We first sampled the Truffle Fat Wings ($19) - a delightful symphony of textures and flavours. Deboned wings, generously stuffed with Niigata Koshihikari rice infused with truffle paste, edamame, and sea kelp. Charcoal-grilled to perfection and glazed with housemade yakitori sauce, these wings transcend the ordinary. The oil from the chicken skin elevates the dish, and a squeeze of lemon adds the perfect zing.

Uni, Caviar, Ikura 4.2/5

The Uni, Caviar, Ikura dish ($22) is a visual and gustatory masterpiece. Resembling sushi, the rice is seasoned with kombu, shaped, and pressed overnight. Tempura-battered and deep-fried for a crispy texture, it's adorned with negitoro, Tokujo grade uni, Magnum ops, Oscietra caviar, Kita-sanriku ikura, sliced cucumber, and gold flakes. A symphony of flavours unfolds with each bite—a perfect harmony of the sea and land.

Ginkyo's playful creativity shines in the Kimchi Onigiri Arancini ($14). A Japanese twist on Italian arancini, deep-fried kimchi rice filled with gorgonzola is wrapped in seaweed and served with kimchi aioli. The result is a tantalising explosion of spicy and savoury notes, redefining the boundaries of fusion cuisine.

Swordfish Ceviche 4/5

The Peruvian Swordfish Ceviche ($19) is a journey to South America and Japan on a single plate. Diced swordfish marinated in fig-infused Japanese rice vinegar and lime juice meets a medley of citrus, tomato, avocado, Japanese cucumber, shallots, pickled green chilli, and spicy mayo. Enjoy it on crispy rice crackers for a burst of textures and flavours — a delightful wrap of freshness.

Hamburg Wagyu 4.2/5

For a carnivorous indulgence, the Hamburg Wagyu ($36) steals the spotlight. Kagoshima A4 wagyu, minced and seasoned to perfection, graces a bed of crispy rice. Topped with a hot egg bath, burdock chips, and oba tempura, this dish is an orchestra of flavours and textures — grilled elegance that unfolds with every bite. There is also the option of topping up $15 for foie gras.

The Okonomi-Rosti ($30) offers a quirky take on the traditional okonomiyaki. Grated potatoes seared to a crisp form the base, adorned with cabbage, bacon, Hokkaido scallops, bonito flakes, mentaiko sauce, and shredded nori. Each bite is a dance of flavours — a perfect fusion of Japanese and European influences.

Our dinner commenced with the Watermelon Salad ($14), a delightful ensemble of fresh watermelon cubes, red onions, cucumbers, toasted pine nuts, feta cheese, and coriander. Elevated by a coriander lime dressing, the salad resonated with vibrant hues and bright flavours.

Concluding our feast, the Grilled Spiced Rum Pineapple ($14) offered a sweet and tangy finale. Soaked in rum and grilled over the fire pit, the pineapple slices were served with spiced rum syrup and a scoop of rum and raisin ice cream, creating a memorable conclusion to our dinner experience.

Vietsmith @ One Holland Village - Discovering a Stir-fried Version of Vietnamese Pho

Exploring the newly unveiled One Holland Village offerings, we found ourselves at Vietsmith, a Vietnamese restaurant, amid the growing array of dining choices. During my visit a few weeks ago, the mall was still in the process of welcoming all its restaurants, but we discovered a delightful Vietnamese option in Vietsmith.

Fried Seafood Spring Roll 3.5/5

Our lunch commenced with the Fried Seafood Spring Roll ($7.90). Crispy and golden on the outside, it harboured a delectable blend of seafood and vegetables within, delivering a satisfying contrast in each bite.

Next, we had the Lemongrass Prawn ($14.90). A delightful starter, it exuded the enticing aroma of herbs and spices and a side of pickled vegetables that served to refresh the palate.

Opting for a premium choice in the pho selection, my dining companion savoured the Wagyu Beef Pho ($20.90). The luscious slices of Wagyu beef infused the broth with rich flavour, offering a delightful symphony of taste in every slurp.

A departure from the traditional soupy pho, the Stir-fried Pho with Beef ($14.90) caught our attention. The flat rice noodles, wok-fried to perfection, carried the unmistakable aroma of wok-hei, showcasing Vietsmith's prowess in crafting traditional pho and presenting an enticing dry variation.

