Crystal Jade Palace @ Ngee Ann City - Unveils A Brand New Look And Menu

After undergoing a three month of renovation, Crystal Jade Group's flagship fine-dining restaurant, Crystal Jade Palace at Ngee Ann City has unveiled a brand new look and menu. The restaurant now boasts a sophisticated contemporary space that includes an intimate tea room, breezy communal dining hall, elegant courtyard, as well as chic private dining rooms.

We kickstarted the dinner with the light and refreshing Garden Salad with Crab Meat, Pomelo and Sakura Ebi ($14.80). This dish used to be only served upon request has made permanently into the menu. It is an elevated rendition of the classic Thai-inspired appetiser that is a medley of fireworks, with the flavours coming together.

Deep-fried Chive Stem Pancake 3.5/5

At first sight, the Deep-fried Chive Stem Pancake ($14.80) looks like any ordinary Chinese style pancake. However, I find the ingredient used to put this together is interesting. The crispiness comes from the thin sheets of spring roll skin, while the filling is a tasty combination of sweet chives stem, minced prawns and bits of Chinese Lap Cheong.

Steamed XO Scallop Dumpling Wrapped in 'Marbled' Skin 3.5/5

Crystal Jade Palace also offers dim sum on their menu. We got to try the Steamed XO Scallop Dumpling Wrapped in 'Marbled' Skin ($8.80 for 3pc). This is a premium take from the usual with the used of the scallop. The parcel is filled with plump scallop and prawn, crowned by a robust homemade XO sauce. Steamed scallop can be quite tasteless; hence, the XO sauce played an important role in holding the whole parcel together.

Roasted Honey BBQ Iberico Pork 4.2/5

Personally not to be missed at Crystal Jade Palace is the Roasted Honey BBQ Iberico Pork ($30 regular portion) and the Roasted Irish Duck with Black Truffle ($26/$48/$95). Using the prime pork shoulder meat for the roasted honey BBQ pork, it is really tender and juicy with the right fat and lean ration which I enjoyed. The sauce is also just right, not overly sweet.

As for the Roasted Irish Duck, this is a winner for me. The Irish duck is already well known for its amazing texture. The addition of the black truffle is a match in heaven that lifted the flavour and whole appreciation of the beautiful poultry.

Double-boiled Chicken Soup with Peruvian Ginseng 4/5

Perfect after all the richness, is the nourishing Double-boiled Chicken Soup with Peruvian Ginseng ($26 per pax). This is my first time coming across Peruvian Ginseng or also known as Maca. It is actually a member of the radish family. It is also claimed that the root plant helps to boost energy, may improve libido and reduce the psychological symptoms of menopause.

Sauteed Beef Cubes with Shishito Peppers in Black Pepper Sauce 4.2/5

Filled with "Wok Hei" on top of the succulence is the Sauteed Beef Cubes with Shishito Peppers in Black Pepper Sauce ($36 for regular portion). The shishito peppers are actually not spicy, and it has a delightful crunchy texture. The black pepper sauce was not peppery, leaning towards the sweet side.

Braised Sea Cucumber with Grandma's Braised Pork Belly 4.5/5

A new favourite for me at Crystal Jade Palace is the Braised Sea Cucumber with Grandma's Braised Pork Belly ($36). It is a comforting pot of sea cucumber and fork-tender pork belly that has been slow braised with soy sauce, rock sugar and spices. That rustic home-style flavour is a home run for me.

Poached Seasonal Vegetable with Fresh Beancurd Skin and Gingko Nus in Superior Broth 4.2/5

A usual order at any Chinese restaurant for me is the poached vegetable with trio eggs. Thanks to the recommendation, I would order the Poached Seasonal Vegetable with Fresh Beancurd Skin and Gingko Nus in Superior Broth ($26) whenever I visit Crystal Jade in the future. It is a simple poached vegetable dish elevated by the flavourful and collagen-rich chicken stock, with fried ginko and garlic cloves. The bonus is the addition of the smooth sheets of fresh beancurd skin.

Fried Crispy Rice and Arzo Pasta with Prawn and Shrimp 4/5

A unique dish on the menu is the Fried Crispy Rice and Arzo Pasta with Prawn and Shrimp ($26). It looks like fried rice, but it is not. Chef Foo has substituted the rice grains with orzo pasta. The orzo pasta is skilfully tossed over high heat with prawns, char siew, red and green capsicums to get that al dente rice texture. Crispy sakura ebi and deep-fried rice grains are added for the textural contrast. It is undoubtedly a delicious dish to eat. However, it lacks the wok hei and egg fragrant, which I think the rice grains can absorb better than the orzo pasta.

