YUN NANS (云海肴) @ ION Orchard - 6 Lunar New Year Set Menus For The Year Of The Rabbit

Whether you have a small group of 3 to 6 people or a big family of 10, YUN NANS has got you covered with their 6 new Lunar New Year set menus that will be available from 9 January to 5 February 2023. These range from $338 for 4 pax to $828 for 8 pax for dine-in, each accompanied by their Traditional Baked Rose Pastry and the new Prosperity Abalone Yu Sheng.

4 selected dishes are available for a la carte orders as well. They are the Prosperity Abalone Yu Sheng, Crispy Roast Chicken, Sautéed Tiger Prawns with Superior Soy Sauce and Yun Nans Prosperity Treasure Pot.

Prosperity Abalone Yu Sheng 鸿福鲍鱼捞生 4/5

We started with the Prosperity Abalone Yu Sheng ($68.80 for Regular, $88.80 for Large) featuring shredded white carrot adorably shaped as a rabbit and plump whole abalones. The plum sauce used leaned tangier, while the abalones were tender.

Prosperity Treasure Hot Pot 火焰聚宝盆菜 4.8/5

The crowd favourite Prosperity Treasure Hot Pot ($328 for Regular - 6 pax, $468 for Large - 8 pax and any additional at $40 per pax) makes a return this year. With an eye-catching golden broth base that is stewed for 6 hours. It's further topped with 11 auspicious ingredients of roast pork belly, bamboo pith, sea cucumber, abalone, scallops, prawns, mushrooms, fish maw, cordyceps flowers, yam and Chinese cabbage. The result was a comforting and luxurious savoury broth that had us going for seconds and thirds. It’s full of depth and not overly salty.

Crispy Roast Chicken 脆皮烤鸡 4/5

The Crispy Roast Chicken ($24.80 for Half, $39.80 for Whole) is another familiar dish from last Lunar New Year, but with an improved recipe. It is marinated with five-spice powder, air-dried and roasted. The meat was tender, but my dining companions and I agreed that we would prefer crispier skin. It's served with an in-house chilli sauce made with seven types of Yunnan's chillies and a salt and pepper dry dip.

Steamed Jade Perch 清蒸翡翠鲈鱼 4.2/5

Opt for the Steamed Jade Perch prepared in either spicy garlic lime or Hong Kong style. We had the former, and the fish was tender and fresh, carrying an appetising tangy-spicy kick.

Braised Spinach in Superior Stock with Dried Scallops and Bamboo Pith 瑶柱竹笙烩苋菜 4.2/5

The Braised Spinach in Superior Stock was a dish most of us enjoyed. It is paired with shredded dried scallops and bamboo pith. The flavourful stock is similar to that of the Prosperity Treasure Hot Pot.

Sauteed Tiger Prawns with Superior Soy Sauce 豉油王老虎虾 4/5

The Sauteed Tiger Prawns with Superior Soy Sauce ($38.80) is made with a blend of premium soy and nine specially curated ingredients such as aromatics and spices. After the prawns are flash-fried, it's stir-fried in the soy sauce mix, resulting in crispy shells and a fragrant finish.

Braised Truffle Ee-fu Noodles with Fresh Scallops 4.2/5

Braised Ee-fu Noodles is one of my favourite dishes to order at Chinese restaurants. YUN NANS' rendition features the noodles in truffle sauce, with scallops and mushrooms. The noodles were cooked to just the right texture and soaked up the sauce thoroughly.

Our first dessert was a refreshing and sweet bowl of Double Boiled Peach Gum with Snow Pear made with peach gum, snow pear, red dates and wolfberries.

Traditional Baked Rose Pastry 现烤玫瑰鲜花饼 3/5

We ended with a traditional Yunnan dessert, the Traditional Baked Rose Pastry ($6.80 for 3 Pieces). It is almost similar to a tau sar piah but filled with fresh rose petals. We appreciated how these were served warm, but the interior was a tad too doughy.

Do note that YUN NANS operating hours for reunion dinners on Chinese New Year Eve (21 January 2023) is as follows:

Session 1: 4.30pm to 6pm
Session 2: 6.30pm to 8pm
Session 3: 8.15pm to 9.45pm

They will be closed on 22 January 2023, while operating hours remain the same for the rest of the days.

