Woon Woon Pek Beehoon @ Changi Village Food Centre - A Steady Plate of Seafood With White Beehoon

A popular trend in 2017 is the number of white beehoon stalls that have been sprang up across the island. One of them is Woon Woon Pek Beehoon which started back in July 2016 at Changi Village Food Centre by Javien (34 years old) and Reece (36 years old) who quitted their corporate careers to move into food and beverage business. With the help of Reece's father who is a chef with 52 years of experience.

The stall offers a variety of seafood such as lobster, crayfish, prawn, lala, sliced fish and scallop to go with their rice vermicelli. I decided to go for the Lala Crayfish White Beehoon ($10/$20/$30) which comes with the lala clams, crayfish, cabbage, pork lard and white beehoon. The portion is good for 2-3 persons.

I have to say the plate of Lala Crayfish White Beehoon is actually quite well executed. The beehoon probably has been wok fried first to achieve the wok hei flavour before being braised together with the seafood and chicken stock for the beehoon to absorb the flavours. Pork lard is further add to boost the already flavoursome plate of white beehoon.

Don Signature Crab @ Toa Payoh North - From Pie Club to Crab Party

For those working near China Square Central, you should be familiar with Don Signature Crab which was serving their unique crab beehoon soup from 2000 to 2013 before relocating to its current location at Toa Payoh North in March 2015. I will share will you more about Don, the founder at the end of the article but let us dig in to the food first.

Crab Beehoon Soup 4/5

There were four of us in total, so we decided to order a couple of crab dishes on the menu to try. We started with the Crab Beehoon Soup ($25 small). Served in a claypot to retain the heat, the soup base has a herbal taste from the dang gui. The crab is considered mid size, cooked together with some vegetables, ginger and yam. However we felt that the version still lose out the one from Mellben.

Black Pepper Crab Beehoon 3.8/5

For those that enjoys a peppery kick, the Black Pepper Crab Beehoon ($25 small) would be the choice. Plated in a pile of greens and generous serving of beehoon, it is good for 2 pax to share. I do enjoy the piquant kick but on the critic side, I could not really taste the flavour of the crustacean in the beehoon.

La La Prawn White Beehoon 4.2/5

Among the 3 crab dishes we ordered, my favourite is the La La Prawn White Beehoon ($15). While it may look similar to the black pepper dish, the sauce is actually different. The sauce is sweeter, creamier and more garlicky. I felt that it complemented the seafood excellently.

The man behind it is non other than Don himself, the founder of Don Pie. When I asked him about his pie business, he declined to comment further but I can sense some form of regret and sadness in his tone. What I understand is he as already sold his pie business and now focusing on his crab stall. Anyway if you do plan to check out the stall, the menu offers other items such as Chilli Crab, Cheese Crab, Crab Laksa

Famous JB101 Firewokz @ WCEGA TOWER - Decent Zhi Char Stall At Bukit Batok Crescent

Famous JB101 Firewokz is a zhi char stall that is located at Bukit Batok Crescent, an industrial area in the West. I visited the place quite a few months back. I understand the place has undergone a renovation and just recently reopened in end March 2017.

White Bee Hoon 3/5

During my visit, the place was actually quite dead, serving only a few workers in the area. We have the White Bee Hoon ($7 medium) which was rather plain looking but it was quite flavourful. The bee hoon was not overcooked and comes with a nice bite. It also came with pawns, squid, greens and egg.

Salted Egg Spare Ribs 4/5

The other dish we ordered is the Salted Egg Spare Ribs ($12 small). The deep fried pork was rather tender and what elevated it was the coat of salted egg sauce that has a nice hint of spiciness.

French Beans 4/5

Completing our dinner, we had the French Beans ($8 small) whih we enjoyed very much. The french beans was crunchy and the generous topping of the dried shrimps gave the green a lifted enjoyment.

Overall, the food at Famous JB101 Firewokz is reasonable good. The pricing is also quite reasonable. Furthermore there is no GST.

White Rose Cafe @ York Hotel - Wok Hei Specialties & Treasured Flavours Of Singapore

For a limited period from 1 October to 15 December 2016, White Rose Cafe at York Hotel has introduced 4 local wok hei noodle dishes specially curated by Executive Chef Charlie Tham. The 4 wok hei specialties are reasonable priced at $15 each.

