The Chairman’s Lounge @ Pan Pacific Orchard - An Exclusive Private Dining Space Headed by Veteran Chef Leung Wing Cheung

IMG_0787

The Chairman's Lounge is Pan Pacific Orchard's new private dining space, an exclusive enclave accommodating up to 16 guests. With full-length glass panels offering a view of the serene Forest Terrace, this venue provides a unique dining experience. Headed by veteran Chef Leung Wing Cheung, formerly the Executive Chef of Si Chuan Dou Hua, The Chairman's Lounge presents a series of festive menus to celebrate the Year of the Dragon, available from 22 January to 24 February 2024.

IMG_0791
Prosperity Exotic Garden Yusheng 5/5

The Prosperity Reunion Set Menu commences with the signature Prosperity Exotic Garden Yusheng featuring lobster and a wholesome medley of 20 fresh vegetables and fruits, including green and red lettuce, beetroot, turnip, soybean sprouts, cucumber, carrot, mango, and more. The toppings encompass whisky-infused sea cucumber, pistachio, dried pineapple, dried strawberry, and crispy brown rice for added texture and flavour. These elements are harmonized with a chef-made osmanthus sauce and layered with a unique black truffle sauce enriched with Japanese matsutake mushrooms.

IMG_0799
Cantonese Double-Boiled Supreme Soup 4/5

Next, we had an equally nourishing Cantonese Double-Boiled Supreme Soup, slow-cooked with ingredients such as fish maw, sea cucumber and fresh crab claw.

IMG_0811
Pan-Seared Dried Oyster With Duet Of Traditional Crispy Chicken 4/5

An interesting creation is this Pan-Seared Dried Oyster With Duet Of Traditional Crispy Chicken, chef's rendition of the Lor Mai Gai. Enveloping the glutinous rice with a rich foie gras centre is a layer of crisped chicken skin. I appreciate the subtle use of a small piece of foie gras to impart its richness to the dish. The dish is finished with a plump, pan-seared dried oyster to enhance the flavour.

IMG_0819
Giant Soon Hock 5/5

Giant Soon Hock, prepared in two ways, was a joy to savour upon given the varied flavours and plump texture of the fish - steamed fish head & belly with tofu and preserved vegetables and "Shun De" style deep-fried fish tail in superior light soya sauce and scallions. I appreciate how the piquant preserved vegetable broth complemented the more gelatinous part of the fish and that the fishtail was fried to perfection, keeping the flesh moist and tender on the inside.

IMG_0827
Braised 2-Head Whole Abalone 4/5

Another premium ingredient featured in the menu is Braised 2-Head Whole Abalone in golden superior stock with snow pea shoot. The sweetness of the stock and the snow pea shoot complemented the tender abalone.

IMG_0832
Crispy Noodles with Australian Lobster Meat 3/5

The noodle dish for this menu is Crispy Noodles with Australian Lobster Meat, served with a silky egg gravy infused with lobster broth. A smaller portion of the noodles would have brought a better balance to this dish.

IMG_0842
Double-Boiled Bird’s Nest 4.5/5

We indulged in a Double-Boiled Bird's Nest With Rock Sugar Served In Mini Pumpkin for dessert. The pumpkin added texture and sweetness to the dish and was delightfully soft, providing a joyous savouring element.

IMG_0846

3 set menus are available - Delightful Set Menu, Prosperity Reunion Set Menu and Eternity Reunion Set Menu are priced at $2,688++, $2,988++ and $3,288++ per table of 10 persons, respectively. Vegetarian Set Menu is available as well.

Man Fu Yuan @ InterContinental Singapore - Showcasing Best of Irish Produces, Silver Hill Duck, John Stone Dry-Aged Beef and Hampshire Pork

IMG_8318

Man Fu Yuan at InterContinental Singapore has partnered with the Irish Duck Company to present 'The Best of Irish Showcase.' From 1 October 1st to 15 November, three 6-course menus highlighting some of Ireland's finest produce will be offered for lunch and dinner. Irish Duck Company is the exclusive distributor that first brought the world-famous Silver Hill Duck to Asia, and thanks to them, we get to savour the 'wagyu of duck' right here in Singapore. They are now ready to introduce the exquisite John Stone Dry-Aged Beef and Hampshire Pork to Singapore. In the hands of Man Fu Yuan's Executive Chinese Chef Aaron Tan, these premium Irish meats to the table, highlighting their qualities with Cantonese traditional flavours and techniques.

