Chatterbox Cafe @ Resorts World Sentosa - Chatterbox Opens Cafe Concept at Weave RWS with Signature Chicken Rice and Local Favourites

ChatterboxCafe14

Chatterbox at Hilton Orchard Singapore is well known for its "most expensive chicken rice in Singapore". Now, it has expanded with a new concept, Chatterbox Cafe, at the new Weave Mall in Resorts World Sentosa, offering its signature Mandarin Chicken Rice along with a range of local delicacies, at a slightly more affordable price point, around $2 to $3 cheaper than its flagship location.

ChatterboxCafe3
Grilled Satay 4/5

We kick-started the meal with the Grilled Satay ($15), available in both beef and chicken options. Grilled over binchotan, the skewers come with onions, cucumber, ketupat and a sweet-savoury peanut sauce. While the meat was well-marinated and tender, I would have preferred a deeper char for added smokiness. The highlight is undeniably the peanut sauce, which is nutty with a subtle tang from the addition of pineapple puree.

ChatterboxCafe10
Sweet and Sour Kurobuta Pork 4.2/5

The Sweet and Sour Kurobuta Pork ($22) is a classic redefined. Premium pork is lightly battered, deep-fried, then wok-tossed in a bright, balanced sauce. I appreciated how the glaze didn’t lean overly sweet or sour, allowing the flavour of the pork to shine through without being masked by heavy batter.

ChatterboxCafe7
Mandarin Chicken Rice 4.5/5

The star, of course, is the Mandarin Chicken Rice. While still premium-priced ($40 for half chicken, or $23 for an individual set), it remains one of the best-tasting plates of chicken rice you can find in Singapore. The rice is aromatic with chicken oil and pandan fragrance, while the poached chicken is juicy and succulent. The accompanying chilli sauce is fiery, zesty and ticks all the right boxes. It's a dish that justifies its reputation, even if the price may still divide opinions.

ChatterboxCafe12
Chilli Crab

Another iconic local favourite is the Chilli Crab ($168 per portion), served with eight golden fried mantous for mopping up the luscious sauce. The portion is generous, best shared between two to three diners.

ChatterboxCafe5
Stir Fried Prawn with Palm Sauce

The Stir Fried Prawn with Palm Sauce ($26) features large prawns glazed with caramelised palm sugar, delivering a bold, sweet-savoury depth with wok hei aroma.

ChatterboxCafe1
Beef Hor Fun

The Beef Hor Fun is a comforting rendition, where velvety smooth rice noodles are infused with wok hei and paired with tender beef slices. Everything is brought together in a luscious black bean gravy that carries both smokiness and umami.

ChatterboxCafe16
Sweet Platter 4/5

We ended on a sweet note with the Sweet Platter ($13), an assortment of Nyonya kuehs made fresh daily with recipes passed down through generations. These colourful treats not only satisfy the sweet tooth but also celebrate the rich culinary heritage of Singapore.

Overall, Chatterbox Cafe brings its signature Mandarin Chicken Rice and a curated selection of local favourites to Resorts World Sentosa at a more approachable price point. While still positioned as a premium offering compared to hawker fare, the quality of ingredients and execution make it a worthwhile option for those seeking elevated Singapore classics in a comfortable setting.

Note: This is an invited tasting.

Ah Pui Teochew Porridge Buffet @ Four Points by Sheraton Singapore Riverview - Savour The Comforting Flavours Of Home-Cooked Fare

IMG_6490

In conjunction with Singapore's 60th birthday this year, Four Points by Sheraton Singapore, Riverview has launched a much-loved dining concept – the Ah Pui Teochew Porridge Buffet. Diners can now enjoy this local tradition at the hotel's Four Points Eatery, which has recently extended its service to weekends. Executive Chef Anthony has curated a line-up of home-cooked fare, featuring classic porridge options like Sweet Potato Porridge and Plain Teochew Porridge, accompanied by a spread of over 20 heritage dishes and condiments.

IMG_6531
Teochew Braised Duck

The standouts and crowd favourites are the braised and steamed items, such as Teochew-style Steamed Seabass Fillet, Teochew Braised Duck and Braised Pork Belly.