5 ON 25 (五悦亭) sits on the 25th floor of Andaz hotel, alongside Alley on 25 and Bar Square. It offers refined Cantonese cuisine, helmed by Head Chef Lim Hong Lih, who has rich experience in known Chinese restaurants, such as Summer Pavilion and Li Bai. By day 5 ON 25 is an elegant space with a panoramic view of Bugis. By night when the lights dim, it transforms into a warm and romantic space.

The modern Cantonese restaurant is ready to welcome the Year of the Rabbit with its new Lunar New Year menu, featuring a la carte dishes and curated lunch/dinner set menus, available from 9 January to 5 February 2023. Most of the dishes pictured here are of a smaller portion for two pax.

海岛燕窝捞起 (皆⼤欢喜捞起) | Bird's Nest Yu Sheng 4/5

The Bird's Nest Yu Sheng ($118 for 2-4 pax, $168 for 5-7 pax) is a new highlight, using the additional topping of bird's nest to offer a different texture and a touch of luxuriousness. You will find fried yam strips and housemade crunchy nut clusters among the traditional elements of carrot strips, radish strips, ginger, and more. The sauce used leans tangier with a distinct plum taste. To opt for additional toppings, you can go for Shredded Abalone ($50) and Norwegian Salmon ($42).

⼘丝苹果⻰虾球 (⻰皇吐⽟珠) | Deep-fried Lobster, Apple with Honey Sauce 4/5

Another unique creation for the Lunar New Year menu is this Deep-fried Lobster ($58). Chunks of battered lobster covered in a homemade apple and honey sauce tasted sweet, tangy and vibrant, fitting for the occasion. The batter was just the right thickness for a complementary crunch, and you also get surprising bites of apple cubes within. The lobster was firm and fresh, but I preferred it to be less sweet to appreciate its meat.

当归脆⽪烧鸭 (⾦雁富贵) | Dang Gui Crispy Roasted Duck 4.5/5

Our favourite for the night was the Dang Gui Crispy Roasted Duck ($45 for Half, $90 for Whole). The duck had just the right amount of fats, done very tender with light and crisp skin. The herbaceous broth it sat on was a little more on the saltier end, but we didn't mind it. The fragrance of dang gui came through distinctly.

松露带⼦焖伊⾯ (富临双喜) | Braised Hokkaido Scallops, Ee-fu Noodles, Truffle Sauce 4.2/5

Our main course was Ee-fu Noodles ($38), done in truffle sauce and served with braised hokkaido scallops. It was a pity that the batter of the scallops left a slight stickiness to the teeth, but we enjoyed the springy noodles, which thoroughly soaked up the truffle sauce and had a hint of smokiness.

红莲炖桃胶 (蹄声报喜) | Peach Gum 4/5

We had the refreshing Peach Gum ($18) to complete the meal. It’s mildly sweetened with red dates and has lotus seeds, peach gum, and water chestnut for an extra crunch. If you are a tea lover, I would highly recommend trying the 5 ON 25 Signature Tea, a special blend of oolong, goji berries, osmanthus and longan. It was light yet incredibly fragrant, pairing very well with the range of dishes.

Fufu Pot @ Plaza Singapura - Collaborate With Lucky Dumplings With Asian-inspired Dumpling flavours

Fufu Pot at Plaza Singapura specialises in personal hotpot filled with Asian-inspired flavoured broths. In particular, Stinky Tofu broth is a hot favourite, alongside White Curry, Army Stew and other exciting flavours. To amp up its offerings, Fufu Pot has collaborated with Lucky Dumplings to release two new dumpling flavours with similar Asian vibe.

Stinky Tofu 4/5

The Stinky Tofu ($21.90) hits all the right spots when it comes to flavours and aroma. A concoction of minced meat and spicy bean paste, the broth had an addictive savouriness and spicy accent. In addition, the stinky tofu is slightly porous, a cross between tau pok and dou gan (Chinese pressed tofu), which enables them to soak up the rich broth without collapsing. The usual pungency of stinky tofu has been mellowed down for our local context, but it allows the full umaminess of the broth to come through.

There is also a fried version as a side dish. The in-house chilli sauce was as zesty as a chicken rice chilli sauce, which added much brightness to the crispy fried stinky tofu.