IMG_8272
Appetiser 4.5/5

Each of the 3 menus brings together all three of these finest Irish products in a single menu. We tried the Elegant Set Menu. We started with an appetiser featuring John Stone Irish Smoked Salmon Flower with wasabi aioli, Chilled Cherry Vine Tomatoes with crab meat and Chilled John Stone Dry-Aged Beef. The aged beef, infused with the aged-citrus honey soya sauce, intensified the already rich flavour, creating an incredibly meaty texture. The smoked salmon was just as delectable with its luscious texture and deep flavour. The exquisite crab meat added balance to the dish, introducing a sweet and refreshing note that harmonised the flavours beautifully.

IMG_8287
Soup 4/5

The Soup course was a Braised Golden Bird's Nest with golden pumpkin superior stock. The soup had an incredible depth of flavour with a slight creamy consistency.

IMG_8298
Wok-fried John Stone Irish Lamb Loin 3/5

The 3rd course is Hong Kong Kailan with Wok-fried John Stone Irish Lamb Loin with Sarawak black pepper sauce. The lamb loin was succulent, tender, and quite delicate on the level of gaminess. The black pepper sauce, however, was too much for me.

IMG_8314
Braised Irish Hampshire Pork Belly 5/5

Next was Braised Irish Hampshire Pork Belly with South African 5-head Abalone. A very considered dish - a sumptuous pork belly with an ideal balance between meat and fat, resulting in an unctuous delight. To complement this decadent meat, a 5-head abalone was paired with the pork belly, tender and infused with the rich flavours of the braising sauce.

IMG_8318
XO Chinese La Mian with Rock Lobster, Silver Hill Irish Duck 4/5

The last main was a much-anticipated dish - XO Chinese La Mian with Rock Lobster and Silver Hill Irish Duck in XO sauce. Like the previous course, pairing relatively fatty meat with lean seafood created a harmonious balance between two exquisite ingredients, enhancing the other's qualities. The XO sauce didn't work for me.

IMG_8325
Oven-baked Mango Pudding 4/5

The dessert is Oven-baked Mango Pudding, which is extra comforting. It is served warm in the traditional way.

The Elegant Set Menu, ideal for 3 to 5 persons, is priced at $228 per person. All set menus include an optional wine-pairing option at $68++ per person.

ManFuYuan3
Crispy Soft-shell Crab and Chilled Cherry Wine Tomatoes 4/5

Our gastronomic journey began with a tantalising duo of appetisers. The Crispy Soft-shell Crab with Garlic, Chilli, and Scallion was a delightful explosion of flavours, with the "Bowrington Bridge" soft-shell crab masterfully deep-fried to crispy perfection, infused with aromatic spices. The accompanying Chilled Cherry Wine Tomatoes, marinated with Plum Sauce, provided a refreshing contrast with its sweet and tangy notes, leaving us eager for more.

ManFuYuan7

ManFuYuan8
Double-boiled Superior Seafood Soup, Mushroom, served in Melon Husk 4.8/5

The Double-boiled Superior Seafood Soup, Mushroom, served in Melon Husk, followed next, enchanting us with its heartwarming and nourishing essence. The velvety smooth broth, infused with the essence of the melon husk, brought forth an additional depth of flavour to the already delightful combination of seafood and mushrooms. Each spoonful of this soup was a delightful journey, warming both the soul and the palate.

ManFuYuan13
Braised Indonesia Cave Bird's Nest 4.2/5

A highlight of the meal was the Braised Indonesia Cave Bird's Nest with Crabmeat, Crab Roe, and Silver Sprout in Beijing style. This dish showcased a delightful play of flavours and textures, with the subtle bird's nest blending harmoniously with the sweetness of crab meat and the richness of crab roe, all complemented by the textural crunch of silver sprouts.

ManFuYuan11
Flambe Braised Crocodile Palm, Vegetables, Mushroom 4/5

The Flambe Braised Crocodile Palm, Vegetables, Mushroom was an exotic offering on the menu. The tender crocodile meat, reminiscent of chicken in taste, was flambéed to perfection, adding an exciting touch of theatrics to the dish. The herbal sauce further enhanced the experience, making it a memorable culinary adventure.

ManFuYuan17

ManFuYuan18
3 hours 33 mins Honey Glazed Duroc Pork Ribs, Yuzu Soya Sauce, Grated Coconut 4.8/5

A true crowd-pleaser was the 3 hours 33 mins Honey Glazed Duroc Pork Ribs, Yuzu Soya Sauce, Grated Coconut. This dish impressed with its explosive flavour profile, combining sweetness and tanginess from the yuzu soya sauce with the succulent and fall-off-the-bone Duroc pork ribs. The addition of grated coconut added a delightful twist to the dish, making it a must-try.

