Kaya @ The Standard - Weekend Brunch Showcasing Its Signature Japanese-Fusion Flair Every Saturday

IMG_1921

Every Saturday, Kaya at The Standard presents a Weekend Brunch that reflects the restaurant’s signature Japanese-fusion flair. The menu features an à la carte free-flow selection of hot and cold appetisers, small bites, mains, and desserts. The brunch experience includes a free flow of non-alcoholic beverages, with the option to upgrade to premium packages that include alcoholic drinks.

The Standard Tray

To start, we were first served The Standard Tray, alongside our drink orders. This was perfect for tempering the usual morning hunger while waiting for the rest of the food to arrive. The tray comprises four items from the menu across the cold, hot bites, and sando categories, prepping our appetite with Chicken Karaage, Tamago Sando, Apple Sesame Salad, and Assorted Sashimi.

IMG_1867
Chicken Karaage 4.8/5

The hot morsels of Chicken Karaage were juicy and moreish with a golden crust. I appreciated the bite-sized portions, which worked better than the usual large and chunky pieces.

IMG_1870
Sashimi 4/5

IMG_1930
Apple Salad 4.5/5

Balancing the tray were the fresh chilled Sashimi and the refreshing Apple Sesame Salad.

IMG_1932
Daikon Slaw 5/5

From the cold selection, I was also delighted to find Daikon Slaw, one of my favourite items from their regular menu during my last visit.

IMG_1871
Tamago Sando 3/5

IMG_1955
Unagi Sando 3.5/5

As for the sando, while the tamago filling was delectable, softer white sandwich bread might have improved the overall texture and taste. There is also an Unagi Sando option, which delivers a much more savoury, meatier bite.

IMG_1942
Tacos 3.5/5

The tacos were visually exciting with their colourful presentation. Among the three options — Teriyaki Cured Salmon Taco, Spicy Beef Taco, and Salada Taco, the Spicy Beef Taco was the most satisfying, with hearty beef slices delivering a punch of flavour. The salmon taco, however, turned out a little bland, while the Salada Taco, though enjoyable with avocado, felt slightly underwhelming as a taco.

IMG_1902
Konabe Udon 4/5

For mains, the Konabe Udon was simple yet comforting.

IMG_1908(1)
Kamo Katsu with Curry Hollandaise Don 3/5

IMG_1917
Pork Belly Char Siu Don 3/5

The Kamo Katsu with Curry Hollandaise Don featured a crispy duck cutlet, and the curry hollandaise was rich with umami, flavouring the dish beautifully. It was a pity that the duck itself was a tad dry. The same could be said for the Pork Belly Char Siu Don, where the char siu was not as unctuous as I had expected.

IMG_1961
Desserts 3.8/5

Desserts were delightful. The Sakura & Coconut Panna Cotta and Coffee Jelly Shooter were both pleasing, with the latter delivering a pleasant bittersweet note. The Matcha Lemon Tart impressed with its thin, buttery crust, which complemented the tart’s bright, lemony, and earthy matcha flavours.

While there were hits and misses, the cosy ambience of Kaya at The Standard nonetheless makes the brunch format well-suited for a relaxed weekend catch-up with friends and loved ones. The Weekend Brunch is available only on Saturdays from 12 noon to 3pm, with options starting at $78 per person.

Kaya @ The Standard Singapore - A Bold New Take of Japanese Izakaya

Kaya26

Kaya at The Standard Singapore is a relatively new addition, opening in December 2024. The menu offers sharing plates inspired by familiar Japanese flavours with a fresh, inventive twist — mirrored by the equally creative cocktails from Kaya Bar.

Kaya16
Daikon Slaw 5/5

To begin with, both starters — the Daikon Slaw ($14) and It Is What It Is ($26) — were excellent. The Daikon Slaw delivered the perfect crunch, thanks to the way the white daikon was sliced into bean sprout-like strips and then tossed with charred corn and cucumber slices. A generous heap of crispy onions and ginger added a savoury warmth that balanced the freshness of the dish. Lightly coated in dressing, every bite celebrated the simplicity and quality of the ingredients.

Kaya9
It Is What It Is 5/5

It Is What It Is was a beautifully plated presentation of seasonal sashimi, dressed in a tangy wasabi vinaigrette and topped with dashi jelly and olive dust. The vinaigrette was vibrant and addictive, delivering a mustardy sharpness that enhanced the delicate flavours of the fish. A sprinkle of mustard cress echoed the wasabi notes, while the olive dust — presumably made from dehydrated olives — added a salty umami depth reminiscent of shoyu.

