The new brunch menu is no less impressive, with a variety of options to choose from from the small, large plates to larger dishes. Start with a light Cold-smoked Aoraki King Salmon ($22) served with creme fraiche, horseradish, and crunchy fermented cucumber to add a zestiness to the rich oak-smoked flavour of the fresh salmon.

Roasted Spencer Gulf Prawns 4.2/5

Next, indulge in the Roasted Spencer Gulf Prawns ($24). So fresh and sweet, it needs no further condiments to enhance its natural flavours. It is served with dollops of seaweed butter for a kick of umami richness, as well as a special lap cheong chilli jam to add a subtle tinge of spice to the juicy prawns.

Parmesan & Truffle Polenta 4.5/5

The Parmesan & Truffle Polenta ($18) was an absolute favourite, with plenty of truffle shavings, parmesan and shimeiji mushrooms on a smooth, creamy bed of polenta. Break into the Japanese free-range egg and mix in the yolk to meld all the ingredients in the dish together. Best enjoyed with the complimentary bread slices, which you can also use to mop up every last dollop of this goodness.

For something more substantial, opt for the large plates with meatier options such as the Miso-glazed Bangalow Pork Chop ($39) served with warm kimchi & potato, apple & cabbage slaw.

Slow & low Indian Spiced Lamb Shoulder 4/5

The Slow & low Indian Spiced Lamb Shoulder ($38) comes marinated in fragrant Indian spices which rendered it meltingly tender, and teams perfectly with the saffron fregola, rita and cucumber salad.

Grilled Local Chicken 'Inasal Style' 4.2/5

While the unanimous favourite around the table is the Grilled Local Chicken 'Inasal Style' ($36). The grilled chicken boasts an extremely tender texture and comes served with a side fragrant truffle fried rice, onsen egg and tomato salsa, adding a refreshing tang to the dish.

The Weekend Social menu also features a few larger dishes for diners of bigger group sizes. The highlight goes to the 400g Westholme Wagyu Rump Cap MBS 5 ($108). A thick cap of fat runs across the top, which gives a rich depth of flavour and succulence to the steak. It comes served with an umami mushroom ragout, thick, crispy hand-cut chips, Japanese free-range eggs, bearnaise and house ketchup.

The rest of the weekend brunch menu is a curated selection of raw dishes like oysters and wagyu beef tartare; different types of artisanal cheeses like the aged cheddar, brie au poivre and reblochon; as well as sweet treats such as the Pavlova with Vanilla Mascarpone and Balsamic Strawberry Compote ($14), House Coconut Sorbet ($14), and Banoffee Tart ($14)

My favourite goes to the Banoffee Tart ($14) with miso caramel, and chocolate & banana mousse encased in a cinnamon shortcrust, adorned with a dehydrated banana. From the saltiness of the miso caramel which balances perfectly with the slight sweetness of the chocolate banana mousse, to the buttery, crumbly crust, it is a well-crafted dessert to end your meal with on a sweet note.

15 Stamford by Alvin Leung @ The Capitol Kempinski Hotel Singapore - A Wood-Fired Steakhouse With Whole Giant Turbot

After the opening of the Forbidden Duck Singapore last year, Chef Alvin Leung has opened another new restaurant 15 Stamford by Alvin Leung at The Capitol Kempinski Hotel Singapore. The new restaurant focuses on wood and charcoal grill, a grill house that uses a fete of fine Asian flavours with its exquisite dry-aged beef and premium seafood.

Bluefin Tuna Tartare 4.2/5

Dinner at the beautiful restaurant started with the Bluefin Tuna Tartare ($18 for 3pc) served in a nori taco shell. The aroma from the seaweed definitely whetted up the appetite. The bluefin tuna cubes are tossed in housemade Gochujang sauce which enliven the flavour with a tad of spiciness.

Grilled Hokkaido Scallop 4/5

The plump and juicy Grilled Hokkaido Scallop ($12) is paired with soy garlic vinegar butter sauce and topped with deep fried shredded ginger. Have a squeeze of the calamansi to elevate the enjoyment.

