One-Ninety Bar @ Four Seasons Hotel Singapore - Introduces Garden Café's New Daytime Offerings

One-Ninety Bar at Four Seasons Hotel Singapore recently introduced Garden Café’s new daytime offerings, featuring hand-crafted pastries, sandwiches, wholesome mains and sweet treats, available for dine-in or takeaway. Conceived as an alfresco terrace extension of One-Ninety Bar, Garden Café offers both indoor and outdoor seating, inviting diners into a close-to-nature setting. The new menu is served daily from 11am to 6pm, bringing a more intimate and cosy café ambience to the space. The display counter features a lineup of freshly baked viennoiserie, including butter croissants, pain au chocolat, and almond croissants, alongside a rotating selection of seasonal sweet treats.

Open-Faced Chicken Cordon Bleu 4/5

The main menu ranges from light bites to more hearty options, including an Express selection of dishes designed for a quicker lunch. We tried the Open-Faced Chicken Cordon Bleu ($24) and Maccheroni al Formaggio ($28). While these are intended as express items, both are surprisingly indulgent. The Open-Faced Chicken Cordon Bleu features Cotto ham sandwiched between two pleasingly tender, lightly crusted chicken cutlets, with melted Fontina binding everything together. The mesclun salad on the side, however, seemed more like an afterthought.

Maccheroni al Formaggio 4/5

Maccheroni al Formaggio offered an interesting take on Mac & Cheese. The macaroni was well baked and creamy, with a blend of artisanal cheeses that balanced sweet and savoury notes. Eating it together with the soft pumpkin helped to cut through the richness of the cheese. I think switching to a starchier, denser variety of pumpkin would have worked even better, adding more flavour and texture than the current one, which was somewhat watery and fibrous.

English Breakfast Royale Sandwich 3.5/5

From the All-Day Brunch, the English Breakfast Royale Sandwich ($26) brings together all the elements of a big breakfast. The muffins are slathered with mashed avocado, then stacked with sautéed mushrooms, a pork sausage patty, and gorgeous farm eggs, before being crowned with crispy bacon.

Singapore Chilli Crab Omelette 4.5/5

The Singapore Chilli Crab Omelette ($32) impressed me even more, with a tantalisingly chubby, fluffy omelette topped with a meaty chilli crab sauce. The sauce carried a good amount of heat, which complemented the buttery omelette nicely.

Vanilla French Toast 4.8/5

It’s been a while since I last had a French toast as well done as the Vanilla French Toast ($18). The toast had an almost spongy texture, which I adored, with caramelised, buttery edges adding a lovely contrast.

Signature Salmon Poke Bowl 5/5

Power Bowls offer lighter and more nourishing alternatives, and we tried the Signature Salmon Poke Bowl ($24). It comes with soy-marinated salmon, multigrain rice, shimeji mushrooms, pickled daikon, shredded red cabbage, wakame and avocado, topped with an onsen egg and truffle miso to bring everything together. The pearly multigrain rice brought a beautiful nutty, wheaty flavour to each mouthful, while the savoury miso sauce, accented with truffle, made the bowl addictive. They also offer a range of sandwiches to choose from.

Prawn Aglio Olio Sandwich 4.5/5

The Prawn Aglio Olio Sandwich ($18) was flavoursome, with chunky prawns and sweet, smoky roasted bell peppers, alongside pickled red onion, cucumber and tomato for added freshness.

For desserts, we tried the Valrhona Dark Chocolate Mousse ($16), Pandan Kaya Cake ($14), Citrus Petite Gâteau ($14), Strawberry Financier ($14), and Tiramisù Classico ($16). The latter was undisputedly the crowd favourite. The tin brought together espresso-soaked ladyfingers, mascarpone cream and cocoa, with just the right amount of sweetness. I’m not usually a fan of entremets, so another favourite was the Strawberry Financier. The financier itself was delicious, and the combination of luscious Chantilly cream and strawberries on top elevated the decadence.

Pandan Espresso Martini

To complement the menu, we also offer a curated selection of signature beverages with a Singapore touch. Highlights include the Kopi Cream, Peanut Butter and Black Sesame Lattes, Grapefruit Tonic Espresso and Pandan Espresso Martini ($20).

Chef Han’s Kacang Putih ($10) is a nostalgic opener elevated with finesse — rempah-spiced macadamias, crunchy muruku and candied pistachios come together in a fragrant medley that reflects the harmony of Malay, Indian and Chinese influences. Each component is carefully seasoned in-house, resulting in a snack that is both familiar and refined.

Popiah Tarts 4/5

Equally inventive are the Popiah Tarts ($18). Built on delicate tart shells fashioned from popiah skin, each bite delivers a complex interplay of textures — from the sweetness of braised jicama to the umami richness of gambero rosso prawn and lap cheong, punctuated by dashi jelly and bursts of finger lime. It’s a one-bite experience that captures the essence of popiah in a completely new form.

Cereal Corn Ribs 4.2/5

The Cereal Corn Ribs ($24) offer a playful nod to zi char culture, swapping prawns for sweet corn ribs, fried to a crisp and coated in an aromatic cereal mix. Paired with a nostalgic sweet curry dip, it cleverly evokes familiar flavours while presenting them in a lighter, vegetarian-friendly format.

