Town Restaurant @ The Fullerton Hotel Singapore - Experience Local & International Cuisine Sunday Brunch

Sit back, relax and toast to a Sunday brunch at Town Restaurant, situated in The Fullerton Hotel. Guests get to enjoy delicious brunch staples like Egg Benedict alongside irresistible favourites such as Chilled Maine Lobsters and Scallops, Grilled Angus Striploin, Slow-Roasted Lamb Leg scented with Rosemary and Garlic, and more.

With the current ongoing Covid-19 pandemic, The Fullerton Hotel has set up rigorous cleanliness practices and safe distancing measures at their restaurants to ensure that diners can experience an enhanced level of protection. Guests will experience a whole new different way of enjoying buffets in these unprecedented times, as ala-carte dishes can only be ordered from the menu, which will then be freshly prepared by the chefs upon order and delivered to your table. But of course, dishes will be free-flow for the duration of the buffet!

Chilled Seafood Delight 4/5

First, we kickstart the buffet with some crustacean delights from the starters menu. The Chilled Seafood Delight comprises a half Maine lobster, tiger prawns, half-shell scallops, snow crab legs and Venus clams.

Omakase Makimono 3.8/5

We had the Omakase Makimono - with a selection of maki rolls including the lobster & avocado salad maki roll, spicy tempura ebi roll and California maki, as well as the selection of sushi which consists of Hamachi, Norwegian salmon, octopus and yellowfin tuna. While fresh Hamachi, Norwegian salmon, yellowfin tuna is served on the sashimi platter for the seafood lovers.

Butcher Block Charcuterie 3.8/5

Moving on to the Butcher Block Charcuterie, it is a must-order for the cheese lovers for the mini platter of Parma ham, duck rillettes, saucisson, bresaola with freshly baked olive & rosemary focaccia.

Traditional Malay-Style Grilled Chicken & Beef Satays 4/5

Not to be missed is the selection of their local favourites. The Lan Zhou Hand Pulled La Mian Noodles comes in a flavourful rich broth, with tender-braised wagyu beef cheek, Szechuan chilli, and scallion oil. We also had the Traditional Malay-Style Grilled Chicken & Beef Satays with Ketupat and chunky peanut sauce which adds a rich nutty flavour to the satays.

From the dim sum selection, they have the Steamed Crystal Prawn Dumplings, Chicken Siew Mai, and the Hong King-Style Char Siew Pau.

BBQ Hong Kong Roasts 4.2/5

From the BBQ Hong Kong Roasts selection, we had the Five-spiced Roasted Duck, Crispy Crackling Pork Belly, and Honey Glazed Char Siew. The tender roast meats are best paired with the Town Signature Tender-Poached Chicken Rice with house-made chilli and ginger.

Spaghetti Vongole with White Wine Fresh Clams and Chilli 3.8/5

For something substantial, opt for their meats from the grill, as well as pasta and pizza from the Italian corner. The Italian classic of Spaghetti Vongole with White Wine Fresh Clams and Chilli was quite balanced with a light briny, garlicky aroma, and a subtle tinge of chilli.

Grilled Angus Striploin 4.2/5

From the grill station, the Grilled Angus Striploin was one of my favourite dishes, which was cooked to perfect medium-rare doneness, and the addition of mousseline potato, smoked mustard and au just elevated the dish. Another highlight is the potato, which is made using premium french butter and sea salt for its superb smooth, buttery tones. We ordered additional Potato Mousseline, Broccoli Almondine, Roasted Champigon Mushrooms with thyme, and Signature Truffle Fries with Parmesan to go along with the steak as well.

Because breakfast is an all-day luxury, go for their organic eggs done in 3 different ways, and accompanied with a choice of sides such as mini rosti, crispy bacon and chicken chipolata.

Graham Cracker Key Lime Tart, Mango Pana Cotta & Exotic Macaroon Platter 4/5

We ended the meal on a sweet note with their Graham Cracker Key Lime Tart, Mango Pana Cotta & Exotic Macaroon Platter. Of the three, we fancied the Mango Pana Cotta the most for its lightly sweet but not cloying fruity flavours, as well as its soft and smooth texture. From the dessert menu, there is also an assortment of Nyonya Kueh, Classic Crème Brulee, selection of tropical fruits, cheese platter, and ice cream & sorbet available as well.

VUE @ OUE Bayfront - Singapore's Newest Rooftop Dining Destination

VUE the newest rooftop dining destination is located on the penthouse of OUE Bayfront on Collyer Quay. It actually takes over the now-defunct ME@OUE. The stunning restaurant overlooks the Marina Bay and the Singapore skyline. The restaurant's menu focuses on the binchotan grill, complemented by a versatile selection of wines. It is also home to Singapore's first rooftop spritz bar.

