Belly Umami Private Dining - A Memorable Cantonese-Inspired Feast by Chef Bernard Tan in MacPherson

BellyUmami19

Recently, I gathered with my foodie friends for a meal at Belly Umami Private Dining, which has moved to its new location in MacPherson. I first got to know Chef Bernard Tan when he participated in Mediacorp’s cooking competition, King of Culinary (δΈ‰ζŠŠεˆ€). Since then, I've wanted to experience his cooking at his private dining establishment.

Thanks to my friend, who secured a coveted slot, I finally had the opportunity to savour Chef Bernard’s creations. Known for his inventive approach to familiar flavours, the chef blends Cantonese cooking techniques with bold Nanyang influences, offering a menu that showcases both comforting classics and creative interpretations of local favourites.

BellyUmami2
Cantonese Charcoal Soup Coconut Chicken 5/5

As with any traditional Cantonese dinner, our meal began with a pot of Cantonese Charcoal Soup Coconut Chicken, a nourishing soup simmered over charcoal for hours to extract the essence of its ingredients. The pot was generously filled with young coconut, snow pear, old cucumber, chicken, dried seafood, waxed ham and dates. Each ingredient added complexity to the broth, creating a deeply flavoured soup with layers of natural sweetness and savoury richness. The slow cooking process let the flavours meld beautifully, producing a comforting, well-rounded broth that was neither too heavy nor overpowering. This was the kind of soup that reminded me of traditional Cantonese home cooking, where patience and carefully selected ingredients make all the difference. It was so satisfying that everyone at the table went back for second and even third helpings.

BellyUmami7
Crispy Lychee Pops 4/5

Next came the Crispy Lychee Pops, a playful creation that surprised us with its unusual combination of ingredients. The stuffed lychees were coated in a light tempura batter and deep-fried until golden brown, delivering a delicate crunch on the outside while retaining the fruit's natural sweetness. What made this dish particularly interesting was the choice of fillings. The oysters brought a savoury, briny note, while the Nanyang achar added a tangy, refreshing contrast. Ikura lent little bursts of oceanic salinity, and mint provided a fresh aromatic finish. The combination might sound unconventional, but the contrasting flavours and textures came together more harmoniously than expected. The crisp batter, sweet lychee, and savoury seafood created an intriguing interplay of sweet, sour, and savoury notes. It was a creative fusion appetiser that offered something different from the usual starters.

BellyUmami9
AngMo SioBa 5/5

One of the evening's highlights was the AngMo SioBa, Chef Bernard's modern take on the beloved local sio bak (roast pork belly). Prepared with Chardonnay, thyme and garlic, this dish puts a Western-inspired spin on a familiar local favourite. It is also Belly Umami's winter Christmas bestseller and a popular returning-diner request. The star of the show was undoubtedly the crackling. The skin was beautifully blistered to a deep golden brown, delivering an exceptionally loud, glass-like crunch with every bite. Beneath the crisp exterior, the layers of pork fat and meat were carefully rendered through slow roasting, resulting in a buttery, melt-in-the-mouth texture while keeping the meat juicy and flavourful. The Chardonnay, thyme, and garlic added aromatic nuances to the pork, lending it a more refined profile without overshadowing the meat's natural richness. The contrast between the shatteringly crisp skin and tender, succulent pork made each bite thoroughly satisfying. Good sio bak is all about getting the crackling right, and this version certainly delivered. With its precise cooking, excellent texture, and familiar comfort, the AngMo SioBa was a standout dish that deserved its perfect score.

BellyUmami12
Assam Wild Caught Prawns 4.5/5

For seafood lovers, the Assam Wild Caught Prawns offered a punchy taste of Nanyang heritage cooking. Featuring wild-caught Angkar prawns, the dish showcased the seafood's natural sweetness and firm, succulent texture. The prawns were paired with a robust assam sauce made from house-pounded rempah. The sauce opened with an appetising tanginess, followed by a warming chilli heat and a depth of spice that made it particularly moreish. Rather than overwhelming the prawns, the bold seasoning complemented their clean, oceanic sweetness. The interplay between the sour, spicy gravy and the naturally sweet prawn meat was especially satisfying. It was the sort of dish that would appeal to those who enjoy their seafood with a strong Nanyang flavour profile, and the generous size of the prawns made them even more enjoyable.

