The Chairman’s Lounge @ Pan Pacific Orchard - An Exclusive Private Dining Space Headed by Veteran Chef Leung Wing Cheung

The Chairman's Lounge is Pan Pacific Orchard's new private dining space, an exclusive enclave accommodating up to 16 guests. With full-length glass panels offering a view of the serene Forest Terrace, this venue provides a unique dining experience. Headed by veteran Chef Leung Wing Cheung, formerly the Executive Chef of Si Chuan Dou Hua, The Chairman's Lounge presents a series of festive menus to celebrate the Year of the Dragon, available from 22 January to 24 February 2024.

Prosperity Exotic Garden Yusheng 5/5

The Prosperity Reunion Set Menu commences with the signature Prosperity Exotic Garden Yusheng featuring lobster and a wholesome medley of 20 fresh vegetables and fruits, including green and red lettuce, beetroot, turnip, soybean sprouts, cucumber, carrot, mango, and more. The toppings encompass whisky-infused sea cucumber, pistachio, dried pineapple, dried strawberry, and crispy brown rice for added texture and flavour. These elements are harmonized with a chef-made osmanthus sauce and layered with a unique black truffle sauce enriched with Japanese matsutake mushrooms.

Next, we had an equally nourishing Cantonese Double-Boiled Supreme Soup, slow-cooked with ingredients such as fish maw, sea cucumber and fresh crab claw.

Pan-Seared Dried Oyster With Duet Of Traditional Crispy Chicken 4/5

An interesting creation is this Pan-Seared Dried Oyster With Duet Of Traditional Crispy Chicken, chef's rendition of the Lor Mai Gai. Enveloping the glutinous rice with a rich foie gras centre is a layer of crisped chicken skin. I appreciate the subtle use of a small piece of foie gras to impart its richness to the dish. The dish is finished with a plump, pan-seared dried oyster to enhance the flavour.

Giant Soon Hock 5/5

Giant Soon Hock, prepared in two ways, was a joy to savour upon given the varied flavours and plump texture of the fish - steamed fish head & belly with tofu and preserved vegetables and "Shun De" style deep-fried fish tail in superior light soya sauce and scallions. I appreciate how the piquant preserved vegetable broth complemented the more gelatinous part of the fish and that the fishtail was fried to perfection, keeping the flesh moist and tender on the inside.

Braised 2-Head Whole Abalone 4/5

Another premium ingredient featured in the menu is Braised 2-Head Whole Abalone in golden superior stock with snow pea shoot. The sweetness of the stock and the snow pea shoot complemented the tender abalone.

Crispy Noodles with Australian Lobster Meat 3/5

The noodle dish for this menu is Crispy Noodles with Australian Lobster Meat, served with a silky egg gravy infused with lobster broth. A smaller portion of the noodles would have brought a better balance to this dish.

Double-Boiled Bird’s Nest 4.5/5

We indulged in a Double-Boiled Bird's Nest With Rock Sugar Served In Mini Pumpkin for dessert. The pumpkin added texture and sweetness to the dish and was delightfully soft, providing a joyous savouring element.

Excitement filled the air as I stepped into Alma by Juan Amador, eager to explore the new chapter under the helm of Executive Chef Yew Eng Teng. With a remarkable career quietly etched in Michelin-starred kitchens and the prestigious role of the winning Team Captain for Singapore at the Culinary Olympics 2014 in Germany, Chef Yew brings a wealth of experience and accolades. His journey extends beyond national borders, with participation in various international competitions further highlighting his culinary prowess.

The 8-Course Dinner ($248++ per pax) unfolded with two snack bites, starting with the Cauliflower Tartlet. Delicately crafted with raw cauliflower, creme, and marinated raw seafood in a pie tee cup, it danced with flavours of white shoyu, fried white kombu, salted finger, and arctic char skin crisp.

Indulging in the Mantou Bread at Alma by Juan Amador is a delightful experience. Crafted as a homemade multi-seed bun, it undergoes a unique preparation — steamed and fried to perfection upon order. Each bite is topped with a blend of chia seeds, sesame, and flaxseed, revealing a soft and fluffy texture. The true magic happens when paired with the smoked Bordier butter and prawn head espuma, creating a symphony of flavours that lingers on the palate, making it a must-try sensation.

