Nestled on the second floor of Pan Pacific Orchard in the heart of Orchard Road, Mosella is a culinary haven offering a fusion of Mediterranean and Peruvian-inspired cuisine. The restaurant boasts an enchanting setting perched over a waterfall and surrounded by lush foliage, providing a unique dining experience. Helmed by Executive Chef Pedro Samper, a San Sebastian native, the menu features a wide range of delectable dishes, from fresh ceviches to expertly prepared premium cuts grilled over a charcoal fire. Guests can choose from an à la carte menu or enjoy three-course set lunches and dinners, regularly updated to keep the experience fresh for returning patrons.

The Salmon Tataki Tiradito ($32) is a stunning dish that balances delicate and bold flavours. It features thinly sliced seared salmon, elevated by a vibrant mango salsa and burnt orange, which brings a sweet and citrusy touch to the plate. The dish is adorned with ikura, which offers bursts of briny and salty pops and finished with tahini, a creamy and nutty sauce that ties all the elements together.

The asparagus provides a crisp and fresh element to the plate.

The Cacao ($22) is an interactive and delightful sweet treat. It features a Manjari chocolate tart with a rich cocoa filling encased in delicate pastry. The unique presentation lets you crack open the top part of the tart with a spoon, revealing a creamy hazelnut and caramel filling. This dessert offers a symphony of flavours, from deep chocolate to nuttiness and buttery sweetness, providing a memorable and indulgent way to end your meal at the restaurant.

The Tarta de Ques ($24) features a creamy Burnt Basque Cheesecake, accompanied by apple for a fruity and slightly tart note, finished with a scoop of vanilla ice cream for sweetness. The combination of warm cheesecake and cold ice cream offers a delightful temperature contrast, providing a satisfying and memorable conclusion to our dining experience.

Poisson @ Bukit Pasoh Road - Newest Seafood Restaurant Taking Guests Around The Globe With Premium Seafood

Opened in March 2022, Poisson is the newest seafood restaurant located in a restored heritage shophouse on the ground floor of Bukit Pasoh Road. The marine-inspired restaurant features an innovative menu inspired by the world's coastal cities with a distinct Poisson twist.

The menu at Poisson is mainly made up of two sections - Cold Stream and Hot Stream. There are referring to small plates and big plates for sharing. There is even an Omakase Platter priced at $360++ per couple.

Making an impressive entry in a smoked jar is the Smoke Uno ($62). Not only is it pretty, but it is deliciously good too. It features a prized assembly of bafun uni, caviar, negitoro, salmon roe, tamago, and seaweed on top of a housemade crispy cereal crunch. Though there are many flavours and textures at play, they complemented one another harmoniously.

The Rainbow ($26) is a refreshing starter whereby cured salmon trout is served with baby beetroot, basil-infused ricotta with the crunch of red radish and pickled fennel.

A favourite dish is The Game ($24) which features grilled squid marinated in garlic and finishes with a tangy onion and tomato puree. The excellent pairing brightens the enjoyment of the squid.

The next seafood dish we had was John ($48). The John Dory is perfectly grilled to showcase the firm-textured fish's moist fine flakes. The white fish is lightly seasoned and paired with basil & tomato vinaigrette to appreciate the buttery fish.

The Good Catch Toff ($35) is a vegetarian dish and the only carbo dish on the menu. The creamy housemade toffee pasta is tossed with luscious hand-peeled mangrove crab and salted bottarga. Both comforting and hearty, this is a must-order dish at Poisson.

There are only three choices for dessert on the menu, and we decided to go for the Choco De Coco ($15), comprising 70% warm chocolate with a scoop of vanilla ice cream. You can even find bits of chestnut in the chocolate for that extra textural enjoyment and sweetness.