BellyUmami16

BellyUmami17
Cabbage Roll 4.2/5

The Cabbage Roll offered a gentler interlude amid the evening's more robust flavours. Each cabbage leaf was carefully rolled around a savoury filling of minced pork, shiitake mushrooms and water chestnuts, then finished with chicken abalone sauce. The filling was well balanced, with the minced pork providing richness, the shiitake mushrooms contributing an earthy depth, and the water chestnuts adding a welcome crunch. The cabbage itself was tender and naturally sweet, complementing the savoury meat filling without becoming overly soft. The chicken abalone sauce brought the components together with an additional layer of umami. Although less dramatic than some of the other dishes, this comforting, thoughtfully prepared creation showed how familiar ingredients can work beautifully together.

BellyUmami19

BellyUmami21
Live Sri Lankan Crab Beehoon 4.5/5

The Live Sri Lankan Crab Beehoon holds a special place in Belly Umami's story, being the original dish that helped establish Chef Bernard's private dining concept. It remains a signature offering on the menu. The dish featured live Sri Lankan crab cooked in a creamy, milky broth made with chicken and sole-fish stock. Cooking the crab directly in the simmering broth let its natural sweetness and oceanic juices mingle with the stock, creating a rich, comforting base with a distinct seafood character. The broth was creamy and sweet, coating the beehoon with its savoury goodness. Both thin and thick beehoon were served, giving diners a choice of textures. Personally, I preferred the thin beehoon, as its finer strands absorbed the delicious broth more readily, allowing the flavours to shine through with every mouthful. The crab added another dimension to the dish, with its naturally sweet meat complementing the soup's richness. This hearty, satisfying comfort food showed why the dish has become such an important part of Belly Umami's identity.

BellyUmami23
Charcoal Poached Fruits 3.5/5

We ended the meal with Charcoal Poached Fruits, a dessert featuring charcoal-poached pear paired with peach and longan. Liquor-soaked peach gum was added for a delicate, gelatinous texture, while a scoop of ice cream provided a creamy finish. The fruit brought gentle natural sweetness, while the peach gum added an interesting texture. The combination offered a lighter conclusion after the rich, savoury courses, with the ice cream providing a pleasant contrast to the fruit. While it was a refreshing way to round off the meal, the dessert was less memorable than the savoury highlights that had come before it.

With private dining spots in high demand, securing a seat at Belly Umami is certainly worth considering for those who enjoy Cantonese-inspired cooking with a distinctive Nanyang touch. If you are planning a gathering with fellow food lovers and looking for a meal that goes beyond the usual restaurant experience, Chef Bernard's cooking offers plenty to savour.

Lo Hey HK Seafood @ One Holland Village - Launches Cantonese Sizzling Claypot Series and Hairy Crab Roe Noodles

LoHeyClaypot4

In celebration of its first anniversary, Lo Hey HK Seafood at One Holland Village unveils its new Cantonese Sizzling Claypot Series, a line-up of over 20 cook-to-order dishes inspired by the comforting, high-heat claypot cooking found in Hong Kong’s neighbourhood dai pai dongs. Each dish is fired to order, arriving at the table bubbling and aromatic, capturing the essence of wok hei within the confines of a claypot.

LoHeyClaypot6

LoHeyClaypot9
Signature Hairy Crab Roe Noodles 4.2/5

Leading the new additions is the Signature Hairy Crab Roe Noodles ($22.80). Cloaked in a thick, golden sauce made from a generous blend of hairy crab roe and meat, equivalent to about three crabs per portion, the noodles are luxuriously coated in a buttery, velvety emulsion. The sauce delivers a deep umami richness with a natural sweetness from the roe, creating an indulgent, almost creamy finish. Midway through, a drizzle of the accompanying black vinegar works wonders, cutting through the richness with a gentle acidity that lifts and refreshes the palate.

