Shisen Hanten by Chen Kentaro @ Hilton Orchard - Launches $88++ Weekend Brunch Indulgence

ShisenHantenBrunch44

Shisen Hanten by Chen Kentaro, Singapore's highest Michelin-rated Szechwan restaurant, is back with a revamped space and a brand-new weekend brunch experience. Available exclusively on weekends and public holidays, the $88++ per guest brunch menu (minimum two guests, all diners at the table must order) offers a luxurious spread of signature dishes available from refined dim sum to indulgent mains and classic Szechwan specialities.

ShisenHantenBrunch2
Shisen Hanten Trio Appetiser 3/5

We kicked off with the Shisen Hanten Trio Appetiser, featuring Sweet and Sour Jellyfish, Chilled Steamed Chicken with Spicy Sesame Sauce, and Szechuan Sliced King Mushrooms with Mala Sauce. Each bite showcased the restaurant's mastery of flavour layering, which was zesty, nutty, and tongue-tingling in all the right ways. It was a perfect introduction to what was to come.

ShisenHantenBrunch13
Steamed Spinach Shrimp Dumpling 4/5

ShisenHantenBrunch9
Steamed Okinawa Barbecued Pork Bun 3.8/5

ShisenHantenBrunch18
Pan-fried Chinese Sausage Radish Cake 4.2/5

ShisenHantenBrunch21
Szechwan-style Poached Pork Dumpling 4/5

From the dim sum selection, we tried four of the seven available items, each crafted with finesse and elegance. The Steamed Spinach Shrimp Dumpling stood out for its delicate translucent skin encasing a juicy, flavourful filling that combined the sweetness of shrimp with the earthy freshness of spinach. The Steamed Okinawa Barbecued Pork Bun offered a rich and slightly smoky profile, its pillowy soft exterior giving way to tender, well-marinated pork. The Pan-fried Chinese Sausage Radish Cake was a comforting classic elevated by fragrant Chinese sausage, adding a savoury depth to the dish's crispy edges and soft interior. Lastly, the Szechwan-style Poached Pork Dumpling impressed with its juicy filling and the gentle heat from the accompanying mala-style broth. While each item was enjoyable, we wished for a broader selection to explore, especially considering the high standard set by these refined offerings.

ShisenHantenBrunch7
Foie Gras Chawanmushi with Crab Roe Soup 4.8/5

Among the three soup options on the menu, the Foie Gras Chawanmushi with Crab Roe Soup (+$18) is undoubtedly the showstopper and an absolute must-try. This luxurious dish arrives as a harmonious union of East and West, beginning with a silky-smooth Japanese-style steamed egg custard infused with the rich, buttery essence of foie gras. The custard is then crowned with a generous ladle of crab roe soup, bursting with umami and a delicate ocean sweetness that perfectly complements the foie gras' depth. Each spoonful is a textural delight, with the soft custard melting in the mouth while the vibrant crab roe adds a subtle pop and brininess. It's an opulent, deeply satisfying soup that lingers on the palate, making it well worth the indulgence.

ShisenHantenBrunch26
Barbecued Honey-glazed Hokkaido Shirobuta Pork Char Siew, Crispy Pork Belly 4.2/5

From the barbecue section, the roast meats at Shisen Hanten offer a masterful showcase of texture and technique. The Barbecued Honey-glazed Hokkaido Shirobuta Pork Char Siew boasts a beautiful caramelised glaze, enveloping slices of tender pork that perfectly balances sweetness and savoury richness. The premium Hokkaido pork offers a succulent bite, with just the right amount of fat to make each mouthful melt with flavour.

The Crispy Roasted Pork Belly is equally satisfying. It features alternating layers of crackling skin, soft fat, and juicy meat. The skin is shatteringly crisp, creating a pleasing contrast against the moist, savoury pork beneath.

ShisenHantenBrunch33
Pan-seared Peking Duck 4.5/5

However, the standout among the trio is the Pan-seared Peking Duck. Unlike the traditional version, this rendition is elevated by pan-searing the duck wrap, lending it an extra crispness and a delightful textural crunch. Each bite reveals tender duck meat encased in a golden, crispy wrap, an unexpected yet welcome twist on a classic. This thoughtful attention to both flavour and texture makes the roast meat selection a highlight of the brunch experience.

