Yun Nans (云海肴) @ Jewel Changi Airport - Unveils Five New Dishes

I am glad to be back at Yun Nans (云海肴) at Jewel Changi Airport. I had enjoyed the food when it first opened its door back in April 2019. I am back to try its new dishes, celebrating Yunnan cuisine in China, using fresh ingredients from the highlands of the Yunnan province.

Spicy Fish Skin with Jasmine Petals 3/5

Fish skin is commonly served in Chinese restaurant nowadays but for something slightly different is the Spicy Fish Skin with Jasmine Petals ($6.90). The deep-fried fish skins are coated with a potpourri of traditional Yunnan spices, boasting a delightful hint of mala and crunchy bite.

Century Egg with Grilled Capsicum 3.5/5

I love century egg and glad to see the restaurant has introduced the Century Egg with Grilled Capsicum ($6.90) as one of the five new dishes. The century egg is soused in a special Yunnan chilli sauce that has a spicy-tangy note.

Fried Chayote with Dried Shrimp (Dried Chilli/Garlic) 4.2/5

The Fried Chayote with Dried Shrimp ($11.90) can be done in 2 ways, dried chilli or garlic. Chayote is a type of melon from Yunnan, that is cooked in almost every home in Yunnan. The restaurant even imports the dried chilli all the way from Yunnan.

Double Boiled Pear with Golden Fungus and Snow Lotus 4/5

A hot dessert on the menu is the Double Boiled Pear with Golden Fungus and Snow Lotus ($5.90). A rare item is the wild golden fungus, a speciality ingredient from Yunnan province that has health benefit such as nourishing the lungs and good for the complexion. There is also wild snow lotus that is known to alleviate cough.

Steamed Red Grouper with Green Peppercorns 4.2/5

One of my favourite dishes is the Steamed Red Grouper with Green Peppercorns ($48.80). Steamed to perfection is the tender and moist fish. What brightens the flavour is the fresh green peppercorns, which are fragrant and less numbing than their red counterparts.

Double Boiled Chicken Soup with Red Mushrooms 4.5/5

While Yun Nans is known for their signature Steam Pot Chicken Soup, the Double Boiled Chicken Soup with Red Mushrooms ($22.90/$38.90) is as good too. The black feet chicken is double boiled for at least two hours with red mushrooms. The red mushrooms are priced delicacy, costing US$400 per kg, which are consumed only during celebrations and special festivals. It has full of nutrients such as amino acid and helps to nourish the blood.

Besides the five new dishes, there is also the children's menu, which offers two selections: Yunnan Rice Noodles with Shredded Chicken, Shredded Carrot and Black Fungus ($7.80); and Shredded Chicken Congee ($7.80). Each choice comes with fresh fruits, corn cakes and ribena.

Stranger's Reunion @ Kampong Bahru - Redefining Cafe Dining With New All-Day Brunch Menu

Known for its all-day brunches and some of the best coffee in town since 2012, Stranger's Reunion has recently rolled out a new all-day brunch menu featuring delicious and thoughtfully-crafted creations with quality and upcycled ingredients, alongside brunch classics to cater to diners' discerning palates.

This laid back chic cafe helmed by award-winning barista champions is also a top pick for a great dining experience coupled with a well-made cuppa. While the perennial favourites remain on the menu, the Stranger's team put more thought into the ingredients used and experimented with more inventive cooking methods to bring more conscious and refined dishes to the table, different from the usual brunch fare. Most dishes reveal skill, inventiveness and sophistication more often showcased in fine dining establishments. We had the opportunity to try some of their exciting new offerings.

Snapper Ceviche 4/5

Kick off the brunch date with a light and refreshing Snapper Ceviche ($13.90) which features a combination of firm and juicy chunks of snapper cured in lime juice, creamy avocado, aromatic cilantro, as well as red onions and shaved fennel for sweetness and bite.

Salmon Skin Chips 3.8/5

Utilising salmon cutoffs and trimmings from the cafe's homemade coffee smoked salmon, the Salmon Skin Chips ($11.90) is a moreish appetiser with its crispy deep fried salmon skin studded with sesame aioli, avocado coulis and coffee-smoked salmon puree to add a delightful combination of nutty, salty, sweet and sour flavours to the chips.

