MoVida @ Raffles City - Australia’s Hatted Spanish Restaurant, MoVida Original Opens Outlet in Singapore

Raffles City has recently undergone a refresh of its F&B offerings with the opening of several new restaurants, including Mensho Tokyo, Casa Vostra, Wo Wo Dian, and more. One of the notable additions is MoVida, a beloved tapas restaurant from Melbourne that is widely credited with starting the tapas craze there. The Singapore outlet promises to deliver the same energy with a menu that mixes signature tapas with some exclusive local items.

Burrata 4.5/5

We started the meal with the Burrata ($18.80), served with asadillo salad and crispy pan coca. The burrata was exceptionally creamy and fresh, with the tangy salad and crispy bread providing the perfect contrast in texture and flavour. It's an excellent way to kick off the meal.

Jamon Iberico 5/5

Another standout was the Jamon Iberico ($30), featuring Blázquez 100% Jamon Iberico de Bellota, aged 36 months, served with pan Catalan. The jamon itself was rich, savoury, and delicious on its own. But when paired with the fresh, garlicky pan con tomate, it created a beautifully balanced bite.

An exclusive to the Singapore outlet, the Abalon ($16) featured slow-cooked abalone grilled over charcoal and topped with lardo and butter emulsion. Each bite of the abalone was tender and bouncy, with the rich, buttery emulsion bringing out the delicate flavours of the abalone.

The Ancho ($8) was another delightful dish. A Cantabrian artisan anchovy was served on a thin, crispy crouton paired with smoked tomato sorbet. The contrast of sweet and savoury flavours with the coolness of the sorbet made for an unexpected and refreshing tapas experience.

A personal favourite, the Cangrejo ($9) featured sweet de-shelled spanner crab on a warm crumpet, paired with a saffron emulsion and finger lime. The balance of flavours in this dish was spot-on, with the citrusy tang of the finger lime lifting the sweetness of the crab.

The Bomba ($8) was a crispy Catalan potato bomb filled with chorizo and mojo picon with a Canary Island dressing. The golden-brown exterior gave way to a flavorful filling, and the bold flavours of the dressing made each bite an explosion of spice and umami.

Another Singapore exclusive, the Croqueta ($9), was filled with a creamy mixture of leek and lobster, encased in a crispy, light shell. The piquillo pepper added a slight sweetness that complemented the luxurious and indulgent filling.

The Pincho ($20), featuring 150-day aged Angus beef skirt grilled over charcoal, was paired with a sweet onion and sherry sauce. While the flavour of the beef was robust, I found the texture to be a bit too tough for my liking.

Patatas Bravas 3.8/5

After hearing several recommendations, I had high expectations for the Patatas Bravas ($17). The potatoes themselves were perfectly crispy, but the accompanying Singapore-style chilli crab sauce, while an interesting local twist, didn't quite hit the mark for me. The garlicky flavour didn't quite meld with the potatoes as well as I had hoped.

The Cecina ($32) is a must-try dish featuring air-dried Wagyu beef served alongside truffle potato foam and a poached egg. The combination of melt-in-your-mouth beef and creamy potato was decadent, with the egg adding a richness that brought everything together beautifully.

The Pancetta ($34), featuring roasted crispy skin pork belly, was another popular item on the menu. The crackling skin was perfectly crisp, while the tender meat was balanced by the cumin mint carrots, which helped cut through the richness of the pork.

For dessert, we had the Arroz Con Leche, a Spanish-style rice pudding spiced with cinnamon and paired with roasted pineapple. The dish was topped with rose rice ice cream and a crispy rice cracker, creating a delightful mix of textures and flavours and providing a sweet, creamy finish to the meal.

Overall, MoVida offers a refined and exciting take on Spanish tapas, with a few interesting twists exclusive to Singapore. It's a great addition to Raffles City’s evolving dining scene.

Surrey Hill Grocer @ Arena Country Club (Jurong) - Savours The Flavours of Australia At A Pet-friendly Cafe

Surrey Hill Grocer, located at Arena Country Club in Jurong, is a delightful local gem encompassing a lifestyle grocer and a cafe. This homegrown establishment proudly imports authentic Australian products and produces, offering Singaporeans a taste of the Down Under. During my recent weekend visit for lunch, the cafe was bustling with diners, including their furry friends, as Surrey Hill Grocer is a pet-friendly establishment.

As we eagerly awaited our mains, we indulged in the chunky and satisfying Sweet Potato Fries. Crispy on the outside yet delightfully sweet and moist on the inside, these fries paired perfectly with the accompanying dipping sauce, creating a delectable combination.

