We start with the Shredded Heura Chicken Salad in Szechuan Style ($8.80) from Crystal Jade La Mian Xiao Long Bao and Jiang Nan. The julienne carrots, cucumbers and red cabbage were served chilled, giving the salad a refreshing and crunchy finishing. I did feel celebratory when pouring the sauce and giving it a good toss before eating, and it somewhat reminds me of Lo Hei.

I have to applaud the team for the Ma Po Beancurd with Minced OmniMeat ($14.80) rendition. It is not a blind tasting, and I already could not tell the difference between real and plant-based meat. On top of the dim sum items, Crystal Jade Hong Kong Kitchen has also introduced several plant-based ala carte dishes in its menu. For example, sweet and sour pork, a classic dish in almost every Chinese restaurant, is given a new form with the Sweet & Sour Heura Chicken with Assorted Fresh Fruits ($16.80). Generous golden-brown deep-fried Heura chicken pieces are cloaked in a tantalising sweet and sour sauce with fresh-cut fruits such as guava, apple, and pineapple.

Last but not least, we round up our plant-based dinner with a bowl of hearty and comforting Handmade OmniMeat Ball Congee ($9.80 per portion) with preserved vegetables and shredded mushrooms. I noticed the use of preserved vegetables in a couple of plant-based dishes. It seems like it is a vital ingredient to elevate the taste of plant-based meats in Chinese cuisine.

Happy Congee (满粥了) @ ARC 380 (Jalan Besar) - Hong Kong Style Chee Cheong Fun And Congee By Former Mui Kee Consultant

Together with my foodie friends, we went down to the food court at ARC 380 on a weekday morning to check out Happy Congee (满粥了), specialising in Hong Kong style congee and chee cheong fun. I understand Seng Kor, a former consultant of Mui Kee Congee in Singapore, is behind the stall offering wallet-friendly congee and chee cheong fun.

Hong Kong Boat Congee 3.8/5, Black Iberian Pork Congee 4/5, Seafood Abalone Congee 3.8/5

We tried a couple of congee on their menu. We ordered the Hong Kong Boat Congee ($6), Black Iberian Pork Congee ($5) and Seafood Abalone Congee ($8). You get a whole abalone for the seafood abalone congee for a mere $8. For the black Iberian pork congee, I felt the pork's savoury sweetness enhances the smooth congee, elevating the flavour. The Hong Kong boat congee comes in second with the bouncy cuttlefish and peanuts for that additional textural contrasts and flavours.

The stall also offers a small selection of snacks to go along with the congee. We had the Mushrooms ($3.80), which is huge, plump and juicy, packed with lovely braising sauce. Other snacks available on the menu are abalone, pickled vegetable, peanut, egg and dough stick.

Char Siew Rice Noodle Roll 3.5/5

Besides congee, another highlight at Happy Congee is their Hong Kong style Chee Cheong Fun. The rice roll is made using the traditional method by laying a cloth on a steaming tray, following with pouring the rice batter onto the cloth, cooking and folding it into a roll.

Rice Noodle Roll with Dough Stick $4

For those that missed travelling to Hong Kong, the Rice Noodle Roll with Dough Stick ($4) and Char Siew Rice Noodle ($4) will bring back fond memories of those yum cha time in Hong Kong. The rice noodle roll with dough stick will delight customers with its crispy and smooth textures, complemented by the flavorful soy sauce and sesame.

Tripe Sauce Rice Noodle Roll 4.5/5

My favourite is the Tripe Sauce Rice Noodle Roll ($3.50) drizzled with sweet and peanut sauce and topped with sesame. The lovely sauce goes very well with the silky smooth chee cheong fun. Both adult and kid will love the combination. It is a taste I am familiar with, bringing back a lot of childhood memories.

Mala Chicken Shred Rice Noodle Roll 4/5

If you are into spicy, you will enjoy the Mala Chicken Shred Rice Noodle Roll ($5). It is a new take of the tradition, incorporating the popular mala sauce into the dish. I was sceptical about the taste, but it turned out the fragrant mala sauce goes well with the rice noodle roll.

Crystal Jade Hong Kong Kitchen @ Great World - Reopens With A New Look And Refreshed Menu

Crystal Jade Hong Kong Kitchen has finally reopened at Great World after undergoing an extensive renovation work. With the reopening, the concept under the Crystal Jade Group has also unveiled a new brand name and refreshed logo, together with a new fresh look and refreshed menu. The refreshed menu will be available from 30 March 2020 at the Great World outlet and progressively roll out at other Crystal Jade Hong Kong Kitchen outlets across the island by mid-April.

Chilled Marinated Turnip with Plum 4.2/5

At first glance, the Chilled Marinated Turnip with Plum ($5.30) looks like watermelon, but they are actually turnip steeped overnight in a Roselle, sour plum and dried orange peel mixture. The result is refreshing, sweet and sour with a crunchy texture.

Crystal Jade Hong Kong Kitchen will be serving dim sum on their menu too. Chef Foo has introduced new moreish spin of the traditional dim sum. We managed to try a couple of them such as the Deep-fried Marinated Egg Coated with Prawn Paste ($5.80), Steamed Prawn Dumpling with Stem Chives ($6.30 for 3pcs) and Pan-fried Pumpkin and Yam Cake ($5.30 for 3pcs).