Chendol with Coconut Ice Cream 3.5/5

Last but not least, we wrapped up the dinner with the Chendol with Coconut Ice Cream ($12.80) for dessert. Inside the coconut husk, there are coconut gelato, chendol, grass jelly cubes and feuilletine shards. I like the idea and presentation, but somehow I didn't feel satisfied, especially if I am looking forward to a bowl of chendol dessert. I couldn't really enjoy the different components in the husk together to associate it to the chendol dessert, as I ended up tackling the elements individually.

Baba Chews Bar and Eatery @ Hotel Indigo Katong - Taking Asian Inspired Cuisine To The Next Level

Change is for the better and indeed Baba Chews Bar and Eatery at Hotel Indigo Katong has done just that. The restaurant has embarked on a new chapter, adding new Asian-inspired creations, combining Asian flavours with western gastronomy to its popular Peranakan menu.

Quinoa Salad 3.5/5

We started with the light and healthy Quinoa Salad ($17) which consists of a quinoa, feta cheese crumble, cucumber, beetroot, pomegranate, avocado, sunflower seeds, almond flake and micro cress. The lemon dressing gives it a zesty touch for a refreshing finish.

Otah Yu Tiao 4/5

Otah Yu Tiao ($12) sounds gimmicky to me. However I was totally wrong when it was put into a taste test. The combination of sandwiching the homemade otah in between the charcoal dough fritter actually works for me. It is definitely a welcome light snack to whet up the appetite.

Peranakan Pulled Pork Burger 4.2/5

An interesting Asian take of the burger is the Peranakan Pulled Pork Burger ($20). Instead of the usual beef patty, it is replaced with Iberico pulled pork cooked pongteh style, which is braised in fermented soybean sauce. It also comes with caramelised onions and cucumber with fries at the side. What impressed me is the softness of the bun that goes really well with the flavourful pulled pork.

Chicken Rendang Lasagna 4.2/5

The Chicken Rendang Lasagne ($18) may look rather unappetising but it turned out the opposite. It has never occurred to me that the rendang sauce can work so well with the lasagna giving the traditional Western fare a delicious face lift.

Barbecued US Pork Ribs 4/5

The Barbecued US Pork Ribs ($30) did not bring the same excitement I get from the more Asian flavours influenced dishes but the St. Louise spare ribs with homemade barbecue glaze is so tender that it fell off the bone with ease. It also comes with fries and coleslaw.

Laksa Salmon 4/5

Similar to the Chicken Rendang Lasagne, the Laksa Salmon is given an Asian twist by pairing a local sauce to the Western fare. The light laksa complements the salmon excellent, giving the dish a whole new dimension. It also comes with sauteed Asian greens and crispy beancurd puff.

Chilli Crab Tagliatelle 4.5/5

The dish that stole my heart goes to the Chilli Crab Tagliatelle ($20). Many restaurants have done this dish but it always turned out to be on the sweet side. I applauded the chef for getting the signature chilli crab sauce spot on with the right balance of spiciness and sweetness. Completing the dish, it comes with tempura soft shell crab, sous vide egg and fresh cilantro.

XO Pork Belly Char Siew Rice Bowl 4.2/5

A homely and comforting dish on the menu is the XO Pork Belly Char Siew Rice Bowl ($19). The rice bowl comes with homemade pork belly char siew, egg sunny-side up, fragrant Hainanese 'oil' rice and premium XO sauce. I personally do not think there is a need for the XO sauce and plain steamed rice will do as the rich flavours of the char siew sort of overpowered the other flavours. I am not complaining but a pity to see the effort goes to waste if it didn't help to create the harmony.

Baba's Chendol 4.2/5

For dessert, I decided to have the Baba's Chendol ($10). I have mixed opinions with the dessert. We are told that it is supposed to be eaten with chopsticks because the homemade pandan jello is purposely made into long noodle strand. I think it is a bit gimmicky and I also observe other diners ended up using the spoon for the dessert as the jello is toso slippy to be picked up by the chopsticks. However I applauded the idea of the red bean mousse which infused with the fresh coconut milk and gula melaka as the shaved ice melted, bringing the different characteristic of a bowl of chendol together.

Overall I have enjoyed the new Asian inspired cuisine by Baba Chews. It has kept the food familiar but yet added excitement with new tasty twists, by coming Asian flavours with a western approach. Now the expanded menu allows Baba Chews to cater for a wider group of diners.

