Zui Yu Xuan Teochew Cuisine @ Amoy Street - Launches 5-Course Signature Set Menu At $50++ Per Pax

For a limited period from 1 December 2020 to 17 January 2021, Zui Yu Xuan Teochew Cuisine at Amoy Street has launched an exclusive 5-Course Signature Set Menu showcasing classic Chinese comfort foods for only $50++ per pax (minimum two pax, available for dinner only). Diners have the option of picking dishes from the different categories (appetiser, meat, seafood, vegetable and rice/noodle). However, diners at the same table have to select the same dishes except for the seafood course.

Deep-Fried Homemade Puning Beancurd, Pig Trotter Terrine, Deep Fried Ngoh Hiang 4/5

For the 5-Course Signature Set Menu, we started with a trio of appetisers. From left to right, we have Deep Fried Homemade Puning Beancurd, Pig Trotter Terrine and Deep Fried Ngoh Hiang. All the items are available on their a la carte menu, and the platter allows customers to have a glimpse of the dishes.

Pan Fried Kurobuta Pork Cutlet 4.2/5

Worthy of your calories is the Pan Fried Kurobuta Pork Cutlet accompanied by achar on the side. I am not sure what the sauce is, but more importantly, it is not overly sweet, complementing the tender and juicy pork cutlet. The other meat selections on the menu are Braised Duck with Beancurd and Crispy Pork Rib Marinated with Plum Sauce.

For the seafood selection, diners can choose between the Live Boston Lobster Wok Baked with Fermented Bean and Garlic and Teochew Steamed Threadfin Tail. If you prefer the more robust flavour, opt for the lobster with a rich fermented bean flavour, accentuated by the garlic aroma. Personally being a Teochew, I like my steamed fish. Hence, I would go for the light, and refreshing Teochew steamed threadfin tail.

Homemade Vegetable Skin Beancurd Braised with Crab Meat 4.2/5

For the vegetable dish, diners can choose from the Kai Lan Stir-Fried with Dried Sole Fish, Wok-Fried Asparagus and Homemade Vegetable Skin Beancurd Braised with Crab Meat. I had the silky tofu paired with sweet crab meat, simple but yet deliciously good.

Wok Fried Kway Teow with Diced Kai Lan and Preserved Radish

Wrapped up the 5-Course set meal with either the Wok-Fried Kway Teow with Diced Kai Lan and Preserved Radish or Fried Rice with Diced Chicken and Preserved Olive Leaves. I had the wok-fried kway teow infused with smoky wok hei with delightful crunchiness from the diced kai lan.

Double Boiled Pork Broth in Golden Pumpkin Bowl 4.5/5

The Jumbo Group of Restaurants has also collaborates with renowned Taiwanese Chef Huang Ching Biao, where he will pass on his treasure trove of recipes and experiences to Jumbo's suite of talented chefs. Kickstarting the collaboration is several new dishes at Zui Teochew Cuisine restaurants, Chui Huay Lim Teochew Cuisine and Zui Yu Xuan Teochew Cuisine. One of the new dishes is the Double Boiled Pork Broth in Golden Pumpkin Bowl ($12.80 per person). Inside the pumpkin bowl is generous servings of minced pork, water chestnut, and dried conpoy in fragrant pork broth, complemented by the pumpkin's subtle sweetness.

Beef Short Ribs with Asparagus in Red Wine Sauce 4.5/5

Beef lovers will enjoy the robust and decadent Beef Short Ribs with Asparagus in Red Wine Sauce ($18 per person). The succulent beef short ribs are first deep-fried, and then slow braised in red wine, red yeast rice, garlic and onions till tender.

Pan Fried Shrimp Paste and Pomfret Dumpling

Chef Huang will introduce more dishes in the first quarter of 2021. I was lucky to taste the Pan Fried Shimp Paste and Pomfret Dumpling before it is introduced. Thinly sliced pork lard is wrapped in fresh shrimp paste and topped with fresh whole pomfret and pan-fried. The highlight is the addition of pork lard that intensifies the flavours of the shrimp and pomfret. It is definitely a new dish that deserved to be introduced in 2021.