However, the star of the show for me was the Wagyu Bolognese. The spaghetti was flawlessly cooked to al dente, providing a delightful bite. Tossed in a sweet and tangy tomato sauce, it was further enhanced by generous parmesan shavings for an added savoury kick. With each slurp, the ample serving of minced wagyu was a mouthful of pure indulgence.

Melbourne Breakfast Avocado, Poached Egg 4.2/5

For those seeking a taste of Melbourne's vibrant cafe scene, the Melbourne Breakfast Avocado with Poached Egg will surely transport you back to those fond memories. A thick slice of sourdough bread is adorned with luscious Australian mashed avocado, whipped ricotta, vegemite emulsion, honey dukkha, micro herbs, and perfectly poached nuyolk eggs. This hearty breakfast platter will brighten up your day and leave you satisfied.

Another popular choice from the menu is the Hot Honey Fried Chicken Waffle. LaBrezza @ The St. Regis Singapore - A White Truffle Gastronomy

Hailing from Piedmont, the highly prized white truffles has arrived at LaBrezza at The St. Regis Singapore. Only available during this short winter season between 15 October - 30 November 2019, Executive Sous Chef Fabio Granata has crafted a special menu to incorporate this delicacy into Italian classics.

Organic Poached Egg, Spinach, Tre Latti Cheese Fondue, Alba Truffle Shavings 4.5/5

The strength of white truffles, as you will realise as you go along with the dishes, lies with their aroma. The most ideal way to treat white truffles is to slice them thinly only a finished pasta, eggs etc, allowing heat to release its aroma and flavors, rather than cooking or infusing them into other ingredients as we would with black truffles. I learnt that ingredients such as cream, milk, eggs, cheese harmonize and accentuate the characteristics of white truffles. That explains why Uovo Affogato, Spinaci, Uovo Fonduta E Tartufo ($56) is so imperative in the entire gastronomic experience. The garlicky scent wafting out from the warmed Alba truffle shavings teased my senses the moment this dish was served. While the green element can be interchanged with other vegetables, the cheese fondue and the poached egg are essential to this Italian signature. Made with sheep milk cheese, cow milk cheese and goat milk cheese, the cheese fondue was sharp but not too pungent, rich and creamy, and the egg yolk lava thickened its consistency even further. Accented with earthy nuances from the white truffle shavings, the way to balance the assertiveness of the dish, is to tear the toasted brioche served at the side, dip it in and then deliver the decadent goodness straight into your mouth. The toasty sweetness of the brioche coming through will bring all the elements together in harmony.

Along the same pairing principle, Tajarin Al Tartufo ($60) allows the delicate truffle shavings to soften and release their aroma and flavours into the pasta, and the earthy, garlicky notes of the truffle were even more pronounced in this dish. Coated with Butter-Parmigiano Emulsion, the pasta inherited an almost creamy texture. Carrying just a light saltiness from the cheese, the pasta was able to drew much flavours out from the earthy truffle shavings.

Braised Guinea Fowl, Soft Polenta, Brussel Sprouts, Alba Truffle Shavings 3/5

Just when I thought the experience would get even better with a meat pairing, the choice of lean meat in Faraona Con Panna E Tartufo ($70) didn't quite work with the truffles. Perhaps it lacks the fats and body to meld with the latter, I'm actually quite happy with just the brussel sprouts and polenta to mingle with the fungus.

Zeppole Puff, Chantilly Cream, Hazelnut Nougat, Alba Truffle Shavings 3.8/5

Complete this annual gastronomic journey with Zeppole, Nocciole E Tartufo ($49). If you find it disconcerting about this dessert idea at first, it all makes sense as you appreciate its profile through the various savoury dishes.

Ash & Elm @ Intercontinental Singapore - Launches New Sunday Champagne Brunch

This April, Ash & Elm at Intercontinental Singapore launches a new Sunday Champagne Brunch, taking inspiration from the country synonymous with gastronomy, France. Helmed by newly appointed Chef de cuisine Adrian Chan, the brunch buffet features a medley of sophisticated flavours through the use of fresh ingredients and French cooking techniques from duck confit and braised beef brisket to ratatouille.

Using fresh produce from three different categories of land, sea and garden, the three iconic tasting platters of Ash & Elm’s Sunday Brunch comprise nine a la minute petite plates featuring the best of France’s rich culinary history.

From the Land menu, we have the Le Porc - this classic dish of pork belly is slow cooked in duck fat to achieve a tender consistency, crisp exterior, and its rich flavours are balanced with the tangy flavour of orange and piquant charred leeks.

The Le Boeuf - the beef brisket is braised in Bordeaux red wine for over 12 hours for that melt-in-the-mouth texture and is perfectly complemented with garlic infused pomme puree, and French beans to add a nice crunch to the beef brisket. The Le Canard features fork-tender pan-seared duck with spiced and vanilla infused carrots puree to bring out its luscious flavours.

