand-crushed tomatoes, mixed pepper, roasted cherry tomatoes, EVOO, and basil. Bold and balanced, it's a smoky, savoury medley with a lightly tangy kick.

My personal favourite of the trio, the Tetti Illuminati ($28), is a textural and flavour bomb comprising mortadella IGP, fior di latte, crushed pistachios, pistachio cream, pecorino Romano flakes, and basil. It is a decadent yet harmonious combination, elevated by the pistachio's nuttiness.

The Don Egidio ($28) stood out with its unique use of courgette cream as the base. Topped with zucchini chips, meatballs (a family recipe from Nonno Enzo), burrata heart, EVOO, and basil, this pizza offered contrasting textures, especially with the extra crunch from the zucchini chips.

The Crème Brûlée ($14) ended things on a quieter note. While the custard was smooth and creamy, the caramelised rapadura layer didn't quite offer the crackly finish one might expect. It's a serviceable dessert but not the highlight.

We much preferred the Tiramisù All'Amaretto ($17). Layered with mascarpone Lombardo, savoiardi biscuits, pistachios, and a generous splash of amaretto, it was light, creamy, and nuanced. It was a delightful finish to the meal.

Tims Signature @ Somerset - Iconic Canadian Coffee Chain Opens New Elevated Concept in Town

Tim Hortons, the iconic Canadian coffee chain, has quickly expanded its presence in Singapore. It now boasts six locations since its debut in November last year. Their latest venture, Tims Signature, introduces a unique and elevated coffee experience in the heart of town at 313@Somerset. This new concept store offers exclusive menu items and focuses on artisanal coffee brewing.

The store takes the space right across Garrett Popcorn and Marché Mövenpick on the mall’s first floor. You will see it once you enter the mall’s side entrance if you’re walking in from Orchard.

Coffee enthusiasts can sit at their new Coffee Craft Bar and opt for three speciality brewing methods. It includes the V60 Pour Over ($7), Chemex Pour Over ($7) and Kyoto Drip ($7.50) cold brews. Skilled baristas will be around to take customers through the brewing process.

Maple Cinnamon Latte

In addition to these speciality brews, Tims Signature also offers the brand's classic beverages. The Maple Cinnamon Latte (from $7 for Small) is a signature made with Tims' signature espresso blend.

The Maple French Vanilla Iced Capp (from $7.50 for Small) is a popular choice for something sweeter. For all beverages under its Iced Capp series, diners can request complimentary plant-based whipped cream and a syrup drizzle to finish.

Aside from beverages, the menu also features a selection of food items, including the Sourdough Melts series. We tried the Maple Glazed Chicken Ham & Cheese ($9.90), which, while not particularly extraordinary, was a comforting and no-frills choice. I wished there was a more distinct sourdough tang, but the bread was soft with a chew.

The Pesto & Mozzarella ($9.90) sandwich was another option we had. I would have preferred a stronger pesto flavour to pair with the oozy cheese.

The range of Pasta Bakes is another exclusive to Tims Signature. We tried the Truffle Chicken Carbonara ($9.90), served sizzling hot with a generous amount of shredded chicken and melted cheese. Unfortunately, the macaroni was a bit dry.

Go for the Classic Aglio Olio ($9.90) if you are looking for a vegetarian option. It was more savoury, without the expected spice of an aglio olio.

No visit to Tim Hortons is complete without indulging in their range of sweets. Tims Signature features a display counter filled with popular items like donuts, Timbits, tarts, and muffins.

Timbit

"Timbits" are bite-sized portions of Tim Hortons' donuts. They come in a variety of flavours but tend to be denser than their full-sized donuts. Personally, I'd recommend opting for the donuts over the Timbits.

Donuts here are generously glazed and filled, which also lean to be much sweeter. Two exclusive donut flavours are the Belgian Chocolate Cruller ($4.90) and Maple Crumble Apple Fritter ($4.90). Among those we tried, we preferred the latter and the Maple Salted Caramel donut.

Gary's Restaurant @ Rochester Park - New Italian Fine Dining Restaurant In The West

Gary's Restaurant is one of the newest restaurants to open in the Rochester Park area. The Italian restaurant was opened by founder and executive chef Gary Wu. He has honed his culinary skills in Michelin starred restaurant and cooking for the Brunei royal family, cabinet ministers, and celebrities. The restaurant is located in a 2-storey heritage black and white house, surrounded by vast greenery.