As a former chef in the Taiwanese presidential kitchen, the acclaimed Chef Huang Ching Biao definitely is an exciting introduction to the talented team in Jumbo. Having a glimpse of some of the new dishes, it really makes me look forward to the new creations in 2021.

The Nomads @ Telok Ayer Street - A Re-Imagination Of Central Asian Cuisine

The Nomads is a new contemporary Central Asian dining concept located along Telok Ayer Street. It features a chic dining area complete with a custom-built grill pit, a speakeasy-style private dining room and thoughtfully crafted menus that bring diners to a gastronomic trail along the Silk Road. Besides the a la carte menu, there are 3 tasting menus and an exclusive private dining room communal menu.

For my visit, I had The Odyssey of Fire Tasting Menus ($148) which comprises of 17 courses that highlight a wide range of signatures and seasonal items. The gastronomic journey started with the Smoked Herring. The smoked herring sits inside a delicate filo pastry filled with horseradish mash.

A playfully take of the kueh pie tee is the Caviar & Kaya. Housed inside the crispy shell is poached Argentinean prawns and housemade kaya, crowned with glistening beads of Kristal caviar. Pop it inside the mouth to get that perfect burst of sweet and salty flavours.

Lamb Samsa Cones 4.2/5

The Lamb Samsa Cones is a modern take of the lamb samsa, traditionally served in Uzbekistan and Kazakhstan as a baked pastry filled with meat. The cone coated with coffee sugar is filled with lamb tartare of fresh Mottainai lamb short loin. A thoughtful creation allowing the sweetness of the coffee sugar to complement the light and naturally sweet meat, plus a little playful touch.

Nomads Nan with Hunter-Gatherers Butter 4.5/5

The Nomads Nan is a traditional Kazakhstan-style bread made using a secret family recipe whereby flour is fermented overnight with yoghurt to intensifies the flavour. This is best enjoyed with the seaweed butter and foie gras butter.

You can smell the smokiness of the Maitake Mushrooms from a distance, seasoned with earthy Khmeli Suneli spices and grilled with tahini and sesame seeds.

Bite into the different coloured Carrots in Soil that is sweet and crunchy. The charred heirloom carrots are coated with coffee crumble for a bittersweet finishing.

The Salat is an adaptation of the grilled fruit salad from Kazakhstan. It is light, crispy and fresh that comprises of juicy pears glazed with cherry vinaigrette, seasonal greens and crystallised walnuts, served with anchovy sauce and frozen raspberries.

An interesting combination of koji cured Japanese Scallops, spiced burnt corn and crispy lentil crackers, is the Scallops dish. It is unusual to put the three ingredients together, and they complemented one another excellently.

Squid Laghman 4/5

The Squid Laghman is a native noodle dish from Xinjiang Uyghur. The squid noodles are lightly charcoal kissed to tender. It is paired with capsicum and pine nuts in the hearty bone marrow and Sichuan peppercorn sauce. Hence it is a little bit spicy.

Beshbarmak 4.2/5

The Beshbarmak, a national dish of Kazakhstan, is literally translated to "five fingers" because it typically can be eaten with the hands. The modern version at The Nomads finds pieces of tender wagyu cheek in spiced broth, pickled shallots and garlic. On top of that, it replaces the noodles with dehydrated potato sheets.

The Beef Tongue is braised for 48 hours in a master broth until tender with a slight crunch, served on The Nomads Nan with a decadent burnt whole grain mustard cream, spiced beef jus and shaved almonds.

It is like having foie gras skewer in the Foie in Ash. The chunky foie gras is coated with charred breadcrumbs with a side of cherry gastrique.

Hunter's Plov 4.2/5

A staple along the Silk Road is the plov, a rice dish that is whipped up with whatever ingredients on-hand. The Hunter's Plov at The Nomads is inspired by the Uzbekistan version. It comes in a bowl of A4 wagyu striploin, bone marrow, pickled heirloom carrots, tea quail eggs, brandied raisins and Carnaroli risotto.