Tonkotsu Miso 3.5/5

We also had a fufu pot that is much lighter in taste - Tonkotsu Miso ($19.90). Served with pork shabu shabu, Japanese chachu and Ajitama egg, it is like an augmented ramen bowl. The tonkotsu broth wasn't as rich as expected, and the miso flavour was missing. Nonetheless, the hotpot itself is pretty comforting if you are looking for a light-tasting broth.

Partnering with Lucky Dumplings came two new side dishes, which you get to try till the end of July - Kimchi & Egg ($7.80 for 4pc) and Mala Dumplings ($7.80 for 5pc). While the latter had all the crunch and numbness from fufu's chilli nuts topping, I prefer Kimchi & Egg much more for its juicier filling.

After all the highly flavoured dishes, cool off with some refreshing desserts. Beancurd with Peach Resin was pleasing with silky beancurd, while the ice jelly perked me up with its zest.

In the treasure pot, diners can look forward to delicacies such as wild morel, wild golden fungus, sea cucumber, abalone, scallops, prawns, mushrooms, fish maw and cordyceps flowers, laid with yam and Chinese cabbage in the base.

The Traditional Salted Baked Chicken ($22.80++/ $38.80++) is cooked with two types of ginger - sand ginger and galangal, the kampung chicken is braised, then baked until tender and juicy with the braising sauce penetrating every inch of it.

Steamed Red Grouper Peppercorn Style

Instead of the usual Hong Kong style steamed fish, why not try something new for the new year? I would highly recommend you to the Steamed Red Grouper Peppercorn Style. The aromatic peppercorn gives the steamed fish a full elevated enjoyment.

"Bi Feng Tang" Style Pork Ribs with Truffles 4.2/5

The "Bi Feng Tang" Style Pork Ribs with Truffles ($33.80++) is humongous. I could not resist picking up the pork rib with my hands. A pull with my teeth and the meat falls off the bone with ease. While the thick coat of garlic and chilli is aromatic, I could not taste the truffle at all. Hence I don't think the addition of truffle is necessary at all.

Same as the pork rib, I could not taste the truffle in the Braised Truffle Ee-fu Noodles ($16.80++). It s a comforting dish to wrap up the savoury dishes before moving to desserts.

The Double-boiled Peach Gum and Snow Fungus ($6.80++) is not only refreshing but nourishing too with ingredients such as Peng Da Hai, peach gum, snow fungus and snow lotus seed.

Freshly Baked New Year Pastry

A must-try is the flaky Freshly Baked New Year Pastry. I thought it is filled with red bean paste, but after checking with the restaurant, I realised it is rose petals, no wonder there is a beautiful floral scent.

Besides the six Chinese New Year dine-in set menus, there is also a Special Chinese New Year Takeaway Set ($298+ Members/ $338 public) for takeaway. The takeaway set comprises prosperity abalone yu sheng, prosperity treasure hotpot, steamed glutinous rice wrapped in lotus leaf and traditional salt baked chicken. The dine-in set menus and takeaway menus are available at their Nex and Jewel Changi Airport outlets too.

Yan Restaurant (宴) @ National Gallery Singapore - Encapsulates The Heart And Soul Of Cantonese Cuisine With A Refreshed Menu

Yan Restaurant (宴) at National Gallery Singapore welcomes new Head Chef Ng Sen Tio. Under his belt is three decades of experience in the kitchens of Chinese restaurants in Singapore. Staying true to Yan's ethos of offering a convivial feast of Cantonese flavours for the tummy, eyes and soul, Chef Ng curates a new and refreshed menu.

We started with a trio of starters which gives us a glimpse of the refreshed menu. On the plate, we have the Marinated Okra with Homemade Spiced Sauce, House Special Caramelized Barbecued Pork and Fried Minced Duck Meat with Cuttlefish Paste in Egg Pancake. The spiced sauce for the okra is like our local "Hae Bee Hiam" which complements the crunchy green excellently. The barbecued pork uses the "wu hua rou" cut which has a delectable fat to lean ratio. It is also beautifully caramelised and not overly sweet, this is a joy to eat. Lastly, the egg pancake comes with different layers of texture at play. This is a traditional dish taught by his mentor in the 1970s. While it is good, I can't really taste the duck meat in it.