Indonesian Spiced Roasted Bone Marrow 4/5

The highlight for the Indonesian Spiced Roasted Bone Marrow ($22) is actually the accompanying shallot marmalade (shallots reduced by red wine and zhenjiang vinegar). It is like icing on the cake. The bone marrow and ox tongue braised in beef jus, garlic and soya sauce, jump to live when eaten together with the shallots.

72 Hours US Bone-In Short Ribs Rendang 3.5/5

Sous vide for a good 72 hours to achieve the tender texture is the US Bone-In Short Ribs Rendang ($68). I find the rendang sauce slightly on the sweet side and lacked that rempah fragrant, taste more like a peanut sauce instead. On a side note, I enjoyed the pickled cabbage at the side to cut through those richness.

Chargrilled "Bak Kut Teh" Pork Chop 4/5

Marinated for 12 hours with over eight different Bak Kut Teh spices is the Chargrilled "Bak Kut Teh" Pork Chop ($38). The tender meat alone may not be able to highlight the characteristic of the local pork bone soup. Hence I would recommend having it together with the housemade barbecue sauce which has been infused with Bak Kut Teh herbs. It will taste closer and more familiar to the bak kut teh dish that we know.

"Har Mi" Linguine 4/5

The "Har Mi" Linguiine ($38) may looking assuming, like any other ordinary plate of pasta with grilled tiger prawns. Be surprised to be hit by a tsuami flavour of prawny robustness infused into the pasta. The pasta that has been cooked in prawn stock, and stir fried with ebiko, shrimp oil and shrimp floss.

Turbot 4.5/5

One of the my favourite dishes is the chargrilled whole Turbot ($120). Nothing fancy, just lightly seasoned with salt and chargrilled to bring out the natural sweetness of the white fish. It comes with lemon and 2 housemade sauces (Thai Salsa and Spicy Peppercorn Sauce).

Mashed Potatoes and Salted Fish 4.5/5

To complete your meal, you may want to order some sides to go along such as Grilled Eggplant ($12) and 50-40-10 Mashed Potatoes and Salted Fish ($12). The mash potatoes is to die for. It uses a ratio of 50% potatoes, 40% butter and 10% salted fish. The addition of salted fish is like bacon on baked potatoe for the smooth and creamy mash potatoes, providing the addition texture and flavour.

Grilled Eggplant 4/5

The Mango Pomelo Sago with Coconut Snow ($16) is an elevated inspiration of the local "Ice Kachang" with the crowning of nitrogen coconut ice for a dramatic entry.

Besides the grilled items on the menu, 15 Stamford also offers some local renditions such as laksa and chicken rice. Unfortunately the local favourites in my opinion is quite expensive considering there are many options around the vicinity. I would recommend the grilled item instead, especially their steaks and turbot.

Folklore @ Destination Singapore - Have A Jolly Heritage Eurasian Christmas At Folklore

For the festive season from 14 to 31 December 2018, Folklore will be introducing lesser known heritage dishes from Chef Damian's grandfather's repertoire, as well as well received festive dishes from past celebratory menus.

Dry Curry Mutton 4/5

I have a weak spot for curry mutton and I love the rendition of the Dry Curry Mutton ($42) prepared Indian-style at Folklore. Cooked in a blend of dry and wet spices, the meat though a bit tough, is well infused with the spices' aroma. It's hard not to ask for a plate of steamed rice to soak up that delicious gravy.

White Debal 4/5

The White Debal ($42) is Chef Damian's family rendition of the curry devil, traditionally served on boxing day which are cooked with the leftover meat and vegetables. Over at Folklore, the white debal comes with tender chicken pieces and housemade achar cooked in rempah, vinegar and mustard seeds.

Feng 4.5/5

Making a come back on the festive menu is Feng ($30). It is a traditional European curry dish created during the sea expedition days of the Portuguese, which is original known as Sarpotel in Goa. The dish is further localised as it travelled south towards Malacca. Requiring 2 days to prepared and cok the dish, Feng is assortment of pig's offal cooked in a blend of 18 spices. It may sounds acquire for some diners but this is absolutely delicious. Unknowingly I was going back for more, having it like a snack.