Moving to the desserts, the Almaty comes in the form of a dainty tart of smoked apple ribbons with dollops of Gorgonzola cheese and cinnamon yoghurt and a scoop of celery sorbet.

Last but not least, there was a second dessert to end the tasting menu on a sweet note. The soft and fluffy Honey Cake is paired with sour cream ganache, blood orange, rose crystals and refreshing yoghurt sorbet.

The 17-course tasting menu may sound a lot, but each serving is rather bit size portion. As for the gastronomic journey, the cuisine along the Silk Road is very foreign to me. While each individual dish is thoughtfully crafted, the diversity of the culinary influences may work either way. To some, it may be confusing without focus, for others, it may be an exploration adventure.

SONS @ China Square Central - A New Menu Curated By Michelin Star Chef, Beppe De Vito


SONS at China Square Central is a modern Italian trattoria-style bar and restaurant that provides a range of mains, nibbles and drinks at affordable pricing. When it first opened its door in 2014, it impressed me by being one of the first restaurants that made their own speciality-cured meat and salami. It has recently launched a new menu, introducing new dishes that will bring a new joy to your experience at SONS.

Homemade Salami Platter 4/5

The salami at SONS is all made inhouse using artisanal Italian curing method in its very own curing room. To try a few varieties, order a Homemade Salami Platter ($22) which comprises 4 types of Salumi - Smoked Kurobuta Pork Lonza, Capocollo, Guanciale and Pancetta. If you would like to bring some home, they are also available for retail at both SONS and on Redmart.

Baccalá Cakes 4/5

What I remembered SONS for is this visually stunning charcoal black Baccala Cakes ($18), served with sea urchin sabayon. One of its signature dishes, these fritters are made from premium salted cod and mashed potato, and what gives them the black coat is squid ink breadcrumbs. Juxtaposed with the rich, yellow creamy sea urchin sabayon that has been caramelised on the surface which exudes a hint of sweetness. It is an elevated croquette dish that excites all senses.

Mushroom & Truffle Bruschetta 3.8/5

If you love your truffles, this mouth-filling Mushroom & Truffle Bruschetta with Smoked Scamorza ($15) will not disappoint. 2 very thin slices of house-made rustic bread grilled and slathered with truffle paste, then layered with melted Smoked Scamorza. This is followed by piling on sauteed shimeji mushrooms, finished with shavings of fresh truffles and micro herbs. It is very rich in taste, hence sharing is recommended.

On the other spectrum, Cured Salmon Tartare, Avocado & Wholewheat Crostini ($15) serves as a good alternative for a light and refreshing starter.

3-Meat Sausage 3.5/5

SONS makes its own sausages as well. 3-Meat Sausage, Broccoletti & Mustard Sauce ($29) is a new main that features its housemade sausage packed with pork, beef and lamb, seasoned with herbs and pepper. Served sizzling hot, what first hit us was the mouthwatering, intense aroma of freshly grated parmesan cheese wafting from the hot pan. I like the way this dish is being executed, which stands out from a regular sausage recipe.

Duck Leg Confit 3/5

The portion of the Duck Leg Confit with Cannellini & Cherry Tomatoes ($26) is generous, but the meat was a tad too dry. The cannellini stew was more pleasing, comforting with sweet, roasted tomatoes and rosemary.

Kale & Nduja Ravioli 4.2/5

I remember SONS has delicious housemade pasta and it didn't disappoint in my re-visit. Kale & Nduja Ravioli with Capers & Garlic Butter ($22) may sound very simple, but every bite was packed with flavours. The ratio of the pasta to filling was also just right.

Squid-ink Tagliolini 4.5/5

The Squid-ink Tagliolini, Wild Cuttlefish & Orange Salmoriglio ($24) was tastier than it looked. Salmoriglio is traditionally made with lemon juice, olive oil, garlic, salt, and herbs, and this Orange Salmoriglio brightened the flavours of the dish in its own way. Lightly tossed with seafood sauce, the housemade squid ink pasta was delicious on its own. Even after sitting in the cold for a while, the pasta remained al dente. The lightness of the pasta was just amazing.