ShisenHantenBrunch37
Deep-fried Diced Chicken with Szechwan Chilli Peppers 4.2/5

You can't leave Shisen Hanten without trying their take on Szechwan classics. The Deep-fried Diced Chicken with Szechwan Chilli Peppers delivered a fiery kick and addictively crispy morsels, staying true to the restaurant's roots in bold, spice-laden flavours.

ShisenHantenBrunch41
Stir-fried Prawns with Chilli Sauce (+$8) 4.2/5

Another crowd-pleaser was the Stir-fried Prawns with Chilli Sauce (+$8). The plump, crunchy prawns were coated in a vibrant, spicy-sweet sauce, which is best enjoyed with deep-fried mantou to mop up every last drop.

ShisenHantenBrunch44
Chen's Mapo Tofu with Hokkaido Rice 4.8/5

A signature must-have, Chen's Mapo Tofu is a flavour bomb that combines silky tofu and a punchy fermented bean paste sauce over a bed of premium Hokkaido rice. It is rich, comforting, and deeply satisfying.

ShisenHantenBrunch47
Szechwan Jelly with Seasonal Fruits 4.2/5

For dessert, the Szechwan Jelly with Seasonal Fruits offers a refreshing and vibrant conclusion to the indulgent brunch. The jelly, delicately infused with subtle hints of Szechwan spices, carries a gentle floral aroma and a light, palate-cleansing sweetness. Its soft, wobbly texture contrasts beautifully with the medley of seasonal fruits, each adding bursts of natural sweetness and juicy freshness. The interplay of cool jelly and crisp fruits creates a harmonious balance that refreshes the senses and helps cut through the richness of the earlier courses. It's a thoughtfully crafted dessert that brings a refined and revitalising end to the meal.

Shisen Hanten's new weekend brunch menu is a well-curated journey through elevated Szechwan cuisine, balancing refined techniques with bold flavours. From the luxurious foie gras chawanmushi to the punchy mapo tofu and pan-seared Peking duck, each dish is rooted in tradition while offering modern sophistication.

Note: This is an invited tasting.

Basilico @ Conrad Singapore Orchard - La Cucina Storica Featuring Traditional Recipes and Regional Specialties from Italy's Former Kingdoms

IMG_2963

Basilico at Conrad Singapore Orchard presents La Cucina Storica — an evolving buffet experience that pays tribute to the rich culinary roots of Italy's former kingdoms. Each edition of La Cucina Storica explores a different chapter of Italy's history, featuring traditional recipes and regional specialities. Available until 31 May 2025, the latest edition spotlights the Kingdom of Sardegna, showcasing the unique flavours of Sardegna, Liguria, Piemonte, and Val d'Aosta — regions once ruled by the House of Savoy. The buffet brings together a mouthwatering mix of classic dishes highlighting the kingdom's coastal bounty, countryside traditions, and diverse influences. Expect live stations, artisanal cheeses, and a curated selection of Italian wines and cocktails.

IMG_3041
Cheese Room

One of the key highlights is access to Basilico’s iconic Cheese Room, home to one of the most extensive cheese collections I’ve come across. Here, you’ll find a seasonal selection of over 40 artisanal Italian cheeses, complemented by truffle honey, nuts, assorted dried fruits, Mostarda Cremona (syrup-poached fruit), Pecorino Sardo, Robiola di Roccaverano, and a Mirto di Sardegna reduction.

IMG_3046
Uova alla Piemontese

Tucked away inside the Cheese Room is an easily missed gem — the Egg Station, offering Uova alla Piemontese. Think of it as a luxurious Italian-style shakshuka: eggs gently cooked in a bold, flavourful sauce made with roasted bell peppers, pancetta, and San Marzano tomatoes.

IMG_3030
Antipasti Station

IMG_2989
Fresh Cheese Selection

The Antipasti Station serves up an assortment of cold cuts including 24-month Parma ham, salame, pistachio mortadella, and Bresaola della Valle d'Aosta. A standout for me was the Fresh Cheese Selection, which featured an incredible range of burrata — from the classic to infused (truffle, pesto alla Genovese, Italian heirloom tomato) and smoked versions. There's also cow and buffalo mozzarella such as Ciambella and Bocconcini.