The inherent sweetness of the lobster is elevated by Chef Juan Amador's signature purple curry sauce, creating a symphony of flavours that dance on the palate. The Glacier 51 Toothfish was replaced by Turbot, pan-seared and served with crustacean cream, chive, carrot and prawn oil, caviar vinaigrette, seaweed tempura crisp, and carrot puree. The dish's finesse is further accentuated by the textural contrast of seaweed tempura crisp and the smoothness of carrot puree. This dish is a culinary dance of lightness and robust flavours, which is a testament to Chef Yew Eng Teng's ingenious marriage of diverse elements.

The dessert achieves a perfect balance of textures, offering a contemporary twist while preserving the authentic taste of the traditional Thai sweet.

Expressing adoration for the dessert, the Poached Peach takes centre stage, accompanied by soursop sorbet on a bed of salted buttermilk sago. The ensemble is elevated with Sakura espuma and purple shiso salt and crowned with Sakura and purple shiso meringue. Despite the challenge of capturing its essence in words, the combination stands out as one of the most exceptional desserts experienced.

Petit Fours

The Petit Four concludes the dinner experience, featuring the Burnt Calamansi Tart, Pandan Financier, and Mochi Bread. Often regarded as mere baked confections, these petite fours at Alma showcase a distinct passion and commitment. They go beyond the ordinary, infusing a soulful touch into each bite, ensuring that the dining experience concludes on a high note, leaving a lasting impression.

The Crab Cake ($29) emerged as a star-studded starter. Crafted into a jumbo sphere, it showcased a decadent crab meat filling. The crispy exterior of the croquette-like creation harmonised impeccably with the mango puree, wasabi mayo, pickled pineapple, and a crowning touch of caviar. A luxurious prelude that set the stage for what was to come.

Following next, the Burrata Salad ($28) offered a refreshing interlude. The fresh and creamy texture of burrata paired seamlessly with fermented chitose cherry tomato and plum gel, creating a symphony of flavours. Diverging from the conventional steak offerings, Opus Bar & Grill introduced the Charred Cabbage Steak ($22). This innovative dish showcased sweet cabbage with a smoky aroma from the grill, enhanced by the firework of flavours from herb cheese mousseline, shallot crisps, hazelnut snow, and chilli oil. It is an unexpected delight reminiscent of okonomiyaki, challenging the norms and delighting the palate.

A visit to Opus Bar & Grill is synonymous with savouring their flame-grilled steaks. Opting for the Grain-Fed Miyazaki Striploin A4 ($138) from Japan, we were treated to a sensory journey of exceptional marbling, tenderness, and rich flavour. The flame grilling process unveiled the steak's full potential, a testament to Opus Bar & Grill's mastery of its craft.

For those preferring alternatives to beef, the Coal-Roasted Spatchcock Chicken ($42) emerged as a stellar choice. The caramelised char on the skin, attributed to the tare glaze, complemented the moist and tender meat. It is accompanied by a side of Nori Mash, velvety and creamy.

Concluding our dinner, the Jivara Floral Garden dessert made a grand entrance. Beautifully presented as a lollipop, it featured Passion fruit-inspired ganache, cassis micro sponge, dark chocolate cigars, and a Valrhona Jivara 40% praline milk chocolate. It is a rich and chocolaty crescendo, providing a sweet symphony to conclude our meal.

Opus Bar & Grill, under the guidance of Executive Chef Dean, rises above the ordinary steakhouse experience. It's a sanctuary where every dish and every bite compose a symphony within an epicurean masterpiece. The expertise in flame-grilled perfection establishes Opus Bar & Grill as an essential destination for those craving superbly grilled meats and seafood.

Kimchi Dining @ Orchard Central - Aesthetic Korean Restaurant Offering Modern Korean Dining Concept

Kimchi Dining is a modern Korean dining concept located on the 6th floor of Orchard Central. The menu offers ala carte dishes as well as set menu for 2-pax and 4-pax. We tried the 2-pax set menu ($60/pax) that comes with appetisers and mains, 2 desserts and 2 makgeolli cocktails (tea options are also available).

Makgeolli Bread 4/5

Our meal started with warm and comforting Makgeolli Bread, served with a generous portion of White Bean butter. The bread was mildly sweet and fluffy with a slight chewy texture.

