Ash & Elm @ InterContinental Singapore - Celebrate Hygge With New Nordic Sunday Champagne Brunch

Ash & Elm at Intercontinental Singapore launches a new Nordic-themed champagne brunch, inspired by the culinary philosophy from the wintery Northern Europe regions. Besides the classic Nordic dishes, the buffet also showcases a variety of the finest produce flown in exclusively from Iceland, Finland and Norway.

Products and dishes from the likes of Finland and Iceland were not commonly found in Singapore, which is why Chef Eric Neo, Singapore's first Nordic-Asia Culinary Ambassador, appointed in 2018, heads up this Nordic Sunday Champagne Brunch in order to bring awareness to this exquisite cuisine and enhance food diversity in Singapore at the same time.

Kickstart the feast with the dainty appetisers from the mini appetisers gallery. We loved how plump and juicy the shrimps were for the Shrimp Salad with Dill and Capers, while the Beetroot and Gin Cured Salmon with Pickled Cucumber was a refreshing combination.

Another refreshing appetiser is the new Potato Salad with hard-boiled egg. The addition of the apples added a subtle sweetness to the sourish pickles.

Indulge in a slew of crowd favourite dishes such as the Pan-seared Salmon with lemon herb and butter sauce, and tender Lamb and Cabbage Stew with Black Pepper from the Hot Food section.

For meat lovers, head over to the live station for their succulent Beef Wellington, and Parchment Roasted Cod with fennel, lemon and tomatoes.

Not to be missed is their premium seafood on ice presented on a long table, including the chilled tiger prawns, black mussels, Boston lobsters, clams, Finnish crayfish, and shucked oysters with condiments and sauce.

A selection of caviar and roe, such as Queen Kaluga Caviar, Ikura, Avruga, Wasabi Tobkio, Ebiko are displayed on the caviar counter with condiments and blinis.

End the meal on a sweet note with their dazzling array of desserts from the Rhubarb Cake, Summer Berries Pie to the Lingonberry Creme Brulee.

For something lighter, opt for some ice cream from their ice cream counter, with popular flavours such as the green tea and Thai milk tea. Don't forget to dip the condiments provided into their chocolate fountain too.

Elevate the brunch experience with a handcrafted gin cocktail, Aurora, inspired by the Northern lights. Concocted using Metsis Gin, specially imported from Estonia for brunch. It is available for top-up at $15 nett per glass.

Curious Palette @ Prinsep Street - Presents A New Menu Of Tantalising Creations By Consultant Chef Desmond Shen, Formerly From Magic Square

This June, Curious Palette collaborates with Magic Square alumnus, Chef Desmond Shen to roll out a new menu with expanded offerings. The tantalising line-up of starters and sides combine seasonal vegetables, pristine seafood, and robust meats with house-made sauces and dips to form inventive and sophisticated creations to pique your tastebuds.

Together with the Curious Palette team, Consultant Chef Desmond Shen has created a menu encompassing an all-day selection of starters and sweets (available from 9am – 10pm), brunch (9am – 3pm), lunch (12 – 10pm), and dinner (6 – 10pm).

To kickstart our meal, we had the appetiser, Tomato, Tamarind Ponzu ($10.90) which is a refreshing palate-cleanser with its plump and juicy tomatoes, along with yuzu and pickled lemon to enliven the dish with a subtle citrusy, tangy flavour.

Fried Cauliflower with Fish Sauce Caramel 4.2/5

The Fried Cauliflower with Fish Sauce Caramel ($11.90) was a highly addictive snack comprising of crispy battered and fried cauliflower florets dusted with curry powder. The fragrant lemon emulsion provides a tangy contrast to the luscious house-made savoury-sweet fish sauce caramel.

