Toku Nori @ Boat Quay - Affordable Sushi Omakase & Handrolls In A Chic Speakeasy Setting

Toku Nori, the contemporary Japanese handroll bar known for its sleek “New York speakeasy” vibe, has opened its second outlet at Boat Quay. Two years after its successful debut in Telok Ayer, the brand returns with a refreshed concept, introducing its first-ever sushi omakase experience paired with sake, while keeping its hallmark of accessible yet premium offerings. We visited the new outlet to check out both the Jyosen Sushi Set ($38) and the Tokusen Sushi Set ($48), along with a few à la carte items.

Both sets begin with a comforting bowl of Miso Soup, which was light and adequately savoury, though lacking a deeper umami punch. A highlight early on was the Hotate Sushi. The plump, sweet scallop was elevated with a delicate combination of yuzu kosho, jelly and chopped chives. The citrusy heat from the yuzu kosho cut through the scallop’s natural sweetness beautifully, while the jelly added a subtle layer of texture and refinement.

Next, the Hamachi Sushi (Jyosen Set) impressed with its clean, buttery profile. The addition of pickled onion and chive oil introduced brightness and a gentle aromatic lift, balancing the richness of the fish.

From the Tokusen Set, the Madai Sushi showcased a firmer texture with a naturally mild sweetness. Paired with shio konbu and ume, it delivered a nuanced flavour profile — savoury, slightly tangy, and deeply satisfying.

The progression continued with tuna selections. The Maguro Sushi (Jyosen Set) was topped with yuzu kizami and tsukudani, adding layers of citrusy brightness and umami depth to the lean tuna.

Meanwhile, the Chutoro Sushi (Tokusen Set) offered a richer, more indulgent bite. The fatty tuna melted in the mouth, complemented by konbu shoyu and red shiso, which enhanced its natural oils without overpowering the fish.

Aka Ebi Sushi 4.2/5

The Salmon Sushi leaned towards a bold and indulgent flavour profile. Topped with mentaiko and ikura, each bite was rich, creamy and bursting with umami. It is a crowd-pleasing combination that amplifies the salmon’s natural fattiness.

Even more luxurious was the Aka Ebi Sushi. The sweet shrimp was paired with black caviar and uni, resulting in an explosion of oceanic flavours. The brininess of the caviar and the creaminess of the uni elevated the delicate sweetness of the ebi, making it one of the standout pieces of the meal.

Foie Gras Sushi 3/5

Closing the sushi course, the Anago Sushi delivered a comforting finish with its soft, fluffy texture and sweet anago tare glaze.

The Foie Gras Sushi offered a modern, fusion twist. While the foie gras was rich and decadent, the combination with goshiki arare added a contrasting crunch. However, the overall execution felt slightly heavy, lacking the balance seen in earlier courses.

Both sets concluded with a Mini Chirashi Don. While it provided a satisfying end to the meal, the flavours were relatively straightforward compared to the preceding sushi courses.

Truffle Scallop Somen 3/5

The Truffle Scallop Somen ($16) featured a light and refreshing combination of somen noodles, scallop, ikura and chives in a truffle shoyu base. While the dish was well-balanced, the truffle flavour was rather subtle and could have been more pronounced to elevate the overall experience.

The Red Crab Crispy Sushi ($18 for 3 pcs) stood out for its textural contrast. The crispy sushi rice base provided a satisfying crunch, while the sweet and creamy deep-sea red crab topping, accented with caviar and chives, delivered a luxurious finish.

The Maguro Poppers ($15 for 3 pc) were playful, bite-sized delights. Encased in a crisp nori shell, the tuna tartare and edamame filling was fresh and flavourful, while the ikura topping added bursts of briny umami.

The Matcha Latte used ceremonial-grade Tsuki matcha, resulting in a smooth, earthy drink with a pleasant bitterness and creamy finish.

Warabi Mochi Trio 4/5

Ending on a sweet note, the Warabi Mochi Trio ($12) came in kinako, goma and matcha flavours. Each piece was soft, delicate and pleasantly chewy, offering a light yet satisfying dessert to round off the meal.

Toku Nori’s new Boat Quay outlet successfully builds on its original concept, offering a more refined dining experience with its sushi omakase sets while maintaining approachable pricing. The sushi courses showcase thoughtful flavour pairings and quality ingredients, with standout items such as Aka Ebi Sushi and Hotate Sushi. While a few dishes could benefit from stronger flavour definition, the overall experience remains enjoyable — especially for those seeking a stylish yet accessible introduction to omakase-style dining in Singapore.