IMG_2994
Carving Station

The Carving Station is another crowd-pleaser, with a slow-roasted Porceddu (Sardinian-style suckling pig). Other roasts include grass-fed ribeye, grilled seabass, Australian lamb leg, and roasted chicken thighs.

IMG_3023
Pasta & Risotto Station

Over at the Pasta & Risotto Station, homestyle comfort dishes take the spotlight. I particularly enjoyed the hand-rolled Trofie Pasta with cod ragù, the rich and decadent Wagyu Beef Lasagna, and the Wild Mushroom Risotto, which was simple yet satisfying.

IMG_3002
Pizza section

The Pizza Section impressed as well, with dough that was exceptionally well done. The Black Truffle Focaccia was rich and indulgent with mascarpone, Robiola Tre Latti, and provolone cheese, while the Arbanella anchovies pizza delivered a rustic punch with anchovies, capers, chives, and Fior di Latte cheese.

IMG_2965
Cold Seafood Station

Seafood lovers will appreciate the Cold Seafood Station, which is well-stocked with live oysters, poached Boston lobster, tiger prawns, queen scallops, Taranto’s black mussels, and clams.

IMG_3058
Vermouth and Prosecco zabaione

To round off the meal, desserts include a delightful spread of cakes, tarts, gelato, and sorbetto. The mini rum baba was delicious. Don't miss the live Zabaione Station, where Vermouth and Prosecco zabaione are freshly whipped and served with fresh berries.

IMG_2969

The La Cucina Storica Weekend Brunch is available every Saturday and Sunday from 12pm to 3pm. It costs $128++ per adult and $64++ per child (6–12 years old). Free-flow beverage packages featuring Ferrari sparkling wine, Italian wines, and beers are available from $80++ per person.

Summer Hill @ Claymore Connect - A French Bistro Restaurant’s Unlimited Weekend Brunch Trolley

IMG_3033

Summer Hill is a charming French bistro tucked away on the second floor of Claymore Connect, just a short stroll from Orchard MRT. While their regular menu features French staples like Wagyu Beef Bourguignon, Mussels Normandy, and French Fried Chicken, weekends bring a creative twist with their Brunch Trolley - a roaming service inspired by the "dim sum" cart, with menus that rotate every few months according to a new theme.

IMG_3090

IMG_3021

We dropped by on a rainy day and were greeted with a warmly lit, cosy space. The thoughtful decor and mix-and-match tableware added to the inviting atmosphere.

IMG_3026
Brunch Trolley - Savouring Stories 3.8/5

From now until the end of May, the Brunch Trolley is themed 'Savouring Stories', with each dish inspired by iconic women writers. Priced at $79++ per person, the brunch includes unlimited servings of iced tea and all featured dishes during the dining session. Diners can opt for free-flow prosecco and wines with a top-up of $55++. The trolley service is available on specific sessions: Fridays at 12pm and Weekends at 11am and 1.30pm. During these sessions, the regular a la carte menu is paused.

IMG_3032

IMG_3036
Bread & Sides

Our experience started with a Bread Basket and three small side dishes: chicken liver pâté, gruyère eggs with onions, and a tomato-based ratatouille. Our server recommended that a touch of mustard brighten the overall flavours.

IMG_3043
White Bean, Potato & Leek Soup with Olives

The White Bean, Potato & Leek Soup was next. It was warm and subtly briny due to the addition of chopped olives and olive oil drizzle.

IMG_3052
White Clams

Then came the White Clams, served in a vibrant, spiced sauce with chilli and kaffir lime. It was a pity that the clams were relatively tiny.

IMG_3057
Grilled Skate Wing

The Grilled Skate Wing was one of our preferred dishes. It was dressed in a slather of fragrant brown butter and lemon. We ordered seconds, and it fared better when served warm.

IMG_3060
Charcoal-grilled Bangalow Pork Collar

We also enjoyed the tender Charcoal-grilled Bangalow Pork Collar, served with a creamy mustard-based sauce and crunchy hazelnuts. It paired nicely with the bread and the next dish, Aligot.

IMG_3067
Aligot

Both my dining companion and I love mashed potatoes, so we were excited to dig into the Aligot, a stretchy and thick dish enriched with cheese and butter.