One of my favourite from the Sea menu is the Le Flétan - the slow-poached halibut has a soft tender texture with crisp oat crust and topped with caviar beurre blanc and broccolini to enhance its flavours.

Some of the highlights from the Garden menu include the Le Champignon, where the mushroom takes centre stage in this dish with handmade tortellini generously filled with creamy porcini puree, adorned with lashings of truffle and wild mushroom duxelles.

While the La Tomate features a modern take on the common French vegetable stew. The ratatouille is colourfully presented in a stuffed oven-baked tomato paired with pesto.

Besides the petite plate selections, indulge in the array of brunch items from the counter such as the Poached Eggs doused in a creamy hollandaise sauce atop bacon, spinach and English muffin.

From the roasts section, the Slow Roasted Herb Crusted Beef Ribeye was well seasoned and perfectly executed.

Don't miss out on the caviar station, where diners can get to enjoy piles of Avruga (smoked herring roe), Wasabi Ebiko, Ikura, Tobiko, Queen Kaluga (sturgeon roe) on soft fluffy blinis.

Gaston Burgundy Bistro & Wine Bar @ Keong Saik Road - Hearty Comfort French Fare With Delectable Wines

Within the bustling stretch of Keong Saik is a new all-day bistro and wine bar - Gaston Burgundy Bistro & Wine Bar, offering comfort French fare and delectable wines from Burgundy. The bistro is helmed by owner and general manager Geoffrey Daurelle from Burgundy, who is inspired to bring the taste and culture of Burgundy to Singapore. He has rooted in Head Chef Julius Soo Thoo, who has worked in the kitchen of L'Atelier de Joel Robuchon and Iggy's to bring the classic Burgundy cuisine to the table.

Croquettes Bourguignonnes 4/5

The Croquettes Bourguignonnes ($9 for 3pc / $18 for 6pc) is like our cheese and ham sandwich except it is in a croquette form. It uses Epoisses cheese which is is known as Burgundy's most pungent cheese. I didn't find it that smelly at all.

Oeufs en Meurette 4.2/5

The Oeufs en Meurette ($13/$21) is like our local soft boiled egg breakfast in dark sauce. It comes with a poached egg in red wine sauce paired with onions, bacon and mushrooms. I do recommend saving some bread to mop up the dish just like how we local have our egg and toast for breakfast.

Escargots de Bourgogne 3.5/5

Some diners can be deterred by the sight of the escargot in its shell but the Escargots de Bourgogne ($15 for 6pc / $28 for 12pc) here is de-shelled and served in a pastry shell paired with garlic, butter and parsley. Love the idea as it is really easy to just pick it up and pop it into the mouth.

Boeuf Bourguignon 4.2/5

Passed down to Geoffrey Daurelle is his mum's recipe for the Boeuf Bourguignon ($32). The beef stew in red wine sauce is cooked to tender with carrots and mushrooms. Noteworthy is the creamy and smooth mash potato, which consists of 50% potato and 50% butter, similar to what the now defunct L'Atelier de Joel Robuchon Singapore used to serve to their diner.

Truite a l'Aligote 4.2/5

The Truite a l'Aligote ($28) is a match in heaven with the white wine sauce made of Aligote (white grape from Burgundy) complementing the steamed trout fillet. The trout fillet is rested on pommes fondant and pair with asparagus. A clean, light and delicate dish.

The Flan Patissier ($12) comes in a light pastry crust filled with smooth and eggy vanilla crustard. It is served together with a scoop of vanilla artisan gelato.

Eclair au cassis 4.2/5

For something richer in taste, there is the Eclair au cassis ($14). The classic French choux dough shell are filled with purple cassis custard cream, instead of the usual chocolate or vanilla cream. The cassis berry which is an iconic fruit of Burgundy gives the eclair a sourish finish that is very appetising.

Contrary to popular belief that wines from Burgundy are expensive, the wine bar offers value for money gems, especially those from lesser-known sub regions in Burgundy such as Côtes Chalonnaise and Mâconnaise, as well as appellations like Macon. There is an extensive selection of quality, great value vinos of close to 350 labels from Burgundy and beyond held within the wine bar’s dedicated walk in cellar. Committed to ensuring that the wine programme is highly accessible, varied and exciting, the wines are sourced directly from the vintners themselves. With an extensive wine-by-the glass programme of close to fifteen wines (including premium Champagnes) as well as a rotating ‘Wine Flight of the Week’, there is something for everyone from novices to seasoned wine drinkers to tantalise the palate.
