Town Restaurant @ The Fullerton Hotel Singapore - Satay Soiree by the River

In celebration of Singapore's upcoming national day, Town Restaurant at The Fullerton Hotel Singapore will launch a special dinner promotion from 1 to 11 August 2019. This dining promotion - Satay Soiree by the River, will feature the Singapore heritage brand, Chim’s Satay which is now in its third generation, alongside other local grill favourites. As grilling satays over charcoal flames plays a vital role in bringing out the best of the satays, the culinary team at Town Restaurant was personally trained by two of the three Chim sisters to ensure the quality of it.

Chim's Satay 4.5/5

There are 4 types of Satays - Chicken, Beef, Mutton and Pork, served with House-made buttery peanut sauce. The peanut sauce was really robust and smooth, with chunks of pineapple to loosen up its richness. \As for the satays, I think by far these are one of the best that I ever had. Each skewer was tender and juicy, and the Pork satay was quite exceptional. It can be rather tricky to get the meat to fats ratio right for pork satays, but Chim's Satay has mastered that over the years.

And not just satays, Grilled Seafood are also available. While I was just expecting some Tiger Prawns skewers, what we were offered were King Prawns and Mud Crab. The team had done a great job in grilling the prawns over the charcoal flames. It is easy to over grilled these prawns, but what I had were succulent.

Salmon Medallion 4.2/5

Adding on to the hawker flavour of this Satay Soiree is Sambal Sting Ray, individually wrapped with foil to keep it warm and moist till you open it up on your table. What I also appreciate is the addition of Salmon Medallion. Each chunk was fatty and tender. Although it may not be considered as a typical local barbeque ingredient, as a fan of salmon, this is a bonus.

Not to forget Otahwhich was packed with chunks of fish. Not in the picture is Chef Chan's Signature Salted Egg Yolk Lobster. I had horrible renditions of this dish before, in which the lobsters were either too dry or mushy, but this was moist and succulent. The salted egg yolk crust was generous but did not overpower the lobster at all. Do note that this is only available on Friday and Saturday.

J65 @ Hotel Jen Tanglin - Seafood Fiesta Throughout The Week

J65 at Hotel Jen Tanglin has launched daily themed nights highlighting different seafood along with local favourite dishes. If you simply into fish and nothing else, Thursday night will be the evening for you to explore the possibilities of fish-centric dishes, that could make you go "What The Fish"!

Thai Baked Snapper

Head down to the Baked Fish station and you will get what I mean. The sheer size of the fishes is just stunning. You get unusual large baked fish like Thai Baked Snapper, which is spicy and tangy with lime and chilli padi, and also Seabass with Tobiko and Wasabi Cream that is savoury and creamy with a bit of heat from the wasabi.

Mediterranean Baked Baramundi

My personal favourite is the Mediterranean Baked Baramundi - meaty, tender with a slight crisp exterior, and I love the accompanying grilled olives, cherry tomatoes and artichokes for their toothsome sweet and tangy flavours.

Baked Salmon, Salmon Bryani, Smoke Salmon Pasta

Salmon is a versatile seafood and it shows in these dishes. Once smoked, its increased depth of flavour makes it excellent with pasta. In particular, I find the Salmon Bryani a brilliant execution that has the spices, herbs and the fish play out in balance, even more so than using meat. The Raita served at the side makes this dish even more enjoyable. This should be up on the menu as an alternative to meat bryani!

In fact, most of the fish dishes from the Indian cuisine section are commendable. The Home Style Fish Head Curry Pot is highly recommended. The meat was so tender that it simply slid off from the bone upon a slight tug. Together with Fish Tikka and Sambal Grilled Sting Ray, you will reach out for bowls of rice for sure.

Fish Congee

If these dishes are too strong for you, you can always fall back on some comfort dishes such as Fish Congee. But for me, I would still go for less conventional dishes such as the hearty Trio of Fish with Cheddar & Mash Potato, one of the best fish pies ever!

Mei Qi Cuttlefish Kangkong.BBQ Seafood @ East Coast Lagoon Food Village - Shiok Sambal Chilli Sauce

Many times whenever my foreign friends come to Singapore, I would bring them to East Coast Lagoon Food Village to try the different local food. There are many stalls in the food centre and one of them is Mei Qi Cuttlefish Kangkong.BBQ Seafood where you can order a variety of cooked dishes.

Sambal Stingray 4.2/5

Many places sells the BBQ Sambal Stingray but what stood out is there sambal chilli which is very fragrant and shiok. The other bonus is the accompanying cincalok dipping sauce. The sharpness of the cincalok sauce brings out the freshness of the fish meat.

Sambal Kang Kong 4/5

The Sambal Kang Kong is a common dish which you can get in every restaurant. I have to say the stall's concoction of sambal chilli is really good and it seems to go well with anything. Love how the greens still retain a crunchy texture. not overcooking it.

Sambal Squid 4.2/5

The Sambal Squid is as good too with the sambal sauce. Coated with the fragrant sambal sauce, the perfectly cooked squid comes with a delightful bite.

Sambal Mussel 4/5

For those that finds the sambal chilli sauce too spicy to handle, the Sambal Mussel may be more manageable. The plump and juicy mussel is bath in a sweet chilli sauce similar to the chilli crab sauce.
