AMI Patisserie @ Scotts Road - Popular Online Pastry Shop Opens First Physical Concept, Crafting Fine Pastries through an ode to Japanese and French Traditions

AMI Patisserie, celebrated for its online prowess in crafting exquisite pastries under the skilled hands of Chef Makoto Arami, has finally materialised into a physical haven at 27 Scotts Road. The Kyoto-style wooden townhouse on the grounds of the colonial black and white bungalow marks AMI Patisserie's debut in the brick-and-mortar world.

Upon entering, patrons are greeted by a serenely elegant Patisserie Café, offering seating for 12. This inviting space provides the perfect backdrop for intimate brunches or leisurely afternoon teas, showcasing fine a la carte sweets, savouries, and viennoiseries — all artfully prepared a la minute. The Chef's Table Discovery Experience ($118++) awaits for a deeper gastronomic affair in the exclusive 8-seat Tsudoi Dining Room.

Piedmont Hazelnut Financier 4.8/5

I had the privilege of embarking on the Chef's Table Discovery Menu — an exquisite 6-course culinary journey that delved into the artistry of pastry creation by Chef Makoto Arami. The Piedmont Hazelnut Financier initiated our journey. Spread with hazelnut praline and adorned with shaved roasted Piedmont hazelnuts, it provided a sweet overture to our 6-course symphony.

A complimentary Bread Basket graced our table, featuring Sourdough Bread and Iwa Nori Escargot Bun. Accompanied by applewood-smoked and whipped unsalted Lescure butter, these creations showcased Chef Makoto's prowess in bread making too.

1st Course - Signature Choux 5/5

The Signature Choux held a special place in Chef Makoto's heart, paying homage to his father's choux recipe. This Japanese egg-filled craqueline choux, topped with crème fraîche, Schrenckii caviar, hanaho, and edible gold flakes, delivered a delightful blend of sweet and savoury flavours — a perfect harmony of crispiness and complexity.

2nd Course - Shizuoka Tomato Tartelette 4.8/5

The Shizuoka Tomato Tartelette drew inspiration from Chef Makoto's love for Italian flavours. Aged parmesan tartelette, topped with fromage blanc cream, fresh Amela tomatoes, basil oil, micro basil, and cornflower, harmonised Italian classics with a modern twist.

3rd Course - Japanese Uni Brioche 4.8/5

The Japanese Uni Brioche showcased Chef Makoto's fusion prowess, featuring brown butter brioche topped with lime cream, sea urchin, grated fresh wasabi, finger lime, and lime zest. This creation provided a burst of flavours, bursting with a firework of delights.

4th Course - Nasu Brulee 4.2/5

Inspired by Kyoto's Miso Dengaku, the Nasu Brulee featured bruleed eggplant custard, grilled beinasu dusted with sansho powder, and miso caramel. Paired with soy and miso ice cream, it presented a unique and complex flavour profile.

Palate Cleanser - La France Pear 4.2/5

A refreshing interlude came in the form of La France Pear — fresh pear topped with pear puree, chamomile gelee, and yuzu and pear granita. It is a sweet and invigorating dessert that cleanses the palate.

5th Course - Marble Dark Chocolate 4.2/5

The Marble Dark Chocolate was an artistic ode comprising three types of ganache, layered with plain and chocolate tuile and finished with a quenelle of Amaretto ice cream. This dessert celebrated the craftsmanship of the ceramic ware master who crafted the tableware for the Tsudoi Dining Room.

6th Course - Ichigo Milk 4.2/5

The Ichigo Milk, a finale featuring Amaou strawberries, showcased the 'king of Japanese strawberries.' With strawberries mixed in strawberry sauce, fromage blanc mousse, mint gelee, Hokkaido milk ice cream, strawberry granita, and edible gold flakes, it was a delightful conclusion — a light yet sweet ending to the culinary journey.

Oyatsu - Kumquat & Kokuto Pineapple Pie 4.5/5

To cap off the experience, the Oyatsu — Kumquat & Kokuto Pineapple Pie — offered a taste of Lunar New Year festivities. A Mille feuille puff pastry filled with almond cream, pineapple jam simmered with Okinawan kokuto black sugar, and kumquats from Miyazaki prefecture provided a sweet and symbolic ending.