ManFuYuan20
Braised Crab Meat with Crab Roe, Prawn, Baby Vegetables 4/5

The menu continued to delight with the Braised Crab Meat with Crab Roe, Prawn, and Baby Vegetables. This dish was a perfect example of simplicity elevated by luxurious ingredients, as the combination of braised crab meat, crab roe, and prawn elevated the dish to new heights.

ManFuYuan24
Stone Bowl Rice, Kurobuta Pork Cured Meat, Egg Yolk, Tobiko 4.5/5

The Stone Bowl Rice, Kurobuta Pork Cured Meat, Egg Yolk, and Tobiko were a delightful symphony of flavours. Fragrant rice infused with kurobuta pork cured meat and topped with tobiko was enhanced with a luscious egg yolk that bound everything together, creating an aromatic finish.

ManFuYuan26
Double-boiled Papaya, Coconut Cream, Peach Collagen, Hashima 4.8/5

As we approached the end of our culinary journey, we were treated to the Double-boiled Papaya, Coconut Cream, Peach Collagen, Hashima, a warm and comforting coconut soup filled with papaya, peach collagen, and hashima, offering both delicious flavours and nourishing benefits.

ManFuYuan28
Black Sesame Rolls with Coconut 4/5

The meal concluded on a sweet note with the Black Sesame Rolls with Coconut. Soft and spongy, the rolls were infused with the delightful aroma of black sesame, while the coating of grated coconut added an extra layer of taste and texture.

Chef Aaron Tan and his team have undoubtedly crafted an impressive and delectable menu at Man Fu Yuan, InterContinental Singapore. Each dish showcased its culinary finesse, while the seamless blend of traditional flavours with modern touches made for an unforgettable dining experience. Whether you are a connoisseur of Cantonese cuisine or a lover of culinary artistry, this new menu promises a feast for the senses that will leave you yearning for more.

MinJiang10Hands2
Steamed Diced Chicken in Pomegranate Egg White Parcel 4/5

Kicking off the feast is the visually stunning Steamed Diced Chicken in Pomegranate Egg White Parcel. Resembling a chrysanthemum and pomegranate, this dish features a delicate pastry made from scratch using egg white and flour. Inside, a medley of finely diced chicken, celery, dried shiitake, and carrots is bathed in superior stock and crowned with luscious crab roe, creating a harmonious blend of flavours.

MinJiang10Hands7
Baked Stuffed Crab Shell & Roasted Silver Hill Irish Duck 4.2/5

Next, the Baked Stuffed Crab Shell takes centre stage, paying homage to Hong Kong's fusion of Eastern and Western cuisines. Handpicked Sri Lankan crab meat is combined with onions and shiitake mushrooms in a cream sauce reminiscent of bechamel. The mixture is then baked in a crab shell to golden perfection. Accompanying this delicacy is the succulent Roasted Silver Hill Irish Duck, complemented by sweet and juicy fresh mango and a tangy homemade plum sauce.

MinJiang10Hands10
Boneless Chicken Thigh stuffed with Bird's Nest and Yunnan Ham Double-boiled Superior Soup 4.5/5

A standout dish, the Boneless Chicken Thigh stuffed with Bird's Nest and Yunnan Ham in Double-boiled Superior Soup, showcases hours of laborious cooking. The chicken is deboned and filled with premium bird's nest before being double-boiled for three additional hours. The result is a dish bursting with rich and pure flavours derived from the carefully selected ingredients.

MinJiang10Hands12
Pan-fried Dace Fish Meat, Liver Sausage and Orange Peel stuffed in whole Dace Fish 4/5

MinJiang10Hands14

Delving into a traditional recipe from the Shunde district in Guangdong, China, the Pan-fried Dace Fish Meat, Liver Sausage, and Orange Peel stuffed in a whole Dace Fish offers a delightful combination of textures and flavours. The dace fish flesh is expertly removed and blended into a fish paste, which is then combined with orange peel for a citrus note and finely diced liver sausage for added depth. The fish paste is stuffed back into the dace fish and pan-fried to crispy perfection.