IMG_6452
Seabass Fillet

IMG_6459
Braised Pork Belly

I enjoyed both the Seabass Fillet and Braised Pork Belly. The fish was flaky and tender, and the pork belly slices had a good ratio of fats and meat, which deeply satisfied. As for the duck, while the meat was succulent, some came across slightly gamey.

IMG_6462
Prawn Paste Chicken Wings

IMG_6461
Deep-Fried Fermented Pork

Beyond the classics, moreish treats include Deep-Fried Fermented Pork, Prawn Paste Chicken Wings, and Steamed Otah. The Deep-Fried Fermented Pork impressed with its savoury crust and unctuous meat, sliced into bite-sized pieces for the best experience.

IMG_6483
Otah

The Steamed Otah was a delight, featuring chunks of fish meat and a well-seasoned coconut paste.

IMG_6487
Chai Po Omelette

IMG_6489
Braised Pork Trotter

Other dishes that exude the warmth of home-cooked comfort include Braised Pork Trotter, Curry Chicken, Chai Po Omelette, Soy Sauce Eggs, Braised Tau Pok, and Tau Kee. I adored the Chai Po Omelette, which was done with the right thickness and packed full of the umami Chai Po flavour.

IMG_6508
Mui Choy

One particular dish that stood out for me was the Mui Choy, simmered to utmost tenderness with well-balanced flavours.

IMG_6495

IMG_6500
Condiments

Along the condiments counter, you'll find all the flavours that build a sumptuous bowl of porridge – from Salted Egg, XO Shrimp Sauce, and Teochew Bean Paste to Pickled Cai Xin, Pickled Cucumber, and Fermented Beancurd.

IMG_6519
Nyonya Kueh

IMG_6515
Glutinous Rice Dumpling in Ginger Soup

Desserts are simple yet satisfying. I ended my afternoon with a comforting bowl of Glutinous Rice Dumpling in Ginger Soup and an assortment of Nyonya Kueh. The rice dumplings were plump and chewy with black sesame. I only managed to grab two morsels before they were all snapped out! Same for the kueh, bear in mind that they are of limited quantity too.

The menu is rotated regularly. Although beverages require an additional top-up, the Ah Pui Teochew Porridge Buffet offers a warm, homely dining experience at the spacious Four Points Eatery, which overlooks the idyllic Singapore River.

The buffet offers an array of dishes, ranging from the popular Assorted Seafood on Ice and live stations to a selection of grills, hot and cold desserts, and more.

IMG_0371
Seafood on Ice

I always start off buffets at the fresh seafood and sashimi corner. The fresh Seafood on Ice assortment includes red prawns, cherry clams, gong-gong, half-shell scallops, mussels and crabs. They were decently fresh, and our favourite was the prawns.

IMG_0372
Cold Cuts & Artisan Cheese

At the Cold Cuts & Artisan Cheese stations, there were mortadella, beef bresaola, coppa ham and a seasonal cheese selection.

IMG_0373
Marinated Appetisers

We liked how the different Marinated Appetisers were served in small portions for convenience. It also ensures you get a good mix of all the ingredients. The appetisers include Apple Wood Smoked Duck with Mango, Crab Salad and Spanish Potato Salad.

IMG_0374
Chinese Roasts

For Chinese Roasts, there was Roast Duck, Hainanese Chicken, Roast Pork and Char Siu Pork.

IMG_0375
Noodles

I enjoyed the Signature Laksa quite a lot. The base was rich with a good kick of spice.

IMG_0376
Charcoal Grill

The Charcoal Grill station was the most popular station of the night. The eye-catching selection includes Baked Oysters, Australian Beef Steak, Spanish Grilled Pork Belly, Otak-Otak Sausage of the Day and more.

IMG_0380

Each diner is also entitled to half a grilled lobster, limited to dinner only.

IMG_0377
Local, Chinese, Indian & Malay Cuisine

In other cooked selections, you will find dishes such as Carrot Cake, Indian Spiced Chicken, Roasted Vegetables, Naan Bread, Mutton Curry, etc.