Sugarloaf Cabbage with Seaweed Butter 4/5

The Sugarloaf Cabbage with Seaweed Butter ($12.90) come in a bundle of juicy, roasted cabbages and a generous sprinkling of toasted nuts, seeds, buckwheat and crispy curry leaves. The cabbage boosts a natural sweetness to it, while the toasted nuts add a nutty, smoky aftertaste. The dish is also accompanied with an umami creaminess of the seaweed butter, and a perfectly poached egg to harmonise the various components.

Mentaiko Belacan Pasta 4.2/5

The Mentaiko Belacan Pasta ($18.90) comprises creamy al dente pasta tossed in a heady sauce prepared with prawn and shallot oil, butter, and a hint of belacan to give it a rich, briny umami flavour. Topped with a trio of charcoal-grilled tiger prawns and chilli powder to complete the dish.

Cray Roll 3.8/5

The Cray Roll ($19.90) comes in generous, tender chunks of crayfish and ebikko stuffed into a fluffy, toasted brioche roll. Topped with prawn mayonnaise and fried capers which adds an umami creaminess to the roll, and served with a pile of crispy golden shoestring fries.

Slow Cooked Shortrib 4/5

The Slow Cooked Shortrib ($29.90) features a beef short ribs sous vide in soy sauce, mirin, burnt onions, and apple juice. It is finished off with treacly burnt soy and brown butter. The juicy short rib boosts a fork-tender consistency, with slightly crispy edges which adds a charred smokiness to the meat. It is best enjoyed wrapped in fresh lettuce, with pickles and yuzu kosho for a touch of tang.

Kaya, Coffee Butter 3.5/5

End the meal on a sweet note with the Kaya, Coffee Butter ($9.50) which features a crispy buttered and toasted white bread with a generous spread of kaya (coconut jam) made with gula melaka (palm sugar), and a thick slice of fridge-cold coffee butter tucked within. For the quintessential experience, dip the kaya toast in the accompanying saucer of sous vide egg and espresso shoyu (soy sauce).

The Salted Egg Crayfish is one of my favourite. Fresh and tender, the crayfish comes slathered in a robust salted egg sauce with a hint of spice, no doubt one of the most popular dish as it was gone within minutes from the buffet table.

Dive right into their Singapore Chilli Crab with Mantou. With huge chunks of fresh crab drenched in a sweet and spicy chilli sauce, don't forget to dip and soak the deep-fried mantou for maximum enjoyment.

Reunite with your family and friends over scrumptious spreads of not only traditional Chinese New Year cuisine but Asian and international dishes as well, such as the Lamb Leg with Brown Sauce and Spaghetti Aglio Olio.

Wine & Chef @ Keong Saik Road - Hearty Italian Fare With Largest Range Of Exclusive Italian Wines

I visited Wine & Chef at Keong Saik Road  back in May 2017 when it first opened its door. It is good to see that the restaurant continues to serve up Italian fare incorporating Asian ingredients to pair with their range of exclusive Italian boutique wine. My re-visit is to checkout their newly revamped menu put together by the new Chef Darence Wee, previously from Les Amis group.

Gorgonzola & Italian Ciabatta 3.5/5

Before starting with the mains, you may want to order some small bites to nibble on such as the Gorgonzola & Italian Ciabatta ($9). I am not a big fan of blue cheese as I find them too sharp for my liking. However the gorgonzola, known as one of Italy's oldest blue cheese, did not turn out that piquant. You can also pair with the honey on the side, the sweetness definitely make it more palatable and enjoyable for me.

Pan Seared Foie Gras 4/5

Pan Seared Foie Gras ($16) is quite a common dish on any restaurants' menu. What stood out is the homemade apple and thyme brandy compote that helps to cut through the richess of the fatty foie gras.

Scallop Capellini 4.5/5

Not to be missed is the Scallop Capellini ($28). The pasta tossed in truffle and soy sauce is served chilled so it is very refreshing. It comes with plump and sweet air-flown Hokkaido scallop crowned with ikura. What elevated the whole dish for is the fried shallots, shio kombu and furikake. They added fragrance, sweetness and crunch to complete the dish.

