Stellar @ 1-Altitude

Stellar @ 1-Altitude, has been well known for its modern gastronomic cuisine. If you are keen to try more than one main course, (which I always am), Stellar at 1-Altitude's Gastronomic Menu has up to 19 items for either a four, five or six-course tasting menu. The mix and match menu also features a dessert experience, in which you have a choice of sweets and "dessert art," and you get to see them prepared right in front of your eyes.

Desserts, are often being sidelined, but not to the ladies maybe. However, we can’t deny the fact that, more often than not, they are indeed crucial to concluding your gastronomical journey. I believe it takes a lot of creativity, work and effort, to weave the different ingredients into a petite delight. And Chef Jasmin Chew, seems to possess the right DNA to be recognised in this arena.

A naturally creative person, I believe her graphic design background has enabled her to use colours even more artistically. What her guests will be tasting, are her creations borne of her skills acquired from working overseas, as well as local’s renowned restaurants.

To have a taste of how complex it is, we were first made to do our own dessert - Yoghurt Crème Brulee, which is one of her signature desserts. Trust me, seeing her taking out the Crème Brulee from the mould seems as easy as snapping your fingertips. But when comes to doing it, it’s a totally different thing.

Luckily we were only required to do one out of the 4 desserts - Fire Ball, Cherry Alaska and Smokey Coals. Plating these 4 desserts were the 2nd challenge. We were equipped with some edible gold paint, coffee crumbles, flowers, whipped cream etc, all the necessary to gel these desserts into one single painting. One of the most important items on the table, was the hand-held flame torch. With this, we torched the sugared top of the Crème Brulee, followed by flaming the liqueur for pouring over the Alaska and the Fire Ball.

When the last drop of flamed liquor fell onto the Fire Ball, it was time for tasting!
Cherry Alaska ($16.00++) - Morello Cherry Sorbet Alaska with an aromatic Amarena soaked cherry centre flambéed with Grand Marnier. Distinctive color contrast was the first thing that caught my eye when I broke the ivory pyramid - a dark red Morello Cherry Sorbet. Sweet and sour, a refreshing dessert to wake up my taste buds. And the best part was when I bit into the Amarena soaked cherry!

Then we moved down to Smokey Coals ($16 ++). Lapsang Souchang tea infused chocolate ganache wrapped in a thin layer of sponge. A pristine looking piece of art. It is like a white version of your usual molten cake but much more exquisite and delicate. Its flavour is rather subtle.

Yogurt Crème Brulee ($16.00++). I like this tangy version much more than the normal eggy ones, which tends to be sweeter. It is less rich, and I enjoy the lightness of it. The sprinkle of sea salt on top of the crispy burnt sugar works like magic in heightening the overall taste.

The finale was the Chocolate Bomb ($16.00++). After it being flamed with liqueur, it left a dark trail of warm, dark chocolate around the velvety hazelnut praline. Every scope of it, together with the centre piece was heavenly. Marrying the chocolate with the berry compote adds on to the divine factor.

If you are here at Stellar, do remember to leave some room for their desserts. Seeing the Chocolate Ball flames in front of your eyes, or smelling the sweet smelling burnt sugar that perfumed the air, their dessert art is not just about satisfying your gastronomical cravings, but an experience that will please your other senses as well.

The Carving Board @ Yuhua Village (Jurong East)

The wooden board and the mouth watering western food has been appearing on my instagram timeline lately so I decided to make my way down to The Carving Board at Jurong East to check out this modernize hawker stall inside a coffeeshop in Jurong East.

Battered Calamari Rings with Curry Mayo Sauce 2.5/5

We started with some light bites in the Battered Calamari Rings with Curry Mayo Sauce ($4.50). Unfortunately, this taste like frozen calamari with non of the springy texture innard, Instead it was some sort of powdery. I would suggest giving it a miss.

Mixed Grill 4/5

From the Premium House Grill section of the menu, I ordered the Mixed Grill ($17) to get a taste of everything. Served on a wooden board, there was beef steak, bratwurst, rosemary chicken chop with toasted bread and salad. All premium house grill comes with a choice of side and sauce. The beef steak was ok but not the best cut. The favourite on the plate has to be the rosemary chicken chop that is flavourful and grilled to a tender juicy bite.