Roasted Cauliflower Salad 4.2/5

One of my favourite is the Roasted Cauliflower Salad ($14.50). With cauliflower prepared in two ways - expertly charred to yield caramelised florets with deep hazelnut notes, and pickled in rice wine vinegar infused with black pepper and bay leaves. Both renditions are tossed in a luscious and rich home-made pine nut labneh, topped with pickled sweet and sour grapes, juicy promegranate, toasted pine nuts, mint leaves and finished off in a homemade honey mustard. Taking inspiration from the middle-eastern cuisine, this unique dish presents a well-balanced mix of flavours and textures.

Pan Roasted Chicken Breast 4.2/5

The Pan Roasted Chicken Breast ($21.90) boasts a tender and succulent slab of chicken breast doused in house-made jerk sauce paired with sweet corn, red peppers and baked sweet potatoes accentuated with fresh mint and thyme. While chicken breast meat can be tough and dry due to less fats within, this version was executed well, with the complimenting sauce and toppings to add flavour to the meat.

Pork and Broccoli 4.5/5

The Pork and Broccoli ($21.90) is also favourite pick for its extremely tender meat. The typically under-used pork collar ends are sous-vide till tender then roasted. It is complimented with a broccoli puree and burnt onion jus which adds a subtle sweetness to the dish.

Strangers Coffee Smoked Salmon on Toast 3.8/5

The Strangers Coffee Smoked Salmon on Toast ($18.90) is a brunch classic with a special twist. The house-cured salmon is cold smoked with spent coffee grounds and hickory wood to render the cafe's savoury and aromtic coffee-smoked salmon. An espresso infused creme fraiche is also slathered on toasted sourdough bread which amps up the coffee element of the dish.

Buttermilk Waffles wtih Hazelnut Praline & Almond Crumble 4.2/5

Round off the meal with their signature buttermilk waffles - The Buttermilk Waffles wtih Hazelnut Praline & Almond Crumble ($14.50) which is the latest addition to the cafe's menu of signature best-selling buttermilk waffles. Boasting crisp edges with fluffy insides, the waffle is crowned with hazelnut sauce, vanilla ice cream and a sprinkling of almond crumble and chocolate shavings. No doubt a great ending to the meal.

The Line @ Shangri-La Hotel Singapore - Usher In An Auspicious Year Of The Pig With A Sumptuous Lunar New Year Reunion Feast

Gather your loved ones together and herald a year of happiness and richness with a reunion feast at The Line, Shangri-La Hotel Singapore. The celebratory spread features auspicious regional dishes including Shanghainese, Cantonese, Szechuan and Singaporean favourites to welcome prosperity and fortitude for the Lunar New Year.

Available from 10 January to 28 February 2019, diners can look forward to a plethora of international dishes, with a number of festive highlights such as the Cantonese Imperial Seafood Porridge, Chilli Crayfish, Fried Salted Egg Fish Skin, Cantonese Waxed Meat Rice, and Crispy Chicken with Young Ginger.

The Chilli Crayfish is one of my favourite dishes, with tender fresh crayfish meat that just falls off easily from its shell. Drenched in a pool of sweet chilli sauce that adds just the right amount of heat to bring out the freshness of the seafood.

Available at the buffet lineup is the Cantonese Imperial Seafood Porridge. The perfect dish for something warm and comforting before diving into the richer savouries or have them along with bowls of these porridge which exudes out the sweet freshness of seafood.

One of the local's favourite - the Fried Salted Egg Fish Skin did not disappoint with its crispy deep-fried fish skin dusted in thick coats of salted egg powder. This richly flavoured snack is deeply addictive.

Round off your Lunar New Year meal with their Cantonese Waxed Meat Rice - for something familiar and comforting.

The lavish dessert spread include an impressive array of petite dessert cups and cakes as well, such as the Green Tea Opera, 66% Caraibe Chocolate Cremeux, Profiteroles, 72% Chocolate Nutty Cake, Rainbow eclair, Tiramisu, Strawberry Litchi, Black Velvet cake and so on. Diners can also indulge in a variety of nonya delights such as the pandan chiffon, kuehs, as well as old school cakes.