IMG_3069
Red Wine Chicken, Spinach & Garlic Gratin

The savoury portions included Red Wine Chicken, Spinach, and Garlic Gratin. Though unassuming, the latter, mixed with onions, breadcrumbs, and butter, had us ordering seconds. Before dessert, the staff checked in to see if we wanted refills. All dishes are available for unlimited servings.

IMG_3083
Snow Cone Bar

For dessert, we started at the Snow Cone Bar, where diners could customise their own icy treat with various syrups, such as peach, rose, watermelon, and toppings.

IMG_3086
Valrhona Chocolate Almond Cake

IMG_3087
Tarte Aux Pommes

We finished with two warm desserts: a Valrhona Chocolate Almond Cake with whipped cream and a Tarte Aux Pommes, an apple-frangipane tart with a crisp crust and custard-like centre. While the dishes were a mix of hits and misses, the attentive service and welcoming space made the experience better. It's a great way to sample the restaurant's menu in small portions, and it's best enjoyed with a group for sharing.

Make sure to make your reservations ahead of time.

Edge @ Pan Pacific Singapore - More Scrumptuous Sunday Brunch with New Live Stations

IMG_2537

Sunday brunch at Edge is now even more scrumptious with new spreads curated by Executive Chef Andy Oh and his Culinary Team. The buffet lineup spans Singaporean, Chinese, Malay, Indian, Japanese, Thai, and Western cuisines, along with a comprehensive Breakfast Station.

IMG_2561

IMG_2563
Breakfast Station, Egg Benedict 4.5/5

The Breakfast Station delights with a live egg station, offering omelettes, scrambled eggs, and sunny-side-up eggs made to order. I especially loved the addition of Eggs Benedict with Smoked Salmon, accompanied by Chicken and Pork sausages, Streaky Pork Bacon, Grilled Tomatoes, and Sautéed Mushrooms.

IMG_2532
12-hour Slow-roasted Gigantic Veal Leg 4/5

IMG_2529
Signature Carvings Station 4.5/5

A must-visit is the Signature Carvings Station, featuring an impressive 12-hour slow-roasted gigantic veal leg with Yorkshire pudding alongside Roasted Five-spice Whole Golden Pig with Hai Xian sauce, roasted Virginia Ham Hock, and Herb-roasted Whole Lamb with lamb jus and yoghurt mint sauce.

IMG_2547
Master Butcher Handcrafted Cold Cut 4.5/5

If you enjoy charcuterie, the Master Butcher Handcrafted Cold Cut selection pairs perfectly with a glass of wine or champagne — and if you opt for the Bottomless Package, you'll enjoy Taittinger Brut Champagne. The spread includes gorgeous Jamón Ibérico, Pan Pacific home-cured beef salami, chicken ham, pastrami, mortadella, paprika Lyoner, and meatloaf.

IMG_2504
Asian Delights 4.8/5

IMG_2506
Salt-baked Chinese Herbs Free-range Chicken 4.5/5

The Asian Delights section is another highlight, featuring Chef Andy’s signature "wok hei" Penang Char Kway Teow and Edge’s signature black vinegar pork trotters. I also enjoyed the Chinese "Shao Xing" Wine White Clam lala and the Salt-baked Chinese herbs Free-range Chicken, complemented by Wok-fried USA asparagus with scallops in XO sauce.

IMG_2486
Fresh Pacific Seafood on Ice 4/5

IMG_2526
Steamed Whole Mud Crab with Chinese Herbs in Lotus Leaf 4/5

One of the mainstays is the Fresh Pacific Seafood on Ice, a luxurious spread of Boston lobster, snow crab legs, tiger prawns, Pacific clams, half-shell scallops, crawfish, sea conch, black mussels, and live oysters. Elevating the seafood experience further is the Seafood Live Station, which serves Steamed Whole Mud Crab with Chinese Herbs in Lotus Leaf.

IMG_2556
Apple Strudel 4/5

IMG_2560
Assortment of Tarts and French Pastries 4.5/5

Desserts are aplenty, including a new live station serving Crêpes Suzette with Grand Marnier sauce and sliced oranges, a Chocolate fountain with an array of condiments, and an assortment of tarts and French pastries. But my favourite was the Apple Strudel, featuring a deliciously thin, flaky crust encasing tender apple chunks.