150 Days Australian Angus Flank Steak 4/5

The other selection on the premium house grill menu I tried is the 150 days Australian Angus Flank Steak ($16). I had my flank cooked medium so that it would not end up too tough. The beautiful beef comes with a chewy bite but it was easy for the teeth and enjoyable.

Overall I find that the new concept has brought hawker food somewhat into a new and modernize level while keeping truth to serving good quality food. Price is quite reasonable with the quality The Carving Board is offering. Aston also started from a hawker stall and maybe The Carving Board can be the next Aston if they continue to work hard and maintain its quality and standard.

King's Roasts @ Balestier Food Centre

Using modern technique to roast his pork belly or also known to my local as sio bak. Chef Kingsley Tan uses the combi oven which is commonly used in hotels but not in hawker. He started King's Roast selling is combi oven roasted meat at newton circle food centre before relocating to his current premises at Balestier Food Centre.

Sio Bak 4/5

After moving to Balestier Food Centre, he changed his menu to offer more western cuisines but the roasted Sio Bak is one pride that he kept it on the menu. Using combi oven to roast his pork belly, he ensures the consistency in every roast as the temperature, timing etc can be pre-programmed. The crispy and crackling skin, the moist and juicy meat all is roasted to his preference.

During my visit, I also managed to try the Char Grilled Chicken Chop ($6.50), Char Grilled Pork Chop ($6.50) and Fish & Chips. Among the three I tried, my favourite was the Char Grilled Pork Chop. The pork chop was beautiful marinated and tender. However the star has to be the sauce that complemented the pork chop. Each set also comes with a coleslaw and a choice of fries or garlic butter rice.

King's Roasts will be taking parting in this year Ultimate Hawker Fest 2014 doing their signature Roasted Pork Belly. However for the fund raising event, the will be using the premium Kurobuta Pork for their sio bak. The sound of it already makes my saliva drips. So drop by King's Roasts stall at the event to bite into the crackling Kurobuta Sio Bak.

Southwest Tavern @ Traderhub 21 (Jurong East)

Southwest Tavern is a cowboy theme restaurant located at Tradehub21, around the Jurong East region. Being a Westerner myself, I was quite surprised when I first heard of it, as such places are usually concentrated in the Eastern side of Singapore. On their website, they claimed to be serving the best western food in Jurong. Well, we shall let the food speaks for itself....

Dining here is fully alfresco. It is not exactly ideal for our climate, but being hidden in the lane helps in keeping it shady and cool. The interior is pretty simple, with wooden tables and benches, of what you may have expected for such a bistro. Their menu is surprisingly comprehensive, ranging from your typical bar food to soups, salads, steaks, ribs, seafood, chicken, pastas and pizza. "Suicide Wings" are available if you are up to it. Beer lovers will definitely love their extensive offering of imported beers too.

Seafood Gumbo 4/5

The Seafood Gumbo ($12++), I would say adheres closely to the Southern Louisiana's recipe. Containing rice, it is more like a stew with the soup strongly flavoured with prawns, mussels, scallops, squids, along with bell peppers. Each ingredient was fresh and succulent. The resulting taste was tangy and a little spicy which was quite appetising.

Salad with Cajun Prawns 2.8/5

The Salad with Cajun Prawns ($10++) was nothing impressive with just a few pieces of greens. But I like the Cajun Prawns which was firm and nicely spiced.

Grilled Fresh Norwegian Salmon 4.2/5

Usually a bistro bar set up like this may be good in their steaks and burgers but fails in their seafood items. However after trying their Grilled Fresh Norwegian Salmon ($22++), I'm quite assured by the quality of their food. The salmon was perfectly grilled. The surface was slightly charred, leaving the inside pinkish and moist. The meat carried a rich, fatty texture. When the meat was so fresh, all I needed was just a squeeze of the lemon given by the side, dispense any sauces or dressing. For me, it would have been perfect if they have gone easier on the salt. As for the sides, I felt they need to work on it. The sweet corn was scrawny and the small potatoes were under roasted.

Double Cheese Burger with Mushroom Swiss 3.8/5

I didn't expect their Double Cheese Burger ($18++) 3.8 to come with double patties. I was thinking of just double slices of cheese. The patties are homemade with imported beef. Each patty was evenly charred on the outside with the inside a little rare and juicy. My other half shared that he learnt a burger consists of a well toasted bun with charred sides (ticked), juicy homemade patties (ticked), fresh vegetables and onions (ticked) and last but not least, how you dress up the burgers to differentiate it from the mundane ones. Yes, the sauces was left unticked for this burger. I thought the patty could be less peppery. But still, he enjoyed it pretty much. The additional topping of Mushroom Swiss ($3++) we had was thick with cheese. You may want to skip that if you are ordering a Double Cheese.

