KOAL @ Shaw Centre - Latest Concept by Les Amis Group

Koal7

KOAL at Shaw Centre is the latest addition to Les Amis Group's array of award-winning restaurants across Singapore. It is an all-day grill restaurant that marries Asian and Western flavours and grilling techniques centred on the open flame.

Koal1
Chunky Salmon Sashimi 4.5/5

We started our dinner with a couple of starters, beginning with the Chunky Salmon Sashimi ($12). I can't make out what is the complementing sauce which is slightly spicy and tangy. The acidity gives the sashimi a refreshing touch.

Koal2
Scallion Salad 4/5

The Scallion Salad ($6) may be seen as a pool of greens, but there is more than meet the eyes. The addition of wakame gives the salad extra textural bite. At the same time, the spicy sesame soy dressing accentuates the earthy note of the shredded scallion.

Koal10
KOAL's Bread Roll 4.8/5

The KOAL's Bread Roll ($8) is a must-have baked with bacon and grilled spring onions. It is so good! The bread roll is fragrant, soft and fluffy. It is even more enjoyable with the accompanying sour cream and chive butter.

Koal3
Red Skin Potato Salad 4.8/5

Words can't describe how delicious the Red Skin Potato Salad ($10) is. It is one of the best potato salads I have eaten. The chunky potatoes are dressed in mentaiko mayo and topped with tobiko. It even comes with a six-minute egg.

Koal4
Crispy Pork Riblets 4.2/5

A delectable starter is the Crispy Pork Riblets ($16). The tender pork ribs come with a bit of heat from the mala honey glaze, topped with peanuts, dried chilli and coriander.

Koal19
Charred Broccoli 4.2/5

The Charred Broccoli ($8) will be a delightful choice for its crunch, deliciously flavoured by the soy pickled onions, sesame dressing, and bonito flakes for a balanced diet.

Koal14
Salmon with Kimchi Butter Sauce 4.5/5

Moving on to the mains, we started with the Salmon with Kimchi Butter Sauce. While the focus has been on the grill, we should not forget the effort in the sauce. The kitchen has made a delicious effort in the sauce pairing, elevating the appreciation of the fresh ingredients.

Koal13
Iberico Pork Collar 180g 4.2/5

Koal23
Hanging Tender 180gm 4.5/5

For the meat lovers, guests will adore the Iberico Pork Collar 180g ($19) and Hanging Tender 180gm ($24). The iberico pork collar, which has a good proportion of fat, has a delectable crunch on top of the tender meat. What is even more beautiful is the grilled Hanging Tender. It just needs a pinch of salt to enjoy the flavoursome piece of meat.

Koal27
Freshly Fried Donut 4.5/5

KOAL has also caught on the donut wagon and introduced Freshly Fried Donut ($8 for 2 pc) on their menu. We had the cheesecake mousse & raspberry coulis and nutella & banana mousse. They are addictively good.

Koal24
Hojicha and Whiskey Tiramisu 4.2/5

Last but at least, we have the Hojicha and Whiskey Tiramisu ($12), a twist from the classic tiramisu boosting heavenly earthy and nutty flavours.

Note: This is an invited tasting.

Binary @ Palais Renaissance - New Gastrobar Featuring Asian And Western Cuisines

Binary9

Newly opened at Palais Renaissance is Binary, a gastrobar that offers both Asian and Western cuisines complemented by a remarkable selection of 60 wine labels and cocktails. The menu allows guests to choose from two culinary approaches or enjoy both styles on the same plate.

Binary2
Home-made Kubaneh Bread 4.5/5

A crowd favourite with almost every diners that I know that has visited the gastrobar is the Home-made Kubaneh Bread ($14) served with garlic butter and kombu butter. The Jewish Yemeni pull-apart bread is so soft and fluffy that is addictive so good with the butter pairing.

Binary6
Tomato Bruschetta 3/5

The other bread item on the menu is the Tomato Bruschetta ($14) served with fresh tomato concasse and sour plum infused tomatoes. Tomato is served two ways incorporating both Asian and Western flavours. It is enjoyable but not something extraordinary.

Binary16
Deep-fried Burrata

It is my first time having a Deep-fried Burrata ($18). The whole burrata is coated in panko and deep-fried. It is paired with pesto alla genovese. It may be an interesting idea, but I didn't find it helps elevate the enjoyment. I still prefer the burrata in its original form.

