Casa Mori @ Dempsey Hill - Where Mod-Sin Meets Spanish Soul

At the heart of Casa Mori is a compelling culinary partnership between Chef Willin Low — widely regarded as the pioneer of Mod-Sin cuisine — and Chef José Alonso of Kulto. Their collaboration feels organic rather than forced, weaving together Singaporean and Spanish sensibilities with finesse. The result is a quietly inventive menu, where familiar flavours are reinterpreted with nuance and intention.

The Iberico Secreto ($24 for 3pc) sets the tone for the menu’s cross-cultural dialogue. Succulent cuts of Iberico pork are grilled and glazed with an Indonesian-style satay sauce, delivering a smoky sweetness layered with nutty depth. The addition of a bright pineapple salsa cuts through the richness, lending acidity and freshness that keeps each bite balanced and moreish.

Equally intriguing are the Kalipoquetas ($16 for 4 pcs) — a clever portmanteau of curry puffs and croquettes. Crisp on the outside and filled with a warmly spiced mixture of chicken, curry, and potato, each bite is rich and comforting. The accompanying curry aioli adds another layer of indulgence, making this a playful yet deeply satisfying reinterpretation of familiar snacks.

The Garlic Huajiao Prawns ($32) deliver bold flavours with finesse. Plump, tender prawns are bathed in a fragrant sauce infused with Szechuan peppercorns, offering a gentle mala numbing sensation that builds with each bite. The confit garlic adds sweetness and depth, while the accompanying bread is perfect for soaking up every last bit of that addictive sauce.

Tossed with chilli crisp, tahini, and a squeeze of lemon, the dish delivers nutty, spicy, and tangy notes in equal measure — a vegetable dish that holds its own confidently.

A more restrained yet elegant offering is the Black Cod ($38). Delicately cooked, the fish boasts a buttery, melt-in-the-mouth texture. The cheesecake leans on the denser side, with an intense nuttiness from the black sesame taking centre stage. In contrast, the Mochi Churros ($16) are a delightful finish to the meal. Crisp on the outside with a satisfyingly chewy centre, they bring a fun textural twist to the traditional Spanish churro. Served with both a rich chocolate sauce and a house-made kaya dip, the latter stands out — fragrant, creamy, and unmistakably local, it perfectly encapsulates Casa Mori’s East-meets-West philosophy.

Casa Mori succeeds in creating a dining experience that feels both thoughtful and inviting. Wild Supper Club Private Dining, Focusing on Pescatarian and Vegetarian Menu

The restaurant’s philosophy is refreshingly unpretentious — a celebration of fresh seafood, vibrant vegetarian plates, and the occasional market treasure — resulting in a menu that is ever-changing and full of surprises.

We kick-started our pescatarian dinner with the Aged Hamachi & Apple Tart. The aged hamachi is delicately paired with apple, roasted tomato, and Ipoh pomelo, dressed in a light vinaigrette and topped with fresh chives. Served in a crispy tart shell, each bite bursts with flavour, balancing the clean-tasting fish with bright acidity and crunch.

Next came the Artichoke & Spinach Dip, accompanied by baked pita chips. Creamy, luscious, and downright addictive, the dip was a crowd favourite. It is rich in flavour yet not overly heavy, and the warm pita chips make the perfect vessel for scooping up every bit of that goodness.

The Heirloom Carrots served atop smoked eggplant dhal with coriander chutney, showcasing layers of earthy and smoky flavours.

Dessert began on a light note with a Yoghurt Cheesecake topped with Lemon & Thyme Curd, served in a Black Sesame Cone. Tangy, refreshing, and not too sweet, it provided a smooth transition from the savoury dishes.

We ended our meal with the Pistachio Cake crowned with Raspberry Relish and Vanilla Chantilly. Moist, nutty, and well-balanced, the pistachio flavour shone through beautifully without being overshadowed by the sweetness. It is a fitting finale to a delightful evening.

Smolder @ Outram Road - Brings Authentic Farm-to-Table Coastal Backyard BBQ to the Heart of Singapore

Brought to you by the team behind Scaled and Ah Hua Kelong, Smolder continues their mission of championing locally farmed seafood, this time with a bold, flame-kissed twist.

The menu at Smolder is divided into five sections, and the Sides segment alone is enough to draw your attention, with tempting offerings such as stuffed squid, calamari, fresh local green lip mussels, octopus, and potato salad, as well as zucchini-parmesan fritters.

Since we knew more seafood dishes were coming later, we opted for the Elote ($9), a grilled sweet corn slathered in mayo, sour cream, parmesan, chilli, garlic, coriander, and lime. The white corn had the perfect balance of sweetness and crunch, lifted beautifully by the smoky, tangy glaze. I could easily have eaten a whole cob on my own!

Portuguese Seafood Stew 4/5

From the Mains section, we went with the Portuguese Seafood Stew ($28) and the Clams Linguine in Buzara Tomato Sauce ($26). Other options on the menu include Braised Short Ribs, a Wagyu Beef Burger, steak, blackened sea bass, and grilled snapper or grouper piccata pasta.

The Portuguese Seafood Stew ($28) is one of owner Wong Jing Kai’s personal favourites, crafted with a hearty mix of both seafood and meat. Think pork belly, plump mussels wild caught daily, clams, and prawns, all simmered in a paprika and tomato-based broth, served with grilled garlic bread on the side. While the freshness and generous portions of the ingredients stood out, I found that the flavour of the stew itself could have been a little more robust.

Clams Linguine in Buzara Tomato Sauce 4.5/5

I personally preferred the Clams Linguine in Buzara Tomato Sauce ($26), which features fresh clams simmered in a tomato and white wine base. What’s interesting is that no salt is added; the dish relies solely on the natural brininess of the clams for seasoning. The result was simple yet tasty, and I found it very much to my liking.