LoHeyClaypot20

LoHeyClaypot11
Double Boiled Coconut Chicken Soup 4.5/5

The Double Boiled Coconut Chicken Soup ($14.80) offers a soothing contrast. Served within a whole young coconut, the broth is a harmonious blend of naturally sweet coconut water and slow-simmered chicken stock, lightly infused with Chinese herbs. The result is a clear yet flavourful soup that is both nourishing and refreshing, with tender chicken pieces nestled within. The natural sweetness from the coconut remains clean and restrained, complementing rather than overpowering the savoury depth of the broth.

LoHeyClaypot21
Claypot Black Pepper Angus Beef Slices 4.5/5

Among the claypot highlights, the Claypot Black Pepper Angus Beef Slices ($24.80) impresses with both aroma and texture. Served sizzling hot, the beef slices are tender with lightly caramelised edges from the intense heat of the claypot. The black pepper sauce is robust yet balanced, aromatic and savoury without excessive heat, allowing the natural flavours of the beef to shine through.

LoHeyClaypot28
Sizzling Chicken Claypot with Ginger 4/5

The Sizzling Chicken Claypot with Ginger ($16.80) distinguishes itself by using sand ginger instead of the usual old ginger. This lends a warmer, more rounded fragrance that is savoury rather than sharp. The chicken benefits from the searing heat of the claypot, achieving lightly crisped edges while remaining succulent and juicy within.

LoHeyClaypot36
Claypot Squid with Shiso Leaf 4.5/5

Equally noteworthy is the Claypot Squid with Shiso Leaf ($18.80). The squid is expertly scored and flash-cooked at high temperatures, resulting in a tender yet pleasantly bouncy texture with lightly charred edges. The inclusion of shiso leaf adds a unique dimension: its bright, herbaceous notes, with hints of mint and citrus, cut through the savoury sauce, elevating the dish beyond the usual zi char rendition.

LoHeyClaypot33
Tai O Shrimp Paste Choy Sum 4/5

For vegetables, the Tai O Shrimp Paste Choy Sum ($14.80) delivers a punchy balance of flavours. The greens retain their crunch and natural sweetness, while the fermented shrimp paste imparts a bold, umami-laden depth. Slight caramelisation from the claypot further enhances the savoury profile.

LoHeyClaypot40
Salted Egg Japanese Pumpkin in Claypot 4.2/5

The Salted Egg Japanese Pumpkin in Claypot ($12.80) showcases the use of kabocha pumpkin, prized for its naturally sweet, chestnut-like flavour and firm texture. The salted egg yolk sauce clings beautifully to each piece, its buttery and savoury richness complementing the pumpkin’s earthy sweetness. Subtle hints of chilli and curry leaves add just enough complexity to keep the dish from becoming overly rich.

LoHeyClaypot46
Claypot Pork Belly with Pickled Chillies 4.2/5

For something more robust, the Claypot Pork Belly with Pickled Chillies ($16.80) offers a satisfying interplay of flavours. Thinly sliced pork belly is seared until lightly charred, with the fat rendered to a melt-in-the-mouth consistency. The pickled chillies introduce a tangy, vinegary brightness with a hint of fermentation, effectively cutting through the richness and refreshing the palate.

LoHeyClaypot52
Claypot Lemongrass Prawn Balls 4.5/5

Rounding off the highlights is the Claypot Lemongrass Prawn Balls ($22.80). Generously sized prawn balls are flash-seared to achieve a lightly crisp exterior while retaining a juicy, springy interior. Bruised lemongrass releases fragrant citrusy oils into the claypot, infusing the dish with a bright, floral aroma that lingers enticingly.

Overall, Lo Hey’s Cantonese Sizzling Claypot Series delivers both variety and finesse, capturing the spirit of Hong Kong-style claypot cooking with well-executed techniques and thoughtful flavour pairings. The dishes excel in showcasing the interplay of high heat, bold aromatics, and comforting textures, making this a satisfying and timely addition to the restaurant’s menu.