Dolce Tiramisu with Chocolate Chips 3.8/5

We tried 3 desserts - Dolce Tiramisu with Chocolate Chips ($12), Mango & Calamansi Cheesecake ($12) and Hot Chocolate Cake with Vanilla Gelato ($13). The Tiramisu was definitely the highlight for me since it has been a while since I last had a good one. It was light and not too cloying, best summed up my experience at SONS.

Chuan Hung @ Telok Ayer Street - History And Flavour In A Bowl

Chuan Hung which means Sichuan Alley is a new noodle bar in Telok Ayer offering Mian Yang rice noodles with a choice of different broths, and a variety of toppings such as braised beef and pig intestines. The thin slippery noodles here is specially sourced from a particular artisan who lives in a village deep in Sichuan. It took close to a year and dozen of personal trips to convince the artisan to supply the noodles. Fast forward, the noodles now served in Chuan Hung are found nowhere else in Singapore or South East Asia.

Braised Eggplant 4/5

Before moving to the noodles, they are some appetising small plates to complement the mains or making it a complete meal. The Braised Eggplant ($4.50) may look dangerously spicy but it is quite mild and delicious. The peeled steamed eggplant is topped with a blend of burnt and peeled bell pepper and green chillis, giving it a smoky and spicy finishing.

Liang Fen - Cold Bean Jelly 4/5

The Liang Fen ($3.50) itself is tasteless but this is packed with depth and flavours from the housemade sauce. The housemade sauce is made from two different types of sauces that is finely chopped and mixed together. The first is made from frying Dou Ban Jang and fermented black beans while the second is made from Dao Kou Jian and Sichuan peppers fried till fragrant.

Fried Crispy Pig Intestines 3.5/5

The Fried Crispy Pig Intestines ($5.50) is crispy on the outside and soft inside. It is even stuffed with Japanese leek in the middle for that extra crunch. While the pig intestines have been braised in a braising liquid that consists of soy sauce, star anise, Sichuan peppers, peppercorns, cinnamon, nutmeg and more for 4 hours, I felt that it still has a slight gamy taste.

Moving to the signature noodles, I have the Braised Beef in Red Broth ($13.50) with the Mian Yang Rice Noodles. The specially sourced noodle made from rice, is smooth and silky, almost like mee sua. Perfect to soak up the delicious broth. The red broth which complements the rice noodle excellently which consists of a housemade spice blend that includes Sichuan peppers, pickled chillies, and dried chillies amongst other herbs and spices that are fried until fragrant.

King Prawns with Vine Pepper  4.5/5

The other noodle dish we tried is the King Prawns with Vine Pepper ($15.50). The broth made from combination of chicken bones, Sichuan vine peppers and chilli padi, has the right balance of souriness and spiciness which not only whetted up the appetite but complemented the noodles excellently.

I really enjoyed the rice noodle specially sourced form Sichuan, Mian Yang for its texture. Much effort is also put into the different broths to ensure it complement the rice noodle. Not only that, the bowl of noodle is also reasonable priced.

Zui Yu Xuan Teochew Cuisine @ Amoy Street - A New Teochew Restaurant By Jumbo Group

The popular Chui Huay Lin Teochew Cuisine by Jumbo Group has a new sister outlet within the historic Far East Square precinct. The new outlet - Zui Yu Xuan Teochew Cuisine is nestled in a two-storey heritage building. Greeting guests at Zui Yu Xuan is a traditional Chinese entranceway adorned with intricate wood carvings and a sweeping tiled roof, before stepping into the historic courtyard that was once part of Chui Eng Free School founded in 1854.

Cold Crab 4/5

 A delicacy in any Teochew restaurants is the Cold Crab ($12/100g). At times you even have to pre-order them. The flesh are sweet with unami creamy crab roes. Best eaten with a vinegar dip. However I find the size here a bit small.

