Ginger.Lily at Hilton Singapore Orchard is back with the third chapter of its storybook-inspired afternoon tea series, showcasing a refined fusion of Executive Pastry Chef Cindy Khoo’s French pastry expertise and passion for Japanese artistry.

This afternoon tea, priced at $68++ per person with a minimum of two diners, includes a glass of cocktail or mocktail and two pots of tea.

Two seatings are available daily: 1pm to 3pm, and 3.30pm to 5.30pm.

Prologue

Start your experience with a mocktail or cocktail. The Sparkling Peach Mocktail offers a refreshing blend of Moscato grapes and natural peach juice, while the Yuzu Breeze cocktail intrigues with a combination of Cirka vodka, whipping cream, yuzu essence, and soda water.

We were spoilt for choice for our pots of tea, from its extensive tea list which includes oolong tea, black tea, white tea, green tea, and non-caffeinated herbal tea.

Savouries I

The first savouries, the Truffle Croque Monsieur Twist and Mediterranean Pesto Twist were served in crisp pastry shells. The Mediterranean Pesto Twist stood out with its well-balanced blend of sweetness from sun-dried tomatoes, nutty truffle cream cheese, and herbaceous pesto.

Savouries II

Next, the Basque Brioche with Smoked Duck was presented, offering house-smoked duck on red pesto-infused smoked paprika brioche.

The Miso Brioche with Scallops followed, showcasing Japanese flavours with wasabi-yuzu mayo, tobiko, katsuobushi, and white miso brioche.

Pre-dessert

Before the main sweets course, we were treated to a Pre-dessert: Poached Pears in Blackcurrant Wine, creatively and deliciously paired with sour cream ice cream and mint jelly.

Sweets

The highlight of the tea was the elegant turquoise drawer of sweets. It contained a total of eight exquisite desserts and two types of scones, which are recommended to be savoured from top to bottom.

Violet Chocolate Gateau

We started with standouts from the first two rows, such as the Ginger.Lily Chouquettes incorporated flavours from the restaurant's signature tea blend and the Violet Chocolate Gateau, combining banana jam, milk chocolate mousse, and a tangy raspberry finish.

Ruby Baba

However, the last two rows of desserts, such as the Ruby Baba and Botanique En Fleurs 68% Macadamia Cookies, paled in comparison. The Ruby Baba was a little too dry, while the cookies were much sweeter than we would have liked.

Tahitian Vanilla & Jersey Oat Scones

The tea concludes with Tahitian Vanilla & Jersey Oat Scones, served alongside mixed berries compote, orange cinnamon confit, and crème fraîche.

The Lobby Lounge @ InterContinental Singapore – Reimagined Flavours of Japan Afternoon Tea

Timeless elegance with teatime affair at The Lobby Lounge as Executive Pastry Chef Jason Goh and his talented culinary team bring back the crowd-favourite Flavours of Japan Afternoon Tea following its successful debut last year. The updated menu reimagines classic Japanese sweet and savoury delights that marries traditional Japanese flavours with modern culinary artistry.

Seafood Inari with Shoyu Ikura 3.8/5

There are 4 savoury items, and our favourite was the Japanese Lobster Salad Sandwich, which was really flavourful, and we loved the overall texture. The Seafood Inari with Shoyu Ikura has great potential with Hokkaido Scallop, Jumbo Lump Crab, Octopus, Seasoned Wakame, Salmon Roe and Wasabi-Yuzu Dressing but the sweet tofu pocket overpowered all the ingredients. The other 2 items were the Baked Miso Black Cod, which was a little too salty for our liking, and the Charcoal Barbeque Eel Quiche, which has a nice flavour but is a little dry.

Scones: English Buttermilk and Ichida Hoshigaki / Charcoal Barbeque Eel Quiche

Scones are one item we always look forward to during an afternoon tea. The classic Buttermilk Scones are buttery and perfect with clotted cream. The other 2 condiments to go with the scones are Sakura Peach Preserves and Strawberry-Mint Marmalade. Even though we can't taste the mint, we prefer the Strawberry-Mint Marmalade over the Sakura Peach Preserves. As for the Ichida Hoshigaki Scones, made with dried Japanese persimmon, have a slightly bitter aftertaste, which we are not a fan of.