JiangNanChunSpring26-36

At Jiang-Nan Chun, the arrival of spring is marked by a thoughtfully curated seasonal menu, available from 15 March to 15 May 2026. Helmed by award-winning Executive Chinese Chef Alan Chan, the eight-week showcase celebrates the season’s first harvests — tender greens, young shoots, and delicate blossoms — translated into refined Cantonese plates. We experienced the six-course set menu ($238++ per person), a well-paced journey highlighting both technique and seasonality.

JiangNanChunSpring26-4
Amuse Bouche 4/5

The meal began on a refreshing note with a simple yet effective amuse bouche of Pickled Tomato. Light, juicy and naturally sweet, the tomatoes provided a bright, palate-awakening start, gently priming the appetite for the courses ahead.

JiangNanChunSpring26-7
Jiang-Nan Platter 4.2/5

The opening platter presented a trio of delicacies: Marinated Fresh South African Abalone, Honey-Glazed Iberico Pork, and Spiced Fried Scallop. The standout was undoubtedly the marinated abalone, a departure from the usual braised rendition. Here, the abalone retained a delicate bite while absorbing a nuanced marinade that elevated its natural brininess with a gentle layering of flavours. The honey-glazed Iberico pork (char siew) impressed with its succulent texture, offering a pleasing balance of lean meat and fat, its caramelised glaze lending a subtle smokiness and sweetness. Completing the trio, the spiced fried scallop delivered textural contrast. It was crisp on the outside while remaining plump and tender within.

JiangNanChunSpring26-15
Double-Boiled Chicken Soup 5/5

A highlight of the evening, the Double-Boiled Chicken Soup with Sea Whelk, Conpoy and Morel Mushroom was served in a whole coconut, marrying presentation with depth of flavour. Slow-simmered over hours, the soup achieved remarkable clarity while extracting the essence of each ingredient. The natural sweetness of the coconut lent a gentle, refreshing lift, while the conpoy (dried scallops) and sea whelk contributed layers of umami richness. Spring morel mushrooms added an earthy complexity, rounding out the profile. Comforting yet invigorating, the soup struck a beautiful balance between nourishment and refinement, a dish deeply rooted in Cantonese culinary tradition.

JiangNanChunSpring26-23

JiangNanChunSpring26-28
Wok-Fried A5 Wagyu Beef 4.5/5

The Wok-Fried A5 Wagyu Beef with Spring Bamboo Shoots in Black Pepper Sauce showcased a masterful interplay of richness and freshness. The A5 Wagyu, with its intense marbling, was indulgently tender and flavourful, while the seasonal bamboo shoots introduced a crisp, clean contrast. Their subtle sweetness and fibrous crunch helped cut through the richness of the beef, preventing the dish from becoming overwhelming. The black pepper sauce added aromatic heat and depth, tying the elements together into a harmonious, well-balanced plate that felt both luxurious and surprisingly light.

JiangNanChunSpring26-30
Braised White Asparagus in Superior Broth 4/5

Celebrating another prized spring ingredient, the Braised White Asparagus was executed with finesse. Naturally sweet and tender with a gentle crunch, the asparagus absorbed the superior broth beautifully, enhancing its delicate flavour without overpowering it. The addition of bacon introduced a savoury, smoky undertone that provided contrast and depth, elevating what could have been a simple vegetable dish into something more layered and satisfying.

JiangNanChunSpring26-37
Braised Inaniwa Noodles with Australian Lobster and Mushrooms in Shrimp Sauce 4.2/5

The noodle course delivered both elegance and comfort. Silky Inaniwa noodles were paired with tender Australian lobster and fresh mushrooms, all enveloped in a rich shrimp sauce. The lobster’s natural sweetness shone through, complemented by the umami-laden sauce, while the mushrooms added an earthy dimension. The noodles, known for their smooth texture, carried the sauce effortlessly, resulting in a dish that was refined yet approachable, a gentle expression of spring’s lighter, more nuanced flavours.

JiangNanChunSpring26-41

JiangNanChunSpring26-46
Orange Blossom Mousse with Black Sesame Cremeux and White Chocolate 4.5/5

Dessert arrived in a visually charming form, shaped like an orange. Beneath its delicate exterior, the Orange Blossom Mousse was light and aromatic, offering floral citrus notes without veering into excessive sweetness. The black sesame crΓ©meux introduced a nutty depth, while the white chocolate added a creamy richness, tying the elements together. The interplay of flavours was well-judged, resulting in a balanced and refreshing conclusion to the meal.