Golden Pumpkin Broth with Seafood and Chicken Paste Beancurd 4.2/5

The Golden Pumpkin Broth with Seafood and Chicken Paste Beancurd ($18 per serving) is a dish that can be enjoyed by both young and old. The paste beancurd ball is so soft that it is easy for the old to indulge in. The young can have it with the ease of mind that they will not find fish bones in it. As for me, the sweet pumpkin broth packed with essence from the pork and chicken consomme goes really well with the pillowy paste beancurd ball. Each spoonful feels like floating on cloud nine.

Claypot Work-fried Prawns with Fish Maw, Vermicelli and Homemade XO Sauce 4.5/5

A dish that I will definitely order in my re-visit is the Claypot Work-fried Prawns with Fish Maw, Vermicelli and Homemade XO Sauce ($38/$57/$76). The ingredients are braised separately and cooked with the XO sauce, melding everything the flavours together. It is then garnished with fresh buds of night-blooming jasmine, emitting a sweet scent as the lid is lifted.

Wok-fried Crab with Homemade Pumpkin Sauce 4.5/5

For those that have gotten tired of chilli, salted egg or black pepper crab, the Wok-fried Crab with Homemade Pumpkin Sauce will be a delightful substitute. The sauce is creamy and sweet. The addition of curry leaves perks it with aromas. It is one finger-licking tasty dish that you probably doesn't want to miss. Not to forget ordering some fried mantou to wipe clean the sauce.

For something comforting, there is the House Special Local Lobster Porridge with Clams and Puffed Rice. The robust broth is made from chicken stock, lobster and prawn shells. Then steamed rice and seafood are added, allowing the rice grains to absorbed the flavours. Before serving, deep-fried crispy purple rice is added for that extra textural enjoyment.

Finishing off the dinner, I have the Chilled Peach Resin with Osmanthus and Aloe Vera Jelly. It is light and refreshing, yet not overly sweet with crunchy peach resin.

Jiang-Nan Chun @ Four Seasons Hotel Singapore - New Winter Menu To Celebrate Its Second Consecutive Michelin One Star Award

Jiang-Nan Chun at Four Seasons Hotel Singapore has once again received One Michelin Star in the Michelin Guide Singapore 2019. Being the second consecutive year to be awarded this accolade, Jiang-Nan Chun has launched a Winter Menu to celebrate this occasion. Designed by Executive Chinese Chef Tim Lam, the man who brought Jiang-Nan Chun to where it is today, this six-course seasonal menu embodies the principle of "align and nourish" during the cold season. Each dish is meant to rebalance and re-energise you from within, starting from using only the best available ingredients at this time of the year.

Trio Platter 3.8/5

Starting your meal is a trio platter of Steamed Xiao Long Bao with Black Truffle, Deep-fried Japanese Oyster and Honey Glazed Pork Collar. What sync these 3 items together was the luscious mouthfeel that each provides. The Xiao Long Bao oozed warm and savoury juice infused with earthy flavours of the truffle, which have developed over time inside the heated pocket. The Japanese oyster was plump and deep-frying it gives a crust that contrasts nicely with its texture, which may otherwise be a tad gooey for diners who ain't into oysters.

Double-boiled Mini Buddha Jumps Over the Wall 4.5/5

The second course is Double-boiled Mini Buddha Jumps Over the Wall in Thick Chicken Broth. Much consideration has been given to the preparation work. As boiling the soup for too long may cause it to be overly "heaty", even though the common belief of the brewing period is the longer the better, the soup is boiled for only 2 hours, and then simply let it sit for a period of time for the ingredients to slowly release their nutrients. Hence the soup, even with its clear consistency, laced my lips with a gelatinous layer with every sip.

Steamed Prawn with Crab Roe 4.5/5

Next up was Steamed Prawn with Crab Roe and Jade Sauce on Egg White. I like how the crab roe gives that boost of texture to the egg white and fire up the dish with its vibrant colour and flavours.

Moving on to a more highly flavoured dish, we had Deep-fried Beef Cheek with Radish and Sakura Shrimps in Chu Hou Sauce. Radish is a winter produce that is good for nourishing, and its qualities are apt to pair with meat. The beef cheek has been braised for 4 hours before being deep-fried. I enjoy the paper-thin tempura-like crust, which further brings out the tenderness of the beef and its gelatinous qualities.

To balance the heavier course, the meal will end with a very light Simmered Inaniwa Udon with Scallop and Tomato. With the soup so flavourful yet gentle, I believe I could finish it even if the portion is that of a standard ramen bowl.
