Treasures Beef Yu Sheng

Tossing to a successful year ahead with the Treasures Beef Yu Sheng. In conjunction with the Year of the Ox, the chef has incorporated beef bak kwa to the lo hei on top of the usual salmon, crispy fish skin, shredded vegetables and pickles, dressed in golden yuzu and plum sauce. Diners can impress their family or guests with the new 60-inch Blossoms of Spring Prosperity Yu Sheng adorned with Hokkaido scallops and salmon, shaped in the form of the Chinese character "春", symbolises renewal and start of fresh and new beginnings.

Served in a pumpkin husk is the Superior Crab Meat and Pumpkin Bisque with Bird's Nest and Crab Roe. Bird's nest itself is tasteless, but under the pumpkin and crab roe's sweetness, each mouthful is packed with umami.

Not to be missed is the Signature Smoked Duck with Truffle Sauce. Usually, duck is paired with plum sauce, but truffle sauce has brightened the enjoyment to a whole new level.

Man Fu Yuan Abundance Treasure Pot 4.8/5

A popular CNY dish at Man Fu Yuan is their Abundance Treasure Pot which comes brimming with 19 different premium ingredients. In the pot, there are Australia sea cucumber, 10-head abalone, Canadian lobster, Hokkaido scallops, prawns, fish maw, goose web, pig trotters, sea whelk, oysters, chicken wings, preserved meat, liver sausage, black trumpet mushrooms, cabbage, soy bean gluten, fried yam, and fatt choy. The one thing that I like about Man Fu Yuan' Pen Cai is the goose web, a delicacy that is rarely served in restaurants nowadays.

The Classic Beef Pot is inspired by the Year of the Ox, which features varieties of beef packed with robust flavours. There are beef brisket, beef lover, beef tendon, beef cheek, beef stomach, beef balls, beancurd skin and white radish. It would be perfect if the culinary team also concocted a chilli sauce for the ingredients.

A cheesy affair is the Oven-baked Cheesy Lobster with Asian Cream Sauce. It is a classic and delicious pairing that will not go wrong. However, I am not a fan of the capsicum that is added to the sauce.

Roasted Suckling Pig with Five Grain Glutinous Rice, Chinese Cured Meat 4.5/5

Another signature dish that I look forward to every year at Man Fu Yuan is their Roasted Suckling Pig with Five Grain Glutinous Rice, Chinese Cured Meat. A multi-sensual enjoyment with crackling skin and succulent meat. The preserved cured meats enhanced the flavours while the sticky glutinous rice provides the extra texture. It is so shiok.

Double-boiled Sweetened Hashima, Pear, Gingko Nuts, Red Dates, Lotus Seeds 3.5/5

Lastly, we wrapped up the sumptuous dinner on a sweet note with the Double-boiled Sweetened Hashima, Pear, Gingko Nuts, Red Dates, Lotus Seeds. A light and refreshing dessert that somewhat acts as a palate cleanser after a rich and heavily flavoured meal.

Glorious Lunar New Year Reunions At Man Fu Yuan

Ushering in the Year of Rat at Man Fu Yuan with a luxurious selection of Lunar New Year delicacies and prix-fixe menus from 6 January to 8 February 2020. This year, Executive Sous Chef Aaron Tan and his team have put together eight prix-fixe menus and a collection of auspicious dishes.

Treasure Yusheng

Toss to a successful year ahead with the new 60-inch Treasure Yu Sheng adorned with Abalone, Hokkaido scallops, salmon crisp fish skin, and refreshing passionfruit roselle sauce, shaped in the form of the Chinese character "Yuan" (苑) which symbolises a garden of plenty.

Superior Pumpkin Bisque 

A change from the usual double-boiled soup for Chinese dinner is the Superior Pumpkin Bisque. It is a welcoming change. A western-style soup incorporating Asian ingredients such as Chinese cabbage, fish maw, Chinese cured meat and Sarawak bird's nest.