The quality of their food certainly surpassed my expectations and I wish I have a bigger stomach to try more of their offerings such as their famous Beer Butt Chicken and ribs. One may find the price slightly high for a basic setting like this but the quality and portion justify it. A hidden gem worth exploring especially for the Westerners.

Cali Cafe @ Park Avenue Hotel Rochester

Nestled within Park Avenue Hotel at Rochester is a Californian style cafe called Cali Cafe. The cafe seems rather quiet on a Friday evening. Hidden away from the main dining scene of Rochester Park, it seems like a nice quiet place for a peaceful dinner.

Boosters Juices 4/5

We started our dinner with some boosters juices which were freshly squeezed. I had the Summer Cooler ($7.50) which is a melange of watermelon, orange and lemon. A refreshing drink for the humid Singapore weather. My partner went for the Detoxnic ($7.50) a concoction of celery, apple and orange that is great for cleansing and immune system.

Napa Caesar Salad 3.5/5

The Napa Caesar Salad ($11.90) comes with crunchy romaine lettuce, cherry tomatoes, strawberries, peaches and egg served with lemon custard dressing. It was a decent plate of salad with a sweet, fruity finishing. While it is nice, I doubt it can be considered a caesar salad with it fruity interpretation. One can also choose to add on grilled chicken, crispy bacon or smoked salmon at an addition cost.

The Pan Seared Salmon ($28.50) is topped with mushroom sauce and served with potato puree and seasonal vegetables. I am not a big fan of pairing salmon with mushroom sauce. I always felt that salmon goes well with a creamy sauce instead. The salmon was also slightly over. Nevertheless the huge salmon fillet is pretty generous in servicing.

El Camino Chicken Thigh 3.5/5

I was expecting a whole piece of chicken thigh for the El Camino Chicken Thigh ($23.50) but instead it turned out to be more like a piece of chicken chop. The baked chicken thigh was marinated with honey and whole grain mustard, served with creamy mashed potato and sauteed vegetables. A flavourful, moist and tender piece of chicken thigh.

Overall I think Cali Cafe serves decent cafe food but not to the mark of restaurant quality yet. That makes the restaurant pricing it is charging very sensitive. I also observed that the service is not very organised and some of the staffs need to be sent for more training. It can be quite a frustrating experience when the staff has to return to you a couple of times to reconfirm your order, customers waiting in vain to be served and food needs to be brought to the counter to reconfirm with supervisor before being served to table.

Seasons Bistro @ Triple One Somerset

Seasonal eating is rare in Singapore, I would say. Living near the equator where there is only rain or shine, we are naturally not inspired by seasonal produces. That, however, is the philosophy behind Seasons Bistro.

Seasons Bistro set foot in Triple One Somerset in May 2014. The founders believe that eating by the season is not just about taking advantages of the seasonal produces - better flavours and lower cost, it also contributes to sustaining our Mother Earth. Inspired by Executive Chef Benjamin Fong's travels in America, the menu offers a range of dishes that speak the diverse characteristics of the different regions across the continent - from New England to Southwest. American craft beers from independent breweries in United States are also being brought in for an even more authentic experience.

Seared Yellowfin Tuna Taco 4.5/5

We began our journey across the continent with Seared Yellowfin Tuna Taco ($14). Marooned on a tortilla shell, the pinkish tuna was accompanied by Avocado mayonnaise, pickled onions, crispy shallots, cotija cheese, and cilantro jalapeno watercress salad. I love the way the chef played with different flavours and textures. The tortilla snapped readily as I bit onto the tender seared tuna, which was well flavoured by its accompaniments. Under the work of the creamy mayonnaise, all the different elements fused together and glided down my throat effortlessly. With the generous serving of tuna chunks, I certainly don't mind having a couple more as a main...