Hvala @ TripleOne Somerset - Celebrate 10th Anniversary with A refresh Look, and 1-For-1 Promo on 9 and 10 June 2025

Hvala at TripleOne Somerset officially reopens on 9 June 2025, unveiling a refreshed look to mark its 10th anniversary. The space now features a fun new colour palette, merging Hvala's iconic zen minimalism with modern touches.

Returning fans can look forward to a revamped menu of artisanal drinks and desserts. To celebrate, there's a 1-for-1 promo on their new hot flavoured lattes on 9 and 10 June, limited to the first 50 guests daily. Iced versions, extra toppings, and milk alternatives are available at additional cost.

Adding to the experience is Hvala's latest team member - Bob, a robotic arm dedicated to supporting whisking matcha.

The lineup of new handcrafted beverages is extensive, including both Flavoured Tea Lattes and Brewed Tea Lattes. Highlights include the Bluepea Matcha Latte, Floral Matcha Sakura Latte, and Pine Smoked Black Tea.

We started with the Matcha Kinako ($7.80 hot, $8.80 iced), which impressed us with its nutty and earthy balance. It is a surprisingly harmonious blend.

Strawberry Matcha 4.2/5

Next was the Strawberry Matcha ($7.80 hot, $8.80 iced), which we had heard good things about even before our visit. This version stood out for its natural strawberry chunks and well-balanced flavour, though a tad sweet at the end. We'd gladly order it again with less sugar.

Matcha Mochi Harmony 3.5/5

A recent social media darling is the Matcha Mochi Harmony ($9.90). It combines a base of "liquid mochi" with kuromitsu and honey mochi cubes, Hvala's signature M1 matcha gelato and a fresh Tsuki matcha shot.

Texture-wise, the mochi cubes were more like slightly harder jellies, while the 'liquid mochi' was the oozy sort. While creative, the components didn't quite gel, and we found it overly sweet. If you're looking for a vegan option, inform the friendly servers, and they will swap the honey mochi cubes for the kuromitsu ones.

The Matcha Petit ($10.90) layered chantilly, nama chocolate, mousse, sponge, and pistachio feuilletine. We wished there was more of a crunch for that textural contrast and for the pistachio notes to come out stronger.

Our favourite of the day, the Matcha Hojicha Tart ($10.90), featured a crisp shell filled with intense matcha-hojicha ganache and chewy mochi pieces. The mochi here was a much better fit, and its textures and sweetness were on point.

The Hojicha Choux Puff ($7.50) came with a hojicha mascarpone filling and a tea-infused shell. Though the filling was slightly lighter than expected, it was still enjoyable.

Shiro Matcha Yuzu Basque Cheesecake 4/5

We concluded with the Shiro Matcha Yuzu Basque Cheesecake ($10.90), which featured a rich matcha base accented by a zesty yuzu flavour. While I'd prefer a smoother texture to the cheesecake, it was a satisfying piece that was best for sharing.

ToMo Cafe @ Upper Thomson - Popular Joo Chiat Cafe with Insta-Worthy Specialty Drinks Opens New Outlet in Upper Thomson

ToMo Cafe opened its third outlet at Upper Thomson on 8 October 2024, following its success in Joo Chiat and Neil Road with popular, Instagram-worthy drinks and hearty, Japanese-style food.

This new location will introduce outlet-exclusive dishes, including rice bowls and handcrafted burgers.

To celebrate its opening, the first 100 customers in October will receive a free cloud drink, with November offering free ‘chuffles’ to the first 100 diners. Both promotions are valid with any purchase made.

Iced Houjicha Goma Cloud Latte 4.2/5

From their list of speciality drinks, I was immediately attracted to the Iced Houjicha Goma Cloud Latte ($8), which combines a slightly nutty base of houjicha and a creamy, rich layer of black sesame cloud cream. I thoroughly enjoyed this combination, but it's best enjoyed quickly.

Iced Matcha Strawberry Cloud Latte 4/5

The Iced Matcha Strawberry Cloud Latte ($8) is another crowd favourite, combining matcha and a base of strawberry bits, topped with dairy-free strawberry cream. This was earthy and sweet. Other matcha options include the Iced Matcha Cloud Latte ($8) with sea salt dairy-free cream and the Kagoshima Matcha Latte ($7).

