Zui Yu Xuan Teochew Cuisine @ Amoy Street - A New Teochew Restaurant By Jumbo Group

The popular Chui Huay Lin Teochew Cuisine by Jumbo Group has a new sister outlet within the historic Far East Square precinct. The new outlet - Zui Yu Xuan Teochew Cuisine is nestled in a two-storey heritage building. Greeting guests at Zui Yu Xuan is a traditional Chinese entranceway adorned with intricate wood carvings and a sweeping tiled roof, before stepping into the historic courtyard that was once part of Chui Eng Free School founded in 1854.

Cold Crab 4/5

 A delicacy in any Teochew restaurants is the Cold Crab ($12/100g). At times you even have to pre-order them. The flesh are sweet with unami creamy crab roes. Best eaten with a vinegar dip. However I find the size here a bit small.

Braised Duck with Beancurd 4/5

Not to be missed in any Teochew restaurants is their braised duck. In fact, it is a must order whenever I visit them. The Braised Duck with Beancurd ($18/portion, $32 Half, $60 Whole), well infused with the braised sauce is tender and flavourful. What I love most is the tangy chilli sauce, that always seem to bring out the taste of the braised duck further.

For the deep fried items, there are the Deep Fried Ngoh Hiang ($13/portion) and Deep Fried Prawn Balls ($22/portion). These are delightful appetisers to kick start the dinner.

Deep Fried Homemade Puning Beancurd 3/5

Lightly crisp on the exterior with a soft interior is the Deep Fried Homemade Puning Beancurd ($12/portion). It comes with a chive vinegar dip. The whole taste profile is quite light, which I didn't quite know how to appreciate it.

Geoduck Clam Blanched with Superior Broth 4.5/5

Not commonly seen in Teochew restaurant is the Geoduck Clam Blanched with Superior Broth ($16.80/100g). The thinly sliced geoduck clam blanced in superior broth, has an enjoyable crunchy texture on top of its natural sweetness. This is round off by the comforting and flavoursome soup.

Crispy Fried Sea Cucumber and Shiitake Mushroom with Abalone Sauce 4.2/5

Its rather interesting to come across another fried sea cucumber dish on the menu. This is probably the third time I have it within a couple of months. It seems like Chinese restaurants are trying to change the customers perspective of the slimy ingredient with more texture. I really applaud the effort and the Crispy Fried Sea Cucumber and Shiitake Mushroom with Abalone Sauce ($24/portion) here is probably one of the best I have eaten so far. It still retained the bouncy texture of the sea cucumber while giving it a nice thin crust.

Australian Lobster Wok Baked with Fermented Bean and Garlic Teochew Style 3.5/5

I have tried lobster cooked in many styles but the Australian Lobster Wok Baked with Fermented Bean and Garlic Teochew Style ($23.80/100g) is a first. However, I didn't quite taste the flavour of the fermented bean coming through in the execution.

Teochew Puning Fermented Bean Chicken 4.5/5

Another dish that uses the fermented bean is the Teochew Puning Fermented Bean Chicken ($22 Half/ $40 Whole). The fermented bean's flavour was more distinct in the dish, which complemented the tender chicken excellently. I love the dish so much that I kept going back for more.

Teochew Oyster Omelette Gooey Style 4.5/5

No to be missed at Zui Yu Xuan is their Teochew Oyster Omelette Gooey Style ($13/portion). This is probably the best oyster omelette (Orh Luak) I have eaten. I was told that they even have a delegated chef just to cook this. Crispy on the outside and gooey inside, this is only cooked upon order and takes about 20 minutes. Best paired with the slightly sourish chilli sauce to get the burst in flavours.

Wok Fried Kway Teow with Diced Kai Lan and Preserved Radish 4/5

The Wok Fried Kway Teow with Dice Kai Lan and Preserved Radish ($18/$27/$36) is packed with wok hei and the addition of the diced Kai Lan and preserved radish provides the extra crunch to the rice noodle.

Promfret and Rice Boiled Teochew Style with Dried Shrimp and Crispy Rice 4.5/5

Teochew loves their steamed fish and muay, so the Promfret and Rice Boiled Teochew Style with Dried Shrimp and Crispy Rice ($108/portion) kills two birds with one stone. You get a pot of hot piping Teochew porridge with slices of promfret. Dried shrimp and crispy rice are added for the extra lift in flavours as well as texture.

Yam Paste with Pumpkin and Gingko Nuts 4.2/5

Not to be missed at Zui Yu Xuan is the desserts too. All time favourites are their Yam Paste with Pumpkin and Gingko Nuts ($5.20/each) and Teochew Tau Suan with Gingko Nuts ($5.20/each). Even though the pork lard has been replaced with shallot oil for the yam paste, it still taste as good with the smooth consistency and distinct fragrant from the yam.

Personally I like the Teochew Tau Suan with Gingko Nuts ($5.20/each). Unlike other places, orange peel is added, elevating the traditional dessert for an unique enjoyment.