In conclusion, the Chef's Table Discovery Experience at AMi Patisserie transcended a mere culinary journey — a symphony of flavours, artistry, and sentiment. Chef Makoto Arami's meticulous craftsmanship and thoughtful compositions elevate pastries to a form of culinary art, offering patrons an unforgettable and deeply personal gastronomic encounter. AMi Patisserie's physical concept place is more than a patisserie. It is a testament to the craftsmanship and passion that defines Chef Makoto Arami's culinary world.

Merci Marcel @ Katong - All-day Dining of Comfort Food with a French Flair in Merci Marcel’s 4th Outlet in Singapore

Merci Marcel's 4th outlet sits in the heart of Katong, their first venture into the East. Located in Santa Grand Hotel, the casual French restaurant is decked out in a fun new colonial and contemporary interior.

Early birds will be happy to have another spot to enjoy as they open every day from 8am into the night. Diners can expect a French tapas menu alongside speciality coffee, curated cocktails and French wines.

Salmon Crudo 4/5

To start, we had the Salmon Crudo ($20), which had salmon tartare on tangy pickled enoki with a dressing of cucumber gazpacho to be enjoyed with bread. I personally expected a bit more of this, but the clean flavour profile may suit if you're looking for something light.

Roasted Feta 4/5

The Roasted Feta ($16) is a decent sharing plate, with the slab of cheese served on a bed of poached pear, with slices of fresh pair, rosemary and a drizzle of honey and rosemary.

Ravioles de Royans 4.5/5

Merci Marcel's Ravioles de Royans ($20 for Small, $32 for Large) has been one of their most loved dishes since its opening. The adorable bites of French dumpling pasta are filled with Tête de Moine cheese, served with a creamy sauce and further topped with cheese florets.

It may look unassuming, but it gets more addictive with each bite. We loved how flavourful it was with the unadulterated taste of cheese, without being overwhelming.

French Mac & Cheese 4.5/5

Fans of mac & cheese got to try their rendition of French Mac & Cheese ($25). The creamy and lightly seasoned cheese macaroni is held within a buttery, flaky pastry, paired with ham chiffonnade and cheese crisps. Surprisingly, it wasn't as heavy as we thought, and we thoroughly enjoyed the variety of textures.

Marcel’s Waffle Iron Style “Croiffle” 4/5

The Marcel's Waffle Iron Style "Croiffle" ($11) was recommended by our server as her favourite on the menu for desserts. There's caramel, bananas and a scoop of vanilla ice cream to accompany the croiffle. While the combination was likeable, I preferred the croiffle to be served more warmly.

Chocolate & Whisky Pie 4.2/5

We ended our night with the Chocolate & Whisky Pie ($13). The crisp shortcrust pastry and mildly sweet yet rich chocolate filling will easily satisfy any chocolate lovers.

Chinese Style Braised Whole Turkey with Braised Eggs, Peanuts and Homemade Chilli Sauce

Goodwood Park Hotel has been known for its Asian-inspired Turkey, and this year the kitchen team surprised us with the Chinese Style Braised Whole Turkey with Braised Eggs, Peanuts and Homemade Chilli Sauce ($388 nett). It is served with a choice of yam rice with preserved sausages, mushrooms and dried shrimp or thick rice porridge and braised gravy. Braised turkey may sound weird, but it was deliciously good.

Mini Turkey Pot Pie and Curry Turkey Pot Pie

Other delicious choices for your Christmas feast include the Slow-roasted Iberico Pork Belly ($418) with Crackling, Pickled Cabbage, Apple Sauce and Pork Jus, accompanied by Potato Gratin. The Mini Turkey Pot Pie ($56 for 6pc) and Mini Curry Turkey Pot Pie ($40 for 6pc) are a delightful addition to the festive spread.

Goodwood Park hotel has put together a Christmas Durian Combo ($68 for 6pc) consisting of D24 Coffee Glaze Cake, D24 Cookies 'N' Cream Cake, D24 Crunchy Chocolate-Hazelnut Tartlet, D24 Kueh Dadar and D24 Puffs.