Tea 1

The afternoon tea set includes a good selection of TWG Tea or Coffee. However, note that it is only one serving. If you order a tea, you may refill hot water.

Okinawan Tartlet 3/5

The Sweet Fancies look so pretty we didn't know where to start! Our favourite has to be the Kurogoma Ryokucha Mousse, which actually is just a simple black sesame cream on a genoise sponge, but it is so soft and light, and the fragrant black sesame is such a delight; it was unexpected! Chef Jason told us that he was trying to mimic soba for the black sesame cream part, it's cute. The Japanese Matcha Roll made with roasted almond sponge was rolled with a light hojicha mascarpone cream but sandwiched with 2 pieces of white chocolate, which made it a little too sweet.

Kurogoma Ryokucha Mousse 4/5

The Okinawan Tartlet has good potential, but the tart shell was too bitter for our liking, overpowering the Okinawan sweet potato crème, and the caramelised macadamia wasn't sweet enough to balance it out. Mizu Shingen Mochi, the once viral raindrop cake, was paired with Japanese black honey (we thought it was Okinawa's famous black sugar at first) and kinako (soybean powder). It was fun to eat but nothing surprising. You may adjust your preference for sweetness with the amount of black honey.

Ice Cream 1

Enjoy the free flow of sorbet and gelato, with two flavours rotating daily. We had the Mixed Berry Sorbet and Vanilla Gelato.

Flavours of Japan Afternoon Tea is available daily till 12 November 2024 at $65++ per person on weekdays and $70++ per person on weekends. Add on $28++ for one flute of champagne. There are 2 seatings available at 1pm-3pm and 3.30pm-5.30pm.

Lobby Lounge @ Conrad Centennial Singapore - The Return of the Strawberry Afternoon Tea Featuring Amaou Strawberries

As January heralds in the peak season of Amaou Strawberries of Fukuoka, Conrad Centennial Singapore's Lobby Lounge has recently relaunched its exclusive Strawberry Afternoon Tea. Also known as the "King of Japanese Strawberries," delight in Amaou's sweetness from now till 31 March 2024. The specially curated menu features fresh Amaou Strawberries sourced from Fukuoka, farmed under stringent guidelines to preserve their exceptional flavour and deep red hue appearance, and includes exquisitely crafted strawberry-centric delights for a complete Amaou experience.

Start your afternoon tea with Air Flown Japanese Strawberry with Valrhona Chocolate Dip while the chocolate is still warm. The classic pairing of chocolate and strawberries will create a perfect prelude to a relaxing afternoon. The Amaou strawberries, given their exceptional flavour, are just as indulgent on their own.

Fresh Strawberry Balsamic Bruschetta

The savoury items were delectable, with a well-considered blending of savoury ingredients and the sweet, fruity, fresh profile of strawberries. My favourite items were the Fresh Strawberry Balsamic Bruschetta and Whipped Brie. The bruschetta was layered with Citrus Cream Cheese, topped with sliced strawberries and seared duck, and sweetened with Cantaloupe Gel. The latter, featuring whipped brie, was topped with Balsamic Strawberry, Fruit Chutney, and Kiwis. The contrasting flavour notes and creamy mouthfeel amped up the lusciousness of the strawberries.

Strawberry, Mango, Scallop Tart

Strawberry, Mango, Scallop Tart was interesting with saltish Pickles and sweet Candied Orange. Again, the juxtaposition of the sweet and savoury notes of the ingredients was delicious, and in addition to that, this dainty pink tart was packed with textural crunch as well. The strawberry tart itself emanated a delightful whiff of strawberry aroma each time I took a bite of the tart.

Salmon Rillettes

Besides strawberries, Salmon Rillettes also highlights the use of Sustainable Caviar - Avruga caviar, distinguished by the Marine Stewardship Council's "Chain of Custody" certification.

Strawberry Meringata

Moving on to the sweets, the Strawberry Meringata was well-received by diners. A balance of creamy, fruity freshness and crunchy elements was put together using decadent double vanilla cream and tangy marinated strawberry spiked with crisped slow-baked Meringue.

Strawberry Shortcake

Strawberry Shortcake is a classic done right with softy and fluffy sponge cakes layered with Fresh Strawberries and Hokkaido Whipping Cream.