Besides the food, Poisson also has an extensive wine list hand-pick from the finest French vintages from Alsace, Bordeaux, Burgundy, Cote des Blancs, Loire Valley and Provence with a careful focus on organic, sustainable wines from independent boutique wineries. Tapas 24 @ Robertson Quay - A Special Menu Welcoming Founder Chef Carles Abellan To Singapore

Since its opening in May 2021, Tapas 24 at Robertson Quay, Singapore, has received raving reviews. Tapas 24 is a Barcelonian concept that offers Spanish ingredients in traditional tapas with a twist. Chef Carles Abellan founds it with the original outlet located a stone's throw from Passeig de Gracia, a prime shopping and business area in Barcelona, Spain. Tapas 24 Robertson Quay has put together an exclusive limited-edition menu of new creations from 17 February to 27 February 2022 to celebrate Chef Carles Abellan's long-waited trip from Barcelona to Singapore.

The luxe version of the King Crab Ensaladilla Rusa is topped with egg yolk, tobiko and miso mayonnaise. I have not eaten anything like it before. It reminds me of our Chinese Sai Pang Xie (Stir Fry Egg White) but an elevated Western version.

McFoie Burger 5/5

This is the only place you can have the McFoie Burger in Singapore, one of the signature dishes that brought Tapas 24 to fame in Barcelona. Unfortunately, it is no longer served in Spain. The Foie patty sandwiched between grilled, soft brioche buns is served with foie gras mousse on the side. Spread the foie gras mousse onto the burger for a hot and cold, umami enjoyment.

I felt the Squid Ink Paella with slivers of cuttlefish was a bit heavy-handed for it. Though so, the Spanish saffron rice infused with squid ink is deliciously flavourful coupled with delightful bites.

Truffle Spanish Tortilla 4.8/5

Another favourite item on Chef Carles's special menu is the Truffle Spanish Tortilla. I had the potato and egg omelette in Spain but not this version with a molten interior accentuated by the truffle's earthiness. It is hearty and comforting, and most important, deliciously good.

Wrapping up our dinner is the Churros and Chocolate Cake. My eyes brightened when I saw the churros because they are the thin and airy type I like. It is accompanied by three different dipping sauces - Chocolate, Coffee Toffee, and Mango & Passionfruit. For the chocolate lover, you will love the chocolatey richness.

Kilo Singapore @ Duxton - Kilo Collective Celebrates Its 10th Anniversary With An Evolved Concept Of Its Flagship

Kilo Singapore recently opened its doors at Duxton. Its menu is inspired mainly by Latin America's culture, fuelled by an open format natural flame kitchen with a wood-fired grill.

For a start, we had Japanese Oysters ($18). Their freshly shucked Japanese oysters are relatively daintier and milder in taste which I prefer. You may top up $5 with your choice of two shooters of Bloody Mary.

Kilo Seafood Ceviche 3.8/5

Another cold starter we had was Kilo Seafood Ceviche ($34). It features a mixture of chunks of tuna, seabass and red prawn tossed with organic tomatoes cubes that have been cured overnight in a dressing made with fennel, radish, Spanish purple onion, fresh lime juice, and pure extra virgin olive oil. The texture lent by the seafood was good but lacked the punch in its flavours for a more assertive acidity.

Classic Steak Tartare On Confit Potato 4.2/5

From Mezze, we had Classic Steak Tartare On Confit Potato ($22). The steak tartare is made with Australian wagyu cube roll, which has a marbling of 4 to 5, which gives a luscious mouthfeel. The confit potato had a starchy texture, bound well with the creamy tartare.

Signature Kilo Squid Ink Rice With Crispy Calamari 4/5

Signature Kilo Squid Ink Rice With Crispy Calamari ($26) is a hearty mezze good for sharing. The rice is specially treated and marinated overnight with a homemade lime-infused glaze with soy and fish sauce. Upon order, the overnight rice is first fried, then stir-fried altogether with squid ink sauce. Perhaps due to the presence of soy sauce, the squid ink rice itself was strongly reminiscent of a typical Chinese style of fried rice. It was tasty as a plate of fried rice but somewhat disconcerting.