Our dinner started with the Oysters with Champagne Mignonette. The Speciales Geay Size 2 Oysters are creamy and buttery, with a delicate balance of sweet and briny flavours.

Always good for sharing is the Charcuterie which comes with daily chef specials. The is accompanied by La Coca Bread, Guindilla Peppers, Home-pickled Cherries and Preserved Apple.

Ceviche 4.5/5

I love Ceviche because each mouth is a firework of flavours. For the version at VUE, you will find halibut, scallop and prawns that are cured in homemade citrus-based spicy tiger's milk emulsion. It is then topped with shallots, pine nuts and sweet corns.

Kumamoto A5 Emperor "Kokuou" Wagyu Sirloin 4/5

The highlight at VUE has to be the Kumamoto A5 Emperor "Kokuou" Wagyu Sirloin. The Kokuou wagyu is known as the pinnacle of Japanese beef. The prized piece of meat is slow-roasted for over 20 hours and served with rice salt flake. What I enjoyed most is the crust on the exterior, sealing the fatty marbling within. Once you put it in your mouth, it literally melted without much effort to chew on it.

You can also order some side dishes to go along with the prized meat. Some of the items available on the menu are  Grilled Mushrooms, Grilled Shishito Peppers, Bone Marrow, Marbled Potatoes, Creamed Spinach, Purple Cabbage with Bayonne Ham and Onion Tempura.

For dessert, we had the Chestnut. It is a delicate cocoa nib tuile served on a bed of chocolate mousse. This is accompanied by a scoop of chestnut ice cream and chocolate truffle. The addition of fresh raspberries provides the acidity to balance the richness of the chocolate. Not to forget, the fresh truffle shaving on top for full indulgence. Yes! You get truffle for dessert too!

The restaurant is really very beautiful with a panoramic view of the Marina Bay and Singapore skyline. Food is on the pricey side, but this comes with the view and quality of ingredients used. This will be an ideal destination dining if you want to impress your date or business partners.

Plentyfull @ Millenia Walk - Beautiful Food That Is Both Delicious To The Camera and Palate

I have seen many beautifully plated dishes on social media platforms from Plentyfull at Millenia Walk and I have been wanting to check out the place. Plentyfull is not just about instagrammable food, the food is actually made from scratch where possible, using the freshest seasonal produce sourced from farmers and artisans locally and internationally. It provides honest, hearty and homemade meals away from home.

House Charcuterie 4.2/5

Our dinner at Plentyfull started with the House Charcuterie. Diners can order a la carte or if you want a bit of each, you can go for a choice of 4 different cured meats at $38 regular or $46 large. We had the 777 Duck Breast Prosciutto ($16), 5J Jamon Iberico ($22) and Szechuan Peppered Swordfish Belly Ham ($16). My favourite is the duck breast prosciuto for its deep flavour that has been cured for 21 hours, smoked for 7 hours and dry aged for 7 days.

Organic Tofu Caprese 4.5/5

The next dish we tried is the Organic Tofu Caprese ($16). The smooth and silky tofu is dressed in an aged ponzu sauce with plum tomatoes, shallots and seeds. Tofu is known to be quite tasteless but this turned out to be a dish packed with complex but yet delicious flavours, refreshing and enjoyable. The plum tomatoes were extremely sweet too.

House Flat Bread 4.2/5

Do you know that Plentyfull made their own bread and butter? The best way to appreciate them is the House Flat Bread ($12) which comes with nori butter, elderflower caramel & EVO oil. My favourite is the nori butter with that extra hint of saltiness that went very well with the flat bread.

Seasonal Vegetable Tart 4.5/5

For the Seasonal Vegetable Tart ($16), this week we had the carrot tart. A layer of carrot puree sits on top of a crispy tart base that tasted like chicken twisties. This is crowned by a beautiful garden of vegetables held together excellently by the black garlic gem.

Grilled Spiced Lamb Ribs 3/5

Moving on to the mains, we tried the Grilled Spiced Lamb Ribs ($30). The slow cooked lamb ribs are served with smoked yogurt, edamame and horseradish. I could taste cumin and star anise on top of other spices and the smokey flavour. However I thought the meat was a bit overcooked and tough.

5 Spiced Duck Leg Confit 3.5/5

Next we had the 5 Spiced Duck Leg Confit ($28) with cucumber, radish salad and mantou. While the duck skin is slightly crisp, the meat felt short of being confit. It felt more like having a braised duck. I am not saying it is not good but kind of misleading with the menu.