I enjoyed all the three new dim sum creations. The deep-fried marinated egg coated with prawn paste is like an Asian style scotch egg which I thought is even better than it. I love green chives, and hence the steamed prawn dumpling with stem chives itself is already a winner for me. For a fragrant and textural enjoyment, the pan-fried pumpkin and yam cake will delight one with the alternating layers of yam strips and mashed pumpkin.

Bored of just plain white rice? Now Crystal Jade Hong Kong Kitchen offers two fragrant rice options on the menu. You can choose from either Pork Lardon Rice ($2.80 per pax) which comes with a savoury sauce and crispy lard bits or Scallion Ginger Rice ($2.80 per pax) crowned with aromatic fried chopped ginger and spring onion mixture. Both are really tasty and delicious. It has definitely elevated the appreciation of a plate of plain white rice.

Sauteed Chinese Spinach with Prawn Paste and Fish Roe 4/5

For diners looking for a complete meal, there are also new a la carte dishes from the new menu. The Sauteed Chinese Spinach with Prawn Paste and Fish Roe ($16.80) comes with popping surprises from the fish roes, giving the greens an element of fun and texture contrast. However, the prawn paste flavour was not distinctly, it may disappoint those looking forward to the strong prawny flavour.

Crispy-fried Homemade Organic Tofu with Preserved Vegetables and Prawn 4.5/5

A simple dish but elegantly presented is the Crispy-fried Homemade Organic Tofu with Preserved Vegetables and Prawn ($16.80). The soft and silky tofu is homemade using organic soy milk and eggs. It is then deep-fried and crowned with flavourful stir-fry prawns, chai poh and dried shrimp.

Two-Combination Roasted Meat Platter

We also had the Two-Combination Roasted Meat Platter ($22.80) which comprised of roasted duck and signature port belly (+$3). The roasted duck is fat and tender, with a delectable layer of crispy skin. Not to be missed is the signature pork belly that has a good ratio of lean meat and fat, with a delicate balance of sweetness and an exterior crispy char.

Poached 'Long Hu' Garoupa Fillet with 'Yunan' Ham in Thick Soup 4.5/5

Instead of double-boiled soup, let me introduce you to the Poached 'Long Hu' Garoupa Fillet 'Yunan' Ham in Thick Soup ($30.80) which is just as good. The 'Long Hu' garoupa fillet is poached in a silky and milky-white pork bone soup, fortified with Yunnan ham. One can also find other ingredients such as enoki mushrooms, black fungus, bamboo pith, ginger, garlic and wolfberries in the robust soup.

Abalone and Shredded Kampung Chicken with Conpoy Congee 4.2/5

Last but not least, we wrapped up our dinner with the Abalone and Shredded Kampung Chicken with Conpoy Congee ($28.80) served in claypot. The portion is good for 2 to 3 person. Flavourful, and velvety-smooth, this is both comforting and satisfying. No additional seasoning is needed.

Ah Chiang Porridge is an old school Cantonese style porridge concept started in 1971. With its original store located at Tiong Poh Road in Tiong Bahru estate, Ah Chiang now ventures into the shopping mall, opening its newest outlet at the basement of JEM.

I decided to have the Mixed Pork Porridge with an Egg ($5.40). The hearty and comforting bowl of congee comes with slices of kidney and pork, garnished with spring onion. The silky smooth porridge is already lightly seasoned, hence, in my opinion, there is no need to add any more seasonings. I also ordered a bowl of You Tiao ($2) to go with the congee. However, the youtiao is the doughy type while I prefer the more crispy type.'

Salted Fish Bean Sprout 3.5/5

To complete the meal, there are several side dishes on the menu. I ordered the Salted Fish Bean Sprout ($5) and Ginger Chicken ($6). The bean sprouts were plump and crunchy while the ginger chicken was tender. However, I like the fact that the chicken is chilled. It is too cold to be enjoyed.

Overall if you looking for something light and comforting, Ah Chiang's Porridge will be a good choice for a satisfying meal. However, do note that the place is quite small; hence it may be better to just takeaway to dine at the common dining area near the outlet.

Blossoming Fortune, Chinese New Year Celebration At Conrad Centennial Singapore

For the Year of Rat, Chef Ku Keung from Golden Peony at Conrad Centennial Singapore has prepared a selection of signature dishes, as well as six specially curated set menus for a gastronomic reunion experience. Available for more dine-in and takeaway is the Fortune Salmon and Crispy White Bait Yu Sheng ($68/ $128). The addition of the crispy whitebait provides the extra textural enjoyment, tossing to a year of abundance and prosperity.

The sweet and plump New Bedford Scallop is dressed in Butternut Pumpkin Sauce and topped with  Crispy Potato Crumbs for texture.

The highlight goes to the Prosperity Eight Treasure Congee with Black Truffle. Not only does it look pretty in presentation, but it also tastes heavenly too. The comforting bowl of congee is smooth and silky, with the taste further elevated by the addition of black truffle. I would add the pickled lettuce and youtiao for complete enjoyment of the congee.

A new creation is the Steamed Sea Perch with Spiced Coconut Milk. It is an adventurous take for a Cantonese restaurant. It is like having curry fish head but in a more refined manner, though I wish the spiced coconut milk can be spicier.

Wrapping up our meal is the Chilled Dragon Fruit with Crystal Ball. The chilled soup tangy, yet refreshing with a subtle fruity sweetness.