The Ampang Kitchen Private Dining - Impresses with Its Peranakan Cuisine Influenced By The Region

The last chapter of our private dining adventure for 2018 ends at The Ampang Kitchen which is run by a father and son team, Uncle Raymond and David. David does the cooking nowadays while Uncle Raymond takes care of the guests at the front of the house, as well as explaining the dishes they have prepared for us.

Satay Bohong 4.8/5

Dinner started with the Satay Bohong.  Each stick consists of 50g of pork belly which is grilled to an aromatic char on top of its tender texture with layers of fats in between. Too bad each guest get only 2 sticks. I wish it can be served straight from the grill so it is hotter, instead of being left to cool down before serving.

Bakwan Kepiting 4.5/5

Bakwan Kepiting is a dish served in all the Perankan private dinings we have attended. The version at The Ampang Kitchen is not authentic type. Uncle Raymond has tweaked it in a good way. The soup came across rich and robust from the long hours of boiling prawn shells, chicken and pork bones to draw the flavours. The meatball is also soft, tender and airy packed with crab meat, prawn and bamboo shoot. If you have a sharp tongue, you will taste fermented beans in it. Uncle William has added them into his soup to elevate the flavour. Other unusual ingredients found in the soup are mushroom and tang oh, which is not usually served in bakwan kepiting.

Although Uncle Raymond does not make his own shell for the Kueh Pie Tee, they are fresh and crispy with no porky smell. These are delightful parcels that whetted the appetite.

Rojak 4.8/5

The Rojak here is served chilled which I find it brilliant, giving it a refreshing touch. The version combines both the local and Penang style, which got the thumb of approval from the dining group. Some even commented that this is the best rojak they have ever eaten.

Chap Chye 4/5

Ampang Kitchen uses 8 different ingredients for its Chap Chye. Unlike the usual Peranakan style, red and white fermented beancurd as well as fermented beans are added which is more of a Cantonese style.

Beef Rendang 4.5/5

Uncle Raymond shared that his Beef Rendang consists of 17 ingredients. Of course I am not able to taste all the individual ingredients. What I tasted is the aromatic rempah that married with the tender beef excellently.

Ayam Buah Keluak 4.2/5

I have tried many versions of Ayam Buah Keluak and this is probably one of the better versions I have eaten. It is more saucy infused with the rich buah keluak flavour. I could not help drenching my steamed rice with the gravy to enjoy it to the last drop.

Assam Fish with Lady's Finger 4.5/5

Another well executed dish which I enjoyed a lot is the Assam Fish with Lady's Finger. The tang from the assam and tomatoes, plus the sweetness from the pineapple is so appetising. It just opens my appetite for more.

Banana Flower Kechai 4.5/5

The one dish that I have been looking forward is the Banana Flower Kechai. It is a dish not commonly served nowadays and it is my first time trying it. I didn't know what to expect. I can taste a lot of different textures and flavours from the prawn, pork, cucumber, mint leaves and banana flower all coming together harmoniously.

Wrapping up the dinner we have Chendol for dessert. You can't get anywhere wrong when the chendol are freshly made, with fresh coconut milk and premium gula melaka.

Our dinner at The Ampang Kitchen is $120 per pax. We really enjoyed the food and was well fed. A lot of time and preparation is put into serving the delicious food to our table. I could not say The Ampang Kitchen serves authentic Perankan food because some of the recipes have been influenced by the region, Straits Cuisine maybe a more appropriate to label the cuisine served at The Ampang Kitchen. Besides private dining, it also caters for takeaways. Hence don't be despair if you can't get a booking, you can also order takeaway.

We tried 2 of their signature soups, Soto Betawi - Jakarta Beef Bowl ($9.50) and Soto Madura - Madura Beef Soup ($8.80). I like the Jakarta Beef Bowl which carried the sweetness of tomato, hints of herbs and spices and a touch of milk that gave it a body. The Soto Madura is prepared using beef broth and lemongrass but somehow it had the flavour of instant mee soup which didn't resonate with the ingredients.

Nasi Campur Bali ($9.90) to me is a feast for both lunch and dinner, especially for people who love sambal which is delicious here. The platter consists Balinese style beef rendang, sambal shredded chicken, sliced beef tossed with sambal, sweet and spicy fried tempeh, Balinese stir fried long bean and beef skewers with basted homemade sambal. My favourite is the beef skewers with chunky beef cubes and the sliced beef. Though the latter were almost like beef jerky, they were moreish to chew on. On the other hand, the chicken and beef rendang were much drier than they should be.