Braised Duck with Beancurd 4/5

Not to be missed in any Teochew restaurants is their braised duck. In fact, it is a must order whenever I visit them. The Braised Duck with Beancurd ($18/portion, $32 Half, $60 Whole), well infused with the braised sauce is tender and flavourful. What I love most is the tangy chilli sauce, that always seem to bring out the taste of the braised duck further.

For the deep fried items, there are the Deep Fried Ngoh Hiang ($13/portion) and Deep Fried Prawn Balls ($22/portion). These are delightful appetisers to kick start the dinner.

Lightly crisp on the exterior with a soft interior is the Deep Fried Homemade Puning Beancurd ($12/portion). It comes with a chive vinegar dip. The whole taste profile is quite light, which I didn't quite know how to appreciate it.

Not commonly seen in Teochew restaurant is the Geoduck Clam Blanched with Superior Broth ($16.80/100g). The thinly sliced geoduck clam blanced in superior broth, has an enjoyable crunchy texture on top of its natural sweetness. This is round off by the comforting and flavoursome soup.

Crispy Fried Sea Cucumber and Shiitake Mushroom with Abalone Sauce 4.2/5

Its rather interesting to come across another fried sea cucumber dish on the menu. This is probably the third time I have it within a couple of months. It seems like Chinese restaurants are trying to change the customers perspective of the slimy ingredient with more texture. I really applaud the effort and the Crispy Fried Sea Cucumber and Shiitake Mushroom with Abalone Sauce ($24/portion) here is probably one of the best I have eaten so far. It still retained the bouncy texture of the sea cucumber while giving it a nice thin crust.

Australian Lobster Wok Baked with Fermented Bean and Garlic Teochew Style 3.5/5

I have tried lobster cooked in many styles but the Australian Lobster Wok Baked with Fermented Bean and Garlic Teochew Style ($23.80/100g) is a first. However, I didn't quite taste the flavour of the fermented bean coming through in the execution.

Another dish that uses the fermented bean is the Teochew Puning Fermented Bean Chicken ($22 Half/ $40 Whole). The fermented bean's flavour was more distinct in the dish, which complemented the tender chicken excellently. I love the dish so much that I kept going back for more.

Teochew Oyster Omelette Gooey Style 4.5/5

No to be missed at Zui Yu Xuan is their Teochew Oyster Omelette Gooey Style ($13/portion). This is probably the best oyster omelette (Orh Luak) I have eaten. I was told that they even have a delegated chef just to cook this. Crispy on the outside and gooey inside, this is only cooked upon order and takes about 20 minutes. Best paired with the slightly sourish chilli sauce to get the burst in flavours.

The Wok Fried Kway Teow with Dice Kai Lan and Preserved Radish ($18/$27/$36) is packed with wok hei and the addition of the diced Kai Lan and preserved radish provides the extra crunch to the rice noodle.

Promfret and Rice Boiled Teochew Style with Dried Shrimp and Crispy Rice 4.5/5

Teochew loves their steamed fish and muay, so the Promfret and Rice Boiled Teochew Style with Dried Shrimp and Crispy Rice ($108/portion) kills two birds with one stone. You get a pot of hot piping Teochew porridge with slices of promfret. Dried shrimp and crispy rice are added for the extra lift in flavours as well as texture.

Yam Paste with Pumpkin and Gingko Nuts 4.2/5

Not to be missed at Zui Yu Xuan is the desserts too. All time favourites are their Yam Paste with Pumpkin and Gingko Nuts ($5.20/each) and Teochew Tau Suan with Gingko Nuts ($5.20/each). Even though the pork lard has been replaced with shallot oil for the yam paste, it still taste as good with the smooth consistency and distinct fragrant from the yam.

Personally I like the Teochew Tau Suan with Gingko Nuts ($5.20/each). Unlike other places, orange peel is added, elevating the traditional dessert for an unique enjoyment.
