Auspicious Abundance 'Lo Hei' - from Min Jiang Dempsey

We commenced with the Auspicious Abundance 'Lo Hei' from Min Jiang Dempsey. Priced at $298 for dine-in and $324.80 for takeaway, this Yu Sheng extravaganza features fresh lobster, salmon sashimi, tobiko, and abalone. Nestled amidst a kaleidoscope of greens, dragon fruit balls, and osmanthus jelly in the shape of ingots, it's a visual spectacle. Drizzled with plum sauce and fruit-based concoctions, it embodies both opulence and flavour.

One of the perennial highlights of any Lunar New Year celebration at Min Jiang is the exquisite soup that graces the table. This year, the culinary artisans at Min Jiang Dempsey have outdone themselves with the creation of the Double-boiled Chicken Soup with 6-head Abalones, Dragon Claw Fungus, and Dried Scallops in a Claypot—an elixir that transcends mere sustenance.

Braised Whole Spring Chicken, Whole Dace Fish and Sea Treasures in Pot.

A new addition to the festive lineup is the Braised Whole Spring Chicken, Whole Dace Fish stuffed with Liver Sausage & Black Moss, and Sea Treasures in Pot ($422.90). This dish features the distinct flavour of dace fish, celebrated in Cantonese cuisine. A rich sauce infused with aromatics complements whole abalone, dried oysters, shiitake mushrooms, fried fish maw, bean gluten, and 'Tientsin' cabbage.

Fortune Koi Fish 'Nian Gao' filled with Black Glutinous Rice

Adding a touch of sweetness to the celebrations is the Fortune Koi Fish 'Nian Gao' filled with Black Glutinous Rice ($52.80 for 8pc, Takeaway). Crafted in the shape of a Koi fish, symbolising good fortune, it presents a delightful twist with a filling of black glutinous rice.

It has been a tradition to kick start all CNY dinners with the Yu Sheng, tossing to a year of abundance and good health. We had the Auspicious Abundance 'Lo Hei' from Min Jiang at Dempsey. It features fresh tiger prawns as an ode to the Year of the Tiger. The prawns and abalone are arranged to resemble firecrackers. At the same time, a medley of julienned carrot, romaine lettuce, affilla cress, pomelo and watermelon balls are topped with an orb of deep-fried shredded purple sweet potato for added crunch and colour. Accompaniments are sesame, peanuts, deep-fried sweet potato strips, deep-fried yam strips, deep-fried spring roll skin, and a delightful dressing made with plum sauce, kumquat juice, strawberry sauce, ginger flowers and sesame oil.

Abalone & Yellow Tail with Gold Foil Lo Hei in 'Shun De' Style 4.2/5

If you aer looking for a different Lo Hei experience, I would strongly recommend Yan Restaurant's Abalone & Yellow Tail with Gold Foil Lo Hei in 'Shun De' Style ($92++/ $138++). It is the savoury take from the usual sweet-style Yusheng. Unlike the norm, it comes in a magnificent mountain of crispy vermicelli, complemented by shredded purple and yellow sweet potatoes, kailan, and pickled ginger. It is further surrounded by a ring of vibrant vegetables and sesame seeds and adorned with gold flakes. Not forgetting slices of yellowtail fish and braised abalone heralding wealth and abundance.

The Braised Spring Chicken with 6-Head Whole Abalone is an auspicious dish stuffed with Chinese chives, garlic, and dried shrimps, deep-fried and then braised for 3 hours. The tender chicken is accompanied by abalone and poached nai bai, giving a comforting and familiar dish an elevated take.

Poached Soon Hock with Carrot and Luffa 4/5

A must have in every Chinese New Year dinner is the fish dish. Symbolising the abundance of wealth is the Poached Soon Hock with Carrot and Luffa. Steamed fish is very common but with waxed duck and fermented beancurd is a nostalgic pairing that is rare these days. What interested me more is the used of luffa with the steamed fish. It is a first for me. Does it complement the fish? It doesn't, but it enlivens the flavours of the luffa instead.

Wrapping up the sumptuous meal is the Double-boil Bird's Nest with Lily, White Fungus, Wolfberry and Lotus Seed, and Pan-fried Nian Gao. The double-boil bird's nest sweet soup is brewed with rock sugar and pandan broth for a light and refreshing finish. The highlight for me is the Pan-fried Nian Gao, especially that layer of coated peanut and toasted grated coconut which brightens the enjoyment of the glutinous rice flour.

Shi Hui Yuan @ Lau Pat Sa Festival Market - 4 Times Michelin Bib Gourmand Winner Opens New Stall

Started in Mei Ling Market and Food Centre in 1969, Shi Hui Yuan has been awarded Michelin Bib Gourmand for 4 consecutive years from 2016 to 2019. Recently it opened a new stall at Lau Pat Sa Festival Market, whereby it is more central. I think its location is ideal for introducing the delicious dish to the younger working crowd as well as tourists.

The stall offers up to ten different combinations to pair with their silky hor fun. Since I have never been to their flagship stall and it is my first time having it. I decided to go for the Blissful Set ($7.80) that comes with almost everything. In my plate, there are chicken drumstick, duck drumstick, spare ribs, braised egg and mushrooms.

The thing that makes the plate of hor fun special is the aromatic gravy that consists of 30 different types of herbs. It gives it a unique take which is somewhat in between of Ipoh Hor Fun and local Cze Char Hor Fun.