Pearl Grouper 4.5/5

For the Big Plates, diners can opt for a whole 700g fish, with choices including snapper, seabass, or pearl grouper, or go all out with Boston lobster or Alaskan king crab legs. Each Big Plate is paired with two Small Plates, with options such as cornbread, fried potato, grilled corn salad, grilled vegetable salad, or broccolini.

If you’re unsure which fish to pick, the team is happy to recommend one. Since we prefer fish with a flaky texture, we went with their suggestion of the Pearl Grouper ($85). The Pearl Grouper arrived marvellously executed. Its skin was seared till it was pretty crisp, while the flesh inside was fresh, moist, and flaky. The clean, delicate sweetness of the fish really shone through, showcasing the quality of the produce, enhanced by some good flame grilling. It felt like an indulgence, but also a relatively healthy one at the same time. The grouper was also served with a spicy but satisfying house chilli and a lemon wedge.

We chose the American-style Cornbread as one of our small plates, and I enjoyed its dense, hearty texture, which was not too dry, and was studded with sweet grilled corn kernels for a satisfying bite.

We also picked the charred baby broccolini, drizzled with smoky, house-made romesco sauce and with toasted almonds, adding a nice crunch to the greens.

The dessert menu features four options: a double-layered chocolate cake, an olive oil cake, a New York–style cheesecake, and a spiced apple wonton with vanilla semifreddo. We were unfortunately too full to try any, but they certainly sound like a sweet finale worth saving room for next time!

The newly opened 90-seat restaurant was lively even on a weekday night. The buzz reflected Ah Hua Kelong’s loyal following, drawn by local seafood that’s as fresh as it gets.

We kicked things off with the Wood Fire Bread ($18), served piping hot with Sicilian EVOO and wild oregano, providing an aromatic and crusty texture and the perfect companion to the Ricotta Dip ($12). This creamy whipped ricotta, paired with spicy honey, was an addictive start. It was sweet, savoury and silky smooth, which made us scrape the bowl clean.

A classic Burrata ($26) followed, elevated with crispy chilli oil, taralli crumb and basil. That house-made chilli oil? Served on every table and a must-try. Pro tip: Use it liberally, especially with the bread.

From their hearty pasta offerings, the Mafalde Ragu ($36) stood out; our server highly recommended it and we now understand why. Perfectly al dente ribbons of pasta were coated in a rich beef and pork ragu, finished tableside with smoked provolone flambéed on the spot. Smoky, cheesy and saucy. This is a flavour bomb that we'll return for.

The Singapore Tribute Piccola pizza ($35 for 4 slices, $48 for 6) was an instant eye-catcher. Paying homage to our local flavours, it's topped with chilli crab sauce, crab meat, Fior di Latte, lemon zest and fresh herbs. With its airy, flavourful crust, which is fermented over 50 hours and baked in a wood-fired Valoriani oven, this was a standout. Add their signature crispy chilli oil to take it up a notch.

To balance the richness, we had the Broccolini ($20), charred and tossed in anchovy butter with lemon breadcrumbs and Parmigiano. Light, bright and a welcome palette cleanser in between the heavier dishes.

We wrapped up with the Fortunamisu ($18). While we wished the ladyfingers were a little more soaked, the malted crumb and that sweet, fruity liqueur added a fun twist to this Italian classic.

The vibe? Warm, buzzy and utterly inviting, which is very much in line with its Napoli roots. FORTUNA is perfect for gatherings over good food and conversation. Be sure to book ahead, as it was packed even on Friday lunch.

California Republic @ Amoy Street - Bold, Bright and Fresh Approach To Italian-inspired Cuisine

Taking over the space of now-defunct Carne is California Republic, the latest concept by The Dandy Collection. Stepping into the restaurant, it felt like entering a time capsule of California living in the summer of 1960, a time of woodie surf wagons and sunken living rooms.

WWe start our meal with the Grilled Oysters ($18), grilled with chipotle chilli, bourbon and garlic compound butter. It is inspired by Micahel Goodman's (Co-founder & CVO) fond memory of his time at the Hog Island Oyster Company.

Next, we had the Faux Artichokes ($18), which is jackfruit barigoule dressed in green herbs aioli. The flavours were beautiful, but I am not a fan of its texture. If I am not wrong, it uses the tasteless core of the jackfruit.

Meatballs al Angeleno 4.5/5

One of my favourite dishes at California Republic is the Meatballs al Angeleno ($28). The meatballs are made from pork and veal, drenched in a sweet and tangy tomato sauce. They were huge and juicy. Best to wipe up the sauce with the accompanying toasted bread. I only wish for more bread to go with the delicious tomato sauce.

What is an Italian restaurant with pasta on its menu, right? You will not be disappointed with the pasta offered at California Republic. I find them much better than their mains. One of their pasta highlights is the Smoked Bucatini ($34), made from smoked flour and tossed in pork ragu in bianco with classic soffritto. It is then finished with Parmigiano shavings and a touch of bone marrow.

Similar to tortellini is the Celery Root Cappellacci ($29) stuffed with celery and root puree and cooked in a roasted mushroom sauce. Due to the folded shape of the pasta, which resembles a hat, it is thicker at the edges for a more delectable bite.

The Lazy Man's Cioppino ($48), a classic San-Francisco tomato-based seafood stew comprising roasted seabass, clams, mussels, calamari and prawns, is excellent for sharing. Best to order the West Coast Garlic Mops ($18) to mop up the tomato sauce or have it together with some Charred Broccolini ($14) if you need your greens.

Wrapping up our dinner, we had the Espresso Budino ($16). A sweet and creamy dessert comprising of cream, milk, espresso and espresso cream to wake one up from the food coma. Though heavy on the cream, it is light on sugar.