Jiang-Nan Chun’s seasonal menu is a graceful ode to spring, where premium ingredients and time-honoured techniques come together in a polished, contemporary expression of Cantonese cuisine. Available for both lunch and dinner, the menu is offered as a six-course set ($238++ per person) or Γ  la carte (from $28++), with an optional wine pairing ($85++) to further enhance the experience.

Teochew Ngoh Hiang 4.2/5

The Teochew Ngoh Hiang ($16) is a standout starter, wrapped in caul fat and deep-fried to a satisfying crisp. The filling is generous, featuring prawns, crab, minced pork, pork liver, mushrooms, and water chestnuts, seasoned with a fragrant house-blended five-spice. Paired with chuka chilli and sweet sauce, each bite delivers an elevated take on this familiar Teochew favourite.

Gilmore1
Nourishing Chicken Soup in Coconut 4.2/5

Gilmore5

A comforting bowl with a meaningful backstory, the Nourishing Chicken Soup in Coconut Husk ($28) was created by Chef Chit Pang in honour of his grandmother. Steamed with an aromatic medley of Chinese herbs (red dates, goji berries, codonopsis root, licorice, Solomon's seal, cordyceps flower, and Chinese yam), and free-range GG Poulet chicken, the broth is finished with coconut water and Hakka yellow wine. The result is a light yet flavourful soup, subtly sweet from the coconut, and served with a robust housemade chilli sauce of soy, garlic, and chilli.

Gilmore16
Pesce Assa 4.2/5

The Pesce Assa ($26) features Korean seerfish grilled with sambal and wrapped in banana leaf. Using Gilmore's recipe, the fish is well chosen for its firm texture and ability to carry the sambal's richness. Grilled over charcoal, the dish is aromatic and smoky, finished with coriander and sliced chillies for brightness.

Gilmore30
Ambiler Kachang 4.8/5

A staple from Chef Damian's childhood, the Ambiler Kachang ($18) impresses with its tangy, appetite-whetting profile. Long beans are stir-fried with salted fish, a nod to the dish's humble origins as an economical household dish. Tamarind from Indonesia gives the dish its piquant edge, making it especially effective alongside richer plates. Easily one of the most memorable dishes of the meal.

Gilmore24
Cowdang 4.5/5

The Cowdang ($22) is a nearly forgotten Kristang dish of stewed coconut prawns. Wild-caught Ang Kar prawns are simmered with a fragrant paste of ginger flower, ginger, garlic, and green chillies. Finished with coconut milk, the dish is creamy without being heavy, highlighting the sweetness of fresh seafood. A compelling revival of a heritage recipe at risk of fading from memory.

Gilmore34
Christmas Debal 4.5/5

A Kristang festive classic, the Christmas Debal ($48) transforms the tradition of cooking with Christmas leftovers into a hearty, flavour-packed stew. At Gilmore, the curry comes with smoked ham, bacon bones, roast pork, and chicken, accompanied by homemade vegetable achar and sliced baguette. Tart, spicy, and robust, this is comfort food with deep cultural resonance.

Gilmore39
Sugee Cake with Chantilly 4.5/5

Made using Gilmore's heirloom recipe, the Sugee Cake with Chantilly ($18) is a must-order. Semolina is soaked overnight in butter, then creamed with toasted almonds, brandy, and flour. Baked to a golden crumb, it is rich, aromatic, and indulgent without being cloying. The accompanying chantilly adds a gentle lift.

Gilmore35
Singapore Heritage Kuehs 4.2/5

The Singapore Heritage Kuehs ($8 for 6 pcs / $16 for 12 pcs) feature a rotating assortment of handcrafted kuehs made fresh in-house. Expect familiar favourites such as Kueh Kosui, Kueh Salat, Kueh Ku, Kueh Bingka, Pulut Bingka, and Sarang Semut. A nostalgic, well-executed way to end the meal.