Beetroot Risotto 4.5/5

My favourite dish at Plentyfull has to be the Beetroot Risotto ($24). The natural colouring from the beetroot made the risotto looks very appetizing. I was very eager to dig into the plate of arborio rice cooked with a medley of beetroot and pecorino cheese. This is a plate of goodness with the beetroot sweetness and cheesy percorino coming together beautifully on the palate.

Coconut Creme Brulee 4/5

For dessert, we tried the Coconut Creme Brulee ($14) which consists of coconut ribbons, salted gula melaka ice cream. Once again, I felt that the naming is a bit confusing. Except for the coconut ribbons, there is nothing actually taste coconut. Technically the creme brulee has coconut but the pandan flavour is more distinct. It should have named kaya or pandan creme brulee.

Miso Souffle 4.2/5

Not to be missed on the dessert menu is the Miso Souflle ($16) with toasted walnut ice cream. The light and pillowy souffle was so soft that I nearly fell into dreamland.

I am glad to have visited Plentyfull. The all day dual concept restaurant, patisserie and gourmet grocer not only dish out beautifully plated food, they are deliciously made from scratch too. It definitely worth a return to try more of the dishes on the menu.

Ash & Elm @ InterContinental Singapore - Semi-Buffet Brunch from $38++

When I was told about the invite to Ash & Elm, my first instinct - sight unseen - was, I’m afraid, not very charitable. A restaurant that doesn’t seem to have realised its name would inevitably be acronymised into a hospital department? That’s not particularly encouraging. But then I go, of course, because there’s food, and what I’m taken around to see quickly changes my mind.

Ash & Elm, which serves double duty as the Intercontinental’s guest breakfast area, is a quietly good looking place - wood and bronze tones, mostly, coupled with black. And a semi-buffet lunch helps in that respect. Because we need to face it - buffets can be unsightly, ugly affairs, what with the queues and the half-empty pots and people rummaging around for a fried prawn whose head hasn’t come off during serving.

At Ash & Elm, though, there’s none of that. The buffet itself, for $38, is exclusively the dainty and pretty things - charcuterie and cheese, salads, and desserts around a chocolate fountain. For $10 more, you get to choose a main course from a list that’s mostly centred around the charcoal grill in the kitchen.

Teppanyaki Snapper 3.8/5

Ash & Elm presents their Snapper with hardly any adornment or seasoning. All that counts is the freshness of the fish itself, the fragrance of seawater without muddiness, and the power of the grill which chars and crisps the skin but leaves the flesh chunky and juicy. Pesto matches well, though a tomato-based sauce is a little too tangy and dominates the fish and pilaf rice.

Angus Rib-Eye 4/5

The pal’s Angus Rib-Eye actually comes in looking rather unimpressive, but it’s a better display of the chefs’ skills at the grill. Despite being thinly cut (though still substantial), the steak is evenly medium rare, a sliver of burgundy running through its core. And while there is no visible char, the gleaming surface is full of flavour - from charcoal, but also from the wood chips scattered on the charcoal grill. It’s well worth the extra $10 for choosing it.

Charuterie and Cheese 4/5

The Charcuterie and Cheese section is quite easy to miss, being the chilled walk-in just beside the entrance. Ash & Elm cures its own meats where possible, and most of them - from beautifully speckled salami to beef pastrami that stretches and melts in the mouth - are well worth having, as are the properly mould-suffused Stilton and milky, mineral Comté if you like your cheese rough.

Salads tend to be relegated to last place in most buffets, but Ash & Elm give theirs pride of place on the black stone counters, and zhuzh them up properly too. The biggest hit is a little shot glass of an Italian classic - a cherry tomato nestling with mozzarella in mild, golden olive oil, with a pipette of balsamic. But there are other cooked options as well, and a place where you can make your own mix of greens and dressings.

Desserts, on the other hand, are merely good - which means they don’t stand out as much, compared to the rest of the line-up. The pal thrills to the chocolate fountain, but my favourite is a pinkish tiramisu where the mascarpone whip surrounds the cake, the whole thing melting into a satisfying hit of coffee and eggs and cream.

But the thing that really strikes me is how low-key and understated the whole affair is. The restaurant is not just sleekly arranged but also versatile, the buffet counters becoming bar seats for the dinner service. And the breakfast run around an open kitchen concept where you order the dishes directly from the cooks.

As with every buffet, there is the risk of having a wide range of dishes but no real focus or quality, but this place generally avoids the problem with the simplest of solutions - by working hard at the details in the looks and taste of their dishes. Cure your meats well, have a powerful grill and people trained to work it, and arrange things in a generally pretty way. That’s the idea Ash & Elm have - and it’s a steady, solid idea.