Binary20
Chicken Wings 4.5/5

I adore the "Nasi Lemak" style Chicken Wings ($18) served with sambal tumis. It is very flavourful and aromatic from the various spices marination. The accompanying sambal tumis is an excellent pairing for the delicious chicken wings.

Binary11
Tiger Prawns 4.5/5

A beautiful dish on the menu is the classic Spanish tapas, Gambas Al Ajillo. The bouncy and crunchy tiger prawns are sauteed in olive oil, garlic, chilli flakes, parsley, lemon juice and white wine.

Binary23
Octopus 4.5/5

The Grilled Octopus in Lao Gan Ma Chilli is a unique dish on the menu. It is an interesting combination that works for me. I have tried a local take using sambal, but Lao Gan Ma Chilli's version is even better.

Binary26
Iberico Pluma 4.5/5

The Iberico Pluma ($38) is marinated with Korean Gochujang, served with fresh green coral lettuce, ssamjang sauce, chopped kimchi and sea salt. The best way to enjoy the tender meat is to eat it like a wrap, wrapping it with lettuce.

Binary30
10 Veg Chopped Salad

Binary36
Parmesan Bacon Cauliflower

You can also order some sides to go along with your mains such, as 10 Veg Chopped Salad ($14) and Parmesan Bacon Flower ($14).

Binary39
Ice Jelly, Yuzu Sorbet

Binary43
Warm Homemade Fudgey Brownie, Vanilla Ice Cream

Ending the night on a sweet note, we have the Ice Jelly, Yuzu Sorbet ($16) and Warm Homemade Fudgey Brownie, Vanilla Ice Cream ($16). I prefer the Aiyu Jelly as it is sweet and refreshing.

The Bravery @ Amoy Street - Muslim-owned Cafe Reopens at New Location with Refreshed Brunch Menu

TheBravery2

The Bravery has moved from Lavender Street, where it has stood for seven years to, a two-storey conservation shophouse along the trendy Amoy Street neighbourhood. The second storey also houses The Bravery’s in-house bakery, which churns out fresh bread and baked goods daily. With a full-service team led by Sous Chef Melvin Lam and award-winning Head Barista Maryvn Tan, customers can expect an elevated menu comprising new dishes, crowd-pleasing signatures, freshly-baked treats and quality brews.

TheBravery4
Nova Cheese Toast 4/5

From the brunch menu, we had the Nova Cheese Toast ($16), where lemon and dill cream cheese is spread on house-baked sourdough bread and topped generously with smoked salmon, ikura, and microgreens. The side of silky smooth scrambled eggs was a welcoming addition to this classic brunch dish.

TheBravery6
Steak & Eggs 4.2/5

The crowd-favourite Steak & Eggs ($23) was no less impressive as well, with tender grass-fed striploin served with a side of house-baked sourdough toast and sunny side eggs.

TheBravery9
Cod en Papillote 3.5/5

The Cod en Papillote ($33) features cod fillet is baked in a paper bag with fennel, seasonal greens, herbs, microgreens, and soy broth to keep the fish tender and moist. It is served with a bowl of furikake-topped rice to complement the fish.

TheBravery17
Seafood Alfredo 3.8/5

A dish with an umami punch is the Seafood Alfredo ($20). The creamy al dente spaghetti is complete with Tiger prawn, white clams, crab meat, ikura, and a crustacean oil made in-house by infusing roasted shellfish into olive oil.

TheBravery10
Hojicha Milk 4/5, Dirty Matcha 4/5

The Bravery serves up signatures like the ever-popular Lavender Latte ($6.50) along with new offerings such as Hojicha Milk ($6.50) and Dirty Matcha ($7). Using beans from Allpress Espresso in Melbourne, which boasts of rich, chocolate notes with a full-bodied flavour, each cup of joe makes for the ideal morning or midday pick-me-up.

TheBravery12
Gateau au Chocolat 4/5

We round off our meal on a sweet note with their variety of desserts. Available all day, the bakery churns out a wide range of bread, cakes and pastries, such as the crowd-pleasing Gateau au Chocolat ($6.90 per slice) filled with rich chocolatey decadence.