Strawberry Mint

Strawberry Mint was gorgeous in a bright red hue - this strawberry treat was filled with Fresh Strawberry Mint Compote encased within a layer of Vanilla Whip.

Tahitian Vanilla Whip

Tahitian Vanilla Whip, Strawberry Compôte is pretty with Strawberry Marmalade, Vanilla Ganache. Its sweetness was a bit too much for me.

Scones

Homemade Strawberry Scone and Raisin Scone didn't disappoint. It wasn't too buttery, with just a hint of sweetness. Hence, the accompanying clotted cream and Homemade Wild Strawberry Jam were the ideal spread for them.

Little Farms Bistro @ Katong Point - Introduces Brand New Wood-fired Creations

Kickstart the meal with thirst quenchers such as the Grapefruit & Hibiscus Lemonade ($8) and Orange & Lavender Earl Grey Iced Tea ($8). The latter stands out for its delicate fragrance of orange and lavender, a refreshing beverage for those who appreciate a touch of floral and citrus in their tea.

Prawn & Bourbon Bisque 4/5

The Prawn & Bourbon Bisque ($14) is a sumptuous soup offering a rich and creamy base infused with the essence of prawns. The addition of bourbon adds a unique depth and sophistication to the flavour profile, creating a harmonious blend of smoky and slightly sweet notes.

Cured Salmon Tartare 4.2/5

The Cured Salmon Tartare ($12) features finely chopped cured salmon, accompanied by grilled Wawa cabbage for a smoky dimension, creamy avocado wasabi for a touch of heat, and garnished with lumpfish roe, which adds briny notes that accentuate the flavours of the salmon.

Chermoule Braised Fable Mushroom 3.8/5

The Chermoule Braised Fable Mushroom ($24) features meaty Fable Mushrooms braised in a fragrant and slightly spicy Chermoula sauce. Accompanied by grilled aubergine, tangy tomato, and cauliflower rice, the dish offers a harmonious fusion of textures and flavours. It is served atop grilled pita bread, adding a delightful crunch and toasty aroma to the dish.

Thai Style Organic BBQ Chicken 4/5

The Thai Style Organic BBQ Chicken ($30) features organic BBQ chicken expertly grilled to perfection, achieving a juicy and tender texture. The grilling process imparts a smoky char and a mouthwatering barbecue flavour to the chicken, enhancing its natural juiciness. This Thai-inspired creation is accompanied by a refreshing scallion, pickled garlic salad, and a sweet-spicy Thai sauce, offering a harmonious blend of flavours and textures and giving the dish a distinct Thai flair.

Roaring Forties Lamb Cutlet 4.2/5

From the wood-fired grill, we tried the Roaring Forties Lamb Cutlet ($42/200g) served with mint sauce. The grilling process over the wood-fired grill imparts a delightful smokiness to the lamb, enhancing its overall flavour profile. The exterior achieves a beautiful char and slightly crispy texture, pleasingly contrasting the tender and succulent interior. The classic mint sauce adds a refreshing and herbal note, creating a harmonious balance of flavours.

Yakult Peach Mousse 4/5, Black Sesame Opera 3.5/5

For desserts, they have a selection of delectable choices, such as the Yakult Peach Mousse ($10), which features Yakult's refreshing, tangy taste paired with the sweetness and aroma of peaches. It is a harmonious and light dessert that perfectly balances fruity and creamy flavours, making it a delightful and refreshing conclusion to your meal. The Black Sesame Opera ($12) delivers a sophisticated blend of flavours. While it has a faint black sesame undertone, the predominant taste is that of nutty chocolate. It caters to chocolate lovers while offering a subtle nod to the unique taste of black sesame.

Elixir Coffee and Wine @ Holland Grove - Indulge in Elevated Brunch and Coffee During the Day, Delight in Pizzas and Wines for the Evening

Elixir Boutique Roasters, known for its artisanal coffee and cafe fare, may ring a bell for many cafe-goers. Formerly located in Bukit Timah, the reimagined establishment has since found a new home in Holland Grove under a new name, Elixir Coffee and Wine.