Grilled Portobello Salad 3.8/5

The Grilled Portobello Salad ($16) shared a similar treatment. With the whole Portobello in the centre, an array of ingredients were summoned- St Maure Terroir, tomatoes, beans, candied walnuts, pickled onions, and bacon crisp. The candied walnuts sweetened the bold St Maure Terroir with strength, creating a fine balance of flavours. However, I felt that the use of goat cheese was not an apt choice for this salad. Because of its distinctive flavour, it overpowered the Portobello. More candied walnuts could potentially be the saving grace.

Pan Seared Foie Gras 4.2/5

Pan Seared Foie Gras ($16) is what I would call a premium breakfast. Imagine a pain de mie with caramelised bananas spread and a piece of butter on top, spiked with granola crumbs and drizzled with chocolate ganache. But switch the butter with foie gras. That was what came to my mind when I took the first bite. The foie gras melted gracefully in my mouth. Coupled with the salty jab from the bacon jam, this dish is a must-try for the adventurous taste buds.

Buttermilk Fried Chicken 4/5

Coming to the second leg of our journey, we had 4 mains- buttermilk Fried Chicken, Surf & Turf Gumbo, Seared Albacore Tuna and Southend Summer Pasta.

The Buttermilk Fried Chicken ($22) met our expectations - crispy skin and tender meat. But what I thought was worth commenting is their dips. Nothing beats homemade. If you are ordering this dish, do try to appreciate the difference in their homemade ketchup. It leaves your tongue clean.

Seared Albacore Tuna 4.5/5

The dish that I really looked forward to is one of my all time favourites - Seared Albacore Tuna ($26). To preserve the taste of this delicate seafood, it is a kind of dish that I feel should be served as simply as possible. Tonight, this dish did not disappoint. Although I felt that the fish was slightly overdone, the avocado puree creamed the meat really well. At some point, the meat fell apart readily and seemingly melted in my mouth. I really like its fruity companions - Asian pear, jicama, watermelon with chipotle mojo and salsa verde. They were so refreshing, I believe this dish is a ladies' pleaser.

Southend Summer Pasta 4.2/5

A stir of the Tagliatelle immediately released the uplifting aroma of the fresh herbs and spices - fennel, basil and chili. When I do not usually associate pastas as a Summer dish, Chef Benjamin subverted my expectation by creating the Southend Summer Pasta ($18). Prepared using homemade tomato sauce with chunky sausages, this dish was appetising and moreish. It was balanced in almost every way. At my first bite, I could taste the natural tanginess and sweetness of the homemade tomato sauce. The pasta was done al dente and the sausage chunks was not overly seasoned like many others.

Surf& Turf Gumbo 4/5

Surf& Turf Gumbo ($27) comes with a grain by the name of "dirty rice". As unappetising as it may sound, it is actually quite a tasty Cajun dish. This dish was traditionally cooked with white rice mixed with small pieces of chicken liver or giblets, green bell pepper, celery, onion and spices cayenne and black pepper. That was how the rice obtained its 'dirty colour'. The dirty rice we had this evening was a much hearty version - cooked with Chunks of Shrimp, chicken, sausage, okra tomato stew, mixed evenly with pickled onion, cilantro, chow chow relish & french bean salad. The chow chow relish was extremely appetising. I wish there was more bite to the rice, rather than being 'soaked' with stew.

Our journey came to an end with some of their popular desserts. Like Oreo, Red velvet seems to have acquired its own flavour. Here at Season's, one gets to try a Red Velvet Cheesecake ($10). Though it is said to be a popular choice among the diners, I find it too cloying.

Their Carrot Cake ($12) was a real pity. Although it was loaded with walnuts, the taste of nutmeg and cinnamon was seemingly absent.

Mojito Tart 2.8/5

If you like something rummy, you can try their Mojito Tart ($12), which was quite well liked by some diners that evening. It is a toasted coconut tart with mint lime curd & rum cream. But personally, it fell short of my expectations. I feel that the lime curd was sticky on the throat, and the taste did not go well with the rum either.

Season's Deconstructed Banana Split 4/5

That was when I realised; some classics will always remain as classics. What could go wrong when you pair fried bananas with ice cream? Especially when the ice cream is made with real vanilla pod. Season's Deconstructed Banana Split ($12), was my favourite among the rest. Together with granola nut crumbs, fresh strawberries, nutella & fresh cream... I just wanted to savour it with my eyes close...