Man Fu Yuan Abundance Treasure Pot

One of the dishes I look forward to during Lunar New Year is the Pen Cai. Over at Man Fu Yuan, the Abundance Treasure Pot ($388) is brimming with 18 different ingredients. They are braised sea cucumber, 10-head abalone, Canadian lobster, Hokkaido scallops, prawns, fish maw, goose web, pig's trotters, whelk, oysters, chicken wings, preserved meat sausage, Yunnan black tiger palm mushroom, cabbage, wheat gluten, fried yam and fatty choy.

I have heard so much about Man Fu Yuan exclusive and premium Steamboat, and I finally get to try it. For this lunar new year, guests will be able to purchase 10 of the steamboat ingredients to dine in the comfort of their home. Chilled Coconut Jelly, Butterfly Pea Flower Sesame Mochi, Pineapple Balls.

Wrapping up the dinner, I have the Chilled Coconut Jelly, Butterfly Pea Flower Sesame Mochi and Pineapple Balls. My favourite is the light and refreshing chilled coconut jelly paired with Aloe Vera and Snow Bird's Nest.

Udon Kamon @ Eat At Seven (Suntec City Mall) - Singapore's First-ever Tricoloured, All-natural Udon Offerings

For this warm summer, Udon Kamon at Suntec City Mall is offering the new tricoloured chilled udon, a first of its kind in Singapore. Each bowl comes with Udon Kamon's original white udon, green matcha udon and red chilli udon, made with natural ingredients. With the tricoloured chilled udon combined in one bowl, Chef Kamogi Noriyuki has created three offerings - Mentai Maze Udon, Beef Shabu Shabu Bukkake Udon and Uni Maze Udon.

Mentai Maze Udon 3/5

The Mentai Maze Udon ($12.80++) features the tricoloured chilled udon. The green matcha udon is made with Uji matcha from Kyoto while the red chilli udon is made with Korean chilli powder. It is paired with mentaiko, onsen tamago, seaweed and spring onions. Break the egg and mix everything together, allowing the silky egg white to coat the spicy cod roe on every strand of the chewy noodle. It is light and refreshing, perfect for the summer weather.

Uni Maze Udon 3.8/5

Diners with a heavier palate may go for the Uni Maze Udon ($19.80++) with the tricoloured chilled udon resting in a pool of luscious uni sauce. It is topped with creamy and savoury sea urchin from Hokkaido. It actually tasted like a plate of creamy and rich pasta, except that I could not really detect the uni in it.

Beef Shabu Shabu Bukkake Udon 4/5

The last offering for the tricoloured udon is the soup version Beef Shabu Shabu Bukkake Udon ($13.80++). The cold udon noodles are drenched in a chilled dashi sauce and topped with tender beef short plate from Australia. This is my favourite among the 3 new creations, for its refreshing and sweet note, that complement the chewy udon.

Smoked Duck Udon 4.2/5

Not into chilled udon, one can always go for their signature udon such as the Smoked Duck Udon ($11.80++). I felt that the texture of the Sanuki udon fares better in the hot wafu broth made with dashi stock. I also like the addition of yuzu peel, which imparts a citrusy aroma to the finishing. It also comes with succulent pinkish smoked duck that is specially air-flown from Italy.

Nestled in Eat At Seven, Suntec City Mall, Udon Kamon doles out sanuki udon, the most popular type of udon in the Shikoku region. Made freshly with Japanese wheat flour, salt and water, the noodles are thick, squarish and have flat edges. It also comes with a chewy textural bite, which is really delightful.

Congratulation to Summer Pavilion at Ritz Carlton Hotel for receiving its third consecutive one-star rating by the Michelin Guide Singapore. In celebration of this prestigious achievement, Summer Pavilion has launched a new tasting menu priced at $168 per pax, specially crafted by Chef Cheung Siu Kong. Diner can add an additional $88 for wine pairing.

We started with the Amuse Bouche which is Egg White with Caviar on a crispy seaweed. A delightful bite size starter, kick starting the meal at Summer Pavilion.