MinJiang10Hands17

MinJiang10Hands29
Stewed White Jade Noodles with Wild Mushrooms and Mustard Green 4/5

As a light yet flavoursome finale to the savoury courses, the Stewed White Jade Noodles with Wild Mushrooms and Mustard Green provides a comforting and homely experience. This bowl of goodness brings together tender noodles, earthy wild mushrooms, and mustard greens in a flavoursome broth.

MinJiang10Hands33
Crispy-fried Water Chestnut with Apricot, Chilled D24 Pandan Gula Melaka Rice Roll 4/5

To conclude this remarkable culinary journey, we are treated to a duo of delectable sweet treats. The Crispy-fried Water Chestnut with Apricot is a delightful creation where steamed water chestnut and apricot are enveloped in a thin, crispy batter, offering a delightful contrast of textures. Crystal Jade Group Of Restaurants - Mother's Day And Seasonal Menu Promotion

IMG_3982(1)

In conjunction with the upcoming Mother's and Father's Day, Crystal Jade Group's portfolio of fine and casual-dining restaurants has launched several limited-time promotions – ranging from High-Tea sets and special set menus alongside seasonal a la carte dishes. The promotions are available from now till 30 June 2023.

IMG_3960
Cucumber & Assorted Mushroom Dumpling 4.5/5, Steamed Squid with Water Chestnut Dumpling 4.5/5, Deep-fried Beancurd Roll with Pork Floss & Seaweed 2.5/5

Available at Crystal Jade Palace, Crystal Jade Golden Palace and Crystal Jade Pavilion for the first time, these three fine-dining establishments offer specially-curated High Tea sets, over two weekends each, in May and June, in the late afternoon from 3pm – 445pm. A peek into the Crystal Jade Pavilion Sea High-Tea set, we tried the Cucumber & Assorted Mushroom Dumpling served together with two seasonal dim sum items from Crystal Jade Hong Kong Kitchen - Steamed Squid with Water Chestnut Dumpling ($7.80/3 pieces) and Deep-fried Beancurd Roll with Pork Floss & Seaweed ($7.80/3 pieces). I enjoyed both the dumplings. They were exquisite, with thin skin and fillings that were on point with flavours and texture. However, the deep-fried beancurd roll was a tad greasy for me.

IMG_3964
Chilled Boneless Kampung Chicken 4/5

Crystal Jade Palace presents two very tantalising dishes. The first to be served was Chilled Boneless Kampung Chicken with Scallion & Sand Ginger ($36 for half, $70 for whole). The chicken was deliciously succulent and tender, marinated in a mixture of chopped spring onions and sand ginger that lent incredible fragrance, flavour and freshness.

IMG_4007
Stewed Chinese Yam Vermicelli with Sesame Chicken & Shredded Ginger 4/5

The 2nd dish was a nourishing and warming Stewed Chinese Yam Vermicelli with Sesame Chicken & Shredded Ginger ($32 for regular (3-4 persons)). The sesame flavour was more of an undertone, making the broth much lighter than expected and delightfully comforting. The Chinese yam vermicelli is specially brought in to create this dish. Its texture is a cross between rice vermicelli and glass noodles.

IMG_3982(1)
Steamed Whole Deboned Fish wrapped in Crystal Jelly 5/5

From Crystal Jade Golden Palace, I was awed by this high-skilled dish - Steamed Whole Deboned Fish wrapped in Crystal Jelly in Teochew Style (Seasonal price). The live fish is first filleted, then wrapped with shiitake mushroom, red chilli, preserved vegetables, Chinese celery and shredded ginger in a delicate mung bean sheet, and steamed in a light stock flavoured with preserved vegetables and enlivened with fresh tomatoes.

IMG_3989
Hakka Grandma's Pork Belly with Preserved Vegetable 3.5/5

In contrast with the above, Hakka Grandma's Pork Belly with Preserved Vegetable ($28/4 pieces) is a very homely dish that entices with thick cuts of pork belly doused in a dark, rich sauce with Preserved Vegetables. The preserved vegetables were surprisingly quite balanced in flavour, and it would have been a perfect combination if the pork belly had been more tender.

IMG_3998
Deep-fried Assorted Mushroom & Lotus Roots 3/5

Crystal Jade La Mian Xiao Long Bao & Jiang Nan presents Deep-fried Assorted Mushroom & Lotus Roots in Chef's Special Spicy Cumin Powder ($16.80). Using mushrooms and crunchy lotus roots instead of meat gives a different form of enjoyment. However, I would prefer the mushrooms to be less thinly sliced so each fried piece has a 'meatier' bite.