I heard that the lunch menu here is also quite popular among the working crowd. There is also a deli-counter offering gourmet sandwiches, cheese and cold-cut platters for takeaways. Tonight, I really enjoy my maiden journey with Seasons Bistro, and I attribute a large part of it to their impeccable service. Located at a rather obscured corner of Somerset, the food really got to speak for itself. Judging at its crowd, yes, I believe it has done it.

The Royal Mail @ The Ascott Raffles Place

I have never known that there is a restaurant located at The Ascott Raffles Place until my recent visit to The Royal Mail. I like the cozy ambience being away from the busy CBD area. The modern British cuisine offering at the The Royal Mail has recently undergone a face lift introducing a new selections of classics British cuisine with a modern twist, reflecting post war migration and globalisation.

The dinner kicked started with a dual of Amuse Bouche. In the spoon was a scallop with orange jam and olive cavier, very interesting combination that worked well on the palate. In the shot glass was avocado mousse with green apple slices that was light and refreshing with the apple slices adding a nice finishing crunch.

Pan Seared Foie Gras 3.8/5

Next up we tried a couple of the appetizers on the menu. The Pan Seared Foie Gras ($24) was beautifully cooked and paired with scented honey mustard with riesling jus lending a subtle sweetness to it. Sharing the plate was a piece of camembert cheese. While I enjoy cheese, this seems a bit out of place with the goose liver.

Baby Octopus & Bay Scallops 4.2/5

Plated like the coral seabed, the Baby Ocopus & Bay Scallops ($28) is served with wasabi aioli, ikura and squid ink crust. The wasabi aioli complemented the octopus and scallops excellently.

Sou Vide Half Maine Lobster 4.5/5

The Sou Vide Half Maine Lobster ($24) with Japanese pumpkin, crispy iberico de bellota, saffron beurre blanc and port jus was not only beautiful in its plating but beautiful on the palate too. All the different ingredients simply comes together and worked in harmony.

Lobster Linguine 4/5

The Lobster Linguine ($28) with garlic, semi dried tomatoes, chilli oil, lobster and squicd ink espuma was beautifully cooked with a perfect marriage of the different ingredients.

Roast Prime Rib

The highlight at The Royal Mail has to be the roasts section. The Roast Prime Rib comes in 3 different cuts namely English (200g $48), Classic (280g $58) and Royal Mail (340g $68). I tried all the three different cuts and I preferred the English cut which is more flavourful compared to the rest. It was sliced thin to heighten the flavour. The roast prime rib served on a wooden plank comes with sauteed brussels sprout with molthen blue cheese, pine nuts, roast whole garlic, yorkshire pudding and veal jus.

Kurobuta Pork Chop

Another favourite of mine at the Royal Mail is the pan roasted Kurobuta Pork Chop ($48) served with caramelized apple and apple jus. The pork was flavourful and succulent which is excellently paired with the apple jus.

Duck Fat Baby Potato and Truffle Risotto

To go with the mains and roasts, there are a number of accompanying side dishes available on the menu. A couple of my favourites are the Duck Fat Baby Potato ($8) with garlic, harlort verts and rosemary and the Truffle Risotto ($14).

Roasted Deboned Fish of the Day 700g

Good for sharing is the Roasted Deboned Fish of the Day (700g $52). The whole roasted sea bass was served with grilled lemon, garlic confit and scallion. Cooked to perfection, the grilled fish was fresh and moist. Squeezed the lemon juice over the grilled fish for added zest and further lifted the sweetness of the fish.

Chocolate Fondant

Moving on to desserts, I had the classic Chocolate Fondant ($18). The moment of delight when I cut into it and the molten lava flow out from the centre of the chocolate cake. It is served with Tahitian vanilla ice cream and freeze dried raspberry chocolate crumble.

Eton Mess 

A signature dessert since their opening is the Eton Mess ($15) which reflects the strong British influence. Served in a messy glass of strawberries, meringue, hazelnut crunch, salted caramel and devon cream no wonder it got it's name. The dessert originated from Briton's famed boarding school Eton College, where it is served at the school's annual cricket game and has been known by its name since the 19th century.

Not to be missed is the daily bar promotion at the Royal Mail. I was there on a Thursday and it was having all martinis at $5. What a steal isn't it?

Monday - 1 for 1 full pint draught beer

Wednesday - 1 for 1 single malt whiskies by the glass
Thursday - All martinis at $5++
Friday - House pour liquor by the glass at $5++
Saturday - 1 for 1 on house pour liquor by the bottle