For a refreshing non-coffee option, try the sparkling Yuzuri Apple Fresca ($7), made with Aomori apple, yuzu, and cherry blossom extract.

Tako Karaage 4/5

Starting with the Tako Karaage ($12), we enjoyed crunchy, battered octopus chunks paired with a tangy yuzu kosho mayo. Though the chunks could be more evenly battered, we still found it pretty addictive. The substantial portion is also great for sharing.

Grilled Tiger Prawn Capellini 4/5

The cafe staff highly recommended the Grilled Tiger Prawn Capellini ($22). The hefty portion of capellini was tossed in a savoury mentaiko mayo sauce and topped with grilled prawns, ebiko and seaweed. I would recommend this as a sharing dish as the richness may get too heavy for one.

Fish and Chip Burger 3.5/5

The Fish and Chip Burger offered a crispy tempura dory fillet with sour cream tartar, lettuce, and tomato. Unfortunately, the shoestring fries were undercooked during our visit, but we understand it was an issue with the fryer, which will be quickly fixed.

Homemade Tiramisu 3.8/5

For sweets, we decided on ToMo's Homemade Tiramisu ($9), which has a jar of espresso-infused ladyfingers layered with homemade mascarpone cream. You can enhance it with a shot of Baileys or Kahlua for an extra $4.

We appreciated the openness of the kitchen staff to feedback and look forward to seeing improvements once the cafe officially opens its doors.

Eden Cafe @ Jurong Lake Garden (Chinese Garden) - A Beautiful Cafe Surround by Lush Greenery with Room for Improvement in its Food

During the Mid-Autumn Festival, I visited the Chinese Garden to soak in the festive atmosphere with the stunning lantern displays and the Cloud Pagoda light show. Amidst the scenic surroundings, I decided to check out the newly opened Eden Cafe, located just beside the Cloud Pagoda. The café, with its picturesque location, seemed like the perfect pit stop to unwind and escape the heat.

Ice White 4/5 and Matcha Latte 3.8/5

Given the sweltering afternoon heat, my companion and I opted to sit indoors in the air-conditioned section of the café, which was a welcomed relief from the sun. We ordered the Ice White ($7), which uses coffee beans from Dutch Colony, and a Matcha Latte ($7.50) for drinks. The coffee was smooth and balanced, with a satisfying hit of caffeine to refresh us for the rest of the day. Meanwhile, the matcha latte was decent, offering a slight bitterness from the matcha that contrasted nicely with the milk. However, it could have benefited from a richer, more robust matcha flavour.

Rendang Burger 3/5

For food, we started with the Rendang Burger ($20). The burger featured a juicy beef patty layered with rendang sauce, a fried egg, tomato, and arugula, all sandwiched between charcoal buns. The burger was served with a side of fries and achar, a nod to the local palate. Unfortunately, the rendang sauce didn't quite hit the mark for me. While the beef patty was cooked well, the rendang's flavour didn't complement it. The sauce lacked the rich, deep spiced profile typical of a good rendang, making the overall dish feel disjointed. Some tweaking could certainly improve the flavour harmony here.

Singaporean Har Cheong Gai Waffles 3/5

Next up was the Singaporean Har Cheong Gai Waffles ($22), which had potential but ultimately fell short. The Har Cheong Gai (prawn paste chicken) itself was excellent — juicy, flavourful, and fried to a crispy perfection. However, the waffles didn't hold up their end of the dish. They lacked the expected light, airy texture, and there was an absence of buttery flavour. A crisp exterior with a fluffy inside is what makes a great waffle, but here, they were somewhat flat and lacklustre, making it a disappointing pairing with the well-executed chicken.

While the ambience of Eden Cafe is undeniably beautiful, with its tranquil garden surroundings and cosy indoor setting, the food didn't quite live up to expectations. The Rendang Burger needed a more robust, more cohesive flavour profile, and the waffles in the Har Cheong Gai dish could benefit from a serious texture and flavour upgrade. That said, the drinks were refreshing and well-crafted, especially on a hot day.

Eden Cafe is still relatively new, and with some adjustments in the kitchen, it will have the potential to be a dining destination that matches the serene beauty of its location. For now, the café offers a nice respite for visitors exploring the Chinese Garden, but I hope to see some improvements in their menu to make it a spot truly worth visiting.