IMG_4022
Superior Bird's Nest with Taro Paste in Deep-fried Sesame Ball 3/5

Crystal Jade Palace High Tea set, Crystal Jade Golden Palace High Tea set & Crystal Jade Pavilion High Tea set are priced at $68++ per person (minimum 2 persons to dine). Each delectable high tea set includes two appetisers, four dim sum, a soup, a main, two desserts, and free flow of Chinese tea and coffee. You can also opt to top up $58 for a bottle of Prosecco Cecilia Beretta NV (750ml).

IMG_4016
Mango Passionfruit Sorbet with Bird's Nest 3.5/5

An extensive selection of set menus is available at Crystal Jade Palace, Crystal Jade Golden Palace and Crystal Jade Pavilion. Each menu comprises off-the-menu creations, from $488 for 6 persons to $1,688 for 10 persons.

Man Fu Yuan @ InterContinental Singapore - Taste Of The Yesteryears 今日事,当年情; A Celebration Of Heritage Cantonese Cuisine By Four Celebrated Masterchefs

InterContinental Singapore - Man Fu Yuan Eight Hands - Chefs Group Profile Shot

For a limited period from 1 April to 30 April 2023, Man Fu Yuan at InterContinental Singapore presents for the first time 8 Hands collaboration between four celebrated Masterchefs, Chef Pang Lu Tin, Fok Wing Tin, Peter Tsang and Man Fu Yuan's Executive Chinese Chef Aaron Tan. The four of them have come together to present set menus for the taste of yesteryears, reimagining traditional Cantonese classics. Diners will be treated to their combined culinary expertise and a gastronomic adventure featuring premium ingredients and the best of Lee Kum Kee’s sauces.

It is an opportunity to taste the collective mastery in one single meal of much-loved traditional classics from the 1970s and 80s, presented with skills that have been honed for decades, perfected with modern techniques and laced with exquisite flair and premium ingredients.

ManFuYuan8Hands1
Appetiser by Chef Pung

We started the dinner with a trio of appetisers by Chef Pung, whetting up the appetite. A beautiful trio of Chilled Spice Jelly Fish Head with Preserve Mandarin Orange, Crispy Duroc Pork Belly, and Steamed Egg White with Sea Urchin is on the plate.

ManFuYuan8Hands8
Soup by Chef Fok

Soup, an indispensable part of Cantonese cuisine, is showcased in the Superior Pumpkin Soup with Soft Scallop sheet and Sharp Spinach by Chef Fok. Pumpkin is added to give colour to the superior stock and creaminess. The highlight is the soft scallop cooked using the traditional sou vibe technique. Yes, I was educated that Chinese cooking has sou vibe technique too, not only in Western cuisine.

ManFuYuan8Hands10
Superior Seafood by Chef Aaron Tan

Next is the Braised 15-head South Africa 'Ji Ping' Dried Abalone, which Chef Aaron Tan perfectly cooks to achieve the 'Tang Xin', a jam-like, ramen-egg texture.

ManFuYuan8Hands14
Poultry by Chef Peter

The Steamed Goose with Plum, Ginger and Chinese Wine by Chef Peter draws inspiration from the Teochew-style braised duck. Chef Peter has to substitute the goose with duck, which is still a delicacy. The whole duck is painstakingly wok cooked to seal the skin and then slow-braised with Lee Kum Kee's sauce. The result is flavoursome and tender.

ManFuYuan8Hands16
Poultry by Chef Fok

Another poultry item on the menu is the Pan-seared Duck and Chicken with Water Chestnut Patty by Chef Fok. The golden brown patty is succulent and has a homely flavour that reignites many childhood memories.

ManFuYuan8Hands19
Seafood by Chef Aaron

Packed with robust flavours is the Crispy Soft-shell Crab with Crispy Garlic, Dried Chilli and Scallion. The execution is similar to Hong Kong's Bi Feng Tang" style.

ManFuYuan8Hands21
Rice by Chef Peter

We had the Crispy 'Guo Ba' Rice with Braised 'Guan Dong' Sea Cucumber and Abalone Sauce by Chef Peter for the rice dish. It is an elevated way of having carbo paired with premium sea cucumber cooked to a delightful bouncy texture.

ManFuYuan8Hands27
Dessert by Chef Pung

The Chilled Coconut Pudding with Silky Bird's Nest by Chef Pung wrapped up our meal. It is a light yet refreshing dessert brimming with a silky bird's nest for a luxurious, sweet ending.