USDA Prime Rib Charcoal 4.2/5

Don't miss out on its selection from the Charcoal Fired Grill for mains. The cuts from the Charcoal Fired Grill segment are served with Kilo Fries and Chargrilled Romaine Lettuce. We had a 350gm of USDA Prime Rib Charcoal. Prime rib has a marbling similar to wagyu, and hence when done skilfully, the charcoal fire grill will get the best out of its fats and juice. Ours didn't disappoint as well.

72% Dirty Seduction 4.2/5

For sweets, we chose 72% Dirty Seduction ($14). It is assembled with two different mousse textures: Hazelnut mousse made with a 100% pure chocolate mousse consisting of 72% dark chocolate chips and a creamy mousse. I love the contrasting crunchy chocolate crackers seasoned with sea salt and the warm chocolate sauce drizzle, which reinforced that chocolate-ty notes.

Open Farm Community @ Minden Road - New Farm To Feast, Reinvigorate The Different Relationships Found On The Dining Table

Open Farm Community (OFC), Singapore's pioneering urban farm and restaurant concept, launches Farm Feast. It is a new family-style tasting menu designed to reinvigorate the different relationships on the dining table - between friends and families, as well as diners and their food. Each feast serves an array of snacks, starters, mains, house-made accompaniments, and desserts that can be adjusted to any group size. It is priced at $88 per pax for dinner, with a minimum company of two.

We started with the SG Grown Radishes that is freshly plucked and served from farm to table. It is paired with cultured cream and sourdough crumble. It is my first time having raw radish. It has an enjoyable sweetness similar to a guava couple with a delightful crunchy texture.

Cauliflower Wings 4/5

Interestingly the Cauliflower Wings are shaped to look like chicken drumettes. It is coated in an addictive tamarind miso sauce, finished with sprinkles of sesame and green onions. It works for me, and I think children that dislike eating vegetables will enjoy this too.

One of my favourite starters is the OFC Farm Sweet Corn from the restaurant's farm. The grilled corn is very sweet. It surprises me that our local farm can produce such top-quality ingredients.

The Hokkaido Scallop was plump, sweet and beautifully seared. However, what caught my attention is the sweet, smooth and creamy corn puree that complement the scallop excellently.

Grassfed NZ Short Ribs 3.8/5

For the mains, we had the Grassfed NZ Short Ribs. The bone-in meat is roasted to tender and doused in a Mexican mole sauce, giving it a spicy, smoky and sweet note. It is further enhanced with the topping of caramelised, pickled and deep-fried onions.

Accompanying the mains, we have a couple of house-made accompaniments such as Ancient Grains & Seeds, Smashin' Pumpkin, SG Green Salad and QJ's Kimchi. Unfortunately, I didn't quite get my head around the concept of the accompaniments as they did not complement the short ribs.

Wrapping up the Farm Feast is the decadent Chocolate Dessert made from Single Origin beans from neighbouring countries. Chocolate lovers will adore the dessert for its delicate sweetness.

Wine lovers can also opt for wine pairing with the Farm Feast for an extra $40 per guest. Guest will get 3 glasses of natural wine to pair with the sumptuous meal.

1-ATICO @ ION Orchard - Newest Sky-High Luxe Multi-Concept Housing 3 Different Concepts: FLNT, FIRE & ATICO Lounge

1-ATICO is the latest sky-high luxe multi-concept on level 56 of ION Orchard that houses an Argentinian restaurant FIRE, Japanese-Peruvian influenced sumiyaki bar and grill FLNT and ATICO Lounge, which will be launched at a later date. Located at the top level of ION Orchard, with floor-to-ceil windows around the place, it also offers a spectacular panoramic view over the city.