Takeaway festive offerings will be available from The Deli from 15 November to 26 December 2022. Guests may place their orders at the Festive Online Shop goodwoodparkfestive.oddle.me for delivery or self-collection. Sol & Luna @ CapitaSpring - A New Latin-European Bistro Nestled In Lush Greenery

Sol & Luna is the latest concept by 1-Group perched 100 metres up on Singapore's latest 51-storey skyscraper CapitaSpring. It is a Latin-European bistro nestled in the building's green oasis, a unique sanctuary-in-the-sky of lush greenery.

Fried Soft Shell Prawn 4.2/5

We began our dinner at Sol & Luna with the Fried Soft Shell Prawn ($16) served with lime aioli and parsley. There is no need to de-shell the prawns. It can be eaten together with the crispy shell. An addictive snack to kick start the dinner, especially with a few glasses of drinks.

Grilled Tomino Cheese 3.5/5

You may like the Grilled Tomino Cheese ($22) wrapped with parma ham if you are a cheese lover. You can also taste a hint of sweetness from the acacia honey, coupled with a peppery kick from the black pepper. To enjoy the gooey grilled tomino cheese, you can spread it on the crostini.

Prawn & Octopus Nicoise Salad 4/5

The Prawn & Octopus Nicoise Salad ($25) will delight the carnivores as the meats are more than the greens. You can find prawn, octopus, quail eggs, haricot beans, Rescoldo potatoes, olive and Spanish anchovy on the plate.

White Gazpacho 3.5/5

Next, we have the White Gazpacho ($19) with grape segments, marcona almonds, grilled half avocado and mixed seeds, drizzled with a few drops of basil oil. I find it quite bare with just half an avocado floating in the middle of the white gazpacho in terms of presentation. While the cold soup is tasty, complemented by the various textural bites of the ingredients, I thought the cold soup was not chill enough.

This is our third prawn dish for the night, Grilled Australian Shark Bay ($25). There is nothing fancy, just simple cooking to appreciate the sweetness of the tiger prawns, topped with corn and tomato salsa.

One of the crowd's favourites is the Truffle Risotto ($25), cooked to a delightful creaminess packed with beautiful flavours from the grana padano truffle and mushroom paste. Customers have the option to add fresh seasonal truffles, subject to market price.

Wood-Fired Sardine 4.2/5

The dish that surprised me was the Wood-fired Sardine ($19). Shaped like a sausage, it is actually a concoction of sardine, mussel, herb and pine nuts wrapped with parma ham, paired with butternut puree. There is something familiar with the wood-fired sardine that I can't pinpoint. It just grows on me to go back for more.

Baked Veal Shank Pie 3.5/5

Good for sharing is the Baked Veal Shank Pie ($28). Tearing the puff pastry apart reveals a bowl of chunky veal, carrot, onion, and potato in delicious veal jus. Though I find the veal shank was a bit tough for my liking, the rest are well executed.

As for the Escalivada ($14), I do not know how to appreciate the mushy texture of the ragout of eggplant paired with capsicum, pearl onions, Spanish anchovies and hazelnut oil. However, the taste profile is indeed delicious.

The 12 Hours Slow Cooked Welsh Lamb ($28) is cooked to fork tender, paired excellently with the bordelaise sauce, broccolini and garlic crumbs.

For dessert, we tried the Sol & Luna Tiramisu ($16) and Tarte Tatin with Creme Anglaise Sauce ($13). The tiramisu is light-handed compared to other versions I have.

My preference goes for the Tarte Tatin with Creme Anglaise Sauce. Pour the creme anglaise sauce over the caramelised apple layer resting on the puffy pastry for a sweet ending to a satisfying dinner.

Overall, Sol & Luna is a beautiful restaurant on top of CapitaSpring. It brings together dishes from the Latin-European region - Italy, France, Portugal and Spain, reinvented with a twist and finesse. While there are hits and misses for the dishes, it is still worthy of a visit to immerse yourself in the green oasis.