SHAO Restaurant, renowned for its Teochew cuisine at Frankel Avenue, has expanded with SHAO Tapas (烧), a new Teochew tapas-style restaurant located in the bustling district of Holland Village. The atmosphere at SHAO Tapas exudes contemporary style and vibrancy, offering diners a modern setting to savour bold and flavorful Teochew dishes. To elevate the dining experience, they also feature a well-crafted bar menu, serving creative cocktails that perfectly complement the diverse flavours of their cuisine.

Pan Seared Black Ink Cuttlefish Sausage ($18) kicks off the meal, presenting an unusual but delicious creation. The use of squid ink elevates its savoury profile, while the texture is slightly crunchier than a typical sausage. The pan-searing process enhances the aroma, making this cuttlefish sausage highly addictive.

Previously savoured at the Frankel outlet, the Baby Pomfret ($9 for 5pc, $16 for 10pc) is a cute dish deep-fried to a satisfying crispiness, allowing diners to enjoy the entire fish. However, the appreciation of this dish largely depends on personal preferences, as there is little beyond its crispy texture to make it a standout fish dish. So, diners should consider their expectations and preferences when ordering this dish.

Braised Combination Platter 4/5

An essential element of Teochew cuisine lies in its mastery of braised dishes. We opted for the Braised Combination Platter ($28), which included Pork Belly, Pig's Skin, Pig's Intestine, and Tofu. To enhance the dining experience, it was accompanied by a traditional Teochew white vinegar dip, which perfectly complemented the braised items. The only drawback is that the pork belly was excessively fatty for my taste. It might reflect a shift towards healthier eating choices as we age.

Although not a traditional Teochew dish, the Grilled Pork Jowl ($18) is well-executed, with a tender texture and a delightful sweet sauce.

The Poached Crispy Rice in Seafood Stocks ($34) was undoubtedly one of our favourite dishes, providing a hearty and comforting experience. This dish featured a rich seafood broth accompanied by grouper fillets, scallops, and prawns. What set it apart was the rice, which retained its grainy texture, offering that distinct Teochew preference for a delightful bite.

To end on a sweet note, the Yam Paste ($10) includes a surprise addition of osmanthus to the creamy yam paste, enhancing its fragrance and sweetness.

Elixir Coffee and Wine @ Holland Grove - Indulge in Elevated Brunch and Coffee During the Day, Delight in Pizzas and Wines for the Evening

Elixir Boutique Roasters, known for its artisanal coffee and cafe fare, may ring a bell for many cafe-goers. Formerly located in Bukit Timah, the reimagined establishment has since found a new home in Holland Grove under a new name, Elixir Coffee and Wine.

With a brand new menu created by Executive Chef Victor Loy, Elixir invites diners to indulge in brunch and coffee during the day and delight in pizzas and wines in the evening. The menu offers elevated brunch classics, fun bites, and unique sourdough pizzas.

Coffee lovers would be happy to know that they serve coffee brewed using beans from award-winning Blacklist Coffee in Perth. For wine lovers, the restaurant holds a curated wine list of old and new world vintages.

Stracciatella 4/5

Our meal began with a more classic dish, the Stracciatella ($20). Here in the Stracciatella, we had sourdough bread smothered with creamy burrata, complemented by pecorino cheese and sweet and slightly smoky blistered tomatoes.

For all three tartines we sampled, their bread base is all made using the same sourdough recipe as their pizza dough.

Turkish Eggs 4.5/5

Try the Turkish Eggs ($16) for something more exciting. Chef Victor told us that this is one of their bestselling brunch dishes.

On the sourdough, the flatbread is baked to order. It's topped with garlic yoghurt, paprika oil, poached egg and a super addictive Lao Gan Ma-inspired housemade chilli crunch. The added pomegranate gave pops of refreshing sweetness amidst the spicier and garlicky bites.

Salumi 4/5

The Salumi ($16) would be a treat for bolognese lovers. The flatbread is generously topped with nduja and accompanied with tangy sumac onions and a blend of fresh herbs like coriander, arugula, mint and dill. I recommend sharing this for more enjoyment, as the heaviness may feel a little flat halfway through.

Next, we moved on to the Bites section, which is available for order from 12pm. The simple-looking Salad ($12) had a refreshing mix of radicchio, wombok and mint in white balsamic with crunchy hazelnuts.

Burrata 4.5/5

Bet you’ve never had burrata done in this manner! Elixir’s Burrata ($24) continues an unexpected use of the housemade chilli crunch we loved on the Turkish Eggs.