We started our gastronomy journey at FLNT with a couple of their signature cocktails - Mizuame ($25) and Nuevo Casa ($23). The Mizuame is an easy and fruity drink that consists of cognac, kyoho grape sake, blood orange liqueur, cheery blossom syrup and fresh citrus.

The Nuevo Casa is another easy drink that is a mixture of kumquat, pisco, yuzu sake, cherry blossom syrup, yerba mate orange tea and tonic water.

Ceviche Nikkei 4.2/5

While the cocktails at FLNT are beautiful, what attracts me is the food. Being Singapore's only Nikkei-influenced sumiyaki bar and grill, I look forward in tasting the culinary movement that started in Lima in the 1980s. First up is the Ceviche Nikkei ($25) comprises of seasonal raw fish with leche de tigre, lime, yuzu, roasted hazelnuts, shallots, tomatoes, avocado and white corns. It is best to enjoy together with the taco. The combination of sweet, sour and different textures make the dish a multi-sensory enjoyment.

A delightful snack or appetiser is the Foie Gras Taco ($12/pc), in which you get a chunky piece of grilled foie gras resting on a deep-fried taco. It brightens up by the toppings of rocoto yogurt, flying fish roe and kaffir lime.

From the grill section of the menu, we tried the Gindara Misoyaki ($28). The highlight is the greenish Aji Verde sauce. It is a vibrant Peruvian green sauce made with mayonnaise, nutty cheese, cilantro, spicy peppers, garlic and lime.

For something more filling, you can go for the Inka Sushi ($14), which is similar to a chirashi bowl. It comes with fresh ingredients such as flame-seared salmon, ikura, seaweeds and aji amarillo. Arousing my interests is aji amarillo, a type of yellow pepper that is commonly grown in Peru.

After checking out FLNT, we proceed to FIRE restaurant upstairs for their dishes cooked by various Argentinian fires - Parrilla, Asado, Rescoldo, Caldero, and Chapa. Upon settling down at our table, we are served Wood-fired Sourdough ($10) brushed with wagyu fat paired with yerba mate smoked sea urchin butter. The first item already got me excited for the rest of the menu.

Mud Crab 'Rescoldo' 4.2/5

Served in a scallop shell is the Mud Crab 'Rescoldo' ($36); Rescoldo is an ancient method of ingredients buried and cooked under the embers. Nothing fancy, just allowing the sweetness of the mud crab and Hokkaido scallop to shine through.

Next, we have the Patagonian Red Prawns "Parrilla" ($28) dressed with northern criollita sauce. Parrilla is an open wood-fire hearth grill with adjustable grates.

Salt-Baked Whole Rainbow Trout 3/5

Guests having the Salt-Baked Whole Rainbow Trout ($52 for 400g/ $70 for 600g) has to be careful. It is quite an unpleasant experience as I need to stop eating a few times to remove the fish meat bones. I also notice my dining companion sitting opposite me doing the same thing.

The night's highlight has to be the 'Devesa' Argentinian Grain-Fed OP Rib ($210 for 1kg). The beautiful piece of beef is grilled to perfection, allowing the natural flavour to shine through. It is paired with red chimichurri sauce made with chopped fresh parsley, oregano, garlic, olive oil, vinegar, and red pepper flakes. You may want to order the Plato de Verduras ($36) to go along with the beef. The platter comprises pickled heirloom carrots and new world potatoes 'Rescoldo', purple Asparagus 'Parilla, wood-fire white corn & corn 'humita', and wood-fired palermo peppers and smoked salt.

Besides the savoury items, there is a selection of desserts such as Flan 'Adriana' ($24), Alfajores & Dulce de Leche Cookies ($3 each), and Choco Torta with Gianduja Sorbet ($22). The Flan 'Adriana surprises with its rich creaminess, complemented by the acidic strawberries and berries.

The Choco Torta with Gianduja Sorbet may appear very rich, but surprisingly, I didn't find it. I kept going back for more though I am not a sweet person.