Kimchi Platter 3.5/5

Next came the Kimchi Platter, showcasing 6 types of house-fermented kimchi. While the portion of some of the kimchi was rather sad-looking with a couple of vegetable strands, I enjoyed the experience of being able to try their different taste profiles.

Then came Gaji Ganjeong. This charcoal tempura eggplant had an airy batter and was delectable with an umami-sweet honey soy dressing.

Gamjajeon 5/5

The set includes the much highly-raved Gamjajeon. These potato pancakes are shaped into mini rosti with moreish crispy edges. Topped with sharp Parmesan cheese, radish, and tangy onion jangaiji, the various flavour nuances woven into these otherwise simple potato pancakes make them even more irresistible. The creamy Siberian onion truffle mayo gives it a satisfying, mouth-filling texture.

Jeju Pork Noodle 3/5

For Mains, we chose Arongsatae & Dogani and Jeju Pork Noodle. Arongsatae & Dogani is a beef heel muscle and tendon braised for over six hours. The beef itself impressed with a melt-in-your-mouth texture. As for the tendons, I appreciated their clean taste, but some were less tender than expected. The Jeju Pork Noodle, on the other hand, while it had a light and tasty Jeju-style pork broth, paled in comparison due to a rather tough pork belly.

Chocolate Injeolmi Tart 3.8/5

For desserts, we had Chocolate Injeolmi Tart and Black Sesame Injeolmi Sundae. Both desserts incorporated chewy rice balls, adding a contrasting texture. I prefer the bitter-sweet notes of the chocolate tart. The sundae was a tad too sweet due to the drizzling of jujube syrup.

Pi Food (香江小厨) @ Dhoby Ghaut - Teochew Menu Revamp Led by New Esteemed Chef from China’s Teochew Region

Renowned Chef Chen Kai Bin, hailing from China's Teochew region, has recently joined Pi Food, bringing with him a wealth of culinary expertise. Boasting an impressive culinary background, Chef Chen served as the Head Chef at the Garden Hotel's 4-star restaurant for eight years.

With his arrival, Pi Food has undergone a menu revamp, featuring a diverse selection of Teochew dishes.

Teochew Raw Marinated Crab 4.5/5

Marinated for four hours in a unique mix of Teochew fish sauce, lemon, garlic, chilli and coriander, this Teochew Raw Marinated Crab ($25) will appeal to seafood fans. I especially enjoyed the freshness of the coriander and the zesty-spicy flavours paired with the sweet crab meat. Apart from crab, the restaurant also offers Prawns ($24) and Clams ($16), which are prepared similarly.

The Teochew Braised Platter ($32) offers a variety of braised duck, pork belly, intestine and soft beancurd. Carefully infused with over 20 herbs and spices, it results in a comforting depth of flavour.

I especially enjoyed the succulent duck slices and my dining companion liked how clean the intestines were.

Teochew Seafood Claypot Congee 4.2/5

Chef Chen's Teochew Seafood Claypot Congee ($48) combines a medley of prawns, crab and dry scallops in congee. This comforting main was served bubbling hot in the claypot with housemade chilli dips on the side. While the congee leaned more bland than I expected, the freshness and sweetness of the seafood shone through, complemented by the tang of the chilli sauce.

Steamed Yellow Croaker with Puning Soybean Sauce 4/5

For our fish dish, we had the Steamed Yellow Croaker with Puning Soybean Paste Sauce ($28), which was infused with Puning soybean paste sauce before steaming, complementing the sweetness of the fish.

Deep-fried Prawn Paste Pork Ribs 4.5/5

The Deep-fried Prawn Paste Pork Ribs ($22) is reminiscent of our local favourite Har Cheong Gai. I thoroughly enjoyed these tender and crisp pieces which were so flavourful!

I was less of a fan of their Teochew Fried Oyster Omelette ($16) as it was much more oilier than I preferred. This rendition by Pi Food has a higher ratio of starch to egg.

Finally, we ended our meal with the Braised Sweet Potato & Yam ($10). It is a lovely dessert for us, with the strips of sweet potatoes and yam encased in a sweet and ultra-thin crust drizzled with a dash of fragrant shallot oil.