Nasi Tumpeng 4/5

For a merry good time, Nasi Tumpeng is the dish to go for. Good for 10 pax or more, feast on Indonesian turmeric rice served with traditional galangal fried chicken, fried vermicelli, sliced omelette, fried potato cake, sweet and spicy fried tempe, garlic crackers and homemade sambal. I love its colors, the mood that it evokes and the hearty dishes. You will see the fried potato cakes flying off the plate the fastest, followed by the fried chicken, which was fragrant and crisp on the outside and juicy on the inside. The rice was very pleasing too and remained so even after it got cold.

Ayam Bakar 4/5

Ayam Bakar ($8.80) the famous Indonesian grilled chicken is highly recommended. The sweet glaze on surface was caramelised to release strong hints of smokiness and the flavours stood out even more with the sambal.

What didn't quite sit well with me is the Siomay Bandung ($8), a popular snack in Indonesia, especially in Bandung. With close resemblance with our Yong Tau Foo but the fish meat which is made by blending with flour and tapioca, was not as appetising - I find them to be just lumps of flour being stuffed into a variety of ingredients. The homemade peanut sauce, Kecap Manis was superb but failed to elevate the dish any further.

Good for any weather is their Es Cendol ($3.80). The homemade pandan rice jelly was quite soft and the Javanese palm sugar had the fragrance and sweetness but not cloying. I like the diced jackfruit which provides crunch and natural sweetness to the dessert.

It is not difficult to spot Tok Tok when it is one of the few buzzing with life along the shophouses of Ann Siang Street. Apparently, Tok Tok has already gotten the stamp of approval from the Indonesians community in Singapore, as the go-to place for authentic Indonesian street food. Small but cosy, do experience it yourself.

Blue Jasmine @ Park Hotel Farrer Park - Halal Thai Restaurant With A New Refreshed Menu

Blue Jasmine is a 100-seater halal Thai Restaurant on the 5th floor of Park Hotel Farrer Park. Open for slightly more than a year, the restaurant has refreshed its menu. Besides the traditional dishes that define Thai cuisine, in the refreshed menu, it also offers regional specialities that is lesser known in Thai cuisine.

Tom Yum Sea Bass 'Poh Tek' 3.8/5

We probably have been used to tom yum soup but a lesser known similarity is the Tom Yum Sea Bass 'Poh Tek' ($20). Poh Tek is a type of tom yum that is made with different proportion of spices and ingredients. It supposes to be very spicy which needs to include deep fried chilli and basil. Deep fried sea bass is also added for a totally different experience to the classic tom yum soup. I personally find that it can be spicier.

Cha-Om Fried Egg 4.5/5

The Cha-Om Fried Egg ($12) is my favourite item among the new dishes I tried. An egg mixture of sliced acacia leaves, fish sauce, pepper powder are whisked together and fried and rolled into shape. The fragrant fried egg roll is best eaten with the shrimp paste sauce that tasted like our local chinchalok. The sauce is really spicy but damn shiok, elevating the whole enjoyment.

Yellow River Prawn Curry 3.5/5

Not all curry is spicy. Take for example the Yellow River Prawn Curry ($26) topped with betel leaves and microgreens. In fact it is sweet not spicy. The curry is creamy and coconuty. It is best to go with a plate of steamed rice. The prawn is also fresh and crunchy.

Holy Basil Krapao (Squid) 4/5

I thought Thai only use Thai basil for the basil minced pork or chicken dish, I am definitely enlightened by the dish, Holy Basil Krapao ($24). I enjoyed the layer of aroma from the basil on top of the spiciness from the sambal. Note worth is well cooked long beans that has a nice crunch but not on the raw side.

Roast Chicken Esarn Style 4.2/5

The marination of the Roast Chicken Esarn Style ($16) is so flavourful that I can have it on its own. The accompanying dipping sauce is the fish sauce type. I thought the shrimp paste sauce from the Cha-Om Fried Egg goes better with the roast chicken.

Thai Fried Kueh Teow (Seafood) 3.8/5

Don't be mistaken, this is not Pad Thai but Thai Fried Kueh Teow with Seafood ($18). It is indeed quite similar to our local char kway teow with a hint of wok hei aroma. The taste is more savoury and less sweet compared to our local version, probably to the use of fish sauce in the frying.

Last but not least, we end on dinner on a sweet note with the Thai Chendol ($12). The chendol has more ingredients than our local version, such as the addition of red and blue rubies, young coconut and jackfruit.