Beef Brisket Semur 4/5

The Beef Brisket Semur ($28) is another beautiful dish with fall of the bone meat in a rich and flavourful stew. I simply ditched my table etiquette and pick the bone up for a finger licking good meal.

Vindaloo 4.8/5

The Vindaloo ($35) is a dish originated from Goa. Chef Damian replaces the pork ribs with bone-in pork chops, just like how his grandfather did it. The pork chop is rubbed with cumin and mustard seeds and set aside to dry. It is then cooked in a blend of vinegar, garlic, ginger, tumeric, dry chillies and brandy. This is the best pork chop I have eaten and definitely the favourite among the group.

Bolu Cocu 3.5/5

The Bolu Cocu ($8 per slice) is a rare Eurasian dessert. It is a traditional coconut cake made in a brass mold. No oil or butter is used, the oil is from the coconut itself. I find the texture quite similar to the Chinese "Huat Kueh'.

Sugee Cake 3.8/5

Last but not least we end our meal with the Sugee Cake ($10 for 3pc). The buttery and nutty cake comes with a hint of brandy sweetness which is brushed onto the cake, everyday for a week. Having tried Lynnette's Seah's sugee cake, Chef Damian's version is still not moist enough compared to hers.

Folklore's Christmas menu will be available for lunch and dinner from 14 December to 31 December. Festive meal takeaways are available with an advance booking of 5 working days (last day to order is 25 December). Takeaways are available for all items except Eurasian Christmas Pie and Bolu Cocu.

Maggie Joan's Dining & Bar celebrates its third anniversary with a new chef on board, revamped menus and refreshed interiors. Chef Seumas Smith is actually not new. He is the former head chef at Moosehead, sister restaurant of Maggie Joan's. Taken the role of Group Executive Chef, he now fronts the kitchen at Maggie Joan's.

House-baked Sourdough with Smoked Beef Fat Butter 4/5

Dinner started with some warm House-baked Sourdough ($4). Besides the fluffy bread and delightful crust, what I adore is the smoked beef fat butter that goes so well with it.

Shiso Tempura 3/5

Light and crispy is the Shiso Tempura ($3 each). The fresh shiso leaf is coated with a light tempura batter and deep fried. The dollops of taramasalata is a blend of mentaiko, sourdough bread, garlic, olive oil and lemon juice, that adds colours (flavours) to the dish.

Burrata 3.5/5

This is probably the most beautiful plated Burrata ($21) I have eaten. It comes with garden peas, sugar snap peas, preserved lemon, olive oil, breadcrumbs, pea shoots and garlic flowers. The combination works for me, brightening the enjoyment of the burrata. However I find the burrata not as creamy as those I have eaten.

Hamachi Crudo 4/5

Swimming in a pool of almond sauce is the Hamachi Crudo ($17). It is topped with pickled wakame, edamame, mint leaves and trout roe. Unfortunately I felt it lacked something zesty to liven up the dish, for the fish to come alive.

Beetroot 3.5/5

The Beetroot ($17) is done two ways - barbecued in charcoal oven and pickled in a solution of red wine vinegar. wine and sugar. The burnt honey dressing helps to balance the earthy taste of the beetroot while I like how the candied walnut provides the needed boost in texture and flavours.

Barramundi 4/5

The Barramundi ($34) is pan seared until the skin is crispy and paired with a creamy parsley nage sauce. You can also find mussels swimming in the pool of cream sauce. What interests me is the sauteed cavelo nero in olive oil, I seldom gets to eat this variety of kale in my dishes.

Spiced Lamb 4.5/5

My favourite dish for the dinner goes to the Spiced Lamb ($44). The lamb loin is rubbed with a spice mix of toasted and ground sumac, cumin and dried coriander. This really perfumed the tender piece of lamb is beautifully melded with the aroma of the spices, making me drool even before it reached my mouth.

Roasted Carrots 4.2/5

This is probably the most delicious carrot I have eaten. The carrots have been confit in butter before being grilled in charcoal oven. This results in the Roasted Carrots ($10) having a delightful texture with a hint of smokiness, on top of its sweetness.