White Rose Cafe @ York Hotel - Traditional Teochew Porridge With An Array of Dishes For Lunch And Dinner

White Rose Cafe at York Hotel is known for its quarterly Penang Hawkers' Fare buffet and its signature Curry Fish Head dish on its a la carte menu. For a change, the restaurant is bringing back the Traditional Teochew Porridge along with an array of traditional dishes. The promotion will be available for both lunch and dinner from 01 October to 30 November 2018.

Braised Duck with Bean Curd 4/5

All in all there are a total of 16 a la carte side dishes to go along with the Teochew porridge. We tried a few of these dishes on the menu, starting with the Braised Duck with Bean Curd ($12).  Both the duck and bean curd were well braised, absorbing the savoury sauce which goes well with the plain porridge.

While the Bean Curd with Pork Floss ($6) is smooth and silky, I find it a little bland to go with the porridge. Maybe adding a richer oyster sauce to the dish will be more appetising.

I didn't quite like the Century Egg with Pickled Ginger ($6). It lacked that pungent ammonia whiff which I like about this acquire ingredient. I also like the yolk to be runny but this is a quite dry.

The Chap Chye ($9) is cooked to a delectable bite, not stewed until too soft. I like that the cabbage still has a crunch to it. I only hope that the fermented bean curd taste can be a bit stronger.

For the eggs, there are the Chye Poh Omelette ($9) and Onion Omelette ($9). I prefer the latter as the onion is more fragrant and has a subtle sweetness on top of the fluffy omelette. As for the chye poh omelette, it turned out to be on the salty side with the used of salty chye poh. I thought it would taste better if sweet chye poh is used instead.

Diced Chicken with Black Pepper Sauce 3.5/5

For some stir fried items, there are the Sliced Fish with Ginger and Spring Onions ($12) and Diced Chicken with Black Pepper Sauce ($10). They are not the usually dishes you will find in traditional Teochew porridge but who is complaining about variety, just give it to me.

Braised Chicken Feet with Mushroom 4/5

Probably I am the only one eating the Braised Chicken Feet with Mushroom ($10). The braising sauce has penetrated into the chicken feet and mushroom, liven it with the savoury sauce. Love it.

Another braised item on the menu is the Braised Mui Choy with Pork Belly ($10). The pork belly is cooked to fork tender and it even comes with a bed of mui choy underneath. I find this quite value for money. getting two items in one pot.

Steamed Minced Pork with Salted Fish 4.2/5

Everyone's favourite for the dinner goes to the Steamed Minced Pork with Salted Fish ($12). The saltiness of the salted fish was not overpowering but complemented the patty with a little hint of spiciness from the red chilli.

If you have problem deciding which 16 dishes to order, you can also go for the two 4-course set menu that is good for 2 pax at $29 per set. Both set menus come with free flow steamed rice and porridge as well as a choice of hot Cheng Tng or Tang Yuan in Ginger Flavoured Syrup for dessert.

Joo Seng Teochew Porridge @ Upper Bukit Timah - Popular Teochew Porridge At Upper Bukit Timah

If I am looking for comfort food or supper near my home, Joo Seng Teochew Porridge at Bukit Timah will always come to my mind. I actually have not been back there for a while due to the construction of the Downtown line. With the completion of the Downtown line, traffic flow are smoother now and it is also easily accessible by the MRT.

It was an impromptu meet up with my friends for dinner since they were near my neighbourhood. We ordered quite a number of dishes to go with our porridge. We could not resist ordering their braised items such as the Braised Duck, Pork Belly, Tau Pok and Pig Intestines. I always find that the rich flavour of the braised ingredients go well with the comforting bowl of plain porridge.

I enjoy Teochew porridge for the fact that I can still bite into the rice grains. Most Toechew porridge places also allow you to have it with more or less rice water, up to individual's preference.

Steamed Sotong

The Steamed Sotong was fresh and not overcooked (chewy). It has an enjoyable firm but yet bouncy texture.

Chap Chye 3/5

The Chap Chye may not be the best but it has been cooked to a nice soft texture. It also comes with crunchy black fungus.

Chye Poh Egg

Salty on its own but the Chy Poh Egg goes very well with the porridge. Somewhat crunchy from the preserved turnips, held together by the fluffy egg omelette.

After so many years, Joo Seng Teochew Porridge is still standing tall. The restaurant is always packed with customers whenever I visit the place in the evening. This is the go to place for Teochew porridge for many people staying in the West, even for night owls as the restaurant is opened until 4 in the morning.

The ART @ Assumption Pathway School - Porridge Buffet Every Last Friday Of The Month For Only $12 Nett

The ART (Assumption Restaurant for Training) is not your usual restaurant. Located inside Assumption Pathway School at Cashew Road, the restaurant provides the training ground for the students to put their F&B knowledge and skills into practice. The ART is a casual dining restaurant that offers 3-Course set lunch and High Tea Set on weekdays and during school terms. All prices here are nett.

The ART has recently extended its operating hours on Fridays (during school term) to include dinner. Set dinner will be served for dinner except on the last Friday of each month, where it is replaced with Porridge Buffet. I was there on the last Friday of March to check out the Porridge Buffet which is priced at only $12 nett.

