Tiffin Room @ Raffles Hotel Singapore - Unveils A Refreshed Menu With An Expanded Selection Of North Indian Dishes

Tiffin Room at Raffles Hotel Singapore has recently unveiled a refreshed menu with an expanded selection of North Indian dishes put together by award-winning Chef de Cuisine Kuldeep Negi. Helming Tiffin Room's kitchen for over a decade, Chef Kuldeep continues to draw inspiration from the royal culinary heritage of the Maharajas and his travels through various regions of North India. From the new menu, you get to enjoy a diverse range of chaats, appetisers and mains that identify with the warm and rich flavours of Tiffin Room.

You can opt for the customisable Mera Dabba (my box in Hindhi) Experience, an elevated set meal that comprises a selection of appetisers and main courses presented in an iconic four-tiered custom-made copper tiffin box. The set meal is complemented with delicately flavoured rice, tandoori bread, chutneys and pickles.

Aloo Dal Tikki Chaat 4.5/5

We started with a hearty street snack Aloo Dal Tikki Chaat. Dressed in a mouth-watering blend of mint chutney, yoghurt, tamarind and spices, these crispy potato and yellow lentil patties burst with piquant and zesty flavours.

Murgh Jaitun Seekh 3.5/5

From the non-vegetarian appetisers, we tried Achari Macchi Kebab featuring uniformly moist pieces of spiced tandoori-grilled grouper fillets laced with a hint of smokey flavour. On the other hand, the Murgh Jaitun Seekh is a very spiced-forward grilled minced chicken mixture of green olives, cheddar cheese, saffron, and spices.

Gucchi Methi Mattar Malai 5/5

For the mains, both the vegetarian dishes were superb, especially the lesser-known Gucchi Methi Mattar Malai - a creamy and cheesy morel mushroom curry accented with sharp flavours of fenugreek leaves and a blend of spices. Traditionally, white button mushrooms are used, but I thought using these morel mushrooms was brilliant. The creamy curry clings to each of the honeycomb caps of the mushroom, akin to how spiral pasta binds with the sauce. Hence you will get the full flavours of the curry each time you bite into the mushroom.

Aloo Gobhi 5/5

The other vegetarian main is one of Mera Dabba staples - Aloo Gobhi, a classic cauliflower and potato delight. Every floret and potato chunk was tender and soft, fully flavoured by a blended yoghurt, garlic, and masala onion gravy.

Kadhai Prawn 4/5

The other two mains were Kadhai Prawns and Balti Gosht. The prawn curry was bright and robust with coriander seeds and onion-tomato masala. There were slices of bell peppers in the curry, which also punctuated the curry with some fruity sweetness. The latter was a curry of lamb leg cubes flavoured with brown onion, tomato, and spices. Again, the curry was good, but the lamb leg cubes were a tad dry.

Malpua with Rabri 4/5

For desserts, we had the Malpua with Rabri, a pancake originating from India. It had a dense and enjoyable chewy texture topped with condensed milk and mixed nuts for an added crunch. Best to go with a cup of masala tea.

Kulfi Falooda

The other dessert is interesting - Kulfi Falooda, featuring a homemade cardamon-infused Indian ice cream assembled with vermicelli noodles, rose syrup and mixed nuts. Eating the chilled vermicelli noodles was reminiscent of having a bowl of refreshing shredded grass jelly dessert. The nuts soaked in the mixture gave a contrasting chewy texture to the dessert. A rather odd combination, but it works!

The Song of India @ Scotts Road - The Lesser Known Value For Money Weekday Buffet Lunch And Sunday Buffet Lunch

The Song of India at Scotts Road has been known for its Michelin-starred fine Indian dining. While the exquisite Indian cuisine is what many seek for, The Song of India also offers fuss-free weekday buffet lunches ($36.90) and Sunday buffet brunch ($46.90).

Salad and Chaat 3.5/5

Situated in a charming, old colonial bungalow, its tranquil site was simply perfect for a Sunday brunch. Starting my brunch with my usual greens, my good old salad plate was definitely spiked with much more zest and tang with elements such as Raita and Goan Brinjal Pickle. The popular street food Chaat was available too.