Duroc Pork Chop 4.5/5

Sourced from a boutique farm in Spain, the Duroc Pork Chop ($42) comes from pigs that are fed on olives. The meat is tender with good fat marbling. The chef even added pork crackling for that extra textural enjoyment.

The sight of the dessert - Blackberries, Yogurt, Sorbet & Shiso ($12) did not appeal to me. I thought the dish looks messy. You really can't judge a book by its cover, the dessert turns up surprisingly good with the different components coming together, striking a balance for a sweet finish. The Coconut Panna Cotta ($12) on the other hand is a light and refreshing dessert to end the dinner.

Diners at Maggie Joan's will get a complimentary Petit Fours at the end of the meal. Comes its a metal tin, diners will find Salted Caramel Chocolate Sable in it. This is really yummy.

While the new savoury dishes at Maggie Joan's has been rejuvenated with  a new chef on board what caught my attention is the dessert menu. Having dine here a few times, I noticed the vast improvement in the dessert. I was right when I checked with the restaurant, they have a new pastry chef on board.

Pig N Whistle Bistro & Bar @ Hexacube (Changi Road) - Great British Fare And Quality British Craft Beers & Ciders In The Heartland

Pig N Whistle recently opened at Hexacube, which is just around 5 minutes walk from Eunos MRT. It is really a nice place for you to have a drink at the bar and indulge in some delicious food at the same time. Even though there is no service charge here, the customer service is prompt, warm and friendly.

First of, the drinks serve here are really unique as they aren’t the typical beers or ciders that bars in Singapore serve. We are recommended the bottle ciders which was purely made out of apple juice and alcohol, no sugar is added. Ciders like Somersby usually has sugar added, and here at Pig N Whistle, they want it to be all natural for health reasons.

As I’m a sweet person, I would recommend the Sheppy’s Cloudy Cider ($12) with ribena (only upon request at the bar) or even the Sheppy’s Raspberry Cider, in which they add real raspberry juice in the drink. Another drink you should give a go is their Caramel Vodka ($10) which they make in-house by mixing salted caramel and vodka for 10 days. You’ll never get something like this elsewhere.

For burgers, they had a vegan option called the Vegan Burger ($16.90) which uses yellow beans, capsicum, spanish onions, swiss brown mushrooms, carrot and herbs in their patty. As you can tell, a lot of effort goes into making this burger an unforgettable experience for those who give it a go.

The Fish & Chips ($15.90) here has a really crispy and flavourful house made beer batter that has its own British twist. Something else that is really unique is the mushy peas at the side that is served in English cuisines. It is boiled till the skins fall out and then mashed to a certain consistency before being served.

Pork Chop 4.5/5

The star for me was the Pork Chop ($18.90) and I loved how they use free range pigs that have 10,000 acres to roam. It is well seasoned and served with a side of British gravy that I would die for. The British gravy also goes very well with the creamy mash potatoes.

Full Monty 4/5

If you’re planning to visit this place on weekends, you’ll love the Full Monty ($18.50) here which consisted of 2 eggs, 2 bacons, 2 sausages, 2 hash browns, black pudding, mushrooms, beans, and bread/toast. The fat and juicy sausages are made of 70% pork meat, 30% fat and 3 secret spices. It will have you wanting more of it with that robust flavours. You might also be wondering what is the black pudding? It’s actually an English name for blood sausage which had an acquired taste. If you think this portion is too much for you, they can have a Half Monty ($14.50).

Under the snack section, there is the Burrito ($12.90). Honestly, it’s a full meal itself at 12-inch. It is stuffed with egg, bacon, potato, cheddar cheese, capsicum, lettuce, tomato, onion and a chili salsa, finished with a nicely grilled tortilla. The chili salsa was pretty spicy for me as I can’t really take spicy food but you might love this salsa as it is house-made too. Plus, for the size, it is super value for money.

If you come at Happy Hours, the House Wines & Spirits are 15% off and Snacks are 10% off. The Happy Hours are Saturday and Sunday,12pm to 7pm, and Monday to Friday, 5pm-8pm.