Smoked Duck with Crispy Beancurd Skin and Garden Greens 3/5

The first course is Smoked Duck with Crispy Beancurd Skin and Garden Greens. It is served with a basket of thin pancakes. we are supposed to wrap the ingredients with the pancake, similar to the way of eating Peking duck. The smoked duck and crispy beancurd skin which has been cut into cube shape, is a bit too small for me to appreciate the dish.

The Double-boiled Chicken and Sea Whelk Soup with Fish Maw and Matsutake Mushroom is both comforting and nourishing. It even comes with a huge piece of premium fish maw, which has a pleasant spongy texture.

Steamed Dong Xing Grouper Fillet with Green Pepper and Plum 4.5/5

The sourness of the broth elevated the enjoyment of the perfectly cooked Steamed Dong Xing Grouper Fillet with Green Pepper and Plum. I may called it steamed fish in two ways. For the adventurous diner, you can bite into the green pepper for a fiery kick finishing.

Love the tenderness of the Sauteed Diced Miyazaki Wagyu Beef in Black Bean Sauce. Unfortunately I thought the bitterness from the bitter ground was a bit of a distraction for me to fully appreciation the well executed beef.

Poached Vermicelli and Abalone in Fish Broth 4.8/5

My favourite dishes is the Poached Vermicelli and Abalone in Fish Broth. The highlight for me is not the abalone but the flavoursome fish broth that is packed with depth and flavours. Not forgetting the silky poached vermicelli that is liven by the delicious fish broth.

Chilled Purple Sweet Potato and Ginger Pudding 3/5 Sweet Potato Glutinous Rice Ball 4/5

For dessert, I have the Chilled Purple Sweet Potato and Ginger Pudding and Deep-fried Sweet Potato Glutinous Rice Ball. I find the ginger pudding a bit too spicy for my liking. As for the sweet potato glutinous rice ball, I enjoyed the fragrant and chewy dough with the sweet potato filling.

Antoinette @ Penhas Road - The Ever-Inspired Chef Pang Has Unveiled A New Menu

The ever-inspired Chef Pang of Antoinette has unveiled a new menu, introducing a number  of new savory and brunch dishes. Together with the new menu launched, it has also introduced a number of new cocktails to complement the its extensive tea pairing.

Some of these new cocktails are Pretty Pink ($16), Prescription ($14), Huat Ah! ($18) and Blue Romance ($12). The eye catching drink probably is the Prescription which comes with a pill sachet which contains grass jelly cubes. This is a playful drink whereby the guests get to play doctor and mix the houjicha latte, okinawan black sugar syrup, yuzu ice cubes and fairy grass together to concoct their own medicine drink.

Baked Rigatoni 4/5 and Black Bait 4.5/5

For some light starters, there are the Baked Rigatoni ($8) and Black Bait ($12). The baked rigatoni pasta is satueed in tomato cream sauce, topped with a golden brown crust of gruyere cheese and emmental cheese. This is an all-day comforting dish. As for the black bait, it is a very addictive snack. The morsels of fish is dusted with homemade spice seasonings which consists of onion powder, garlic powder, paprika, salt and pepper with a sprinkle of raspberry powder.

Watermelon & Smoked Duck Salad 4/5

The interplay of color for the Watermelon &  Smoked Duck Salad ($24) definitely stands out. It looks like a garden in autumn except that it is on the plate. Two components on the plate stood out for me. The beautiful tender smoked duck and pickled watermelon cubes which has a refreshing acidity to the dish.

Wagyu Beef Tagliatelle 4.2/5

The pasta for the Wagyu Beef Tagliatelle ($26) is made in house using whole wheat. The delightful bite of the pasta is complemented by the delicious ragout which has been cooked with red wine, herbs and wagyu beef. It also comes with an onsen egg and grated parmesan cheese.

Double Prawn Linguine 4.2/5

Inspired by the local prawn noodles is the Double Prawn Linguine ($26). It has a rich umani-spicy note from the prawn bisque and spicy shrimp paste, that is well coated around the ribbons of linguine. The dish is then finished with zucchini strips, ebiko, sakura ebi, nori and shiso cress for flavours as well as textures.