Nduja Pasta 4/5

One of the crowd favourite is the Nduja Pasta ($28) with crayfish. The specially imported Nduja salami from Calabria, South Italy is tossed in tomato sauce for that sweet robust flavour, coating the pasta for the slurping goodness.

Linguine al Granchio 4.2/5

If you prefer your pasta to be more creamy and has that seafood flavour, then go for the Linguine al Granchio ($38). It comes with painstakingly freshly hand-peeled Sri Lankan crabs. The Chef even added crab roe into it, for that extra indulgence.

Pork Roulade 4.5/5

My favourite dish goes to the Pork Roulade ($24). The pork roulade comes with a crispy layer of crackling skin, with tender and juicy meat. It is smartly paired with homemade achar to cut through that richness. Do call to make reservation for this as only limited portions are available each day.

Venere Rice Pudding 4/5

Same same but different is the Venere Rice Pudding ($10). This is the same dessert which I tried during my first visit. It is a modern twist to the traditional pulut hitam served with vanilla bean ice cream and coconut crumble for a cold and crunchy finish. The difference is the popping candies that is mixed into the desert, giving diners the popping reaction as it dissolved in the mouth.

As this is my re-visit, I did notice some changes. Although the food is still as good, the price has increased. It is not a surprise with increasing ingredients cost and inflation. Proud to be serving the lowest house pour at $7 a glass, it used to be $6. The wine collection has also shrunk from the previous 250 to around 140 exclusive Italian wines now.

The Square Restaruant @ Novotel Singapore Clarke Quay - Launches First Ever Salted Egg Buffet Perfect For Salted Egg Lovers

Located on the 7th level of Novotel Singapore Clarke Quay, The Square Restaurant presents its first ever Salted Egg "Go For Gold" Buffet available from 1st July to 30th August 2018. Relish in exciting salted egg items from mains, seafood to desserts where you can find a piece of gold heaven in every corner.

The star of the show would be the golden velvety salted egg fountain positioned prominently as the centerpiece of the buffet.

There are also a large variety of condiments on sticks to dip into the salted egg fountain such as the Crispy Chicken Wings, Chicken Yakitori, Sausages, Fried Tofu, Assorted vegetables and more.

Other than the salted egg fountain, there are also a number of scrumptious salted egg offerings to feast into, such as their signature Salted Egg Crayfish, as well as the Salted Egg Mac and Cheese.

While the Salted Egg Mac and Cheese is enjoyable, the salted egg flavour incorporated within the dish could be stronger.

The desserts section features a variety of dessert options such as the fluffy Japanese cheese cake, lemon Swiss Roll and more. It showcases 2 salted egg highlights: the Salted Egg Cheesecake and Salted Egg Chilli Chocolate Mousse.

While the Salted Egg sauce drizzled on the Salted Egg Cheesecake might be a little too subtle, I still enjoyed the creamy cheesecake base. The Salted Egg Chilli Chocolate Mousse has a rather subtle salted egg flavour with a stronger chocolate base. Each bite emits a sharp spicy note from the chilli within the mousse cake.

There are also a pancake making machine and an ice cream counter in a corner of the restaurant, which might be easily missed if you were not informed. Press the start button on the pancake machine and watch the machine whirring away as it churns out 2 small odd-shaped pancakes each time. The warm Pancakes boast a soft and fluffy texture, which was rather decent considering they were machine-made, and also complimented well with the ice cream.

Apart from the salted egg highlights at the buffet, there are also a variety of other non-salted options as well, where diners can continue to indulge in if they get an overdose of salted egg. There are the Thai Style Chicken Fried Rice, Pork Ribs with Honey Sauce, Tofu with Prawns, Swedish Style Meatballs and more.

For the seafood lovers, leave some space for the Seafood on Ice inclusive of Fresh Oyster, Live paoched Tiger Prawns, Scallops, Black Mussel and Sashimi.