Chef Han’s Signature Chilli Crab Ice Cream 3.8/5

Pushing boundaries further is the Signature Chilli Crab Ice Cream ($32), an unexpected yet surprisingly harmonious combination of Japanese zuwaigani crab, tomato, and strawberry elements. Each spoonful balances savoury, sweet and tangy notes, challenging perceptions of what a dessert can be.

The Alaskan King Crab Leg ($108) is simplicity at its finest — charcoal-grilled and brushed with brown butter, letting the crab’s natural sweetness shine. The accompanying white pepper and salted egg sauces offer diners a choice between elegance and indulgence.

The MIL-LY Smashed Burger ($28) pays homage to Singapore’s beloved Ramly burger, upgraded with juicy Wagyu patties, caramelised onions, and a rich house-made sauce. Messy, satisfying and indulgent, it captures the spirit of late-night supper culture with a premium twist.

One of the more intriguing dishes is the Grilled British Cod’s Head ($36), a bold reinterpretation of assam fish head curry. The use of beurre blanc introduces a French touch, while pickled vegetables and crispy prata anchor the dish in local familiarity.

Meanwhile, the Chicken Rice Paella ($24) bridges two comfort food icons. Cooked with pandan-infused stock and finished with a coveted crispy base, the glutinous rice is paired with roasted chicken and classic condiments, creating a dish that feels both nostalgic and refreshingly new.

Peranakan Spritz 

Under the direction of Vijay Mudaliar, the cocktail programme is just as thoughtful, weaving local narratives into each glass.

The Peranakan Spritz ($26) is light and aromatic, combining Hendrick’s Gin and St-Germain with clarified calamansi, coconut and ginger flower. The addition of kueh salat as a garnish ties the drink back to its cultural inspiration.

The Whisky Green Tea ($26) revisits a familiar nightlife staple, elevating it with sencha distillate, yuzu and a delicate matcha foam for a more refined expression.

The Milli 

The Milli ($28) is a playful revival of the forgotten Million Dollar cocktail, originally created in Singapore by the same bartender behind the iconic Singapore Sling. This modern rendition swaps in a house-made mandarin grenadine, lifted with bright notes of yuzu and pineapple, before being rounded off with fino sherry and dry vermouth. The result is a beautifully balanced cocktail that leans dry yet aromatic, offering a refined, contemporary take on a historic classic.

Bandung Kakigori 4/5

Ending on a high note is the Bandung Kakigori ($28), a collaborative dessert that encapsulates nostalgia and creativity. Layers of pickled fruits, nata de coco, ispahan sorbet and sake kasu come together beneath a cloud of shaved ice, finished with meringue and rose liqueur. Each spoonful evolves in flavour, making it as dynamic as it is refreshing.

At the carving station, diners can look forward to hearty centrepieces such as the tea-smoked whole lamb leg and the lemongrass & coconut-roasted wagyu sirloin. Both offerings deliver bold flavours and succulent textures, making them particularly enjoyable for those who appreciate richly prepared meats.

Mini Wagyu Slider

The Mini Wagyu Sliders are also worth a mention, featuring juicy patties layered with aged cheddar and caramelised onions, and nestled within fluffy brioche buns. Despite their modest size, these bites are surprisingly satisfying and well-executed.

Foie Gras/Corned Beef Hash

A key highlight of the brunch is the reimagined lineup of individually plated chef’s signatures, elevating the dining experience beyond the traditional buffet. Favourites include the pan-seared Foie Gras, rich and buttery with a beautifully caramelised exterior, as well as the indulgent corned beef hash with soft scrambled eggs, finished with black truffle essence and caviar.

Chawanmushi

The Lobster and Yuzu Chawanmushi is another refined creation, delicately steamed in kombu dashi and topped with ikura, delivering a silky texture, umami-rich flavours, and a gentle citrus lift.

Seared Scallop

Equally noteworthy are the seared Scallop à la Provençale, served with a smooth cauliflower velouté, brown butter and crisp capers. The dish offers a harmonious balance of richness and subtle sweetness, complemented by layers of texture.

The Smoked Salmon and Trout Roulade presents a lighter yet flavourful option, paired with dill crème fraîche, pickled shallots and rye crisps. The combination brings together freshness, tanginess and a pleasant crunch.

Singapore Chilli Mud Crab/Roasted Meats

Beyond the plated selections, the buffet continues to impress with Estate’s signature spread of international and local favourites, offering diners a wide variety of options to explore throughout the afternoon. Among the highlights are the Singapore Chilli Mud Crab served with mantou, as well as roast meats such as Five-spiced Roasted Duck, Garlic-crusted Roasted Chicken, and Roasted Pork, all of which deliver familiar, comforting flavours.

Lobster Laksa

Another highlight is the noodle bar, where freshly prepared bowls take centre stage. The Lobster Nyonya Laksa stands out with its rich, aromatic broth. At the same time, other options such as the King Crab Laksa and Yunnan Cong You Ban Mian provide equally satisfying alternatives for those craving something warm and hearty.