While the flavourful chilli crunch may slightly mask the creamy sweetness of the burrata, we thoroughly enjoyed the exciting pairing and side of pickled cherry tomatoes! This will be up your alley if you're looking for something different.

Tête de Moine 4/5

Consider the Tête de Moine ($22) for a side to pair with your wine. The beautifully shaved Swiss semi-hard cheese is served with poached apricot and fried walnuts, boasting a creamy and nutty flavour with a subtle tangy finish.

Baby Octopus 4.5/5

My favourite from the Bites menu was Chef Victor's Baby Octopus ($18). It had baby octopus coated in a thin exterior of seasoned flour and deep-fried to the perfect crunch.

I thoroughly appreciated how the light batter allowed you to still enjoy the octopus's chewiness and how the umami black aioli didn't overpower. This is one dish I will definitely re-order on my next visit.

Not-Carbonara 4.5/5

For fans of white pizzas, go for the Not-Carbonara ($26), the restaurant's signature pizza inspired by the well-loved carbonara dish. While you will see authentic-carbonara toppings of egg yolk, guanciale, prosciutto and pecorino cheese, the play on its name is due to the inclusion of a rich and creamy mornay sauce on its base.

While we found the pizzas slightly too thick around the crusts, we enjoyed the chewiness from the sourdough and the flavourful combination. It leans on a saltier end with a generous hand of fragrant black pepper, but my dining companion and I did not mind it at all.

Hot Mama 4.2/5

Here is another appearance of the special housemade chilli crunch on the Hot Mama ($28) pizza. This is one boldly flavoured piece, with the fragrant spiciness from the chilli crunch and additional spiciness and saltiness from slices of Calabrese salami, alongside onions and fennel.

Cali Cali 4/5

Cali Cali ($26) was inspired by Chef Victor's trip to California, focusing on the marriage of flavours from the country and Italy. This piece saw toppings of sausage, chopped kailan, guacamole and chilli flakes. After sampling the first two, the flavours here are more 'safe'.

Pistachio Cake 3.8/5

Our dessert for the day was the Pistachio Cake ($14) drizzled with extra virgin olive oil and a dollop of crème fraiche chantilly. This was a piece that was light and nutty but not exceptional.

Travelling to Elixir Coffee and Wine is out of the way. Hence, I recommend making reservations at https://elixircoffeeandwine.com/pages/reservations to ensure an available table.

Wang Dae Bak Grill @ Holland Piazza - South Korean Barbecue in a Modernized Classic Setting

Wang Dae Bak Grill at Holland Piazza is the brand's 3rd outlet, offering authentic South Korean barbecue in a modernised classic setting. The menu features fresh gourmet varieties such as US Prime Sirloin, Marinated Prime Ribs and Flower Pork Belly, including sets that cater to different dining group sizes.

The banchan here was really delicious! Besides the kimchi, I most enjoyed the braised egg and sauteed brinjal. They are refillable too.

For 2 or 3 pax, Buddy Set ($68) would be ideal if you intend to enjoy your meats with other dishes. The set has Marinated Prime Ribs, Duroc Pork Belly/Collar, Flower Pork Belly, and Marinated Chicken. The Pork Collar had a balanced marbling, lending the meat a good amount of flavour as the fats rendered off slowly on the sizzling grill.

Both the chicken and prime ribs meat were marinated, but the marination did the chicken more justice than the latter. The chicken thighs were succulent, with flavours elevated by the marination. On the other hand, the tender beef did not deliver the anticipated beefy notes of a prime rib.

Spicy Seafood Tofu Stew 4/5

Other signature WDB dishes include this Spicy Seafood Tofu Stew with soft wobbly tofu. It was robust and heady with a depth of crustacean flavour from the fresh prawns and clams.

Kimchi Cheese Rolls 2.5/5

Kimchi and cheese combination sounds enticing, but the execution fell short with the Kimchi Cheese Rolls, which turned out to be a tad greasy. The kimchi and the cheese melded into one saltish tang. A kimchi cheese mandu or dumpling may have been a better alternative.

Kimchi Fried Rice with Cheese was hearty and flavoursome, with the kimchi bits evenly tossed together with the pearly rice grains. The cheese was absent though. The charred bits formed at the base of the fried rice imparted a tantalising smokey nuance to the overall taste.
