CUDO @ Stanley Street - Modern Comfort Food with Latin Soul

Located along Stanley Street, CUDO is the latest bold concept by the team behind Siri House and Moxie. Rooted in the spirit of modern Latin American cuisine, CUDO draws on bold, comforting flavours reimagined through a contemporary lens. With Chef Steve at the helm, the menu offers a vibrant medley of dishes inspired by his culinary travels and nostalgic eats, all given a fresh, creative twist.

We began our dinner on a high note with the Torched Truffadito ($25). This refreshing small plate features thick slices of Japanese yellowtail, macerated in soy sauce and gently torched for a touch of smokiness. Finished with chipotle aioli, pickled cucumber, and radish, the dish is a beautiful balance of freshness, savoury, and zesty crunch.

Warm Crab Queso 4.2/5

The Warm Crab Queso ($18) is CUDO's take on a classic cheese dip, elevated with luxurious touches. The dip combines cream cheese, ricotta, sour cream, smoked mozzarella, and chilli cheddar, infused with Worcestershire, Tabasco, and white onion confit. Sakura ebi oil and crispy ebi add an umami punch, while zucchini and lump crab bring freshness and texture. It is perfect when scooped up with the accompanying fried tortillas.

A vegetarian delight, the Calabaza ($12) spotlights roasted Japanese pumpkin with a smoky chipotle aioli spiked with yuzu kosho. The sweetness of the pumpkin is complemented by pomegranate molasses, salty cotija cheese, and pistachio dust, which is a creative and flavour-packed small plate.

Inspired by Chef Steve's time in Staten Island, the Disco Fries ($16) are indulgent, satisfying, and utterly addictive. Crisp fries are blanketed in mozzarella and cotija cheese, drenched in a beef jus-based brown gravy, and tossed with chorizo, pickled onions, and salsa Rosada. It's a glorious mash-up of American diner nostalgia with Latin vibrancy.

Chipotle Butter Prawns 4.2/5

The Chipotle Butter Prawns ($18) bring the heat and depth of flavour. Tiger prawns are rubbed with chipotle, roasted, and glazed with agave molasses before being finished with a torch. Served with house pesto and lime, each bite is smoky, sweet, and savoury with a zesty lift.

The Grilled Seabass Fillet ($33) was beautifully plated with parsley-lime sauce and pineapple salsa, but the over-charred skin was slightly too bitter, distracting from the fish's freshness. While the flavour elements were sound, the execution slightly fell short of the mark.

One of the showstoppers of the evening, the Spaghetti Con Camarones ($38), features squid ink pasta tossed in a luxurious Ancho bisque and topped with grilled tiger prawns. The sauce, made from sundried tomatoes, capers, white wine, ancho chilli paste, and seafood stock, packs rich, crustacean flavours balanced with tang and spice. Finished with chipotle oil, it's a must-order.

Coconut Tres Leches 4.2/5

Light yet indulgent, the Coconut Tres Leches ($14) delivers a tropical spin on the classic dessert. The housemade sponge is soaked in coconut milk, vanilla, and condensed milk, then sprayed with white rum and topped with coconut cream, toasted coconut flakes, and berry compote, making for a refreshingly sweet end to the meal.

For chocolate lovers, the Chocolate Tart ($16) hits the spot. A silky chocolate mousse ganache is encased in a tart shell and garnished with cocoa pearls, housemade chilli jam, and candied nuts, creating layers of richness with a slight kick.

The Toffee Plantain ($15) is a decadent finale, combining a moist plantain-banana sponge with banana mousse, vanilla ice cream, and caramelised plantain. The orange zest adds a lovely citrusy lift, rounding off a dessert that’s both comforting and refined.

CUDO impresses with its thoughtful reinterpretation of Latin American dishes, presented with flair and rooted in comfort. From inventive appetisers to bold mains and delightful desserts, it’s a welcome addition to Singapore’s modern dining scene.

To mark its first anniversary, Chef X at Clarke Quay welcomes a fresh new residency by MasterChef Singapore alumni Chef Nicholas Koh and Chef Leon Lim, the dynamic duo behind Kaya Rebel. Running from 3 June to 26 July 2025, the residency showcases their creative reimagination of kaya, Singapore’s beloved coconut jam. In addition, to celebrate the milestone, Kaya Rebel has teamed up with renowned food personality Maureen Ow (@MissTamChiak) to launch an exclusive Mango Kaya flavour and dish, available from 9 June to 5 July 2025.

A more creative twist might elevate its value.

Kaya Rebel at Chef X delivers a commendable effort in reimagining kaya beyond tradition. While some dishes are more conceptual than essential, the innovation and passion behind the residency shine through. Whether you're a kaya purist or curious to explore its modern interpretations, this residency is worth a visit—especially for the limited-edition Mango Kaya creations.