For a mere $12, there is an eclectic selection of traditional condiments and dishes to go with either the normal porridge or porridge with sweet potatoes. During my visit, we had some of the items such as pickled radish, salted egg, fried ikan selar, chye por neng, long beans, prawn paste chicken, sambal eggplant

Besides the array of unlimited traditional condiments and dishes to go with the porridge, very table will have a plate of Braised Duck and Steamed Seafood that will be served once. My table was quite surprised in the execution of the braised duck coming from a kitchen that is more focus on western fare. The duck had absorbed the flavourful braising sauce and cooked to a nice tender texture. It definitely is a crowning dish for the porridge buffet.

Steamed Prawn

For the steamed seafood, we had the Steamed Prawn during our visit. I heard it served steamed sotong last month. The steamed prawns were huge, crunchy and juicy.

Stewed Tau Pok, Tau Ki and Tau Fu 4.2/5

A highlight at the buffet is the Stewed Tau Pok, Tau Ki and Tau Fu. The best way to enjoy the bowl of porridge is to drench it with the flavoursome braising sauce, and paired with the stewed tau pok, tau ki and tau fu which has soaked up the delicious braising sauce.

There is even dessert such as Red Bean Soup, Cakes and Brownies to complete the buffet spread.

On top of that, do be patient with their service as the place is run by students that are still learning the trade to gain practical experience experience from what they have learnt in classes.

ChaoZhou Porridge (潮粥) @ River Valley Road

While Singapore is known as a food haven, it is actually quite hard to find a place for supper after 9pm. ChaoZhou Porridge (潮粥) at River Valley Road will offer a good choice for your next supper, serving nostalgic taste of Teochew porridge and cuisine in a modern setting. The chef at ChaoZhou Porridge, even made the long trip to ChaoShan, China to learn more about Teochew cuisine and even picked up a couple authentic local recipes which is incorporate into the menu.

Following an authentic Teochew recipe, the ChaoZhou Porridge ($0.70) is served half mountain half sea or in Chinese known as "半山半水". One side of the bowl is more watery while the other side has more of the rice grain.

Steamed Meat Ball with Porridge Water 4.2/5

The Steamed Meat Ball with Porridge Water ($5.50/pc) is something new for me.This is the first time I have seen such combination. The meatball is made from a medley of different ingredients such as pork and vegetable. The slight salty meatball and the subtle taste of the porridge water made this an enjoyable combination.

The Braised Delight Platter ($16.90) comes with duck meat, pork belly, large intestines, egg, beancurd and tau pok. Special mention for the braised duck that uses a recipe afer 30 years of experimentation.

Big Sotong with Homemade Sauce 4.5/5

A must try at ChaoZhou Porridge is the Big Sotong with Homemade Sauce ($6.90). The sotong is first steamed and then chilled, served as a cold appetiser. The pillowy sotong is best paired with the homemade sauce that comes with a sweet, sour and spicy note.

A very addictive dish on the menu is the Cockles ($6.90). Besides the plump cockles, the dark sauce was the highlight for me. This is probably one of the best version I have eaten.

Cold Beancurd with Preserved Radish 4/5

For something light, go for the Cold Beancurd with Preserved Radish ($4.80). The preserved radish and the savoury sauce give the beancurd a lift in taste and extra crunch.

Chaozhou Steamed Mullet 4/5

Teochew loves their steamed fish and hence there is the Chaozhou Steamed Mullet (seasonal price) on the menu. The whole fish is steamed in the pot before removing the gut and served with salted vegetables. The execution allows one to appreciate the meatiness and moist oily flesh.

Preserved Radish Omelette 4/5

Fried to a beautiful golden colour is the Preserved Radish Omelette ($2.50 Small / $4.50 Large). The fillings of radish gave it an extra crunch with each bite.

Steamed Minced Meat with Salted Fish 4.5/5

A classic dish to go with the porridge is the Steamed Minced Meat with Salted Fish ($4.50). This is a must order for me whether I have Teochew porridge. The saltiness of the minced meat provides the perfect complement to the porridge.

Sambal Kang Kong 4/5

After all the seafood and meat, it is good to have some greens. The Sambal Kang Kong cooked to a nice crunchy bite may not be a Teochew dish but definitely a popular local favourite.

Besides the Teochew porridge and its accompanying dishes, the menu at ChaoZhou also offers some cooked dishes on the menu. We had the ChaoZou Fried Kway Teow ($8) which surprisingly was quite good with the wok hei or smokey flavour.

Crisp-Fried Taro Rolls 4/5

From the limited dessert menu, a worthy order is the Crisp-Fried Taro Rolls ($2.30/pc). A minimum order of 3 pieces is required. Crispy on the outside with the sweetness of the yam inside, this is a delightful hot dessert to end the nught.

With the opening hours from 1030am to 5am next day, ChaoZhou Porridge is like a all day dining venue. Being a Teochew myself, I am glad that I have discovered another great dining venue, especially another supper place. I am sure I will be back again.