Crispy Egg Noodle 4/5

The Crispy Egg Noodle is a local favourite as well as mine too. The textural enjoyment of the crispy noodle is complemented by the special double boiled stock from Chef Tham's treasured recipe. It is further topped with fresh prawns, sliced fish and vegetable for a satisying meal.

Wok Fried Crispy Bee Hoon with Sliced Beef 3.5/5

A dish not common available on the menu is the Wok Fried Crispy Bee Hoon with Sliced Beef. The bee hoon is pan fried until slightly brown and crispy. It is further paired with strips of premium striploin beef and dressed in a velvety egg gravy.

Traditional Hokkien Mee 4/5

A Traditional Hokkien Mee cooked with pork liver, pork shoulder, squid, clams and most important infused with the aromatic of the pork lard. Add some fresh red cut chilli for some extra zing on top of the slurping goodness.

White Bee Hoon 4/5

Recently White Bee Hoon has been getting popular in Singapore. Chef Tham has wok charred the rice vermicelli for some wok hei smokiness. This is further cooked together with egg, garlic, succulent slices of pork belly and fresh prawns. This is dressed in a flavourful stock made from chicken and pork bone, lightly thickened with fish sauce and oyster sauce.

Curry Fish Head 4/5

Aside the 4 wok hei specialties, White Rose Cafe offers Treasured Flavours of Singapore which features Singapore iconic dishes. Available during the a la carte lunch buffet on Mondays to Fridays, diners can feast on unlimited orders of over 25 selections of these iconic dishes.

Diners will get to have a serving of the signature Fish Head Curry (half portion for 2 to 3 pax, while for 4 to 7 pax) to go with the unlimited serving of steamed fragrant rice. The fish head curry is prepared accordingly to the well guarded recipe from Soon Heng Restaurant dating from 1970s, touted as the creator of the Singaporean Chinese style fish head curry. The red snapper fish head is first steamed and then cooked in a mildly spiced assam or tamarind based curry sauce together with tomatoes lady fingers, sliced onions and fresh chillies. The fish is cooked perfectly, firm and moist with a delectable sweetness of the flesh.

Chicken Masala 3.5/5

The Chicken Masala is cooked in homemade masala spice blend of various spices such as cinnamon cardamom, cloves and fennel seeds. An enjoyable dish with the tender chicken coated with the aromatic spices.

Black Ink Sotong 4.8/5

A childhood favourite of mine, the Black Ink Sotong is first poached and then simmered until tender. It has a hint of spiciness that comes from the belachan that is cooked together with the squid ink. This is definitely my favourite dish here.

XIAN (鲜) Seafood White Beehoon @ Ubi Ave 1 - The Ultimate White Beehoon With Fresh Seafood

The latest trend in the food scene has to be Seafood White Beehoon. Within this year, many such stalls have opened around the island at various corner of Singapore. One of the latest such stalls is Xian (鲜) Seafood White Beehoon at Ubi Ave 1, opened by owner of Cafe de Hong Kong, Mr Francis Mak and his two partners.

Crayfish White Beehoon 4.5/5

Unlike Cafe de Hong Kong where owner Mr Francis Mak offers an array of cooked dishes, XIAN offers only one dish on the menu, the seafood white beehoon. Well actually you have 4 choices. There are La La Shrimp White Beehoon ($5/$8/$12), Mixed Seafood White Beehoon ($10/$15/$20), Crayfish White Beehoon ($15/$20/$25) and Flower Crab White Beehoon ($20/$30).

Crayfish White Beehoon 4.5/5

We had the Crayfish White Beehoon ($15/$20/$25) which is cooked in a superior stock that consists of chicken feet, old mother hen and pork ribs. You will get hint of smokiness from the silky beehoon because it is fried separately first to get that wok hei. Upon ordering, the cook will then cook the beehoon and seafood together in the milky stock.

Besides the silky white beehoon, it also comes with crayfish, prawns and clams swimming in the delicious broth packed with seafood essence. And look what I discovered in the broth, pork lard! No wonder it was so delicious.

Although I have not tried all the various seafood white beehoon stalls around Singapore, XIAN is definitely one of the stalls that I will go back again for its fresh seafood, smooth beehoon and most important that robust seafood stock that brings the dish together.