Kaya20
Nikujaga 5/5

For mains, the Nikujaga ($39) impressed me with its twice-cooked short rib, which had a buttery mouthfeel and a robust beefy flavour. An umami-sweet nikutare, shio kombu, and katsuobushi elevated this richness. Pickled shimeji mushrooms added just the right acidity to cut through the fattiness of the meat.

Kaya29
Kani Meshi Nabe 3.8/5

The Kani Meshi Nabe ($65) offered an interesting take on Japanese claypot rice, combining elements of Kani Meshi and Kani Nabe. Served tableside with a drizzle of uni crème mixed into slightly scorched rice, the dish brought together sweet, oceany, and briny notes from the snow crab, ikura, and uni. While the flavours were spot on, I would have preferred the rice to be firmer and less wet, better to emulate the texture of traditional claypot rice.

Kaya33
Sweet Potato Mont Blanc 4/5

Dessert was a tough choice, with every option looking equally tempting. I settled on the Sweet Potato Mont Blanc ($16), which featured a trio of Japanese sweet potatoes: velvety purple potato purée, yellow sweet potato crisps, and savoury-sweet orange sweet potato dust, served together with nutty pistachio sponge and candied chestnuts. I loved the interplay of textures and the depth of flavour, though I felt the generous amount of sweet potato purée could have been better balanced with a bit more of the pistachio sponge.

Kaya24
Niji Negroni

From Kaya Bar, the meal was completed with the Niji Negroni — a vibrant concoction of Sakura tea–infused Roku Gin, Discarded Cascara Sweet Vermouth, yuzu umeshu, barrel-aged Campari, and yuzu bitters, served in a glass rimmed with zero-waste lemongrass powder.

MinJiangJul24-7
Uni & Jamón Ibérico 4.8/5

We kicked off the dinner with a bowl of golden soup, A Sea of Treasures, by Chef Sam Leong. This dish, featuring Abalone, Sea Cucumber, and Wild-caught Eel Maw in Golden Organic Pumpkin Broth paired with Uni & Jamón Ibérico, was a luxurious delight. The pumpkin broth's collagen-rich consistency, with its natural sweetness, complemented the delicacies excellently. A dollop of red vinegar enhanced the overall experience, adding a tangy depth to the broth.

MinJiangJul24-10
King Crabmeat in Light Curry Sauce with Seasonal White Asparagus 4/5

Chef Forest Leong brought a touch of Thai influence with The Ocean's Embrace, a dish comprising King Crabmeat in Light Curry Sauce with Seasonal White Asparagus. This dish skillfully merged her Thai heritage with contemporary French elements. The depth and savoury, spicy kick of the king crabmeat curry complemented the springy white asparagus perfectly, making this dish a standout.

MinJiangJul24-13
Slow-braised ‘Live’ South African Abalone 4/5

Simply executed to highlight the prized ingredient, A Dream So Deep featured South African Abalone slow-braised for two hours in a full-bodied concoction of abalone jus. Paired with lightly fried okra for extra textural contrast, this dish was a sublime testament to the beauty of simplicity in showcasing premium ingredients.

MinJiangJul24-16
Typhoon Shelter Turbot Fish Fillet and Soft-shell Crab 4.2/5

The Perfect Calm featured Turbot Fish and Soft-shell Crab done in typhoon shelter-style. A fragrant medley of breadcrumbs, scallions, garlic, curry leaf, dried chillies, and dried shrimp, expertly stir-fried to bring out the aromas, added depth and complexity to the dish. Each bite promised a satisfying explosion of textures and flavours, with a hint of spice that left us craving more.

MinJiangJul24-19
Slow-braised Wagyu Beef Cheek with Japanese Daikon 4.5/5

From the Prairies to Harmony showcased an innovative creation that seamlessly combined traditional Chinese culinary techniques with subtle Japanese flair. The tender Beef Cheek, slow-braised and paired with juicy Japanese Daikon, soaked up the delicate beef broth beautifully, making for a harmonious and flavourful dish.

MinJiangJul24-23
Barley Pearl Congee with Handmade Shrimp Balls and Dried Scallops 4.2/5

Chef Sam Leong's Smooth as Silk was a silky smooth Congee with celtuce, barley, and handmade shrimp balls cooked in a heady, opaque chicken broth. Topped with crispy dried scallops and served with salted egg salmon skin, this dish offered an irresistible crunch and was a comforting, umami-rich delight.

MinJiangJul24-26
Crispy Crepes, Meringue and Gold Laced Threads with Assorted Berries Gelato 4/5

We wrapped up the dinner with Chef Forest Leong's dessert creation, Playground in My Mind. This deconstructed version of Khanom Bueang, a traditional Thai street snack, was a visual and culinary treat. Topped with a sprinkle of crumble, fresh strawberries, and blueberries and finished with a scoop of assorted berries ice cream, this dessert was a delightful end to a remarkable dining experience.