TheBravery16
Lemon Meringue Pie 4/5

The Lemon Meringue Pie is enjoyable as well, with a lightly torched meringue atop, soft, tangy curd and crumbly base.

La Dame de Pic @ Raffles Hotel Singapore - Re-opens After The Circuit Breaker With A New Summer Menu

LaDameDePic4

I have the pleasure of dining at La Dame de Pic by Chef Anne-Sophie Pic when it first opened at Raffles Hotel Singapore. Unfortunately with the COVID-19 pandemic and the circuit breaker measure taken by the government, the restaurant was temporarily closed for dining. Great news for diners looking forward to dining in one of the world's top female chefs' restaurant, having a total of seven Michelin stars under her belt, you will be glad to know that La Dame de Pic has reopened!

LaDameDePic3

Before commencing on our dinner, we receive a number of amuse bouche to kick start our dinner. We have the Olive-green Chocolate Truffle infused with yuzu. You get an explosion of flavour when you bite into it.

LaDameDePic1

LaDameDePic4

Then there is the Marshmellow coated with Peanut which tastes like our local muah chee. There is also the Honeycomb Cracker with a delightfully crispy texture.

LaDameDePic6

LaDameDePic10

Last but not least, the Corn Taco and Milk Yoghurt to round up the amuse bouche surprises. We already have 5 dishes before starting on the courses.

LaDameDePic8

I have to warn that you need to control yourself in eating too much of the freshly baked bread. It is so good that my dining companions had 3 servings. You probably do not want to get yourself full before even starting on the courses.

LaDameDePic12
Tomato Myriad

Starting the 5-course meal is the refreshing Tomato Myriad paired with a scoop of burrata ice cream. The sweetness of the colourful tomatoes is lifted with the tomato consomme lightly infused with elderflower, tasting of summer with each bite of the sweet and tangy fruit.

LaDameDePic15
Berlingots 4.5/5

An iconic dish in every Anne-Sophie Pic restaurant is the Berlingots which incorporates local elements. In Singapore, the restaurant has infused the broth with the herb of grace, a local ingredient used in Chinese medicine and cooking. The flavour of the pasta parcel also changes with seasons. In my previous visit, I had green Matcha pasta parcel filled with French cheese fondue. This time it is beet pasta parcel filled with French cheese fondue.

LaDameDePic18
Turbot from Brittany 4/5

Next is the Fish dish - Turbot from Brittany. The fish is cooked elegantly with a delicate, lightly sweet flavour. Simple but yet will get you craving for more.

LaDameDePic21
The Pigeon from Bresse 4.2/5

LaDameDePic23
Saga Wagyu Beef 4.2/5

For the mains, the diner can choose between the Saga Wagyu Beef and The Pigeon. As I have already tried the Saga Wagyu Beef in my earlier visit, I decided to go for The Pigeon. The bird was beautifully roasted on its chest, complemented by the lightly smoked broth infused with Madagascan vanilla, roasted barley, Phu Quoc pepper and kumquat.

LaDameDePic25
Brie de Meaux Cheese with Vanilla 4/5

The Brie de Meaux Cheese with Vanilla is a pre-dessert which is like have a bowl of cheese soup with a thin cracker film.

LaDameDePic25
White Mille-feuille

LaDameDePic26

For dessert, diners have 3 choices. If you are dining here for the first, I would highly recommend you to go for the White Mille-feuille. This is another iconic dish that they have kept it in their new menu.

LaDameDePic30
Alpaco Chocolate

LaDameDePic32
Gariguette Strawberry

The other 2 desserts on the menu are the Alpaco Chocolate and Gariguette Strawberry. They are the new dessert creations for the new summer menu. I had the Alpaco Chocolate which comes with Hojicha and cubeb pepper light mousse paired with beeswax honey ice cream. It is rich but yet not heavy to wrap up the dinner.

LaDameDePic31

Last but at least the whole dinner experience is wrapped up with the Petite Four. The menu I had is the 5-course Experience Menu at $238 per pax with an additional $158 for wine and sake pairing. I realised the restaurant has increased its price since my visit last year. Maybe it has to do with the increased ingredients' price due to the significant reduction in overseas freight flights in the aviation market.

Note: this is an invited tasting.