With a brand new menu created by Executive Chef Victor Loy, Elixir invites diners to indulge in brunch and coffee during the day and delight in pizzas and wines in the evening. The menu offers elevated brunch classics, fun bites, and unique sourdough pizzas.

Coffee lovers would be happy to know that they serve coffee brewed using beans from award-winning Blacklist Coffee in Perth. For wine lovers, the restaurant holds a curated wine list of old and new world vintages.

Stracciatella 4/5

Our meal began with a more classic dish, the Stracciatella ($20). Here in the Stracciatella, we had sourdough bread smothered with creamy burrata, complemented by pecorino cheese and sweet and slightly smoky blistered tomatoes.

For all three tartines we sampled, their bread base is all made using the same sourdough recipe as their pizza dough.

Turkish Eggs 4.5/5

Try the Turkish Eggs ($16) for something more exciting. Chef Victor told us that this is one of their bestselling brunch dishes.

On the sourdough, the flatbread is baked to order. It's topped with garlic yoghurt, paprika oil, poached egg and a super addictive Lao Gan Ma-inspired housemade chilli crunch. The added pomegranate gave pops of refreshing sweetness amidst the spicier and garlicky bites.

Salumi 4/5

The Salumi ($16) would be a treat for bolognese lovers. The flatbread is generously topped with nduja and accompanied with tangy sumac onions and a blend of fresh herbs like coriander, arugula, mint and dill. I recommend sharing this for more enjoyment, as the heaviness may feel a little flat halfway through.

Salad 4/5

Next, we moved on to the Bites section, which is available for order from 12pm. The simple-looking Salad ($12) had a refreshing mix of radicchio, wombok and mint in white balsamic with crunchy hazelnuts.

Burrata 4.5/5

Bet you’ve never had burrata done in this manner! Elixir’s Burrata ($24) continues an unexpected use of the housemade chilli crunch we loved on the Turkish Eggs.

While the flavourful chilli crunch may slightly mask the creamy sweetness of the burrata, we thoroughly enjoyed the exciting pairing and side of pickled cherry tomatoes! This will be up your alley if you're looking for something different.

Tête de Moine 4/5

Consider the Tête de Moine ($22) for a side to pair with your wine. The beautifully shaved Swiss semi-hard cheese is served with poached apricot and fried walnuts, boasting a creamy and nutty flavour with a subtle tangy finish.

Baby Octopus 4.5/5

My favourite from the Bites menu was Chef Victor's Baby Octopus ($18). It had baby octopus coated in a thin exterior of seasoned flour and deep-fried to the perfect crunch.

I thoroughly appreciated how the light batter allowed you to still enjoy the octopus's chewiness and how the umami black aioli didn't overpower. This is one dish I will definitely re-order on my next visit.

Not-Carbonara 4.5/5

For fans of white pizzas, go for the Not-Carbonara ($26), the restaurant's signature pizza inspired by the well-loved carbonara dish. While you will see authentic-carbonara toppings of egg yolk, guanciale, prosciutto and pecorino cheese, the play on its name is due to the inclusion of a rich and creamy mornay sauce on its base.

While we found the pizzas slightly too thick around the crusts, we enjoyed the chewiness from the sourdough and the flavourful combination. It leans on a saltier end with a generous hand of fragrant black pepper, but my dining companion and I did not mind it at all.

Hot Mama 4.2/5

Here is another appearance of the special housemade chilli crunch on the Hot Mama ($28) pizza. This is one boldly flavoured piece, with the fragrant spiciness from the chilli crunch and additional spiciness and saltiness from slices of Calabrese salami, alongside onions and fennel.

Cali Cali 4/5

Cali Cali ($26) was inspired by Chef Victor's trip to California, focusing on the marriage of flavours from the country and Italy. This piece saw toppings of sausage, chopped kailan, guacamole and chilli flakes. After sampling the first two, the flavours here are more 'safe'.

Pistachio Cake 3.8/5

Our dessert for the day was the Pistachio Cake ($14) drizzled with extra virgin olive oil and a dollop of crème fraiche chantilly. This was a piece that was light and nutty but not exceptional.

Travelling to Elixir Coffee and Wine is out of the way. Hence, I recommend making reservations at https://elixircoffeeandwine.com/pages/reservations to ensure an available table.