Tomato Shorba 3.5/5

I fell in love with this super tangy tomato and coriander broth at my previous tasting at Melt, Mandarin Oriental Singapore. This Tomato Shorba was less thick, but it was equally punchy. Its sourness made my face puckered up at times, but that is what made it so addictive.

For some wholesome breakfast pancakes, there is a Live Chef's Food Station that serves Chillas, a savoury pancake made with gram flour, spices and herbs. I like its chewy texture, which allows me to enjoy its spiced flavours more.

Mirch Ka Salan 4/5

From the Mains, it was my first time trying Bhindi Tomato Malasa and Mirch Ka Salan, and I love them both! Although both were rather heavy dishes, there was a touch of tanginess in both dishes that balanced that richness. Mirch Ka Salan was especially memorable with its deep fried green chillies, which gave a kick of fieriness in every bite. That will leave you wanting for more.

Familiar dishes include Butter Chicken, and seafood options are available as well, such as Fish Biryani that was loaded with chunks of tandoori fish, and Bengal Prawn Curry.

Somehow, when comes to Indian cuisine, mixing in some sweets in between bites just makes the meal even more delish. I did that with Dried Fruit Rice Kheer and Baked Gulab Jamum. Both had the right level of sweetness. I usually shy away from the Gulab Jamum, but these cardamon sweet treats were perfect with my cup of Masala Tea.

And to go with all that curries, other than rice, you have freshly made naans that made all things finger-licking good.

The Sunday Buffet Brunch is also suitable for families as children under 12 dine for free. As it is Chef Mural’s philosophy and passion to spread the richness and diversity of regional Indian cuisine, menus are changed weekly to reflect a ‘journey through India’ through the dishes.

From 7 to 16 June 2019, Melt Cafe at Mandarin Oriental Singapore invites you to their Delhi Food Festival Dinner. Enjoy a slew of traditional Delhi dishes from both the Indian specialties station as well as their live stations which are set up exclusively for this festival.

Tomato Coriander Broth

Kick start your meal with this Tomato Coriander Broth, which can be found beside the Western Food station along with other soups. What makes this broth unique is that its rich consistency is obtained from ground basmati rice, rather than starch or potatoes. Extremely tangy and delicious, it is dangerously moreish!

Masala Dosa

I was surprised to see a Malasa Dosa Live station. You could have it plain as well, to appreciate all the beautiful and bright chutneys served alongside.

Chaat

Not to be missed is also the brightly lit Chaat station and each chaat is as colourful with flavours and textures from Moong Dhal Pakori  chickpeas, potatoes, onions, green chili, pomegranate tamarind chutney, mango chutney and sweet yoghurt.

Whole - Roasted Lamb Biryani Saffron Rice

Heading the Indian Specialties station is this iconic Whole - Roasted Lamb Biryani Saffron Rice, Vegetables. However, you can only witness its magnificence only on Friday and Saturday Dinner. So choose your date wisely.

Dal Dhaba

The Lentil Curry is a mainstayer and as humble as it may seem to be, it is the tastiest among all. I have tried it a couple of times during my other visits, and it never fails to delight my taste buds. Perhaps, it is its tomatoey flavour coupled with spices that makes it so alluring.

Macher Jhol

Among other festive dishes, my favourite is the Bengali Fish Curry with Coconut and Mango. The curry was fruity but was more piquant than sweet, which made it very appetising.

Mutton Ki Shami

A few items to highlight, such as their Signature Lamb and Foie Gras Kebab with Indian Spices. The flavours of lamb and foie gras were surprisingly good with each other without being too gamey.

Malai Jhinga

Tandoori Tiger Prawns were nicely charred, but some were slightly overcooked.

Til Wale Bharwa Aloo

The Potatoes and Cottage Croquette with Sesame Seed reminds me of sesame balls, that exudes tons of sesame flavour at every bite.

Paneer Tikka Masala

Their Vegetables and Spinach Creamy Curry Gravy is pleasing with a good ratio of spinach to the gravy, which makes it relatively light and less sinful when you reach out for more.

I wish there would be more exclusive Indian desserts to try but there wasn't. But the Alfonso Mango Lassi satisfied that nonetheless.