IMG_0378
Hot Dessert

If you have a sweet tooth, the huge dessert selection will be very exciting! We started with the rich Praline Chocolate Pudding, which was my dining companion's favourite dessert of the night. Other Hot Desserts include Apple and Raisin Crumble, Bread and Butter Pudding and Nutella Cannoli.

IMG_0379
Assorted Nonya Kueh

The Assorted Nonya Kueh towers had Angku Kueh, Kueh Salat, Kueh Talam and Kueh Lapis.

IMG_0381
Cold Dessert

There were shooter glasses, eclairs, various tarts and cakes for Cold Desserts. We enjoyed the Signature Mango Cake the most.

AquaMarine @ Marina Mandarin Singapore - Peranakan Delicacies In Conjunction With The Peranakan Festival 2019

AquaMarine9

In conjunction with The Peranakan Festival 2019, AquaMarine at Marina Mandarin Singapore has collaborated with Baba Chef Raymond Khoo of The Peranakan Restaurant to showcase a sumptuous feast of Peranakan Delicacies, exclusively from 7 June to 11 July 2019.

AquaMarine33
Kueh Pie Tee 3/5

AquaMarine41
Nyonya Crabmeat Popiah 3/5

Kick start the Peranakan feast with some delightful bites such as the Kueh Pie Tee and Nyonya Crabmeat Popiah. Have fun putting the different condiments into the kueh pie tee shell, and be your own chef for the day.

AquaMarine1
Ngoh Hiang 3.5/5

The golden brown Ngoh Hiang wrapped in crispy beancurd skin is packed with chunky pork pieces flavoured with five spice powder. There was water chestnut in it, giving it a nice crunch in texture.

AquaMarine4
Ayam Buah Keluak 3.8/5

A staple dish of Peranakan food is the Ayam Buah Keluak which you can also find it on the buffet spread. The chicken was cooked to tender, infused with the flavours from the nutty buah keluak and spices.

AquaMarine17
Nasi Ulam Istimewa 4.2/5

A must try is the Nasi Ulam Istimewa, which is also one of my favourites. Not commonly served in restaurants because of the laborious preparation work behind it. I was told the key to the dish is the freshly cut herbs and spices just before serving. You can't prepare them in advance.

AquaMarine16
Ikan Goreng Chuan Chuan 4.2/5

I have never tried Ikan Goreng Chuan Chuan and this a new Peranakan dish which I enjoyed. The fish is fried and then cooked with dark soy sauce, ginger, garlic and salted fermented soy beans. The star has to be the salted fermented soy beans which give the dish its characteristic.

AquaMarine29
Dry Laksa 2.5/5

Unfortunately, the Dry Laksa didn't impress me. It tasted like a plate of stir-fried Chinese noodles. I could not taste any laksa rempah at all.

AquaMarine32
Itek Sio 4.5/5

Not to be missed at the buffet spread is the Itek Sio, Nyonya braised duck with tamarind and coriander. The duck meat has been cooked to tender, infused with the flavourful braised sauce.

AquaMarine40
Udang Kuah Pedas Nanas 4/5

A very appetising dish is the Udang Kuah Pedas Nanas, fresh prawn cooked in pineapple coconut gravy. The tanginess from the gravy simply whetted up the appetite.

AquaMarine37
Whole Veal Shank Rendang 4.8/5

Another crowd favourite is the Whole Veal Shank Rendang. Infused with the aromatic rempah, the meat fell off the bone with ease. A must try.

AquaMarine27
Apom Bakwa Pisang Pengat 3.5/5

Do save some space for the Nonya Kuehs to wrap up the sumptuous feast. The colourful kuehs are not only pretty in presentation, but they are really yummy. I only wish I have another stomach to try them all. I do notice something unique at the dessert section is the Apom Bakwa Pisang Pengat. The soft, fluffy apom is made from glutinous rice flour and butterfly pea flowers, paired with caramelised banana.

AquaMarine25

Pricing

$73++ per adult and $36.50++ per child for dinner Monday to Thursday