Hokkaido Scallop “Crudo” 4.5/5

Our dinner at Gary's Restaurant started with the Hokkaido Scallop "Crudo" ($20). The Japanese scallop is paired with ikura, citrus salad, red radish, and dressed in a ginger ponzu sauce. I enjoyed how ginger ponzu brightened the sweetness of the scallop.

Next, we had the Pan Seared Foie Gras ($26). It is paired with onion chutney and aged balsamic. The sweetness helped to cut through the creaminess and richness.

Carbonara 4.8/5

The Carbonara ($26) brought a smile to me. It is not the saucy type in which creams are added. Instead, it is the classic way of cooking carbonara. It may look simple, but it is a beautifully cooked pasta paired with crispy iberico chips, parmigiano and a dash of truffle oil. It has been a long time since I had such good tasting carbonara done the traditional way.

Another beautiful dish on the menu is the fork-tender Slow Cooked Wagyu Beef Cheek ($38). It is soft and flavourful, paired excellently with sweet pea, sweet carrot and truffle crush potato.

I was told the Tiramisu ($14) is baked a la minute. The savoiardi soaked with Kahlua coffee liqueur and the mascarpone has just the right balance of sweetness, complemented by the right bitterness from the coffee and cocoa powder.

Elixir Boutique Roasters at Serene Centre is all about bold and straight-forward espresso roasts. Beans are chosen from the South America region for the finest quality espresso blends and the ability to handle dark roasts without turning overly bitter. Black or White, you get to choose the beans from the variety of single origins and blends available. But beyond just Black and White, the coffee beans are also roasted specifically to harmonise with spirits for their range of Crafted Coffee-Centric Cocktails. To accompany your coffee and cocktails is a selection of brunch dishes and mains, available from 8.30am till 4pm daily, except Wednesday.

Killer Queen

Elixir's take on Italian aperitif cocktails, Killer Queen is made with homemade cascara syrup and Disaronno Italian Liqueur. Cascara, the coffee cherries which is usually discarded, is apparently a flavorful and antioxidant-packed ingredient that can be used in ways such as this. Pairing it with the amaretto-tasting liqueur, and there you have a sweet, refreshing pre-meal drink.

Same Ole’ Situation

Inspired by Old Fashioned, Same Ole’ Situation is made combining Homemade bitters with Costa Rica Las Trojas single origin. If you like it simple, this would be your drink.

Stormbringer is intense - a double shot of Guatemala Antigua Santo Domingo espresso with Ron Zacapa 23 Solera Whisky.

Brulee French Toast 3/5

For a sweet start, Brûlée French Toast ($18) with seasonal fresh fruits and chantilly cream will delight you with its brulee brioche toast. The brioche itself was yummy - very crusty, with very light and airy body. I really like that it was not soggy with custard. The burned sugar taste of the caramelised surface imparts a smoky flavour, which harmonises with the berries and cream.

Truffle Eggs and Prosciutto 3.5/5

For something heartier, after all, it's a Brunch, Truffle Eggs and Prosciutto ($22) is preferred. I like the combination of textures and flavours of the different elements in this dish. The prosciutto was soft and had a rich mouthfeel, and its saltiness flavoured the creamy, buttery eggs well. The peppery arugula complements these rich elements, while the sweet brioche binds them all together.

Wagyu Beef Cheek Rendang 3/5

Mains are available from 11am onwards. Wagyu Beef Cheek Rendang ($22) is a laborious dish made with Chef's special rempah, served with free-flow butterfly pea coconut rice. Although the beef cheek was not exactly fork-tender, I quite like its gelatinous texture and glad that its flavours were not lost during the sous vide process.

Grilled Halloumi ($18) is probably one of the best Halloumi dishes I ever had. The sweet and creamy tahini aioli works well with the savoury notes of the halloumi, and the sprinkle of dukka enhances the nutty flavour of the dressing. One of the key components of the dish is actually the flecks of Lemon preserve, which punctuates the dish with sweet, salty and bitter notes.

Carbonara with Onsen Egg ($18) will not disappoint with its sauce made using only Parmigiano-Reggiano and eggs. The dehydrated pancetta adds the right amount of salty notes and texture to the creamy pasta.