Kurobuta Ham & Cheese Toast 4.2/5

Toast lover will rejoice to know that Antoinette has added 4 savoury and 2 sweet Toast to their new menu. For savoury there are Smoked Salmon, Kurobuta Ham & Cheese, Wild Mushrooms and Avocado Mash. If you have a sweet tooth, there are Banana and Strawberry.

We tried both the Kurobuta Ham & Cheese Toast ($14) and Banana Toast ($12). The bread of the Kurobuta Ham & Cheese Toast  is brushed with butter before being toasted to a nice crispy crust on the exterior while retaining a soft texture inside. It is then spread with a layer of sweet potato mash,  followed with topping of kurobuta ham and emmental cheese. As for the sweet Banana Toast, it comes with salted butter, nutella, fresh banana, caramel popcorn, coco pops and drizzled with chocolate sauce.

The Fondant au Chocolat ($14) is a warm chocolate cake, served with cold brewed coffee ice cream with orange confit. The combination of warm and cold, with the richness of the chocolate cake will satisfy anyone with a sweet tooth.

Watermelon Kakigori 4.2/5

Making a spectacular entrance is the Watermelon Kakigori ($20) which is appealing to both taste and presentation. The refreshing watermelon comes in cubes as well as shaved ice. Hidden underneath the shaved ice is earl grey chiffon cake layered with yuzu cream, fresh strawberries, rose petal foam and almond crumble. Perfect for sharing and ending your meal on a sweet finale.

Man Fu Yuan @ InterContinental Singapore - New SIgnature Dishes Inspired By Chef Eric Neo's Travel Experiences

Man Fu Yuan at InterContinental Singapore has been one of my favourite Chinese restaurant, and I was really excited to know that Chef Eric Neo has introduced 10 new dishes inspired by his travel experiences.

Appetisers 4/5

Our dinner started with a trio of Appetisers which consists of Deep Fried Pork Shoulder DumplingSmoked Kagoshima Pork Belly Char Siew and Mango Passionfruit Prawns. The deep fried pork shoulder dumpling is sort of like a deep fried siew mai, with a crispy exterior and crunchy interior from the prawn. The smoked kagoshim pork belly char siew has a enjoyable balanced of fatness and sweetness. Lastly the mango prawn is coated with herring roes but I didn't get the popping effect on top of the fruity sweetness.

The Double Boiled Chicken Soup is packed with richness and depth. The essence of the conpoy is well drawn into the soup through hours of boiling, for that umami flavour. It even comes with chicken pieces and premium fish maw.

Miso Shoyu Baked Cod, Scrambled Egg Whites 4.2/5

At first glance, I was wondering whether the scrambled egg whites is a good choice to pair with strong flavour of the Miso Shoyu Baked Cod. In fact, the sweetness of the moist cod fish goes very well with the lightly salted scrambled egg whites, giving the dish a contrast but yet harmony finishing.

Smoked to a beautiful aroma is the Signature West Lake Longjin Tea Smoked Duck. Diners can enjoy the tea smoked duck on its own or wrapped in it a then crepe.

Tiger Prawn Vermicelli, Chinese Wine, Superior Broth 4.8/5

Another favourite of mine is the Tiger Prawn Vermicelli. The highlight is the superior broth that is accentuated with a dash of Chinese wine. The thin vermicelli which acts like a sponge, absorbed the delish broth for a slurping goodness.

Wrapping up the dinner, we had the Deep Fried Purple Sweet Potato Custard Ball and Chilled Coconut Jelly with Aloe Vera. I enjoy both desserts a lot. The deep fried purple sweet potato has a delightful chewy texture filled with oozing custard in it. On the other hand, the chilled coconut jelly with aloe vera is light and refreshing.

In addition to the new signatures, the restaurant has also elevate the culinary experience with a handpicked selection of quality wines from renowned regions, passionate growers and boutique wineries. On top of that, tea connoisseurs will also be pleased to be able to pair and appreciate their meal with nine different premium teas