Their Franco-Asian experience celebrates seasonal produce through a 10-dish sharing menu, priced at $68.80++ per adult and $38++ per child (6–10 years). To elevate your brunch, top up for Freshly Shucked Oysters ($30++ for 6) from their mobile oyster cart, featuring Boutrais La Sentinelle from Ireland and Amelie Super Spéciale from France.

Bread & Dips

The Bread & Dips was simple yet delicious, comprising sourdough, brioche, and baguette paired with strawberry jam, smashed avocado, and a standout umami butter rich with kombu. The butter was so addictive that I was tempted to take home a jar with me (they are available for sale). The smashed avocado, accompanied by a generous drizzle of olive oil, was perfect with the bread as well.

Salade

Next was a refreshing Salade of crunchy haricot vert beans, strawberries, brillat-savarin cheese, and hazelnuts, brightened with a tangy honey mustard dressing.

Cold Cuts

The Cold Cuts Platter featured an assortment of pork and chicken liver pâté, salmon rillettes, Parma ham, and hot-smoked mackerel, served with breadsticks, pickled mushrooms, pearl onions, cornichons, Pommery mustard, and cornichons. If the breadsticks are insufficient for you, you can request more bread to pair.

Caviar

The Caviar arrived next, accompanied by thin homemade potato chips paired with a sour cream dip featuring egg, chives, and caviar. It was lighter than we expected, and we wished there was a touch bit more salt for better balance.

Tartare

For Tartare, we had slices of hay-smoked hamachi crudo paired with zesty grapefruit and orange. The balance of citrus and smokiness worked well.

Seasonal Roasted Mushrooms

We were excited to learn that the restaurant collaborates with local farmers every month to offer a curated selection of seasonal dishes. During our visit, we had Seasonal Roasted Mushrooms - incredibly fresh and lightly dressed, allowing the natural, earthy flavours to come through.

For the next Egg dish, diners will be presented with Scrambled Eggs topped with thinly shaved winter black truffle. It was a pity that this was a touch dry for us.

Signature Meat

We moved on to the Signature Meat: a Crispy Chicken Leg with tender meat finished with a luscious sauce suprême. This was one of our stars of the brunch.

Chef’s Special

The Chef's Special featured the Barramundi Ala Meuniere sat atop brown butter, with capers, herbs and citrus.

Before moving on to the final sweet, it's worth noting that second helpings of dishes are also available, specifically the Bread & Dips, Caviar, Tartare, and Signature Meat.

Dessert

Dessert paled slightly in comparison to the savouries even though it was served nicely warm, as their Blueberry Tart with Rhubarb Jam came with a softer crust than we’d prefer.

Returning fans can look forward to a revamped menu of artisanal drinks and desserts. To celebrate, there's a 1-for-1 promo on their new hot flavoured lattes on 9 and 10 June, limited to the first 50 guests daily. Adding to the experience is Hvala's latest team member - Bob, a robotic arm dedicated to supporting whisking matcha.

We started with the Matcha Kinako ($7.80 hot, $8.80 iced), which impressed us with its nutty and earthy balance. It is a surprisingly harmonious blend.

Strawberry Matcha 4.2/5

Next was the Strawberry Matcha ($7.80 hot, $8.80 iced), which we had heard good things about even before our visit. This version stood out for its natural strawberry chunks and well-balanced flavour, though a tad sweet at the end. We'd gladly order it again with less sugar.

Matcha Mochi Harmony 3.5/5

A recent social media darling is the Matcha Mochi Harmony ($9.90). It combines a base of "liquid mochi" with kuromitsu and honey mochi cubes, Hvala's signature M1 matcha gelato and a fresh Tsuki matcha shot.

Texture-wise, the mochi cubes were more like slightly harder jellies, while the 'liquid mochi' was the oozy sort. While creative, the components didn't quite gel, and we found it overly sweet. If you're looking for a vegan option, inform the friendly servers, and they will swap the honey mochi cubes for the kuromitsu ones.

Matcha Petit 3.8/5

The Matcha Petit ($10.90) layered chantilly, nama chocolate, mousse, sponge, and pistachio feuilletine. We wished there was more of a crunch for that textural contrast and for the pistachio notes to come out stronger.

Matcha Hojicha Tart 4.2/5

Our favourite of the day, the Matcha Hojicha Tart ($10.90), featured a crisp shell filled with intense matcha-hojicha ganache and chewy mochi pieces. The mochi here was a much better fit, and its textures and sweetness were on point.

The Hojicha Choux Puff ($7.50) came with a hojicha mascarpone filling and a tea-infused shell. Though the filling was slightly lighter than expected, it was still enjoyable.

Shiro Matcha Yuzu Basque Cheesecake 4/5

We concluded with the Shiro Matcha Yuzu Basque Cheesecake ($10.90), which featured a rich matcha base accented by a zesty yuzu flavour. While I'd prefer a smoother texture to the cheesecake, it was a satisfying piece that was best for sharing.
